Based on sound science and the research of more than 300 nutritional experts worldwide, it is well organized and indexed, and will be a refreshingly clear reference for anyone who wants to know about nutrition and health (know anyone who doesn't?). One of the best books I've seen on the subject.

BEST BUY EVER.......2006-09-11
I boutht this book in 1997 and still use it and have it handy all the time! i'm always trying to keep up my healthy habits and maintain a balanced diet. this book is a must have! it is written wisely and very easy to understand. it is written in alphabetical order and you can look up almost every sickness, foods, vitamins and minerals, what is good for what, what are the drawbacks and where to find them. for sickness what it is, what should you eat, what to cut down, what to avoid. etc. if you are a person like me and like to know what you eat, you must own this book! by the way i'm ordering today a 2004 copy for my mother in law who has recovered from breast cancer and is so much into eating healthy.
EXCELLENT TOOL FOR RAISING HEALTHY KIDS.......2006-07-05
I HAVE OWNED THIS BOOK FOR OVER 5 YRS NOW. I USE IT REGULARLY TO LOOK OP NUTRITIONAL PROPERTIES FOR THINGS THAT I EAT. I AM AN RN WITH HEALTHY EATING HABITS AND I JUST LIKE TO KNOW HOW DIFFERENT FOODS PROMOTE HEATH OR WHAT COULD BE HARMFULL FOR ME. I ALSO USE IT TO TEACH MY KIDS WHAT THEY ARE CONSUMING. THEY ARE NOW MORE WILLING TO TRY ASPARGUS AFTER THE PROPERTIES ARE EXPLAINED TO THEM. I LET MY FRIEND WHO SURVIVED BREAST CANCER BORROW IT TO MODIFY HER EATING HABITS. WHAT AN EXCELLENT BOOK. IT STAYS IN MY KITCHEN.
Full of Good Information.......2006-03-13
A reminder that you really are what you eat. Great reference on foods and their nutritional value. Much of this information is now available online. But, if you prefer a hard copy for frequent reference this is a great book.
A Treasure Chest of Nutritional Information.......2005-01-23
This book is so easy to navigate and is literally packed with wonderful and useful information. Food are listed and discussed in alphabetical order.
You will want to fill your diet with the "good" and understand why some foods are "harmful." I like the way that nutrition is discussed pertaining to certain diseases and conditions such as cancer, hair & scalp problems, kidney disease etc.
The book is also a visual treat filled with color photographs and easy to read text & charts.

Great Book on Healthy Fats.......2007-04-21
Get this book. It has excellent insight on healthy fats.
This book could change your life.......2007-01-15
Udo's book is an answer to health and nutrition issues present in developed countries today. His comprehensive presentation of what exactly happens at the moleculear level with foods that we (inhabitants of developed countries) typically consume puts a unique perspective on what our bodies need. His detailed treatment of trans-fats, essential fatty acids, and other fats and oils makes perfect sense from when it comes to analyzing the claims of the thousands of diet proposals one finds in print and on line. His is a common sense approach, with the premise we are what we "eat, drink, and breath." The acknowledgement that nutritional deficiencies related to consuming "white grain, white sugar, and white fat" is enough to stop and make anyone think about what they are actually putting into their bodies, and what the effects are. With the rise of diabetes and other disease related food consumption on the increase, the warning is stated clearly. Having had grandparents, who ate in a way paralleling Udo's recommendations, that live well into their 90s with minimal health issues, acts as a "proof of concept" for me. I don't want to sound pushy by saying that everyone should be reading this, but give it a try and draw your own conclusions.
The Truth About Fats!.......2006-12-20
This is a magnificent piece of work by Udo Erasmus, a true pioneer of health! If you're looking to be informed and educated about fats and many other components that relate to nutrition of the human body, this is the book for you. What I really enjoyed about this book is that Udo exposes the manufacturing processes that turns healing fats into killing fats. He also explains the effects of these damaged fats on human health and discloses information that enables you to choose health-promoting oils. Healing fats are absolutely required, together with other nutrients, to prevent and reverse all degenerative diseases including heart disease, cancer, and Type II diabetes.

excellent reading material to explain good and bad fat
Fats That Heal, Fats That Kill.......2006-08-11
In a world that pushes manufactured goodies, this book is an ideal primer to get one thinking about the need to look at the oils consumed in one's diet. There is a bias toward the Omega 3 and 6 fatty acids. There is much more to the subject than the short-chain fatty acids covered such as Extra Virgin Olive and Coconut Oils that are not mentioned in the book.

A Health Food Encyclopedia.......2007-09-05
This is an excellent little book. This book offers "foods that heal" and interesting health/food subjects, as well, as a myriad of helpful food factoids and tips to assist the reader on the road to wellness.
Dr. Jensen not only goes into depth about each of the foods he has chosen as the ones that heal, offering a ton of history for each and how each food can best be used, but he also quickly built a foundation about the very basic physiological needs of the body. From there, Dr. Jensen discusses the most common mineral deficiencies in humans and which foods are rich in them.
Among his many helpful offerings, Dr. Jensen provides a small list of common disorders and juice recipe cocktails that can help the conditions. He also has a chart of the 12 major body systems, which vitamins and minerals they require, and from which foods and herbs you can get them from. ANOTHER chart he offers is what he calls a "food remedy troubleshooting chart" which is basically just a quick overview of what is to come. It's a list of all the "chosen" foods, which chemical elements are most prominent, and what the foods are best FOR.
Dr. Jensen also quickly touches upon his food philosophy and beliefs and his suggestions for diet, such as eating 60% raw, 80% alkaline foods, etc.
Overall, this is just an excellent book, chock full of information. There's no way anyone could lose out from owning this awesome book. There is just so much offered here, I can't imagine ANYONE not being satisfied with it.
And just something worth noting, all of the foods in the book, with the exception of two items (lima beans and lentils), are either a fruit or vegetable. And while that is the case, he does mention some other foods that he believes to be wonderful in their healing and nutritive properties.
Just what I'd wanted for years.......2007-03-25
Love the way this book is organized. If you want to look up a given food, you don't need to look it up in an index, then search thru a lot of text on various pages. Foods are alphabetized and the one thing that stands out with this book is that it doesn't give a food's value, stating "large peach," etc. It will give the weight of the food and value per that weight. Perfect. I call it my food bible.
Nice remainder - or Introduction for some - to the benefits of natural foods.......2006-05-31
Well, Dr. Jensen again has to teach a lesson to most of us. If you don't know who Dr. Jensen, you need to find out and do what he says. Really. He was a pioneer in nutrition, alternative therapies and iridology (diagnostic through iris study) - lived for 93 years until 2001. Being saved himself through nutrition from an incurable - at least at that time, in the 20's - lung disease, he turned out to study how foods impact our health. He traveled worldwide, and learned about the food of many nations. Not only that, he saved a lot of lives and taught people about the way we are supposed to eat to have a vibrant health. The first book of Dr. Jensen that I've read - titled "Doctor-Patient Handbook"; I'll post a review some day - is a good introduction to the process of natural healing, about diet, about fasting and about healing that appear when the body is ready to undo old diseases.
This one book starts by presenting the work and principles of Dr. Jensen's two idols: one is the ancient Greek Hippocrates, the creator of the doctors' oath, and the other is Victor G. Rocine, who had Jensen as a student for years. They both had things in common, as you'll see in the book. Quoting Hippocrates: "Let medicine be thy food and food be thy medicine". From the work of Rocine you will learn some very important things about the body chemistry, how the foods contain such chemicals (e..g. sodium, calcium) and how the influence that balance; how the body fights against bad diet (of course by worsening other parts, such as the joints), and so on. It's an eye opener!
Then, in the next chapter, Dr. Jensen talks about his own work, how he improved what he had been taught, applied on his own patients and taught them how to eat. For example, he explains why eating the seeds for most fruits is something that we should be doing. Also, there are table explaining which foods are best for some bodily system (nervous, digestive, respiratory, etc.), and a long table presenting some health facts and tips for many veggies and fruits.
The second part of the book is a fairly long list of section, each being dedicated to one particular fruit or veggie. For each of them, the history is presented (where it is believed to have been originated, when it started being cultivated in Europe and America), about its varieties, where it is grown in the USA, peak months. Also, there is a subsection on therapeutical value, that, food's effect on the body and when it's best to use it or how to cook it. The section ends with a table presenting vitamin and mineral facts for that particular food.
The book's last part - the third - is a recipe collection. You might learn some new tips from there related to how to cook without destroying too much of the nutrients. However, what I liked most from this recipe part is the following excerpt:
"When someone asked what I most like to cook, I was embarrassed to admit that I do no especially like to cook. The reason that I cook is to eat well, feel good, and be healthy."
You wouldn't expect to hear this from a nutrition doctor, would you? He, he really loved his work and helping people.
Foods That Heal A Gude to Understanding and Using the Healin.......2001-11-07
Bernard Jensen is a brilliant and accredited nutritionist and natural healer. This book is an excellent source of nutritional information for the person who is willing to change their diet to understand that all ailments can be traced back to what we eat. Change your diet change your health. His philosophy is sound and scientifically accurate. You can make a difference in your health by choosing the correct foods. Food is the first medicine and Dr. Jensen describes the therapeutic values of many foods for specific ailments; lists nutrient availability of many foods and adds recipes to boot. This book is a must for anyone who is even contemplating natural healing or seeking preventive measures to ill health. Dr. Jensen is a gifted teacher and I highly recommend all of his published materials.
America's Leading Authority on Prevention.......2000-05-29

One of the most useful books I own!.......2006-09-07
The information in this book is well presented, easy to read and understand, concise and to the point, well researched and documented, and most of all, extremely helpful. The book is layed out alphabetically with each short chapter covering a different topic, from "Acne" to "Wrinkles", (108 total). So it is easy to quickly find information - you don't have to read the whole book to find your answers. Although once you find out how useful the information is, you will likely find yourself wanting to read every chapter.
When medical doctors diagnosed, but could not cure my anemia a few years back, it was this book that told me about a less common form of anemia that is related to a vitamin deficiency. I bought and began taking the non-standard form of the missing vitamin, as described in the chapter on "Anemia", and my condition was cured. As this form of anemia can cause death, Maureen Salaman's book may have literally saved my life.
So "thank you" Ms. Salaman, for this and for all the other great info in this book that has helped so much to improve my quality of life.
The Best Book You'll Ever Really Use.......2006-04-26
I've had this book for years and it really works.
For someone who can not physically tolerate man made chemicals ie: Medications, this has been a total life saver and I trust it more then I do any Doctor !
Also I've used the vitamin C therapy and it definately works too .
A book I will keep forever !
GREAT BOOK.......2003-07-28

A Tasty Addition to Modern Medicine.......2006-02-10
Out of all of the books I have seen in the "home remedy" category, this is one of the few that actually gives you recipes and examples of how to use the various foods and herbs to help treat different ailments. I originally ran across this book in a bargain bin at a discount store when shopping with my mother. She wound up with it and I with another book. After reading through it one day I found it was well worth the $4 she spent and decide I had to have a copy. Amazon Ho!! The layout is easy to read and wonderful to quickly find a tasty home remedy for a wide variety of aliments. Good Job Anne Egan!
The only cookbook you may ever need!.......2002-12-20
This is such a fabulous cookbook that it is one of the few I have left in my kitchen. I am a women's health care nurse practitioner and am very interested in the way nutrition and diet affects health. This book is right-on by recommending a varied diet, rich in whole grains, vegetables, fish, etc. It doesn't limit any type of food and includes meat dishes and desserts. My favorite is the soup section, full of easy-to-make and delicious comfort foods (the pasta e fagiole soup is excellent). I am a fan of Dr. Andrew Weil's books and this cookbook is an excellent accompaniment to his diet and lifestyle advice (better than the cookbook he co-authored this year). The authors also include up-to-date information on the importance of eating omega-3 fatty acids, which many books leave out even though it is so important (for more on this read the excellent "The Omega Diet" by Dr. Artemis Simopoulos). This book does not advise skimping on fat either...it just emphasizes eating healthy fats. This book deserves a spot in everyone's kitchen!

Easy to swallow nutritional info and tasty recipes........2006-08-11
I came across this book at my library and checked it out on a whim. After wearing out my renewals and having to bring the book back I hopped on Amazon and ordered it. This one I need to own!
If you are trying to incorporate healthier foods into your diet or just bone up on what's good for what than this is a great book. Its layout is very friendly. The author breaks her chapters down into the areas you keep your food; ie "The Tea Tin", "The Honey Jar", "The Cookie Jar", "The Fruit Basket", "The Breadbox", "The Vegetable Bin" and so on. (Like the title suggests.)
Each chapter gives basic buying and storing info, pertinent health info, a highlighted section of "Best For Helping You: . . ." that lists its health benefits such as "Prevent heart disease", and "Strengthen bone" etc.
The recipes that I've tried are interesting, easy and tasty. (I love the barley bread!) They aren't complicated and you don't need to go to the ends of the earth to find some odd rare thing that the recipe can't be made without.
I love veggies but have a tendency to get bored with them and need reminders of yummy combinations or spices that I've forgotten about. This book pulls me out of that tunnel vision that there's one way to make something and when I'm bored with that then I just don't eat that something anymore for a while.
The recipes also give a per serving breakdown on calories, carbs, fat, saturated fat, dietary fiber, cholesterol and sodium. Handy info that.
I would highly recommend this book to a wide variety of people. If you're a beginner on the "eating healthier" path then this book's Basics will be very helpful without lecturing you or making you feel stupid for not knowing this already.
If you do know a lot of this nutrition stuff already, I'd bet you'd still like this book for how it compartmentalizes everything into easy-to-referece bits. You would certainly want your less nutritionally-advanced friends to have a copy for themselves because you love them and want them to live longer, healthier lives.
