There's a popular game at baby showers in which the new mom-to-be has to taste jarred baby food and guess its contents. Inevitably, the first comment is "Yuk! How do they eat this stuff?" The answer, of course, is that babies don't know there's an alternative--fresh, delicious, wholesome food made at home. In the beautifully and extensively illustrated First Meals, Annabel Karmel explains how simple and satisfying it is to make baby's food yourself--from the earliest mashed banana and steamed carrot purees to Singapore Noodles for 3- to 5-year-olds.

Karmel begins with an extensive section on early nutrition, pointing out that while grownups are often encouraged to follow a high-fiber, low-fat diet, "the under 5s need significantly more fat and concentrated sources of calories and nutrients to fuel their rapid growth during the early years." Continuing her "Basics" chapter are sections on keeping a well-stocked pantry; the equipment you'll need; illustrated, step-by-step instructions on preparing your first purees; and notes on freezing and reheating food. Close-up views of spoonfuls of puree are especially helpful for nervous first-time chefs. Chapters of recipes and feeding information are then broken down by age--4-6 months, 6-9 months, 9-12 months, 12-18 months, 18 months-2 years, 2-3 years, and 3-5 years, with each chapter addressing the particularities of the given age (questions about starting solids are answered for parents of 4-6-month-olds, while maintaining a healthy and varied diet and packing lunches are the concerns for the preschool child), along with 20 or more recipes appropriate to the child's level.

First published in England, the book has been "translated" well--ingredients are measured both in cups and in grams, and while there might be more parsnips called for than one normally sees in a North American diet, nearly every ingredient is obtainable at your regular supermarket. Karmel is up-to-date on the most recently accepted food recommendations as of 1999--she advises families with food allergies to avoid peanuts until a child is 3 years old, and while she cooks with cow's milk after 9 months, she doesn't recommend offering it in a cup until baby has reached his first birthday. Most importantly, she preaches a gospel of variety and of fun at mealtime. Cheesy Pasta Stars are made with tiny "stelline" pasta, and homemade Chicken Nuggets (made with grated apple and parsley in the breading) are formed in the shape of hearts--enough to break down the barriers of any picky eater. Stuffed Baked Potatoes become sailboats with cheese triangle sails and red pepper flags, and "Mock Fried Egg" looks just like the real thing--except it's vanilla yogurt with half an apricot on top! So trust your taste buds and leave those jars at the store--Annabel Karmel's First Meals will inspire you in the kitchen and leave your kids pounding the table for more. --Rebecca A. Staffel

4 out of 5 stars bvaughan@libero.it.......2007-10-05

I bought this book for my daughter when she was pregnant. She had been thinking of getting a different book, but decided this one was probably even better. She used it extensively when my granddaughter was first beginning to try solid foods, and continued to use it through about 9 months. At that point, the baby was eating nearly everything her parents ate, and there was no need to tempt her into eating vegetables.

I also used the book to make baby food when I was visiting my daughter. I made things in large quantities and froze small portions in ice cube trays. The next day, I would put the "cubes" in a plastic freezer bag and start over with a different food. That way my daughter had plenty of meals ready to use when I went home.

I didn't find the recipes too complicated or lengthy. Sometimes I modified ingredients or simplified a procedure. You don't really need a book to cook carrots in the microwave; this book combines ingredients to make tasty and healthy meals. The results were good enough to eat up myself if the baby turned up her nose at them.

There were a few things that had ingredients that my daughter's pediatrician thought were not age-appropriate. When in doubt, the pediatrician wins.

4 out of 5 stars for the budding family nutritionist.......2007-09-28

With my newborn, I was determined and felt responsible to become the informed nutritionist for our family. This book helped me understand the benefits of ingredient combinations in recipes and meal planning. I now have a greater understanding of how to maximize vitamin and mineral absorption. With that said, this book can be very intimidating if you are a busy mom with only minutes to get hungry mouths fed. Treat the "art" of the recipes as something to do if you have time to spare. Focus instead on the recipe content and being creative with combinations. Also, being a "Dr. Sears" disciple, I necessarily needed to defer certain recipes to a later time due to the recipe containing ingredients not recommended for that age range by Dr Sears. This meant certain recipes recommended by Karmel for 6-9 mos, for example, needed to be deferred to 12 mos. I found myself spending 10-15 min per recipe cross-referencing ingredients for a particular recipe I wanted to make with what was recommended by Dr. Sears to ensure it would be appropriate for our little one. All in all, I recommend this book for the wealth of nutritional information and recipes provided.

5 out of 5 stars Good information.......2007-09-14

I received this book as a gift when my first child was born. It has some really great information. I feel I have saved money and my children have had healthier food to eat. I recently purchased this for my brother for their first child. I love the tip about freezing the baby food in ice cube trays. My children love the homemade baby food more then the store purchased food. The only thing that this food does not do is travel well on trips. Then I go back to store purchased food; much to my children's disgust.

4 out of 5 stars Author is British!.......2007-08-30

I haven't read this particular book, but I have a similar one by the same author purchased in the UK. The author is British and guidelines as to when to introduce foods vary from those set here in the USA. This may help to explain why Annabel's advice differs from professionals' here. I usually live in the UK and some of her advice is in conflict with the health visitors' amd doctors there as well. Anyone who has many children know that they change these guidelines quite regularly. Even a couple of years ago, they told us to feed babies cereal from 4 months old, now it is 6 months. They used to say not to give kids cheese until 8 years old. My doctor told me to feed my 8 month old son at 5 months because he was really, really ready. I didn't feed him nuts, dairy, soy, etc. Just rice! Speaking of which these recipes call for some milk, but it is cooked. I am sure most of you are using formula made of dairy(I am still breastfeeding), so I am not sure what the problem is with that??
What I do like about her cooking is that she does encourage people to introduce real food to kids instead of frozen pizza, frozen chicken nuggets, takeaways or the equally revolting (but not unhealthy)baby food in jars. It is also so much cheaper to take some of your own dinner and mash it up for yuor baby rather than buying jars of food. I use jars for traveling, when I know I can't heat up my frozen purees.

4 out of 5 stars Great ideas to get started.......2007-08-29

Previously bought the book "Super Baby Food" on the advice of my pediatrician and was very discouraged and overwhelmed. Then my mother in law brought over this book that she picked up in a garage sale - THANK GOD! Yes, it's short but that is a great thing when you just need a little inspiration. What parent has time to read more than 1 or 2 pages at a time anyway? Baby is hungry right now! :)

Anytime El Nino has the price of a head of lettuce breaking the $2 barrier, it's time to march to the cookbook shelf for inspiration. Reaching for Salad Days is well in order, for Marcel Desaulniers has produced an elegant little book that gives salad a refreshing spin.

A lovely chapter on greens leads the book, and Desaulniers follows right along with chapters on beans, grains, and fruits. But these are only the baseline ingredients, the bedrock on which a grand, dinner salad might be built. This book is all about building, about mixing and matching. One is tempted to believe that Desaulniers played with paper dolls as a child, for the same theory is at work: Once the outfits are cut out, it's simply a matter of assembling the final production according to one's taste.

Take, for example, the salad of sliced beets, curly endive, red bliss potato salad, honey mustard roasted walnuts, and meaux mustard vinaigrette. There are four separate recipes at work here, which might seem intimidating at first. But it's all really quite short and sweet. A minimum of muss and fuss, and then on to the assemblage.

But here's the kicker, having given you the recipe for the baseline assembled salad, Desaulniers gives the reader two ways to stretch, in this case with recipes for walnut-crusted stripped bass on the one hand, and honey duck stir-fry on the other. By adding either ingredient, what started as an elegant dinner salad changes into an entrée salad. A main course.

Desaulniers' primary and obvious point of concern is the home cook. He works up his recipes in a home kitchen, with home kitchen equipment and appliances. He writes clear and encouraging recipes, lists all the tools a cook will need, and slathers on the insider tips. The net effect of all this is to bring the home cook right into the heart of real cooking. And there's a whole world of difference between that and following a recipe. --Schuyler Ingle

Book Description

Marcel Desaulniers, the prizewinning, bestselling author of such classics as Death by Chocolate, The Burger Meisters, Desserts to Die For, and Death by Chocolate Cookies, has finally had his fill of sweets -- at least for a while -- and he's ready to get to the main course. In the same way that Marcel turned chocolate on its head, with Salad Days he expands our idea of what salads should be: not salad-bar fare, but full meals melding the flavors of such savories as grilled eggplant, scallions, and plum tomatoes with leaf spinach, herbed couscous, and roasted garlic dressing.

We are all now aware that to improve our diets and our health, we need to boost our vegetable, fruit, and complex carbohydrate intake. With Salad Days, Marcel makes that easier to do and more fun and delicious in the process. Organized into four main sections -- Greens, Beans, Grains, and Fruits -- each of the thirty salad recipes is accompanied by two variations. These variations, like the original salads themselves, show the real care Marcel has taken to tantalize even the most finicky eater. For example, he rounds out the Roasted Root Vegetable Slaw by adding either Spiced Pork Burger or Ale-Steamed Chicken Breast. Likewise, the Oven-Roasted Fruit with Belgian Endive is still deliciously light enough for a summer afternoon when accented by either Lamb with Jicama and Anaheim Peppers or Pan-Seared Maple-and-Ginger-Coated Sea Scallops.

Salad Days makes a great addition to any cookbook collection because there's something for everyone. Each element of the salads is so delicious and clearly detailed that you just might want to make the Grilled Skewer of Ginger Chicken, the Crispy Corn Biscuits, the Panfried Black Turtle Bean Cakes, or the Peppered Honey-Lime Dressing on its own and forget about adding the leafy greens. As in his previous award-winning cookbooks, Marcel tells you exactly what equipment to use and which pantry items to stock; in his Chef's Touch section following each recipe, he supplies additional cooking tips, shares personal anecdotes of a lifetime of food, and complements each meal with a wine or beverage selection.

Whether you need an impressive dish for special guests or simply a delicious indulgence for one, Salad Days provides the inspiration and instruction for a first-class meal.

5 out of 5 stars Easy and interesting.......2005-05-20

I love this cookbook. I have been using it for about 5 years and still find things of interest. I particularly like the fact that the book tells you how to prepare and present the whole meal, with each menu broken down into: the dressing, the salad itself, assembly of the dish and always two choices of meat or fish to accompany the meal. I often spice up a meal with just a part of a salad - ratatouille tonight and maybe saffron infused arborio rice cakes another day. The ingredients are easy to find and the methodology easy to follow. If you like salads and want something a little different, then this is the book.

4 out of 5 stars No little diet salads here..........2004-05-06

These are main-dish salads. Each recipe has several components to it, and two variations on top of that to top things off. One of my favorite recipes in this book is "Sliced Beets with Curly Endive, Red Bliss Potato Salad, Honey Mustard Roasted Walnuts, and Meaux Mustard Vinaigrette." I'm not normally fond of beets, but they're fantastic in this recipe. The honey mustard roasted walnuts have the perfect blend of sharp and sweet tastes. There are a couple of ingredients you might have trouble finding, but they're generally things you can easily substitute for. The first variation for this recipe is the Walnut-Crusted Striped Bass, and there's also a Honey Duck Stir-Fry variation.

Each recipe has the same "Chef's Touch" section as in "Death by Chocolate," giving suggestions for substitution (the aforementioned mustard), storage, and so on, including even wine suggestions in some cases. My only negative comment on this recipe was that the vinaigrette was too oily for our taste, but it's easy enough to reduce the amount of oil. Each recipe serves four hungry people, and could easily be stretched to 6 or 8 as a side dish.

If you're familiar with Desaulniers' "Death by Chocolate" series, then you're already familiar with his cookbook style. He describes everything in detail, not because it's necessarily complex, but because he wants to make sure he doesn't leave anything out or confuse the reader. Also, while his recipes are usually calculated to be not overly difficult, they do tend to be time-consuming, and often involve a handful of different components that need to be put together. You don't need to be an expert to use his cookbooks, but you do need to be willing to spend time and effort in the kitchen.

But as always, he truly comes through in the flavor department. Peppered Honey Peaches with Warm Pecan Cakes, "Bitter" Salad Greens, and Sour Mash Vinaigrette. Variations: Turkey Scallopine with Basil and Zinfandel; Pecan-Crusted Soft-Shell Crab. Or maybe you'd prefer Mandarin Orange Basmati Rice with Sesame Stir-Fried Vegetables, Tangy Red Cabbage, and Szechuan Peppercorn Vinaigrette. Variations: Orange and Cilantro Barbecued Catfish; Charred Flank Steak. Truly, there's something in here to appeal to almost anyone.

3 out of 5 stars Good for rainy-day cooking, NOT for beginners.......2003-04-12

Marcel Desaulniers, author of some of the most wickedly good dessert cookbooks in my cupboard, releases a cookbook full of more virtuous dishes, probably for those of us who've indulged one time too many in his myriad chocolate desserts.

One thing I particularly like about this book is the serving sizes. Unlike many cookbooks, where the number of servings listed is sometimes (or usually) optimistic, when a recipe in THIS book lists 4 servings, it means 4 VERY generous servings. Also, love or hate the ingredients that go into the salads, all of them turn out looking so delicious that it's (ironically) almost a shame to eat them.

Be warned, however - I would NOT recommend this cookbook to beginners. It can take several hours to prepare one of these salads. When I purchased it, I was expecting dozens of recipes for salads consisting of 6 or 7 ingredients, tops, which you can toss together and serve with a dressing. Wrong. Many of these salad recipes are actually 2 to 4 small recipes combined into one dish (even more if you decide to compliment the salad with the extra "variation" recipes), and the number of different ingredients required for these recipes easily goes from 12-15. Also, many of these ingredients are not things casual cooks will have lying around the house (I have no idea where to find Moutarde de Meaux Pommery mustard), so you have to specifically be in the mood to make a certain salad - you can't just whip one of them together right when you come home from work. Rainy weekends are ideal for many of these recipes.

One thing that I don't believe this book tells you (I may be mistaken), but which many people should guess anyway, is that all of the pasta recipes in this book can easily be substituted with the plain dry kind you buy in supermarkets. If the pasta is flavored (green onion fettucini, for example), you can simply add a bit of the herb/vegetable that was to go in the pasta directly into the salad.

One minor quibble with this book is that compared to other books by this author, there doesn't seem to be as many recipes, perhaps because due to the fact that each salad recipe is composed of several smaller recipes. Most of these are quite good, and the dressing recipes can obviously be made on their own for every day salads. Also, a grilled lemon chicken breast recipe accompanying one of the pasta salad recipes makes an outstanding ciabatta sandwich. In the end, the recipe(s) that make up one salad can often be made on their own for any number of occasions, which is a major plus.

Overall, the salad recipes as a whole are too difficult to make for me to recommend it to beginners, but cooking enthusiasts and/or people looking for substantial, nutritious meals should definitely give it a whirl!

5 out of 5 stars Salad extravanganza for many days!.......2001-01-11

This is just a marvelous example of the chef who is inventive and researches the items and prep with the at-home type cook in mind. He presents very original, creative salad entrees with a huge array of ingredients, e.g. nuts, berries, fish, fowl, beef, etc. but then adds item options as well as prep and presentation advice along with two additions to the basic salad recipe if so inclined. The possibilities are endless! So good to those of us who enjoy just a great salad as the meal! Marcel is one of the best cookbook producers around .... from chocholate to burgers to salads.

4 out of 5 stars Why go out for a fancy salad?.......2000-07-18

Do you love ordering meal-sized salads at restaurants but never make them at home? Then this is the book you need to buy. The salads in this book are scrumptious and colorful. The interesting thing to me about this book is that it presents a couple of variations on each salad. For example one of the recipes in this book is Penne Pasta and Spinach with Oven-Roasted Plum Tomatoes, Toasted Walnuts, Curly Endive, and Cracked Black Pepper Vinaigrette. It has two variations, the grilled chicken breast variation and the pan-seared salmon variation. I would consider this book appropriate for someone with intermediate cooking skills but if you are a novice cook the instructions are excellent and would help you build your skill set.

3 out of 5 stars Mediocre baby and toddler food book.......2007-02-13

"First Meals: Fast, Healthy, and Fun Foods to Tempt Infants and Toddlers" is a nice hardcovered book with an interesting layout and lots of pictures. The recipes taste good, but really take some time to put together. Occasionally I will make a recipe out of this book, but not often.

A problem I had with this book was that it seemed to introduce foods too early, things like vegetable sticks at an age when a chunk could be bitten off and choked on, or before a baby was able to eat that particular food.

I'm on the fence with giving this book two stars, and I would really give it 2 1/2, but I'll round up. All in all, there are much better baby food books out there (such as "Mommy Made and Daddy Too"). I'd really only recommend this one to supplement your others, or if you collect cookbooks.

5 out of 5 stars Look for the 2004 edition..........2006-05-28

Home cooking is an economical option and, as the recipes in this book show, it need not be time-consuming. There are many excellent purees that do not involve cooking and other recipes suitable for batch-cooking that allow a whole month's food supply to be prepared in a couple of hours and then frozen. ~Annabel Karmel

Annabel Karmel's ambitious baby food book is for infants and toddlers but adults will also enjoy some of the recipes.

The recipes in this book can be used occasionally in order to introduce new foods in fun ways or you could use a variety of recipes on a continual basis as you find favorites. The chapters are divided up into age groups:

    Weaning Your Baby
    9 to 12 Months
    12 to 18 months
    18 months to 2 years
    2 to 3 years
    3 to 7 years
    Preschool and beyond
    Healthy Snacks
    Family Meals

A section on pantry essentials helps you stock the pantry so you have the food on hand in order to try the recipes.

Should you keep baby's half-eaten food for a later meal?
What are the common allergies to watch for?
When should a baby start to eat solid foods?
What do you do when your baby rejects food?

The pages of "first tastes" make introducing foods to your baby easier because they are bland foods baby can get used to when being introduced to purees. These can be made in a blender or food mill. Tips are given for each method with the recipes. Next there is a section on mashed foods and you can try recipes like peach, apple & strawberry or banana with mango or papaya. Savory recipes are also included, like chicken casserole and fish with carrots and orange. The first fifth of the book is made up of very simple recipes.

The recipes from this point on become a little more visual and much more fun to make. As children gain a bigger appetite and begin to explore textures, advice is given on how to encourage children to feed themselves. With fun cutouts and assorted dips and interesting serving suggestions, children are encouraged to try new foods. Some of the fun recipes include:

    Gelatin Boats
Pinwheel Sandwiches and other creative Sandwiches like butterflies and wraps
    Mini Pizzas with animal faces
    Salmon Starfish
    Summer Berry Milkshakes
    Cheesy Bread Animals
    Birthday Cakes
    White Chocolate and Cranberry Cookies
Chocolate Cream Puffs & Choux Pastry Mice

I am sure when the author created this book, she knew mothers could not find the time to cook like this every day, but many of the recipes will be fun for mothers to make on occasion and others will save time when made in bulk - like the puree recipes. The entire family can enjoy many of the recipes like the strawberry freezer pops or beef stir-fry. There are some family recipes, baby recipes and toddler recipes that anyone could enjoy if you like smaller meals. Once you make your own applesauce, the flavor may convince you to make it all the time.

I've owned this book for a while and thought it was o.k. Helped with making my child's purees in the beginning. But some recipes are too fancy and dressed up. Now I've discovered more down to earth baby cookbooks like Baby Bistro and Petit Appetit.

5 out of 5 stars A great, lifesaving book for Moms of picky eaters.......2004-08-07

I bought this book after trying for months -- and failing -- to try to get my baby to eat a variety of solid foods. I admit that at first I was skeptical that 1. I would have the time and ambition to make these recipes and that 2. they would be the trick to trigger my son's eating -- but, miraculouly, it worked! The purees are extemely simple to make and Annabel Karmel offers lots of good nutritional advice and easy-to-follow tips on ensuring that your baby has fresh, healthy food to eat. Favorite recipes include the avocado and banana puree and bow-tie pasta with ham and peas.

    3 out of 5 stars I was disappointed.......2005-08-06

From the title, I thought I was getting lots of suggestions about foods to prepare for the beginning eater to toddler. I have rasied all my own children and now my children and their friends are having their first babies. I remembered how I poured over baby "cook books" to learn how to prepare good, simple, tasty and inexpensive food for my children. I want to give the same resources to new mothers. This book looks like it will give you lots of ideas but it contains much of the same material you find in "the first (second etc) year of your child's life" which is a wonderful series. Sorry but I was not impressed.

5 out of 5 stars The best baby reference book ever!!!.......2003-10-23

This book is a must for all first time mothers and fathers. It gives detailed information on how to feed your baby from birth to toddler with excellent examples and food product information. My husband and I especially found the alternatives to junk food section very helpful. We want to feed our daughter healthy food, and now we know the healthy altenatives to junk food. Also, this book gives examples on how to pack healthy lunches and snacks. Bravo!!!

    3 out of 5 stars basics only.......2003-07-06

As a new mom this book is good for basics but light on details. I found
myself having to buy other books once my son was ready for solids.
I also felt the information jumped around a lot; it would have been nice to have it organized more month to month rather than topic to topic.
Not a bad choice but don't expect to be your only book on food.
    Good luck!

1 out of 5 stars Overpromises what you'll find on it.......2003-06-07

I regret buying this book, since it promised to cover different topics, providing lots of different meals ideas, and it is mostly theoretical and has almost no recipes. If you need theory buy this book, but common sense, obvious theory. If you want ideas for your babies meals look for something else.

3 out of 5 stars Good book but alot of redundant info.......2002-08-05

This is a good book and has only one chapter that interests me (The one on making homemade baby food). The other chapters contain info on breastfeeding, formula feeding, etc. This information is redundant because I purchased two books (What to Expect When You're Expecting, and What To Expect The First Year) that included most of the same info.

4 out of 5 stars In Search of Appetizers.......2000-04-04

At one time I owned this book but, unfortunately it was "lost in one of my many moves."

I highly recommend this book for anyone who wants to experiment with Asian cooking. The recipes are not intimidating and have simple instructions. This is the perfect starter to your cookbook collection since it covers some of the more popular Asian appetizers. It made me look like a gourmet chef, especially the glass noodle salad and the Vietnamese spring rolls.

The book is not very thick but the photos are very colorful, numerous and well-placed in the book itself. This makes it more user friendly than other cookbooks (where the color plates are located 100 pages or more from the actual recipe they depict!).

One possible downfall to venturing into Asian cooking, might be your location. Make sure you can purchase the ingredients in your area. For example, rice noodles, fish sauce, banana leaves and lotus root are only availble at specialty markets. It's a good idea to bring the cookbook with you to the store to use as a grocery list.

        Bon appétit!
