Book Description
Over 400 recipes from the kitchen of Chef Brian P. McCarthy!
Now that you've become a vegan, you're learning lots of ways to prepare tofu, but you or someone you love is really starting to miss macaroni and cheese, turkey dinners, pumpkin pie and birthday cake. Maybe you and your family feel self-conscious (and hungry) at holidays, picnics, and parties. Or maybe just one person in the family is vegan, but you need to create meals that everyone will eat.
Since the day Brian McCarthy and his wife, Karen, chose a vegan diet for their family ten years ago, Chef McCarthy has created over 400 simple vegan recipes with easy-to-find ingredients for traditional favorites like biscuits, corn bread, stews, pastas, pizzas, cakes, pies, and even eggnog. All the recipes come from the McCarthy home kitchen and have passed the test of many family meals. For individuals or families who are concerned about animals, the environment, or their health, mealtimes just got a whole lot easier.
Customer Reviews:
for the everyday vegan meal, this book is perfect.......2007-08-13
Lest I allow a previous reviewer get away with making pat judgments about the kind of person who would give this cookbook a 5-star review, I am a very experienced cook, have been cooking vegan food for 7 years, and collect vegan cookbooks. This is one of the best I've ever used because:
1. Recipes call for ingredients that are available at your regular grocery store. The only ingredient I've needed that I know I can't find at Safeway is nutritional yeast, and that's okay because I bought a huge jar of it at Whole Foods awhile back.
2. The ingredients are not expensive, and it's easy to see where substitutions could be made if you don't have something on hand.
3. The recipes do not take a really long time to make, which makes them practical for weeknights when everyone is tired from being at work & school all day.
4. The format is very easy to follow, making this perfect for getting your kids or spouse to help with the meal.
5. These recipes are great for new vegans or non-vegans who want to start eating more meatless, dairy-free meals. These foods will be familiar to people who have unsophisticated palates. There is a lot of "comfort food" in this book.
I have made over 25 recipes from this cookbook so far, and every single one of them has been a 5-star or 4-star recipe in my food log. That's a much higher average than almost every other vegan cookbook I've used regularly.
Simple, Easy, Good for New Vegans.......2007-04-22
It is true that this is not a "gourmet" cookbook with exotic and fancy recipes. Of course, that's also the reason people like me have enjoyed it. I'm a new vegan and appreciate seeing how to make simple foods like vegan pancakes without having to do all of the trial-and-error myself. The recipes are for foods you're already used to eating, but vegan-ized. A good starter book for new vegans, and a good book for others to fall back on when they want to make something fast and with ingredients they probably already have. It would nicely round out any vegan cookbook collection.
Not for Experienced Cooks.......2007-04-20
I'm surprised so many people like this cookbook; I thought it was boring. There might be good recipes in it somewhere, but the bulk of the cookbook is dedicated to common sense "prep steps" as opposed to actual cooking. I do not feel I need a recipe to make "Popcorn with Nutritional Yeast," "Roasted Vegetables," or "Roasted Garlic." This book boasts over 400 recipes, but many of them are not actually recipes at all... they're barely meal ideas.
If you're young or have never cooked before, or if you're a brand new vegan who only ever made meat and mashed potatoes, this might be a good book for you. But I never even open it. It's a huge disappointment to someone who actually likes to cook and who can tell a carrot peeler from a wooden spoon.
Nice book, full of traditional comfort foods.......2007-04-13
I'm in the uncomfortable position of eating somewhere between a vegan, raw, and just plain ol' healthy diet. I've found that most vegan cookbooks include more processed grains, refined or natural sugars, soy cheese, and pasta than I want to eat. This cookbooks definitely does that, however, the shear number of recipes (over 400) and creativity included in this cookbook means there is something for nearly everyone. I can finally include my family in my vegan habits more often, thanks to the recipes included. They are simple, without a gazillion ingredients each that require 4 trips to different stores, with an easy to read format and plenty of space on each page for notes. Lots of comfort foods, like macaroni & cheese, soups, and muffins. Plenty of really great ingredients like tofu, nutritional yeast, bulgar, etc. I'm very happy with this purchase.
The Most Used Cookbook I Own! .......2007-04-12
Here at my house we have about a dozen vegan cookbooks. I love them all but The Vegan Family Cookbook is definitely the one I use most.
I love to look at cookbooks and occasionally make an elaborate recipe but when it comes down to it I end up using this one the most solely because the recipes are so EASY to make.
It is awesome being able to just open the book up and start looking through it and finding various recipes that I already have all the ingredients for.
If you are someone who only occasionally gets the time to cook something that has more than a dozen ingredients, but at the same time wishes to cook real meals for themselves and the family, this is the book to get as most recipes involve few ingredients and nothing too exotic, do not require much time, and taste great.
Book Description
Cathe Olson (Simply Natural Baby Food) is back with The Vegetarian Mother's Cookbook, a collection of more than 300 delicious whole foods recipes designed to nourish mothers and their families throughout pregnancy and lactation. The easy-to-prepare dishes are packed with protein, fiber, vitamins, minerals, and essential fatty acids to help both mother and baby thrive. Entrées include many "quick fix" meals and freezable dishes - perfect for the busy parent. Many of the recipes in the book are vegan, and almost all of the recipes provide vegan options. For those with allergies, wheat-free, soy-free, dairy-free, and egg-free dishes are also included. There are even teas and tonics to help ease common pregnancy discomforts.
In addition to recipes, The Vegetarian Mother's Cookbook provides up-to-date nutritional information with recommended dietary intakes, complete guide to ingredients, suggested shopping list, and tips for saving time and minimizing work in the kitchen. This book is a comprehensive eating guide for vegetarian mothers, and for non-vegetarians who want to include more whole foods in their diets.
Customer Reviews:
The best Vegetarian Book I have ever read thus far.......2007-09-23
I am not a strict vegetarian and often get confused or uninterested in the menus many vegetarian cookbooks offer.
Cathe Olson has written a simple book, easy menu's, and most of all delicious recipes.
We have been enjoying so many tasty items from this cookbook. Not only for pregnant women, but for the entire family and your friends.
Good book.......2007-08-14
This is a great book on vegetarian eating while pregnant. Will help you get all you need and has great recipes!

Great vegetarian cookbook.......2007-08-09
I wish I'd had this cookbook when I was pregnant. I bought it now that I am nursing. It has lots of great recipes to help with for common pregnancy symptoms/problems. As well as for when nursing. It seems to be a great cookbook for day to day for the whole family anyway as the recipes are all very healthful and nutrtious, yet not complicated which is especially great when pregnant, as well as a busy mom!
Just as expected.......2007-08-01
Great book - just as it was described. Came in a timely manner, and was less than I could have gotten it at Barnes and Nobel (not including the shipping of course) but being 8 weeks preggers and TOO SICK to move, it was the best route for me to take. Thanks a bunch - Love it.
A Natural Food Inspiration.......2007-04-15
Though I do not qualify as a vegetarian mother or mother-to-be, this cookbook is easily one of my all time favorites. My copy has nearly doubled in size from all of the pages I have earmarked to trial. I have already trialed the Gingery Black Beans and Sweet Potato Salad w/ Peanut Butter Dressing. Both were easy to prepare, delicious, and surprisingly filling as a main dish. The author has also inspired me to purchase a few new-to-me ingredients, such as wheat berries, for her Wheat Berry Pilaf, and some coconut oil to prepare the wheat-free Coconut Almond Shortbread. I do hope that she opts to produce a second vegetarian / vegan cookbook titled for everyone. After all, we don't want the men to feel shy about purchasing and using her nutritious book of recipes!
A few of my extra notes & tips:
This cookbook contains over 300 recipes, all of which are vegetarian, most of which are vegan/dairy-free or have vegan/dairy-free options
The recipes are fairly easy to follow, with more than half containing 10 ingredients or less. They range from extremely simple options, like basic oatmeal and homemade ginger ale, to the slightly more complex tofu quiche and gluten-free bunt cake.
This is an attractive book, suitable for gift giving to women who are expecting. It is a unique and intelligent baby shower gift, that will likely stay in their collection long after the baby is born.
This cookbook deserves five stars for layout. The font is large enough and very easy to read, recipes are typically one per page, and the format is very simple to follow.
Though the entire book is not a one-size-fits-all for special diets (with the exception of vegetarian), there are many wonderful gluten-free, soy-free, egg-free, and nut-free recipes throughout. It is up to the reader's discretion to pick the recipes that are suitable for their diet.
I am a dairy-free consumer, who is learning to cook vegan. Though the cookbook is geared more towards vegetarians who are tinkering with cutting out the dairy to go vegan, I found it incredibly useful.

Customer Reviews:
not much new here.......2007-07-23
I have another veg cook book by Nava Atlas, and this book is very similar. I got this book because it's big selling point is that it has plenty of simple recipes for picky kids. This book didn't really offer much new from any other veg book and nothing really new or inspiring for my picky kids. If you are looking for a basic simple veg book this one is okay. It offers plenty of vegan recipes, maybe more vegan than vegetarian. Not the best book ever.
One of the greatest and most used books in my kitchen/ This one is for the whole family!.......2007-06-25
The recipes are so easy and I love how nava atlas lists other side dishes on the same page to make a well balanced meal. I orignally bought this book to introduce my little ones to vegetables as the book promises on the back cover that it is the only vegetarian cookbook designed to satisy every member of the family and I am amazed my 3 year old eating all the veggies on his plate and actually loving it and asking for more. My husband and I just love this book, I use it just about every day. I am currently looking at vegetarian Express by nava atlas we LOVE this book as well. Try it and enjoy.
This is now my favorite cookbook!.......2007-03-08
I have been using this cookbook almost daily since I recieved it. It has so many great recipes that have proved to be both child and husband friendly. I would suggest this cookbook for anyone looking for some quick, healthy ways to eat better. I also like that most of the ingredients she uses are things I normally have on hand.
My favorite cookbook.......2006-12-20
This is a wonderful vegetarian cookbook, but I think that meat-eating families should have it on their bookshelves, too. In fact, you don't even need kids to benefit from this book.
This book provides recipes, but more importantly, it provides tons of ideas for nutritious meals, snacks, shakes, baked goods, etc. Although many of the recipes are written to use dairy products and eggs, you can make them vegan with a few simple substitutions.
Unlike many vegetarian cookbooks, which require the use of fancy-schmancy ingredients that are hard to find and that you probably don't have sitting around the house, these recipes give suggestions and variations so that you can use the ingredients you have handy or just like better. Many of the dishes are also not terribly labor-intensive, and some are not labor-intensive at all. The result is filling, nutritious, earth-conscious home-style cooking that even the pickiest eaters will love.
Recipes include everything, from full dinners, to soups, to breakfast foods, to smoothies, to quick, no-cook snacks. Ideas on how to serve and pair foods are also provided, as well as some nutritional information.
To sum up, I love this book, and I don't even have kids!
My FAVORITE cookbook.......2006-10-17
I have a lot of vegetarian cookbooks and I like a lot of them, but this one is my FAVORITE! The recipes turn out great (sometimes I add more spices) and I usually have most of the ingredients in my kitchen which is probably the best part of this cookbook. I highly recommend this cookbook if you're looking for recipes that are simple, family-friendly, and frankly, delicious!

A fine vegan cookbook.......2006-02-28
Some of the concepts and preparation methods are dated (you can't home-can in tin cans any more - I don't think) but I have tried some of the recipes, and they taste MUCH better than they look and since they have no animal products, they take a long time to go stale.
For me, the main obstacle in trying the main dishes is the extremely long cooking times - as long as 6 hours, and using a Crock-Pot probably won't work. As for breads and side dishes, no problem.

In 1975, Claire Criscuolo founded the vegetarian restaurant Claire's Corner Copia, in New Haven, Connecticut. The restaurant soon earned a reputation for simple but delicious home-style fare, prompting Criscuolo to write Claire's Corner Copia Cookbook, a compilation of the restaurant's 225 best recipes. Devotees of healthful vegetarian cooking that emphasizes whole grains, fresh produce, and seasonal specialties will welcome Criscuolo's book.
Providing dishes organized by courses and food or meal categories such as sandwiches and breakfast, Criscuolo's book also reflects her Italian heritage, with its penchant for rich, vegetable-laced soups and hearty pasta entrées. Dishes like My Mother-in-Law's Special Holiday Soup, replete with beans, cauliflower, broccoli, escarole, and spinach, and Baked Rigatoni with Amalfitan Sauce, a marinara sauce-based dish, are savory examples of Criscuolo's Italian-influenced fare. Other cultures are represented by dishes such as Mexican Stuffed Peppers, made with a corn and rice filling; Hummus and Tomato on Wheat Bread, a particularly flavorful sandwich; and Szechuan-Style Eggplant. Criscuolo's baked specialties, including Cheddar Scones, Corn-Walnut Muffins, and Pumpkin-Walnut Pie, are of particular interest. Though the quest for healthy dishes occasionally leads Criscuolo to offer recipes featuring food substitutes or dubious low-fat products, most of her cooking is honest and tempting and should find its way to the everyday tables of all food lovers. -- Arthur Boehm

bread, soup, and cake.......2007-01-16
When I lived in New Haven, my favorite lunchtime place was Claire's Corner Copia. My favorite lunch was soup, a mini loaf of bread and carrot cake with butter cream frosting. The frosting was so popular, it was kept in a bucket, and the staff would scoop out a giant portion and slather it on the cake. I'm so glad I can make it from this cookbook now that I'm on the west coast and can't make my weekly trek to Claire's. And the soup! I never had a bad one--they were all great, and they're here, too. Get this book and also Claire's Italian Feast. If you can't get to the restaurant, these recipes are the next best thing.
One of the best.......2006-10-25
This vegetarian cookbook is one of the best I've read and used yet. I've made several recipes and they are easy, fast, and delicious. Another thing I liked about this cookbook is that most of the ingredients you will have on hand or they are easily accessible at any grocery store. I recommend this book to anyone.
Outstanding and Easy Recipes.......2003-10-13
I had been wanting to visit Cliare's for weveral years. Last summer, I finally ate there, and enjoyed every bite, especially the trifle dessert. Also on the trip, I purchased this cookbook, and absolutely love it. I'm critical of many books, but find this to be very well-written. Each chapter is preceded by personal information, recipes are easy to follow, ingredients easy to find, and the finished product is very delicious. A cookbook that I will use over and over again, unlike many others which are not as easy to work with. The cover is very colorful and enticing. I'm ordering one for a friend, and hoping for a return-visit to Claire's. I'm from New York City, and have lived in four states, and Claire's is one of the best retaurants in the U.S. ----Maure, in Illinois
vegetarian food for meat-lovers.......1997-05-19
Visiting Claire's Corner Copia for lunch was always a treat when I was growing up in New Haven,
so I was very excited when my mother gave me Claire's cookbook for Christmas 2 years ago. It did not disappoint. The recipes are delicious and easy to follow and many have an Italian flavor. I think the best recommendation I can give is that my meat-loving husband enjoys the meals I have prepared from this cookbook- his favorite is the Eggplant "Meatballs"- try them!
Customer Reviews:
Now my favorite.......2007-10-10
This is now my favorite cookbook! (And I love cookbooks.) I love all the color pictures and easy to follow directions. I have tried 24 of the recipes over the last couple of months. There has been only one that we didn't care for much, the rest were ALL WINNERS! We have shared many of the dishes with non-vegetarians who have just loved them. I recommend the entire book, but just a few of our favorites you must try are the Spinach Dip, Waffles, Strawberry cream pie, Fruit pizza, Mock Salmon spread, and Coconut Macaroons. I could go on and on. The cover is correct in saying "Healthy Cuisine Your Family will Love." The tips and extra information in the preface and other areas are wonderful. Several years ago, I was 80 lbs overweight. This type of lifestyle has given me my life back! I am now in my ideal weight range and loving how I eat and live! This is a must for anyone that wants to get control of their weight, diabetes and/or cholesterol - or just wants to add some great healthy recipes to their life.

The nuts and bolts of vegetarian home cooking........2000-07-27
Almost all of the old family favorites are represented. The instructions are clear and concise, and the food is delicious. Be prepared for some inventive new spins on some the classics (hoppin' john with olives, or collard greens with ginger and chili pepper)that might be a bit intimidating. But be brave, the adventurous will certainly be rewarded with a collection of meals you and your family will enjoy for a long time. The vegan brownies alone, are worth the cost of the book.
Enjoy!
A great first step for Vegans!.......2000-06-19
I recently decided to take the wonderful leap from being a vegetarian to a vegan and I went to a friend of mine for a cookbook to borrow so that I had somewhere to start from. The book that she lent me was "The Vegetarian No-Cholesterol Family-Style Cookbook" and I have nothing but great things to say about it. The recipe for eggless Mayo is a must along with great ideas for holiday dinners. Wonderful ideas for deserts and the Mushroom Barley soup is what they should've had upon Mt. Olympus (if Hera had made this maybe Zeus would've stuck around the house more often). Although it is a little small in terms of variety it is a great place to start from for anyone who is vegan to someone who'd like a healthy meal now and again.
