This cookbook has some new twist that I like alot.The recipes for different protein drinks is GREAT! The dessert section has quite a few recipes that have a lot of sugar.
I know everyone has different needs and tolerances but,there need to be some type of warning when lots of sugar is used.

I have found this book to be fabulous, and I'm not really one for cooking. I've been intimidated for years about cooking "soul food", but not anymore. This book has opened up a new world of easy to follow recipes, that clearly list all of the ingredients and directions. It has taken the guess work out of "how to", and allows even the beginning cook to appear as a seasoned chef. I purchased the book after hearing rave reviews from my friends, and I'm definately glad that I did. Since having gastric bypass surgery, this book has taught me that, I don't have to give up my favorite foods, and I can even make them myself. Well done!

Although some of the recipes contain exotic ingredients that may be hard to get in some areas, many are relatively simple and incredibly delicious! Amazingly, they are also all low-fat. Plus, the book benefits a good cause. I've never gone wrong cooking something out of here--always raves from the guests!

I have to confess that I have not read the book, but I did order the book today, along with my sister Dorothy & our cousin Teretha. Skeet, I had no idea that you had written so many books. When you came to Clarksdale years ago to research your first book, I had no idea that it would lead to several more. Wilbert Jones or "Skeet" as I know him, lived in Clarksdale, MS for quite some time and later moved up North (as we say in the South)to Chicago (I think). Anyway, Mr. Jones was my neighbor and I would love to hear from him. If there is a way that you can get this to him, I would appreciate it. By the way, this is Ms. Nancy's daughter. I can't wait to get the book.

The book begins with an insightful glimpse into the world of traditional "soul food": its origins and components. Wilbert Jones does a wonderful job of making simple adaptations to create healthy, extremely flavorful, and virtually fat-free recipes of my time-worn favorites. I was introduced to Jones' work in the form of the Black-Eyed Pea Veggie Burger...a flavorful alternative to fast-food albeit not as fast a meal as I initially estimated. Since that introduction, I have prepared his Skillet Corn Bread, Collard Greens, and Red Bean and Rice. Absolutely, positively delicious!!! Even my picky eaters had no problems with "Mom's experiments!!" My only criticism of this cookbook is that it is too short!! I look forward to more of Jones' work in the future!

I don't consider myself a "reader", though I read. I wouldn't say I am a "lover of books" as some love books. However, this book, WHOLE FOOD, SOUL FOOD, has my attention. The colors on the cover and the title caught my eye from across a room. Who could resist 'Finger Lickin' way to fight fat. Incongruent!,
I thought.
Closer examination of this book proves it to be educational. The chapters are just the proper length to hold my attention. The "To Do" lists relieve guess work and frustration. The recipes inspire the taste test. I am impressed with the content and format --- so much so I have recommended WHOLE FOOD, SOUL FOOD to the Health Leader of our church for use in the upcoming vegetarian cooking class.

This is a fun book to read. It is easy, quick reading and loaded with information which will enable you to develop and maintain a healthy life style. The author has used a great deal of humor, which makes the information even more receivable. Most of us have been crash dieting for years.
This information provides an incentive to eat right, and maintain a healthful outlook on life. The "To Do Lists" are wonderful. This is an exciting way to help the reader organize and remember key information. The recipes offer easy to obtain ingredients and they appeal to the appetite. I like the idea of having friends or family members test the receipes and bring them along for dinner.
This book is small enough for you to put it into your purse and take it along with you while grocery shopping. I love it! The busy person will enjoy this book and find it filled with wonderful, finger lickin' tasty meals. What a fun way to lose weight and stay healthy!

For Many years I have been looking for a way to prepare traditional soul food in a healthy way without compromising the taste. My favorite dishes such as macaroni and cheese, greens, sweet potatoes, has become almost synonymous with cholesterol. The author of the book "Whole Food, Soul Food," approaches the standard "soul" dishes from a different perspective. She introduces the concept of cooking our favorite dishes using whole foods. She clearly defines what whole food is for those of us who may be clueless. She provides a chart comparing the calories of certain soul food dishes cooked the traditional way versus the "whole food" way.
The author writes in a way that is educational and informative, yet interesting and humurous. She discusses the pros of incorporating whole foods into our every day diet and gives you a step by step approach to achieve that goal. Every chapter concludes with a "Things to Do" list which gives more structure to your planning. She gives you a shopping list to get you started and sample menus which are extremely helpful.
The recipes in the book are straightforward and easy to follow. In addition, the author gives the nutritional break-down of each recipe (calories, protein, fat grams, carbohydrate, etc...) and the dietary exchange.
I have already tried a couple of the recipes including the "Home Fried Chicken" and "Pa's Sunrise Scramblers" and was pleasantly surprised at how flavorful and enjoyable the dishes were. I would highly recommend this book to those who are looking for a healthier way to cook traditional soul food dishes. I can wait to try more!

This book was very encouraging. I've eaten in Sylvia's Restaurants in Atlanta and New York and the food was GRRRRREAT!!!!!!! Being a Southerner I know the challenges of resisting good old down home stick to your ribs cooking! I love books like this one and Pattie LaBelle's Lite Cuisine because many of the recipes offer good options for making food that taste good and at the same time is good for you. I think that this book can stimulate the thought processes regarding changing how you prepare the standard recipes you typically eat at home. Most people cook a standard rotation of menus in their homes. Books like this make you think about healthy options and how to substitute ingredients for your meals at home.

Lyndey Williams is a remarkable person who has come a long way. His journey from unhealthy and obese to fit and eating well is fantastic. His word is just as good as anybodies because he has been "there." I purchased two cookbooks, 1 for me and 1 for my mother. We tried numerous recipes and they turned out great. With these recipes you can substitute the high fat without substituting the great flavor. If you aren't looking for low fat try regular Syvlia's Soul Food in Harlem, hands down some of the greatest soul food available.

I saw Lindsey Williams featured in Newsweek and I went immediately and bought this book for a friend of mine. She's been trying to find ways to lighten up her down-home cooking and I thought this was right up her alley.
We paged through the book together and checked out the recipes - which are fantastic. Mr. Williams' personal story was also a highlight, as were tidbits like celebrity favorites. My friend recognized familiar recipes immediately and was pleased her new cookbook.
Naturally, being health conscious, we looked at the nutritional information. That's when we started to get confused.
For one, the calorie and fat counts for some of the desserts were very high. I know - it's DESSERT! If the re-done version was still bad, I figured it must mean the "original" version must have been far worse. And I know you don't eat it all the time, anyway. But I've never seen a "light" cookbook feature a recipe with 4 sticks of butter in the ingredient list. As tempting as the pound cake sounds, I'm afraid it would be something I couldn't eat on my plan.
Secondly, I'm convinced that the nutritional counts are inaccurate. Some recipes had 40 or 50+ grams of fat in them - which is just astronomical for one serving. The calorie count would seem appropriate for a serving, but fat (and sometimes sodium) seemed like it might actually apply to the whole dish. There were so many great LIGHT recipes that we looked at, scanning the ingredient list only to find healthy ingredients but non-attractive nutritional counts. It didn't make sense.
It's such a good cookbook with really great re-mixes of traditional recipes. Even after the confusion, my friend still liked the book. I just wish I could pick Mr. Williams' brain over some of the recipes & techniques.........Why not reduce the amount of high-fat coconut in the coconut cake recipe? Why actually FRY the fried apples when there are other ways to cook them without 3 cups of oil? Do we really have to use 4 sticks of butter in the pound cake or is there a way we can sub out some calories? Why would chicken & peaches have 24g of fat?
Bottom line: the book has some fantastic recipes. I would just recommend for those who are nutritionally aware to do your own calculations (and maybe make a few more of your own substitutions) and I'm sure the numbers won't look so bad.

Love these recipes!.......2004-01-08
These recipes are low fat and low calorie but extremely YUMMY! I happened to catch the author, Stacey Pardue, on TV in Monroe, Louisiana while there on business. She made a glorious looking low fat Mexican dish, so I rushed out an order for her book. The Low Fat Taco Soup Recipe on page 79 is only 125 calories per cup and 1 cup is completely filling for a complete meal. Even my husband likes her low fat recipes! After fixing the low fat taco soup for friends, they ordered this book too! Stacey has taken many of the Southern recipes that I remember my mamma making and make the low fat substitutions for me. I never knew low fat could taste so good!

This cookbook is not only a keeper, but it makes cooking fun! I was eating weigh too much fast(aka fat) food, cause I just didn't want to cook. But, since I now have 4 of Dawn's books, I'm cooking and I'm cooking healthier! I prepare a menu for the month; fix meals and freeze the other portions for later in the month! We have not been out to eat since I've started cooking with Dawn's recipes! And it's fun, not to mention the $$ being saved. Thanks Dawn and thanks Amazon!! This is not a bad book... there are some good recipes.
Unfortunately, a lot of the dishes that traditionally
have hamhock (or other piece-o-piggy) just had turkey
instead. I was hoping for something more clever and

I liked a lot of the recipes but I just can't abide by a cookbook that doesn't have any pics. It's just too cheap for me. I need pics because I can't cook that well and I am admitting upfront that it's a necessary thing. That aside I have found the recipes to be quite tasty with only a few being a little bland.
Great cookbook for heart sugery husband.......2000-01-24
When my husband had a quadruple bypass surgery last April, we were both in a "teachable moment". The follow-up care included stern warnings about salt, fat, and cholesterol in his diet. He grew up in the South, where the typical "agricultural diet" is heavy on all of the above. So this book was a godsend: tasty Southern cooking in a much healthier form. Using more spices, I manage to limit salt and fat even more than the recipes suggest. They are a great start.

This is a MUST ADD to any one's kitchen who considers themselves a true soul food cook. This book helps you cut back on fat and salt (that we love!) but keep the rich flavors and traditions our grandmomma's passed down. Everything was simple and easy to follow and the recipes didn't require a special trip to the grocery store to find odd items that you never have in your kitchen - like most cook books. It even helped get my brain started on ideas to modify some of our family favorites that weren't included. P.S. You MUST check out the chocolate cake recipe!
Absolutely the best cookbook I have ever used........1999-09-23
When I reached my thirties and had to start watching my weight, I despaired that I would have to give up the Southern cooking so dear to my heart. Jonell Nash, in "Low-Fat Soul," proved to me that all good recipes from down South do not need to start with the words "First take two tablespoons of bacon grease..." I have prepared almost half of the recipes in this book and can honestly say that not only are they good but have now become some of my household's favorites. They range from simple to prepare dishes like Daddy's Chicken Spaghetti or Smothered Cabbage to "company" dishes like Baked Stuffed Red Snapper (which is also easy to prepare but don't tell that to your guests, just let them ooh and aah.) In addition to those mentioned above, three of my personal favorites are the Buffalo Chicken Roll-Ups,the Peanutty Noodles and the Collards with Sun-Dried Tomatoes. Each recipe comes with some comment by Ms.Nash and every section begins with helpfuls hints on ways to cut down on fat and calories. This book is for every Southerner (current or expatriate) who wants to eat healthy and keep their weight down.
