The elegant simplicity and exquisite flavor of Deborah Madison's food make her one of America's leading cooks. In Vegetarian Cooking for Everyone, she offers more than great food: her book includes comprehensive information about ingredients and techniques, plus more than 800 recipes. The recipes range from dishes as familiar as Guacamole to those as distinctive as Green Lentils with Roasted Beets and Preserved Lemons, and Cashew Curry. The 124-page chapter titled "Vegetables: The Heart of the Matter" is a virtual book of culinary revelations; you could use it as a manual on buying and preparing vegetables. Madison provides equally inspired recipes and guidance for everything from grains and soy to dairy foods and desserts.
Book Description
What Julia Child is to French cooking and Marcella Hazan is to Italian cooking, Deborah Madison is to contemporary vegetarian cooking. At Greens restaurant in San Francisco, where she was the founding chef, and in her two acclaimed vegetarian cookbooks, Madison elevated vegetarian cooking to new heights of sophistication, introducing many people to the joy of cooking without meat, whether occasionally or for a lifetime. But after her many years as a teacher and writer, she realized that there was no comprehensive primer for vegetarian cooking, no single book that taught vegetarians basic cooking techniques, how to combine ingredients, and how to present vegetarian dishes with style. Now, in a landmark cookbook that has been six years in the making, Madison teaches readers how to build flavor into vegetable dishes, how to develop vegetable stocks, and how to choose, care for, and cook the many vegetables available to cooks today.
Vegetarian Cooking for Everyone is the most comprehensive vegetarian cookbook ever published. The 1,400 recipes, which range from appetizers to desserts, are colorful and imaginative as well as familiar and comforting. Madison introduces readers to innovative main course salads; warm and cold soups; vegetable braises and cobblers; golden-crusted gratins; Italian favorites like pasta, polenta, pizza, and risotto; savory tarts and galettes; grilled sandwiches and quesadillas; and creative dishes using grains and heirloom beans. At the heart of the book is the A-to-Z vegetable chapter, which describes the unique personalities of readily available vegetables, the sauces and seasonings that best complement them, and the simplest ways to prepare them. "Becoming a Cook" teaches cooking basics, from holding a knife to planning a menu, and "Foundations of Flavor" discusses how to use sauces, herbs, spices, oils, and vinegars to add flavor and character to meatless dishes. In each chapter, the recipes range from those suitable for everyday dining to dishes for special occasions. And through it all, Madison presents a philosophy of cooking that is both practical and inspiring.
Despite its focus on meatless cooking, Vegetarian Cooking for Everyone is not just for vegetarians: It's for everyone interested in learning how to cook vegetables creatively, healthfully, and passionately. The recipes are remarkably straightforward, using easy-to-find ingredients in inspiring combinations. Some are simple, others more complex, but all are written with an eye toward the seasonality of produce. And Madison's joyful and free-spirited approach to cooking will send you into the kitchen with confidence and enthusiasm. Whether you are a kitchen novice or an experienced cook, this wonderful cookbook has something for everyone.

A New Classic.......2007-09-30
This is my favorite cookbook, my standard, my go-to. When I say to my husband, "let me look that up in the cookbook", I'm referring to VCE, just the same way I *used* to mean Joy of Cooking. No longer. This has everything I need for easy, delicious vegetarian cooking. I've made a ton of the recipes in the last 3 years, and they're all great.
Favorite Cookbook and now my daughter's, too.......2007-09-14
This was the second time I purchased this cookbook. I use mine constantly and purchased this latest one for my college-aged daughter. All recipes that I've tried have turned out fantastic.
Great Cookbook.......2007-08-12
This is an excellent cookbook. Deborah Madison knows a lot about cooking, and especially about vegetables. I would highly recommend her other cookbook about tofu as well. Very tasty dishes. The first dish I made was a curry tofu with tomatoes and asparagus. It was amazing. Not because I am a great cook, but because the combination of spices and order in which she instructs you to prepare the meal are fantastic. When she stated something to the effect that marinades suck, I knew that she knew what she was talking about. There is nothing more highly overrated in cooking than a marinade. The only marinades that I have ever found to semi work were ones with lemon juice, and simply due to the acidity of the juice...
Anyway, a great cookbook that covers all the bases cooking with vegetables...
I'm so not a vegetarian, and I Iove this cookbook.......2007-08-12
I am an unrepentant carnivore, yet I find this to be a fantastic reference for vegetarian dishes of every kind, and for cooking in general. Its a huge amount of information - from stocking your kitchen tools, spices & savories, dishes for each course, and delicicous egg, grain, soy, cheese, pasta recipes along with in-depth info about specific vegetables and how to cook, dress, and pair them. I get more excited with each recipe I try in this book, and have found it a great companion to the South Beach Diet recipes. Highly recommend!
Perfect gift for a vegetarian.......2007-07-12
This book is probably one of the best and most-used gifts I've ever received.
If you only buy one vegetarian-specific cookbook, this should be it. I've tried numerous recipes and have been very pleased by all of them.
There's a lot of general information/instruction which helps to ease a beginner, such as myself, into the kitchen.

not the most colorful cookbook i've cooked from.......2007-08-26
i just started my vegetarian venture so this is a cookbook i picked up. the book gives really good side tips about food that are not common knowledge. i have tried a few of the recipes and they turned out fabulous. so no damage there. the only down side is there are absolutely no pictures of any of the recipes. so if your ok with cooking blindly then this is one for you.
The Everything Vegetarian Cookbook.......2007-05-25
As recent arrivals in the vegetarian world, we are very pleased with this informative and well-written book.
We look forward to many healthy meals, without the gnawing feeling that some animal was killed to feed our carnivore tastes.
Well done, and thanks.
basic and uninteresting vegetarian recipies.......2007-05-12
Though included in this book were recipies for many, many differeny vegetables, none were very creative or inspiring. Just basic stuff.

With over 100 exciting new recipes and clear, detailed instructions, Vegan Vittles is sure to inspire compassionate cooks of all ages, regardless of their comfort level in the kitchen.
Customer Reviews:
Vegan Vittles -- Wonderful Cookbook.......2007-10-10
I've been a Vegetarian for a while and a Vegan since July 2007. This cookbook has so many wonderful recipes. The recipes are not 'weird' like some other cookbooks, which is what I like. The stories of the saved animals are very touching.
The Vegan Answer to Home-Style Cooking.......2007-09-20
Honestly, I wasn't expecting much from Vegan Vittles. As a dairy-free consumer who is just dabbling in the vegan lifestyle, I was certain that the Uncheese Cookbook would be my favorite from among her collection. To my great surprise, Vegan Vittles has emerged as one of my favorite cookbooks. There are several things that don't quite flow with me in this book, much more so than most other cookbooks I have read. Yet, the overall usefulness far outweighs any disconnect that I feel towards it.
While I have already tested a few of the recipes (Ultimate Chocolate Chip Cookies, Macaroni and Cheez, Carrot Butter) I can't even begin to tell you the recipes I am eager to trial. Just a few on my list include: Muffins that Taste Like Donuts, No-knead Whole Wheat Herb Bread, Hot & Sour Pad Thai (no fish sauce?), Cheez Please Soup, Chickpea Oat Burgers, Spicy Peanut Sauce, Aunt Bunny's Carrot Cake, etc., etc., etc.
The recipes are all so simple, using easy to find whole foods (think spices, veggies, fruits, and whole grains, not white flour and sugar). The most exotic ingredients that I spotted were quinoa and miso, both of which can now be found at Trader Joe's and in most major grocers. I think the fact that I could make so many of the recipes without having to make a special trip to the grocery store, was a real draw.
As for the disconnects - Certain portions of the intro get a bit wordy, and I found my eyes wandering off on many occasions. While full of useful information that I couldn't get enough of (do you know how hard it is to find a list of GMO foods to avoid? And what about that wonderful explanation of egg alternatives?), many sections tended to drag on with less pertinent details. Also, I was perplexed by the veganization of quotes throughout the book. Finally, the recipes weren't always spot-on. I found the author's taste buds to be more sensitive than mine, as I require a bit more flavor injected into my meals. Also, I often had to adjust the moisture content.
So if the recipes didn't always work perfectly, why did I like it so much? Simply put, Vegan Vittles really is a fantastic primer for all of those basic comfort food recipes that I often miss. As someone who is typically less than experimental in the kitchen, I have had a lot of fun "tinkering" with the recipes. The very idea that I can successfully customize almost every recipe, has made this a cookbook that I actually use (of which, there are few). Trust me, I am not a fabulous cook, but all of Jo's recipes are so simple that they remove any fears I have in the kitchen.
To note, Jo tends to reuse some of her recipes across cookbooks. While each one contains a ton of unique recipes, there are always a few crossover recipes, another pet peeve of mine. Yet, I found that Vegan Vittles contained the perfect collection of her recipes; a nicely sized section on cheese alternatives, and a good array of baked goods, full meals, snacks, and desserts. If I could only pick one Jo Stepaniak cookbook, this would be the one. Though we have our differences, Vegan Vittles will stay front and center in my cookbook collection!
My New Favorite.......2007-08-23
I have almost every vegan cookbook on the market, but after having purchased this book, most of the others now sit on the shelf collecting dust!
I have yet to be disappointed by a single recipe in this book!
the best all around vegan cookbook.......2007-07-10
I have many vegan cookbooks, and this is the one that has the most "usable" and "user friendly" recipes of all. The only recipe I have tried and did not like was the "buttermilk" biscuits. The Southern Fried Tofu is yummy. I highly recommend this book.
Better with Age.......2007-05-26
Vegan Vittles is the first cookbook---a completely random selection---I purchased when I decided to go vegan. Turned out to be a perfect choice: the recipes are both delicious and familiar, and best of all, most are fast and easy too; the perfect choice for someone who likes great food but doesn't really like to cook.
I have purchased countless vegan cookbooks over the past eight years, and several of them are excellent. However, Vegan Vittles, over and over again, is the one I come back to, especially during the holidays; Vegan Vittles is full of crowd-pleasing recipes that satisfy and wow the omnivorous crowd. But a majority of these recipes are for every day food: hearty breakfasts, delicious sandwiches (Jo includes a section, even, on how to make your own mock meats---a money-saving adventure, to be sure), entrees, desserts. And the "uncheese" section is not to be missed. If you are one of those vegans who has yet to get over dairy cheese, you will be pleasantly surprised by the taste and texture of these homemade cheese dishes. Truly, they are excellent.
Vegan Vittles Part II is an excellent second edition, with all of the familiar favorites and plenty of new recipes that will quickly become favorites. Jo Stepaniak really gets it when it comes to the perfectly composed recipe; my complaint with many other cookbooks is that I find I make lots of alterations. With Vegan Vittles, one can mindlessly follow the recipe. The results are always stellar.

Certified nutritionist and author of the popular Saving Dinner cookbooks, Leanne Ely has made it her mission to ensure that meal planning, grocery shopping, and cooking are all easy as pie. Created for the nearly 25 million full-fledged vegetarians across the country, and for anyone who sometimes wants a menu that focuses on something besides meat, Saving Dinner the Vegetarian Way shares cuisine that is as varied as it is healthy. With an array of mouthwatering dishes that even the pickiest eaters will love–including Orzo-and-Corn-filled Tomatoes, Shepherd’s Pie with Lentils, Bountiful Burritos, Broccoli Mushroom Noodle Casserole, Peppery Ziti with Fennel, Spicy Black Bean and Tofu Stew, Gingered Stir-Fry, and Cheesy Faux Soufflé–Ely gives a whole new meaning to the word “delicious.”
In addition to Ely’s trademark simple recipes, there are dinner menus (including side dishes!) for each season, categorized shopping lists to streamline your trips to the supermarket, and do-ahead tips to save kitchen time. Eating vegetarian has never been so easy or appealing!
Customer Reviews:
For the Non-Vegetarian Too!.......2007-07-24
I got this book to help prepare more meals with a vegetable and bean empahsis. I'm not a vegetarian but I do prepare a few meatless meals a week both for budget and health reasons (add to that I'm pregnant so I'm trying to add more vegetables into my diet). After going through the book I found quite a few recipes that sounded delicious and as an added bonus they are mostly quite simple to make.
Many of the recipes do call for using Tofu or other meat substitutes. That makes sense for the vegetarians as they do need to get protein from somewhere however those recipes didn't really appeal to me. It's not a big deal as I'm not using the meal plan I'm just trying to supplement our diet with some new recipes. There are also some recipes using beans that I don't particularly enjoy (such as lentils and lima beans) but I will either substitute other beans or use a different recipe.
Having grown up with three vegetarians I appreciate how easy this book is to use. It can be difficult cooking for vegetarians and this is a simple yet healthy meal plan that I think will really benefit vegetarian families. I also recommend it for the non-vegetarian trying to branch out in their eating habits. Beside the health benefits these recipes offer it can really help out your budget to cut out meat for a few meals!
Easy and fast and yummy!.......2007-06-25
I've been VERY pleased with the recipes I've tried from this book. The results have been delicious. Tasty is the most important thing but there are three other things I really like--the first is that the recipes are quick to prepare; the second is that the recipes do not rely on those expensive (and to my taste-awful) fake meats from the freezer section; and the third was a pleasant surprise in that these are downright CHEAP to prepare. Always a good thing.

Low-fat cooking expert Sue Spitler has created these special dishes with a wide variety of palates and preferences in mind. Appetizers, more than 500 entrees, salads, soups, breads, and desserts offer even the choosiest vegetarian a rich choice of satisfying meals. Allowing for vegans, lacto-vegetarians, ovo-vegetarians, and lacto-ovo-vegetarians, she labels each recipe with an identifying icon. Nutritional information and diabetic exchanges are included for each recipe. There is also a new chapter, "Menu Express," which contains recipes and meal plans to prepare and cook in less than 20 minutes.
Customer Reviews:
One of my most used books.......2007-06-09
I'm not even vegetarian and this is one of my most used books, especially in the summer when fresh fruits and vegtables are abundant. Very tasty and adaptable recipes.
This book is the bargain basement of vegetarian recipes:.......2007-04-26
Having gone veggie a few years ago, this was my first non-introductory style vegetarian cookbook, and although I commend Spitler and company for the sheer quantity of recipes here, I've found the recipes to be very hit or miss. I think this is partly due to the often non-intuitive combinations of ingredients found in many of the recipes. While sometimes these out-of-place ingredients are genius (i.e. the black -not adzuki- beans in the egg rolls, or the more than liberal use of celery seed in the bleu cheese dressing), sometimes these combinations can turn what seemed like a tasty dinner into something even my dog looks askance at (like the orange juice and zest in the hummus or the cream cheese and cranberries in the savory wontons). The dishes err more on the sweet side of the palate than on the spicy side. That said, all of the dessert type foods I have tried so far have been solidly good, while the majority of the entrees required a healthy dose of crushed red pepper. My suspicion is that these recipes were generated by a crew less than adequately familiar with vegetarianism, as many of the recipes attempt to make use of meat substitutes (i.e. Mexi "meatball" soup, rigatoni with italian "sausage" and fennel pesto, "burgers" provencal, swedish "meatball" and dilled potato cassarole, etc, etc)with less than appetizing results. There are a least two problems here: first, there are plenty of amazing veggie dishes that don't try to imitate the "meat and potato" style meal (there are almost NO Indian entrees in this book), and second, nothing makes one miss the real thing more than a poor substitute. Yes, those tvp crumbles look innocent enough in the grocery aisle and are easy enough to throw into the pasta sauce, but unless you want to spend you're evening sobbing over your half eaten plate of "sausage" lasagna for your momma's home cooking, then PLEASE skip the phoneys and throw in some chopped baby bellas instead. To summarize, this book is like the bargain basement of vegetarian recipes: over-stuffed with so-so items, but amidst the bland and the out-and-out bad, there are a few gems that make this book deserving of a place on your shelf.
As a bonus for those tracking diet information: each recipe is tagged as vegan, lacto-ovo, lacto, or ovo, to make finding appropriate recipes easy, and all recipes come with calorie counts, basic nutrition information, and the exchange listings for the ADA.
great reference.......2007-02-05
I bought this because my friend has this and made so many great recipies from here. It's huge with many great recipies that I use very often. My only complaint would be it's no frills without photos. Everything I've made is great... hard to believe it's all healthy!
Every Recipe a Winner!.......2006-07-11
I've had this cookbook for six months or so, and I've made somewhere around 40 of the recipes. Every one has been a huge success! Sue Spitler understands that vegetarian doesn't have to be boring. I've fed non-vegetarians meals made from these recipes and have had rave reviews! If you're new to vegetarianism, or if you want to bring excitement to your meals, you have to own this cookbook!
Interesting recipes, Excellent Nutritional Information.......2005-08-26
PROS: This book is wonderful for those who are planning low-fat meals for dieting purposes. Even before I prepare the meals, I am able to see the total nutritional information for the serving for that meal. It also gives me greater flexibility to omit or half some of the ingredients that are higher in fat grams (for example if a meal says 5g fat per serving I choose to: a)omit the oil or oil based (or high fat) ingredient OR b)half the serving). Knowing the nutritional values in the meal gives me freedom to manipulate it until I'm satisified that I'm getting the lowest fat intake possible. The book is beautifully laid out based on meal categories (eg. Soups & Stews, Sauces, Veggie Express, etc.) So I decide what I want for a meal and then I turn to that page. One note to buyers: I recommend that you browse through the meal ingredients the day before to get an idea of what you need to buy at the store. Each recipe is labelled so that each vegetarian type would know at a glance whether that meal is right for them. WONDERFUL!
CON: Some of the ingredients asked for are too exotic for me to find where I live. (e.g. cactus leaves, achiote oil, adzuki bean). This isn't too much of a CON, since I can skip those meals and choose something else.
This is a wonderfully laid-out book with a wealth of dishes that allow you to be creative with vegetarian meals. I highly recommend it!

Not for the person who doesn't like to cook alot.......2007-10-11
I didn't really find any recipes that leapt off the page at me. Frankly I had this for a couple of months and haven't even used it yet. I was hoping for more common recipes that could be converted to vegan and vice versa. Disappointed
Options for a family.......2007-09-28
The Flexitarian Table is a beautiful cookbook with photos, clear directions, preparation tips and recipes grouped as menus according to seasons. With options for cooking vegetarian, with meat, or both, in one recipe, it has been easy to please the palates at my table. Approach the recipes with a sense of adventure and enjoy healthy, tasty meals.
A fantastic cook book for all palates.......2007-09-05
Peter Berley's new book "The Flexitarian Table" is terrific! Its the perfect cook book for those of us who struggle with satisfying both vegetarians and meat eaters at the same dinner party! The recipes are user friendly, easy to follow, and most importantly, delicious!!
I highly recommend this book to any one who enjoys a good, healthy meal! Its a necessary addition to anyone's cook book library!!
Peter Berley Knows how to teach!.......2007-07-30
I owed his other book before and this one is so beautiful. I love cooking and I don't buy the domestic goddess thing...
I have been a vegetarian for 14 years and started to eat meat evetually in the last 4yrs.
This book is about healty cooking, using fresh ingrediants, balancing taste and pleasure and health and peace cooking.
Vegetarians and meat lovers will enjoy the quality of his recipies and his way of organizing the book.
The idea of "work plan" is fantastic. With that we are able to organize wht to do first from each dish according to backing times etc.
Everything works and is delicious and healthy.
Thanks Berley. I am your biggest fan.
Thank you Peter Berley!.......2007-07-17
The mans a genious.
My whole life I have been a meat eating vegeterian. Sounds like an oxy moron, right? Let me explain. I eat meat, grass fed, organic meat, and that doesnt mean just chicken. However, I get very exited about a refreshing grilled tofu salad, or roasted tempeh. Granola, Brussel Sprouts, rice and beans, bring it on! I'm the middle man when it comes between veg heads and carnivores, and Peter Berley wrote a book about it. He understands the beauty of food to the fullest, you can have your meat, and seaweed too. Now I can cook a meal and invite my radical raw foodist friends, as well as my mid western pals who love meatloaf. I'm just happy a chef was able to grasp the concept the there is no "better" way to eat.
P.S. his recipes pan out very well, try the lamb/tempeh kebabs in his summer section!

Book Description
Today, more and more peopleespecially teenagersare becoming vegetarians, but many of them live in households where the rest of the family eats meat. Forget the hassle of having to make several different meals to suit each individual need; veteran cookbook author Carol Gelles has designed basic recipes that can be finished in two ways: one with meat, and one without. The basic stuffed eggplant recipeafter the base of the dish is preparedcan become Cornbread Stuffed Eggplant for the vegetarians, and Turkey Stuffed Eggplant for the meat eaters. Moroccan Couscous becomes Moroccan Couscous with Curried Chickpeas or Moroccan Couscous with Lamb. And the book has been cleverly designed so that the basic recipe sits opposite the two finished recipes, eliminating the need to flip pages.Carol Gelless articles have appeared in many national publications including Weight

Something for Me!.......2000-08-21
I have so many cookbooks that I was reluctant to add yet another to my collection. However, as a vegetarian who has added some fish and chicken to my diet (for a number of complicated reasons), I wanted some recipes that had these foods without just being a slab o' meat on a plate. I like this cookbook because it has many recipes that incorporate some meat, as well as interesting and tasty looking vegetarian dishes. Since my children are still vegetarian, it's great to be able to prepare a single meal with and without meat. The recipes are easy and straightforward, and the author offers helpful advice about substitutions. I made the lo mein (half with tofu, half with shrimp). Everyone in my family loved it. It was easy to prepare, and making the two versions was a snap. I was impressed by the number of yummy looking vegan recipes. I also liked the way the author divided the recipes into ethnic categories (American, Eastern European, Asian, etc). While some recipes are not gourmet fare (hot dog goulash or fried rice based on a Rice-a-Roni mix), most look simple and homey and some are definitely company fare. I thank Carol Gelles for simplifying making veggie and non-veggie meals at the same time. And I thank her for making them taste good.

One of my favorites.......2007-08-01
This is one of the best vegetarian cookbook ever. Most of the recipes are simple and fast to make, and all of them delicious.
It classified every meal into vegan, lacto-ovo, lacto, and ovo; and each recipe has the nutrionational guide too.
In the last edition they added the Smart Carbs chapter, for vegeterians that are also interested in wiselly choosing their carbohydrates.
I totally recommend this book for everyone that want to eat in a healthier way.
