Book Description
No wonder it's so hard to lose weight -- our bodies are designed to keep weight on at all costs; it's a matter of survival. It's embedded in our DNA. Our diet has changed dramatically over the past ten thousand years, but our genetic blueprint has not -- our bodies are not designed to process the types of food we are fed today. It's like putting diesel fuel into a regular car -- it just won't work. And making matters worse is the fact that diets don't work either: less than 6 percent of weight-loss attempts succeed. The average person who goes on a diet actually gains five pounds. But a medical revolution is under way, finally showing us precisely how the powerful forces that keep weight on can actually be reprogrammed to automatically burn fat and keep weight off for good. The concept is simple. By learning how to work with our bodies instead of against them, we can ignite the natural fat-burning furnaces that lie dormant within us. For the first time ever, Dr. Mark Hyman makes this new science of weight loss available to the general public. This medical revolution is based on a groundbreaking concept called nutrigenomics -- the science of how food talks to our genes. This science is actually startlingly simple. Food contains information and instructions for our bodies -- eat the right foods and send instructions of weight loss and health; eat the wrong foods and send messages of weight gain and disease. After spending the last ten years conducting pioneering, hands-on research with over two thousand patients at Canyon Ranch, one of the world's leading health resorts, Dr. Hyman has discovered the seven fundamental causes of obesity. While fad diets have identified one or two of these causes, never before have they all been integrated into a single, simple plan for automatic weight loss -- this is the promise of UltraMetabolism.
UltraMetabolism is an easy-to-follow eight-week plan to help you lose weight based on your own unique genetic needs. Since each of our bodies is different and may require more or less of certain nutrients to awaken our fat-burning DNA, Dr. Hyman shows you exactly how to customize the program for your own particular needs. The program includes menus, recipes, and shopping lists, as well as recommendations for supplements and exercise and lifestyle treatments designed to create a healthy metabolism -- an UltraMetabolism -- permanent weight loss, and lifelong health.
Ultrametabolism Testimonials
"...I lost 50 pounds and have kept it off for 4 years."
"The last five years have become the healthiest years of my life. Because of Dr. Hyman's program, I have an in-depth understanding of my physical condition and have tailored a weight loss program for my needs. Since following his plan, I've significantly reduced my cholesterol from 240 to 160. In addition, I lost 50 pounds and have kept it off for 4 years."
-- Joseph Bernstein Milwaukee, WI
"I've dropped 2 dress sizes (so far)...Dr. Hyman literally gave me my life back."
"Over the past few years I had gained 70 lbs and felt progressively worse as I bounced from doctor to doctor without any real answers for my weight gain, my migraines, or my many other ailments. Dr. Hyman helped me understand how many of my health issues were due to food allergies. Lab tests showed I was allergic to 28 different foods! I started on the DeTox phase of Dr. Hymans program and within 3 weeks, I lost 11 pounds and my swollen wrists and puffy face went away. I used to wake up extremely exhausted, but now I wake up at 6 am and maintain a constant level of energy throughout the day. No other program gave me a means to discover the real source of my problems. Now I have the energy to play with my 8-year-old and 11-year-old children. My entire family is finally eating healthier, and I've dropped 2 dress sizes (so far!) Dr Hyman literally gave me my life back."
-- Audrey Meyer Lampert North Granby, CT
"The menu was easy to implement, in spite of my hectic lifestyle..."
"Through Dr. Hyman's program, I not only dropped my cholesterol from 335 to below 200, but I lost 20 lbs and have kept if off for the last 2 years through his instructions including a specific meal plan, exercise, and supplements. The menu was easy to implement, in spite of my hectic lifestyle and easy to adapt when I traveled to hotels and restaurants. Matter of fact, I went from a pant size of 38 to a 36 and needed to buy a lot of new clothes."
-- Cavas Gobhai Cambridge, MA
"It was easy! All I needed to do was follow his instructions; in the first 30 days I lost 21 pounds."
"Substituting simple foods with other healthy foods that I love helped me lose the cravings for all the junk I used to eat. Dr. Hyman's weight loss program gave me a lot of information about my body. It was easy! All I needed to do was follow his instructions; in the first 30 days I lost 21 pounds. I feel better than I have in 10 years and can now walk up the stairs without losing my breath. I forgot how good I could I feel."
-- Deede Dominick Phippsburg, Maine
"I was ready for a change, and Dr. Hyman's program helped me prioritize my life."
"After I quit smoking three years ago, I snacked a lot in order to forget about smoking. After doing that for 6 months, I gained almost 30 pounds. I was sick and tired of having no energy, and I wanted to feel good again. In addition, I love to shop, and I wanted to buy fancy clothes without having to shop at the big and tall store. I was ready for a change, and Dr. Hyman's program helped me prioritize my life. Since I started in 2003 I have lost over 60 pounds and have maintained the loss. In addition, I've gone from a size 18 to a size 10. When I look at old pictures, I realize that I feel and look better than I did 15 years ago."
-- Margarida Glenhage Gothenburg Sweden
"...I lost 30 lbs with no exercise."
"As a single mother, I was tired of feeling sick all the time and decided to change my life so that I could become healthy for my 3%-year-old daughter. After relearning how to feed myself and my daughter, I lost 30 lbs with no exercise from June to December and I dropped my cholesterol 105 points."
-- Nancy Grey DC Bronxville, NY
"I lost 30 lbs, went back to a size 4, and no longer have migraines."
"After going through an 8-month period of being very sick with hives, having extreme inflammation in my face, and gaining 30 pounds, I found Dr. Hyman's program. Because I went through his simple plan, I uncovered that I am allergic to gluten, the protein in wheat, which was the source of all my problems. After getting on his plan, I lost 30 lbs, went back to a size 4, and no longer have migraines. My husband even noticed the change and went on the program too; so far, he's lost 45 pounds."
-- Debbie Gosney Charlotte, NC
"...it's easy to jump back on when I occasionally fall off..."
"This program gave me the satisfaction of being in control of my body and life. I've maintained my 18-pound weight loss since 2002, reduced my glucose levels from 170 to 102, and taken control over my diabetes to the point where I no longer have any symptoms. Going on a program like this is like a religious conversion; it's easy to jump back on when I occasionally fall off and I have more energy than I've ever had. At the age of 71, I run 4 miles a day and feel great."

What a load of you know what.
The best written diet book would be as follows.
Eat less exercise more.
Focus on health and the rest will come naturally.......2007-09-18
Mark Hyman deals with many myths associated with dieting and weight loss. He explains many not so obvious causes of gaining weight. He also reminds the reader of important rules to follow in order to keep not only thin but also healthy. All in all this is a good book for someone committed to losing weight and keeping it off. What I particularly liked about this book is its focus being shifted towards living healthy lifestyle. The author emphasizes the importance of cleansing the liver and detoxifying your whole body. This sounds to me like a revamp of the same good ideas so well presented in the book Can We Live 150 in which the author focuses exclusively on health and self-help (body cleansing, proper breathing, and using all the "natural doctors who are always with you"). Interestingly losing weight seems to be the natural outcome of one's healthy lifestyle. This has at least been so in my case.

Useful, but boring.......2007-09-16
Ok, so it says it is not a "diet" book. Then it better be useful, and it better be interesting. The book fails on part two: it's full of useful information but is not as entertaining and easy to read as the YOU books by Dr. Oz. Ultrametabolism is ultra bo-ring.

Book Description
The Lean Machine
Now you can enjoy all the bread you want without any worry about fat. Over 150 irresistible recipes in this volume transform your bread machine from an efficient home bakery into an invaluable aid to nutrition. Most of these aromatic loaves contain 5 percent or less of fat. on top of that, these fresh-baked doughs contain absolutely no sugar or artificial sweeteners. All that is added are natural fresh and dried fruits, vegetables, and grains forextra flavor and vitamins, minerals, and fiber.
Recipes run the gamut from mildly sweet, subtly flavored "Breakfast Breads," like Cranberry Buns, Banana Buttermilk Bread, and Whole Wheat Raisin Bagels, to chewy, firm-slicing "Sandwich Breads," such as Seven-Grain Bread, Lentil Bread, and Italian Sourdough. Creative bakers will love the assortment of stuffed and shaped breads and dumplings and such appetizers as Fresh Tomato Pizza and Chinese Dried Mushroom Dumplings made easily with dough from the bread machine. For people on a low-sodium diet, or smart eaters who just want to cut down on the amount of sodium they ingest, there is an entire chapter on "No-Salt Breads," including many traditional favorites such as Salt-Free Pumpernickel and Salt-Free Onion Rye.
You won't believe the no-sugar sweets-Tart Tatin, Chocolate Tea Bread, and Biscotti with Dried Cherries are just a sampling -- that make up the "Dessert Breads" chapter. These taste luxuriously rich but are low in fat. And so that there's no waste, ideas included in "Bread Again" offer tasty low-fat, no-sugar ways to use leftover loaves.

Easy, healthy, unique breads from around the world.......2006-09-27
Having recently relocated to San Antonio and finding a lack of bakeries, I purchased a Cuisinart convection breadmaker. Although the Cuisinart CBK-200 comes with a decent set of recipes, many are laden with fat (with 30% or more of calories coming from added oil, butter, nuts, etc.) and sugars. I try to eliminate oils, fats, sugar and salt from my diet, so I was looking for a healthier alternative to home breadmaking.
Enter The Best Low-Fat, No-Sugar Bread Machine Cookbook. Added fats have been replaced by lean, fruit- and veggie-based alternatives such as unsweetened apple butter, applesauce, minced prunes, and mashed sweet and white potatoes. Sugars such as molasses and honey are replaced by dried fruits (raisins, currants, cherries). Sun-dried tomatoes, zucchini, corn, carrots, kale, and onions are among the many veggies that make a guest appearance.
Although I was doubtful that these healthy, lean (less than 5% calories from fat) breads would be tasty, I have tried three loaves thus far and all were sensational. My first loaf was the Butternut Squash and Balsamic Vinegar loaf (page 51). I substituted canned pumpkin for the squash and dried cherries for the raisins, and the loaf was pleasantly sweet, with an orange color but not an overwhelmingly pumpkin-y taste.
My second loaf was a breakfast bread (Oat and Raisin Bread, page 35). Although I only made a one-pound loaf, the bread was so light and airy that it was nearly as big as a large loaf. Both the Butternut Squash and Oat and Raisin bread are delicious toasted in the morning.
My third loaf was made to accompany soups: lentil bread, with a hearty helping of cooked lentils and Mediterranean flavors courtesy of sage and sea salt. Denser than the first two breads I baked, the lentil bread is a savory, hearty accompaniment to soups and sandwiches.
Although one reviewer mentioned a disasterous loaf of zucchini bread, I am brand new to breadmaking (my first loaf ever was from this cookbook) and have had nothing but success. It's important to add ingredients in the order recommended by your breadmaker: usually liquids first (at room temperature, except for water, which should be between 80-90 degrees), then flours and seasonings, and finally the yeast. The directions are straightforward and easy to follow. Several breads require finishing in the oven (low-fat challah, whole wheat baguettes, pitas). Besides low-fat, no sugar added recipes, the book also includes a chapter on salt-free breads (but not gluten-free).
The Best Low-Fat, No-Sugar Bread Machine Cookbook Ever truly lives up to its name. Although over ten years old, the recipes work beautifully with my brand new, circa 2006 bread machine. Thankfully, the ingredients are fairly common, with some alternative grains and flours (amaranth, quinoa, barley, rye) called for to add variety. I highly recommend this book for anyone who loves bread but is looking to lighten up on refined sugars, oils, and salt; these recipes offer all of the taste with none of the guilt.
Great recipes.......2005-03-08
I have tried two different recipes now. Even though the recipes are for 1lb and 1.5lb loaves (and I make 2lb loaves), I just double the 1lb ingredients, and everything has turned out fine.
I'm looking forward to trying more of the recipes.
Disappointed.......2000-07-05
I tried this book for the first time and used recipe for Summer Zucchini bread on page 90. It was a disaster. I felt there is an error in this one because it only called for 1/3 cup of water for large loaf of bread! I followed this one to the letter and the result was a hard clumpy mess. I'm an experienced bread maker user and this was a huge disappoint.
Absolutely fantastic no fat, no sugar bread.......1999-01-04
Absolutely delicious bread - even my son eats it. Easy to understand and most ingredients are available in Australia. Works great in my new Breville Breadmaker
I recommend this book........1997-10-05
I have had tremendous success with this book and the other ones in the series. I don't know if the recipes are just well-suited to my National/Panasonic machine or what, but I have NEVER had a failed recipe in the batch. Granted, the author always suggests to add ingredients in the order that is recommended by your machine, so I suppose a good working knowledge of your bread machine is a must. I especially liked this book and the subsitutes that it has for sugar. I highly recommend this book.

Ten steps to losing weight forever--how many times have you heard this before? But this time, the claim delivers. In The Automatic Diet, weight-loss and behavioral-change expert Charles Stuart Platkin identifies the 10 steps to understanding and changing your personal pattern of eating and weight gain. You'll examine your habits, master diet traps, craft strategies, and make change happen.
Platkin's program is not a diet, and not a one-size-fits-all program. Based on empowerment, not will power, it's a carefully organized, research-based plan for understanding your own pattern and making changes for life. If you follow his steps, exercises, and strategies, the plan will work because you'll learn to eat consciously, eliminate overeating triggers and habits, and make food substitutions using "calorie bargains" instead of comfort foods.
Platkin, a leading weight loss/ nutrition expert, with daily columns in 155 U.S. newspapers, founded three obesity and weight-control companies: The Institute for Nutrition & Behavioral Sciences, iWellness Solutions, and Nutricise. His earlier bestseller, Breaking the Pattern, has been used as a behavioral-change text in 20 universities. Highly recommended for people who want to understand and change their weight-gain and eating patterns once and for all, and are willing to do some work to get there. --Joan Price
Book Description
A bestselling author and one of the country's leading weight-loss advocates offers readers a proven behavior-based program to end yo-yo dieting once and for all
Sensible becomes sexy in the face of fad diets that have left chronic dieters frustrated and fat.
In The Automatic Diet, Charles Stuart Platkin, one of the country's leading weight-loss advocates and popular syndicated columnist of "The Diet Detective," synthesizes cutting-edge weight-loss research into an easy-to-follow 10-step process that can become automatic for anyone, a process that has proven successful for tens of thousands of the author's clients as well as for the author himself, who has lost 50 pounds-and kept it off for over 10 years-using the principles in this book. Research has proven repeatedly that fad diets are misguided in their focus on advocating or restricting particular foods and that the only way to permanently lose and maintain weight is through behavioral and lifestyle modification. Learning to identify one's "fat patterns"-the behavioral reasons why when we lose weight we always gain it back again-and how to break them enables readers to relearn how to create a relationship with food and fitness that is comfortable and maintainable, and shows that an individual's weight is completely within his or her control-regardless of genetics, metabolism, or other hard-to-control factors.
Customer Reviews:
de-automate your eating behaviors.......2007-07-22
This book goes a long way to help us understand eating behavior and how to break unhealthy habits and develop healthy ones
Good book, but has some shortcomings...........2005-08-03
I wanted to rate this book 3 1/2 stars.
While it is true that virtually nothing in this book could be considered "new" as in groundbreaking, it is the way he presents the information systematically that makes all the difference between his book and all the other diet books out there. His plan is sound, and it does take into consideration that perhaps some of us would rather eat spinach than bell peppers, if we do have to eat our vegetables.
However, what keeps this from being 5 stars:
1. No end-of-chapter summaries, which would have been extremely helpful.
2. The index is not that great. You cannot, for example, look up specific notebook exercises, and would be well-advised to make up your own location list for them. It would be nice if this oversight were remedied in the next edition.
3. I was surprised he would steer someone towards buying several different types of low-cal/low-fat ice cream, rather than suggest something healthier like a frozen fruit bar or a sorbet. Often you just want something cold, not necessarily rich in fat. And he mentions in one appendix how great this one product is, despite having some coconut oil in it (an ice cream product), yet fails to mention that by making some of these treats (and indeed other foods) yourself, you can cut out a lot of the fat/sugar, yet still have a great-tasting food.
4. In line with #3 above, I was somewhat disappointed that even though he often pointed out that so-called "fat-free" foods have just as many calories (or more) as their fatty cousins, he also tended to recommend "calorie-bargain" substitutes that could also be objectionable due to their ingredients. A lot of low-cal foods are chemical-laden, and to use another example, even if you are an ovo-lacto vegetarian, you are still not going to want gelatin in your food. So, reading the labels for nutrition information is not enough--you will also want to check the ingredient list as well, especially if you go the substitution route, as opposed to real portion control.
5. His suggestions for restaurant eating made it not worth the effort to eat out. Here's a better solution: order whatever you want, along with a take-home container. Immediately package up 1/2 or 2/3 of your meal for yourself the next day, or give the container to your friend or another family member to take home.
6. The book could have been written in a more organized fashion. Good tidbits of information are buried in the middle of long paragraphs, which makes it hard to refer back to the book for specifics.
Bottom line, buy this book. Dr. Barbara Rolls (of Volumetrics fame) wrote an introduction, and in addition to her book I would also recommend reading Dr. Shapiro's Picture Perfect Guide to Weight Loss books. He too falls into the "Frankenfood" substitution trap from time to time, but his books with their photos dovetail nicely with the Calorie Bargain/Calorie Rip-Off concept in this one.
Lasting Changes through Conscious Effort.......2005-06-02
"Muscle mass is the body's most ancient furnace." ~Charles Stuart Platkin
Charles Stuart Platkin's "Breaking the Pattern" helped me to analyze my self-sabotaging behaviors and again in The Automatic Diet, he presents strategies for overcoming negative patterns in eating.
The Automatic Diet presents ideas for promoting overall health, controlling weight and enhancing your self-esteem. Charles Stuart Platkin unveils misconceptions about weight control and shows you how to have long-term success.
The Diet Detective takes you through your eating behaviors and you can decide if you want to include behavior modification strategies to your everyday diet. Through self-analysis you start to break negative patterns and destructive eating tendencies. He explains how most diets deliver temporary results and most people gain the weight back. How is this diet different?
This is not a diet where you have to give up chocolate (Who could give up Leonidas Belgium chocolates?) or your favorite foods. What the author seeks to encourage is a healthier lifestyle. Since most diets don't bring the results we are looking for, Charles Stuart Platkin advises a lifestyle change. In most cases, he doesn't take away foods like popcorn and carrots; he shows you the best choice. There are a few lists of "items you ought to think about throwing out." These include the usual suspects - sugar, soda, ice cream. I was a little shocked to learn about the calories in the Starbucks Classic Coffee Cake.
I still think in moderation, you can handle a little ice cream, although I must say I feel terrible if I eat too much sugar in a day and it can produce the feeling of chronic fatigue for 24 hours. The author recommends good protein sources, a good variety of vegetables and healthy starch choices.
I am happy to see that another author is talking about the muscle mass issue, because this could help many dieters over the initial hurdles of initial weight gain when you start to exercise. The author also explains why a drastic reduction in calories triggers the body's famine-survival mechanism. This of course slows down your metabolism.
There are also ideas about "excuse busters" and self-talk is definitely your friend or enemy. My most recent self-talk to increase my exercise includes telling myself how good I'm going to feel after I exercise and eat my fruits and vegetables. Being proactive and buying clothes that are too small also seems to be good motivation. I also threw out any clothes that are too big for me, so I simply will have nothing to wear if I don't exercise.
Another idea is not buying anything that you know you should not be eating and buying lots of things you know you should be eating. Then, when you are home and hungry, you make better choices. Doing Yoga also seems to help because it generally puts you in a much calmer state of mind and you feel more in control of your choices.
If you are heading towards 40, then you may also want to read The Metabolic Plan to learn about amazing supplements and how you can stop the aging process, increase muscle mass and feel younger each year.

The Automatic Diet.......2005-03-13
After losing 40 pounds on Weight Watchers, tremendously improving my health, my appearance, and my pleasure in life, I started regaining weight and could not stop gaining. Rejoining Weight Watchers did not help. I kept gaining! I was at the point where I could not stick to a diet for more than four hours! I was desparate by the time I'd regained 25 of the 40 pounds I'd lost. Fortunately, I found Charles Platkin's The Automatic Diet and was able to turn things around. He explains not only what to do but also how to do it and make it part of a lifestyle I can comfortably live with. One week after starting to follow his suggestions, I was down four pounds and am actually enjoying my life while losing! Many of his suggestions are things I already knew but it was like taking an advanced course after completing a beginners course. I've read many wonderful books on fitness and nutrition, but Charles Platkin just puts everything together in a simple way that works and that I (or anyone) can enjoy living with!
Automatic Diet is Friend's Dream.......2005-01-12
I have heard a lot about "The Automatic Diet." Actually, "a lot" can be quantified into hours of praise from one of my best friends. She really liked the book and her slender figure attests to the book's methods.
My friend has been on many fad diets in the past. She had done juice diets, the Atkins diet and has feverishly hit gym. The problem has been that she has not been able to maintain the weight loss. She has roller-coastered physically and emotionally. "The Automatic Diet" has curbed this sporadic behavior and has provided weight loss with a program that should be easy to maintain.

Fantastic Tasting and Healthy!.......2003-01-19
This book has great recipes for wholegrain breads. If you're looking for recipes that avoid white flour and have healthy wholegrains instead, this is the book for you.
For the most part, it is also low sugar, which is why I purchased it. There are a few recipes with honey and molasses, though. My husband has raved about all the breads I've made from this book. It gives recipes for 1 and 1 1/2 pound loaves.
Good for baking with whole grains.......2002-07-24
This is a great book for anyone who owns a bread machine and wants to make different types of whole grain breads. I have found many whole grain baking bread books, but none that were specically targeted for the bread machine. This book is made specifically for bread machine bakers, which is great. She explains all the different types of flours, grains, etc. This is very helpful to learn how to make appropriate subsitutions, etc. I really like this book and am looking forward to consuming a wide variety of whole grain breads!
Best healthy bread machine book yet!.......2002-06-10
I am thoroughly pleased with the recipes I have found in this book. Every one I have tried has turned out beautifully. It is almost impossible to find good spelt flour recipes, particularly for the bread machine and this book instructs how to use spelt flour to make most baked goods. If you are looking to bake healthy bread or just to expand your baking experiences, I recommend "Smart Bread Machine Recipes" thumbs up to the professional as well as the everyday home cook as there is a little something here for every baker to learn!
Good Bread.......2002-04-09
I have made 3 of the bread recipes so far and the bread has turned out very good. I would recommend this bood for anyone looking for low fat bread recipes, there are several that require alot of manual work outside the bread machine.
Tasty and Healthy across the board.......2000-02-03
This book consists of all whole grain bread machine recipes. The first part goes into detail about all the components necessary to create healthy breads/rolls, etc. in the bread machine. All ingredients are described in an easy to read manner. There are recipes using "ordinary" whole wheat flours. Then there are the recipes using the more exotic flours, such as spelt and kamut. While some of these flours are expensive and sometimes hard to find, I have tried many of the recipes and have never been disappointed. I have purchased the book many times for friends and recommend it highly as a means to increase fiber and grains in products that are very tasty and are created from this easy to understand recipe book.
