This is a great reference book for anyone who loves to cook or just has an interest in foods of the world. At date I have bought 12 of them and have given them as gifts to friends arouond the world.

As a professional working in the industry, my yearning for culinary information never subsides. It may very well be insanity that causes me to focus so strongly on my profession, but I'm always reading and watching culinary related books and TV shows. Very often, you'll find that books and television don't always explain certain bits of information as well as you'd like if at all. And even then, their information is sometimes flat out wrong. That's when I turn to this book. It took years of convincing for me to give this book a try, but now it's the only food reference book that has it's very own place on my desk at home.
The book is basically a food related dictionary that describes a bit about history or culinary uses of nearly every culinary item, ingredient, or term. It also has a very helpful appendix that lists ingredient equivalents such as 8oz dry pasta noodles equals 4 cups of cooked, 15 graham squares equals a cup of crumbs, or 1 cup of dried pinto beans equals 2 1/4 cups of cooked. The appendix also lists substitutes for both ingredients and volume, high altitude baking adjustments, boiling points, temperature and metric conversions, oil smoke points and food label terms as well as consumer information sources.
If I'm looking for extremely in depth information on an ingredient or foodstuff, I may open up Larousse Gastronomic. But if I need the quick down and dirty on a cooking term or a conversion of some sort, which is more often than not the case, I grab this book.

I think this is an essential for all kitchens. Often, a recipe book will use a term that may be unfamiliar or use ingredients that are regionally unavailable. This book gives clear definitions, offers substitute suggestions and is generally the best resource to have in a "cooking" kitchen. I HIGHLY recommend it. I purchase it as part of a shower gift for all brides.

I am a veteran foodservice employee of over 30 years. I purchased the Larouse Encyclopedia Gastronomique in the past but found it to be incomplete and a bit dated. The Foodlovers Companion fills in all the gaps and is very up-to-date. I moved from the casual dining field to fine dining and found many new ingredients and techniques with which I was unfamiliar. I bought the Companion sight unseen on the recommendation of a young chef. I am thoroughly pleased and would recommend this book to all who love the details of the food life.

This is an amazing book that should be in everydody's reference section. It makes it great fun to learn about the foods you are eating with old legends and historical tid-bits. It really motiveates me to continue to eat whole foods and is filled with great information of the nutritional and medicinal uses of each food. My background includes Physics, natural foods culinary school, nutrition and herbalism and I must say that this book never ceases to impress me in the breath and depth of the author's knowledge. If you must buy one book this year, buy this one and learn about why and how our food can keep us healthful. Happy eating.

This has it all - vegetables, grains, even herbs. It has lengends/lore, as well as the nutritional facts. I really love this book - very complete, not so dry that you hate picking it up. I find myself just browsing through for no real reason. Great book!

No kitchen, personal or professional, should be without this book. One can easily find information. Each subject is dealt with in an easy to read fashion, and quite completely I should add. This is my food "bible". I find it facinating enough to read like a novel from cover to cover. The layout and organization of the book makes it an invaluable reference book when you want to know about a particular foods nutritional information & health benefits, history or general culinary uses. I love the 'Legends & Lore' sections as well. I refer to this book almost daily and have had fun at dinner parties sharing information about where foods come from. For anyone who is interested in learning more about the food they put into their bodies, this book is incredible. I have both versions, but the revised and expanded edition is the one to buy-more info and more foods.

This is a wonderful book! It is authoritative, detailed, well written, and extremely entertaining.
Author Dianne Onstad writes with an insight and understanding of all aspects of whole foods that is simply mind boggling. "Whole Foods Companion" is intended for those interested in eating well, eating better, or simply knowing the benefits of the many fruits, vegetables, grains, legumes, nuts-seeds-oils, and herbs and spices that are available to enrich and prolong their lives.
Each is described in detail, including nutritional value, general information, culinary tips and health benefits. Also listed for many of the whole foods is their lore and legend and buying tips for how to purchase them at their best.
Yes, there is more information in this humorous book than the average person will probably ever use, but that should not detract from its value as the best reference available of its kind.

If you are confused about the world of whole foods and want more information, the new revised and expanded Whole Foods Companion is a great place to start.
The book is organized like an encyclopedia and lists information for more than 400 different plant foods, including fruits, vegetables, grains, legumes, nuts and seeds, oils, herbs, spices, and more.
Each entry in the book includes information about the plant's origin, buying tips, culinary uses, and health benefits. Sidebars scattered throughout the book offer lore, legends, and other fun facts. For example, The Egyptians served lentils liberally to children because it was believed that they enlightened their minds, opened their hearts, and made them cheerful. The Greeks and Romans used asparagus to relieve the pain of toothaches and to prevent bee stings.
Of course, there's more relevant information as well, like "Raw broccoli contains almost as much calcium as whole milk and is linked to lowering the risk of cancer" and "Exceedingly nutritious, it [millet] contains an abundance of minerals and vitamins, and the most complete protein of any of the true cereal grains."
Even if you are not a newcomer to whole foods, this book can be useful as well as interesting. I consider myself pretty knowledgeable about whole foods but I still refer to this book often and have learned from it. This is a great reference and would be a helpful addition to the whole foods kitchen.

"Whole Foods Companion" is a wonderful resource about foods from the earth. The author, Dianne Onstad, brings us more information in this revised and expanded edition based on her 1994 success!
Dianne Onstad is involved in nutrition education, as well as in the promotion of organic whole foods. She even has a special interest in living and raw foods.
In this impressive reference book, you will find information such as: Buying Tips, Culinary Uses, Health Benefits, Lore and Legend, and General Information on Fruits; Vegetables; Grains; Legumes; Nuts, Seeds and Oils; and Herbs, Spices and Other Foods. There is also a glossary and an extremely comprehensive index.
Despite not having any photographs, this book is quite extensive and thorough. I tried to find obscure items within this text, such as loquats, and I actually did find them. I, also, tried to find some misinformation, such as health information, and was unable to do so. Onstad has done an excellent job once again!
In today's world where everything is prepackaged, I find books such as "Whole Foods Companion" to be a welcome and refreshing change to becoming a healthier eater.
For anyone interested in understanding more about their food, how to select it, cook it and what health benefits it provides, then this is a fantastic food reference book of encyclopedic proportions!

Love trying new and exotic foods? Then this book is for you. This is not a recipe book per say, although there are a few recipes included in each chapter. This book is more of an encyclopedia of the foods of the world organized by country.
Each chapter includes a basic introduction to the foods of a specific region, a discussion of the country/region and it's history as it relates to food, the main ingrediants and dishes that dominate that regions cuisine, instructions on how to eat and order like a native and a few recipes.
You would have to go to another resource if you were interested in making the food yourself, but you can not beat this book for giving you a basic knowledge of all the different types of food and beverages that are out there to try.
The How to order and eat like a native sections are superb and cover and array of things including table manners, utensil (or non-utensil) usage (did you know that it may be considered less then polite to eat with your chopsticks in your left hand in China? I didn't) and intersting tips.
Love love love this book as will anyone with an interest in ethnic food.

"The Ethnic Food Lover's Companion" is a great book if you like to go out to "ethnic" restaurants. ("Ethnic", i.e., "foreign food" restaurants). In easy-to-read chapters it gives you information about culture, gastronomy, and history for most of the world's great cuisines: Europe (France, Italy, Spain, Portugal, Germany, Russia, etc.); Africa (North Africa, Ethiopia, West Africa); Middle East; Greece and Turkey; India; Southeast Asia (Thailand, Vietnam, Indonesia, Philippines, etc.) Asia (China, Japan, Korea); Americas (Mexico, Caribbean, Brazil, Peru, etc.). There are descriptions of typical flavorings, cooking methods, and dishes. Highly interesting and recommended.

This book covers all the areas I was interested in learning about before our trip to Napa Valley. The reviews seem unbiased and thoughtful. We had visited Napa 18 years ago and while we already had a few ideas, reservations, etc., this guide gave us even more places to consider. I've "earmarked" so many pages and even took this guide with us. It also includes maps, addresses and phone numbers and/or websites. Some good recipes are in the back. A good companion guide.

Travel guide lite.......2006-03-24
I live in the Central New York region just east of the Finger Lakes. I work with people who live in the region and I road trip quite a bit in the area when the weather warms up, so I have a "mile-wide and an inch deep" knowledge of the area.
I consider this book a "lite" travel guide because it doesn't cover much of what's in the area, but it covers what it does in great depth. It focuses on what the cover says, and nothing more. It doesn't cover many eateries outside of the population centers, and skips a lot of the "hole in the wall" restaurants, diners, and stands that offer great food but are a bit off the beaten path.
If you want to focus on wineries and want some in depth knowledge about thoose wineries this is the book. Beyond that you will need to look elsewhere for information.

This book was very useful to have on vacation -- his restaurant reviews were a big help in terms of types of cuisine available and the winery reviews were very specific about what types of wines they produce and what he liked when he went tasting. It was also nice to know how formal restaurants were before you went.
