I bought this book with great anticipation; however, after making several recipes, I am very dissapointed. Many dishes I've tried have absolutely NO FLAVOR at all. If you like dinners from the 1950's, you may like this; but for experienced cooks with sophisticated palates, this is not worth buying. The fact that there are 170 of these used books for sale should tell you something.

I didn't like this book. It wasn't very clear. My family would NEVER eat any of the recipes. I was looking for a well-rounded list of recipes, (like joy of cooking) but found this was too "kid friendly" and unhealthy. I returned the book.

I did make some kind of turkey burgers with butter and tobasco sauce...I think they were buffalo turkey burgers...don't have the book in front of me...and they were quite good. It had a blue cheese sauce, YUM-O! (To quote Ms. Ray). She finished off the patties in the sauce...

I made a variation...I take the buns and soak them for a few seconds in the butter/tobasco sauce and grill them...it's the only way my picky son wants his burgers now! So, the girl is inventive...it's just not my first pick for a cookbook at supper time. Know what I mean?

If you are planner, like good a variety of quality meals and work full-time, this is the perfect cookbook to have! You can look over the quick meal plans, make a plan for the week, and finally make sure you have what you need on hand. There are two reasons why I don't give this cookbook 5 stars: 1 - Most of the recipes are very good, but not all and 2 - The average cook will take a bit longer than 30 minutes to prepare these meals. We love that Racheal uses fresh and easy to find ingredients!

I need 30-minute meals - I'm the mother of three children under the age of 5. Altho' I enjoy Rachael's recipes, the only time I've ever come close to making one in 30-minutes is when my children are with a "mother's helper". Otherwise, it is more like 50 minutes to an hour. If you are looking for true 30-minute meals - even when interrupted - check out "The Best 30 Minute Recipes" put out by the publishers of Cooks Illustrated magazine. They also have "The Best Make-Ahead Recipes".

I can't stand everything about Rachael Ray. She's obnoxious, loud and fake. She pretends to eat food on television and acts like it's the most delicious thing she's ever tasted. I think you need to eat more than a bean to determine the level of deliciousness, Rachael. And I don't think you can determine deliciousness when someone else has removed the food for you. On one episode my mom was watching, she went to take a bite of her muffin, but the camera angle showed that the bite had been taken out for her! She's not a real chef, and she's a mediocre cook.

If I have to hear the word 'yummo' or 'delish' one more time... I might scream myself to death.

This book is horrible especially if you are someone that doesn't like or prefers not to eat PORK since half the Book requires PORK PRODUCTS. The meals are short but unless you start preparing the items you need - no meal is 30 minutes. Some of the items are Quick but not 1/2 & I am a Great cook that was not satisfied with this book. Sorry :(

I was excited by the reviews I read on this cookbook and the fact that the receipes were not time consuming. How I was very dissappointed. There are many receipes for cooking pork and beef, both of which I eat in very limited portions. Also some spices I am unfamiliar with and would hvae liked to know what part of the grocery store to find them, without having to spend a lot of time searching.

This is a must have book for busy parents who need to feed their munchkins quick and healthy meals. Recipes from this book keep baby smiling all the time. And they help keep dad from being mistaken for a grounded blimp. The meals are savory and delicious. Now if I could only have Mrs. Ray over to cook one for us some night---that would be a great treat!

This cookbook is lots of fun. Almost all of the items are meals a child will enjoy cooking and eating. My kids couldn't wait to eat the "Worms and Eyeballs." Some of the spices are a bit heavy for a younger child however but it is easy to tone down to your own tastes during preparation. Definately a worthwhile purchase.

I've tried two of the recipes in the book, and they're not too good. The Middle Eastern Rice Bowl has a lot of chicken (I don't really like chicken.). The Thai Rice Bowl had a weird flavor to it. There are so many recipes that look good in there, like the Fuji Apples and Peanut Buttery Caramel Dip, but now that my mom says that the recipes are "off", I don't think they will taste that good. Remember, this is a kid's opinion, so you might not agree.

Got this books for my now 8 year old daughter since she's developing her interest in cooking with mom (me). Have to say that many of the recipes seem to be "off" -- either in the ingredient amounts or the quantity that it makes. We recently made the Thai Rice Bowl and the recipe fails to note when to add the garlic, as well as when the chicken is "cooked." Since this is supposed to be a kids (??) cookbook, I really don't think this is Ray's best book. Also found the Middle Eastern rice bowl (as well as the Thai one) to be completely underseasoned. Also agree with many of the previous posters that Rachael OBVIOUSLY does not have children -- many recipes are not child-friendly (either for cooking it themselves or eating it). Not one of my favorites.

My children love this book. The layout and illustrations are so attractive the kids are drawn to it. It's completely kid friendly and with that gives the kids a sense of ownership of the book, which makes them more excited about getting into the kitchen.

Includes some of Rach's best recipes. I love 30 Minute Meals because I do not have the time to be in the kitchen all day. Rachael has some really creative ideas (I love the everything chicken) and tips. She also isn't uptight like most of today's celebrity chefs are. I met Rach last year and she behaves exactly the same way off camera; always smiling and warm. I hope in the future she will release some DVD / Book sets together because it would make my life so much more easer. Some of the recipes do take more than 30 minutes to prepare but it's still quicker and easier than going out. I no longer go out to dine (at least not in casual restaurants) because the service is always abominable and the quality is always lousy. Because of Rach I am able to stay at home with my loved ones and cook great dishes, just like her!

The recipes that I've tried so far have all been super delicious and easy. I like how some ingredients have a couple alternates listed, like using tabasco if you don't have chili powder. However, most recipes require me to purchase at least one ingredient that I don't have on hand. Also, another title for this book could be 30-dishes-to-clean-meals...thank goodness my husband does most of the washing!

I have to agree with some of the other reviewers that a lot of these recipes (unless you're a pro, which I am not) take longer than 30 minutes. However, they definately take less than 60 minutes, which I'm still very pleased with. Plus, everything I have cooked so far is just DELICIOUS! I started getting sick of making things out of cookbooks for just "so-so" meals. This cookbook, however, has restored my faith and I always look forward to trying a new recipe out of it.

Some will call this book Rachael Ray 30-Minute Meals 3. I beg to differ. In fact, Get Togethers is an earlier cross between two other superb Rachael Ray books, the recent 2, 4, 6, 8 (published in 2006) and the older Open House Cookbook (originally published in 1999 and reprinted in 2005).

What are the main differences? In the Open House Cookbook, Rachael is mostly looking at parties, holiday gatherings, and larger dinners. Since this is an early book, it leans heavily to Italian cuisine and spiced up versions of traditional American fare. In 2, 4, 6, 8, the perspective is from a couple who occasionally add 2, 4, or 6 people for some meals or don't mind having a leftover meal.

Get Togethers is also aimed at social occasions, but it has a focus more on the traditional sizes of serving 4-8. There are a few special dinners for two. Reflecting Rachael from 2003, this book is less based on Italian menus and provides more adventure in cuisines and seasonings.

If you want to throw a big party, Open House Cookbook provides more choices. If you want to do something special for two, 2, 4, 6, 8 has more choices.

I found the breakfast and brunch ranges in Get Togethers to be a limited, often built around frittatas and scrambled eggs. By comparison, the lunches are terrific for their range, imagination, and eye appeal. She also provides some excellent ways to provide snacks for cocktail parties and watching sports on television. Another section takes major holidays and provides fast ways to serve eight.

In terms of 30-minute thinking, I'm sure Rachael can do all of these menus in that amount of time. I'm also pretty sure I couldn't do any of the menus for 8 or more in 30 minutes. But I'm sure I could be done in less than an hour.

One of the best parts of the book comes in the beginning where she provides a list of prepared items you can use straight from the store and describes a number of ways to present your meal to dress up the occasion.

The book had a number of excellent menus and recipes that I recommend including:

One just cannot go wrong with Rachael Ray. Talented as can be, she makes Cooking fun! I never bought recipe books while raising my children, too many ingredients (so I thought) & too much work with them running around. NOT SO! More fine, quick recipes from one of my favorite cooks. Rachel knows how to reduce a recipe to its basics without compromising the taste. On the day it arrived, we found a recipe that had to be shared -- the Chili Casserole. I look forward to trying most of the others. I go back to Rachel Ray's cookbooks time and again -- many of her recipes have become standards in my cooking. But she can sure multi-task! I rarely do one up in thirty minutes until I have done it several times.

The idea behind this clever cookbook is to have on hand a certain amount of basic ingredients. Then, to complete one of the recipes in the book, all you have to do is stop by the store and pick up a few items on your way home from work- thereby qualifying you to use the "express lane"- hence the title of the book.

This particular cookbook of Rachael's contains not only easy to follow recipes, but also has a wide enough variety of them that will keep you from serving the same boring meals every night- a chronic problem at my house.

All in all a good cookbook that deserves a place on everybody's bookshelf, I give it five stars. Also recommend The Sixty-Second Motivator if you have trouble sticking to a healthy diet.

I bought this book because I really like her. Unfortunately, you have no idea which recipes are good.. and which are not. The book is also not ideal for placing next to you while you cook. They should change the binding! Another minus.. no pic of what the finished product should look like. I understand it's a budget book.. but there has to be some features to make me want to buy another one.

I think I prefer browsing on Food Network... there are reviews from other cooks on whether or not it is good.

I recently recieved this book and have found a few recipes I want to try. However, living in a small rural western town, some of the ingredients are unavailable. Not really a problem for me since I susbstutute ingredients quite often.

My biggest problem with this book at the moment is the index: totally useless. As I thumbed through the book perusing, I found a recipe entitled "Steaks with Tangy Corn Relish and Super Cheese and Scallion Smashed Spuds." A day later, I wanted to find the recipe for the corn relish...I looked in the index under "C" for corn...nope, not there. "R" for relish...not there either. Oh, I remember, it was listed with steak in the recipe...looked under "S" for steak...nope, not there either. I finally find it under "B" for beef.

Another recipe in the book included a Spicy Citrus Salsa...can't find it under Salsa or Citrus, but it is listed under "C" for Chorizo.
Maybe it would be faster to thumb through the book until I find what I'm looking for?

I want to try the recipes for the condiments - to go with other dishes I make, but I'm having a very difficult time of finding that specific recipe. When I do find the recipe, it's rather difficult to separate those specific ingredients and directions from the rest of the recipe.
I will be making good use of a highlighter in this cookbook.

I'm new to cooking fresh food daily and am actually starting to like it. This cookbook has been tremendously helpful in that the recipes are quick and easy and the 'to-buy' list is usually short. The portions are generally for 4 and there's only 2 of us so we always have left-overs, which freeze or reheat nicely. I'll go through the book and buy 2-3 meals worth on Monday (it's still fast, maybe not express though!) and basically be set for the week.

I wish the cookbook had a list of the recipes that use the fresh-purchase ingredients. This would make it easier to use up the fresh-purchased ingredients if not used in one recipe. I still recommend this for quick, easy, tasty meals.

When I go to make a meal I find myself pulling this book first for a few reasons:

1. Every recipe I've tried has been exceptional, that's a biggie. When you find yourself making them over and over you know they are good ones.

2. The food is done within an hour from start to clean-up.

3. The recipes in this book are a wonderful twist on standards. She uses normal ingredients from your pantry (pasta, canned tomatoes, veggie stock etc.,) and spikes them with fresh herbs to make them smell and taste incredible...like it simmered all day. I have yet to be able to improve on the original recipe. A circumstance I have never experienced before. Each recipe is the perfect balance of flavor.

I only wish they would release another Rachael compilation book with vegetarian recipes from her newer books. For us vegetarians it's nice to have a book where we can eat everything instead of wading through the 90% of we can't eat to get to the 10% we can. :)

This is another super book from Rachel Ray. I just love her 30 minute meal books and programs. Admittedly they take me a little longer than the 30 minutes, but still speedy and well worth pursuing. Who can argue with preparing a dinner party in half an hour?

5 out of 5 stars For Rachael Ray Fans Who Want More Vegetarian Choices .......2007-02-21

Having read several of Rachael Ray's cookbooks, I am always struck that she is usually more generous with providing meat or poultry-based choices than vegetarian ones. That made me curious about seeing this book. What would her 30-minute vegetarian choices look like?

I was pleasantly surprised to find that most of the dishes don't include eggplant, which I'm not fond of. And many of the dishes call for artichokes, asparagus, beans, mushrooms, peas, peppers, tomatoes, and spinach which I like very much. She also makes generous use of standard Italian cheeses, all of which I like.

The book is organized into six sections:

Menus
Soups
Salads
Risotto, Pasta, and Italian Vegetable Entrees
Make Your Own Asian Take-Out
Snack Suppers: Stuffed Potatoes; Sandwiches; Dips; and Spreads

The menu section is quite brief with four three-course menus and six two-course menus.

The soup section is one of the best parts. Every soup looked great, and many contained helpful time-saving directions. Here's a list of the more intriguing ones to me:

Chili; red beans and rice soup; three bean soup; black bean soup; pumpkin and black bean soup; Southwestern corn and pepper pot soup; escarole and white bean soup; chick pea and cannellini minestrone; and gazpacho.

The salads section is also a treat. She does a good job of upgrading from a standard salad without making a lot of extra work. Here are some of the more intriguing choices:

Asparagus salad; white bean salad; tabouleh salad; anti-pasta salad with bagna cauda dressing; Greek vegetable salad-stuffed pitas; baby spinach salad with pears and walnuts; spinach salad with blue cheese and scallions; and couscous salad with scallions and ginger.

The risotto options seem perfectly good. I wonder how well they will taste without meat and poultry-based stock. I suspect they will need more spices to upgrade the flavor in the absence of those ingredients.

The pasta section starts with some good pesto recipes for quick results. For the most part the other pastas didn't excite me.

The Asian take-out section has only seven recipes in it and seems thin for someone who is willing to eat tofu . . . which isn't included in the cookbook as an ingredient.

In snack suppers, I liked the recipes for spinach calzones, bean burritos, quesadillas, spinach artichoke dip, white bean dip, red pepper and sun-dried tomato spread, wild mushroom spread, spicy hummus, and her four pit-zas.

I haven't gone looking for vegetarian cookbooks lately, but I suspect that there are ones with many more recipes, more variety, and more complex flavors. And I assume that they all take a lot longer to prepare.

But for what I'm looking for, Veggie Meals provides more than what I need.

I am very new to vegetarian meals, and use to think vegetarian diets mostly consisted of tofu, eggplant, cucumber, and artichokes. I was glad to find Rachel's book that offers vegetarian foods that involve many different types and styles of foods: Salads, Soups, Asian, Italian, Snack Meals. I have cooked many recipes from this book, and can say they all have turned out great, don't take a long time to cook, and are very visually appealing. The soups are very good, as are the Asian and Italian recipes. My kids have enjoyed the food, too. If this book had color photos of each dish, it would be fabulous.

I really like this great little book. I have already tried out four of the recipes and they are simple and quite delicious. Rachael truly does deliver a 30 minute meal. The Shepherd's pie took a little longer, but was really worth it. I have since bought several other cookbooks by Rachael Ray and am very happy with all of them. Many of the recipes use common ingredients that I already have on hand in my kitchen. I recommend this book.

There's a lot of good information here. As a teacher of twenty-five years, and as a parent, I've dealt with more than my share of overweight kids, and read everything that comes along on the subject. And although this book is one of the better ones out there, I've been recommending the CD talk "The Fat Kid's Diet: Stop Childhood Obesity In Your Home," available here at Amazon, to the parents who come to me with their concerns. It's brief, sensible, and right to the point.

I found this book to be very helfpul in my never-ending quest to come up with meal ideas for my toddler that are healthy and appealing to him. The meals really are easy to prepare and I've yet to strike out in terms of my son actually eating the food. This book was disappointing. For starters, if you're cooking healthy recipes you should not be using instant rice, or canned cream-of-whatever soup. And just because you're cooking for children doesn't mean you have to add sugar to vegetables!

There are a few good recipes but borrow from your library first. I think the early Mollie Katzen cookbooks (Enchanted Broccoli Forest, Moosewood Cookbook) have much healthier recipes.

Decent recipes. Not gourmet by any stretch of the imagination, but they're pretty good (the Chunky Apple Muffins are *very* delicious!). However, some recipes do use heavily processed stuff like cream-of-whatever soup, cheez whiz, etc. Ick. :( It's very easy and takes just a few minutes to make a white sauce instead of using a can of cream soup. Not sure why the authors didn't do that instead, as it's much better - both for flavor and health - than the processed stuff.

My biggest complaint is that the cover says that the recipes can be made in 30 minutes or less. Not true for all of them! I can think of several off the top of my head that take anywhere from 45 minutes to 2 hours. I wish they wouldn't have advertised what they couldn't deliver.
