Book Description

Among the world's great cuisines, the foods of Mexico stand out in their diversity and creativity. Rooted in its history of great and ancient Indian civilizations, inspired by the Spanish Conquistadores of the sixteenth century, and influenced by European tastes in the later revolutionary years, it is indeed a dynamic cuisine -- adaptable but remarkably complete even in its melding of different cultures.

In The Best of Mexico, food editor Evie Righter has chosen the finest examples of culinary creativity from this intriguing and vibrant country. From the chiles, chocolate, nuts, and tomatoes puréed into exquisite sauces, to the corn, beans, avocados, and seafood combined into flavorful dishes, she presents the Mexican cook's ingredients and techniques in a clear and accessible style that will enlighten and inspire.

Here are the favorite drinks, salsas, and tacos; festive dishes including enchiladas, tamales, and pozoles; elegant entrées like Mole Poblano de Guajolote and Pescado a la Veracruzana, and well-loved desserts like Flan and Buñuelos.

Color photographs throughout feature the dishes themselves as well as the bountiful waters and lively marketplaces so representative of Mexico. An essential guide to this distinctive cuisine, The Best of Mexico helps turn an ordinary meal into a fiesta.

Customer Reviews:

4 out of 5 stars Nice book, great photos!.......2007-09-26

It was not as through as I had anticipated, however, I did find the recipes that I was looking for and the instructions are very well written.

4 out of 5 stars elegant but simple.......2007-09-21

A little book of traditional recipes. They are simple to follow and the lovely pictures almost make this a coffee table book.

5 out of 5 stars A great choice.......2007-07-04

Don't be fooled by the small size of this cookbook. It packs many great recipes between it's covers. From beverages to desserts with everything in between this is a gem for delicious mexican recipes, yet is feasible with a moderate level of culinary skills. I bought the first book in this series several months ago and have been consistently pleased with each new addition.

5 out of 5 stars The next best thing to my abuelita's cooking .......2007-03-25

The dishes in this book are delicious. And without a doubt they are as authentic as my abuelita's cooking. I have already tried the dishes for the pozoles and enchiladas, and also several salsas. So far my favorite dish is the Pescado a la Veracruzana. I am really looking forward to trying some of the other dishes in this book.

5 out of 5 stars Authentic and Delicious.......2007-01-15

I bought this book for my boyfriend. We have tried several of the recipes and we have loved each one we try, especially the enchiladas verde. I highly recommend this book to anyone who wants to make Mexican dishes that taste authentic and delicious.

5 out of 5 stars really outstanding.......2006-05-18

I actually own ALL of this pair's terrific 'best of' series (or, me and the bank anyway)....and they are great at culling out the really local flavor from zillions of local cookbooks, to truly include THE BEST in each of their books. Well done ladies - wish I had thought of it myself!! I hope you don't have to BUY the hundreds of cookbooks from each state- what a great job to have them SENT to you....but everything I really wanted in the New Mexico book- a near neighbor to me, and one I have visited a few times- but not often enough!

          Book Description

New Mexico gardeners have long needed this book--a careful guide to the trees, shrubs, ground covers, and smaller plants that thrive in the state's many life zones and climates. In a state where the altitude varies from 3,000 feet above sea level at Carlsbad, to 13,000 feet at Mount Wheeler near Taos, where the annual rainfall is anywhere from 7 inches at White Sands to 30 inches in the Sangre de Cristo Mountains, where the soil is loose and gravelly, or thick and hard, or dark and rich, this guide, organized by regions and specific cities, will be especially useful. It also includes information on adjacent areas in Colorado and Arizona and in El Paso. In addition to the top hundred-plus species for each location, the author provides suggestions for more adventurous gardeners and information on historic landscapes around the state. He also points out a favorite well-planned and well-maintained garden or landscape that is open to the public in each community.

A landscape architect in Albuquerque for twenty-five years, Baker Morrow is intimately acquainted with how things grow in New Mexico. He is also generous in sharing his personal preferences. He mentions the species he likes "for their toughness, adaptability, and sturdy beauty in a difficult climate," and also the ones he admires for "their cheerfulness and their ability to grace our lives with shade, with helpful protection from the wind, and an endless series of wonderful colors." With many hundreds of native and exotic species readily available, no New Mexico gardener can afford to be without this book.

A thorough, richly illustrated and practical guide to what grows best in every part of the state and adjacent areas.

2 out of 5 stars Best Plants for NM.......2007-06-17

I feel like i wasted my money on this book. it has not helped me pick plants for where i live and i plan to sell in a garage sale!

5 out of 5 stars Really well focused on our state and our climates.......2005-07-24

This is by far the most thoroughly researched and thought out book on landscaping and gardens/plants of any book for any region I have found. What is great is that it is for us and not for Texas or Arizona or Colorado. These states have plenty of mention in other publications...The author even took to the time to research what grows in each town first hand, not by just looking at a USGA map for plant hardiness. I have recommendeded this book to many people interested in landscaping here in New Mexico and I guard mine like it was gold. Don't lend it out, you may not get it back.

          2 out of 5 stars Not a xeriscaping guide.......2005-01-16

I bought this book primarily for the plant listing, and am disappointed. After looking through it, I reviewed the title of the book and realized that it is not actually billed as a xeriscaping guide. There are some xeric selections, but lot of these plants grow great in New Mexico only if you water them like crazy. Some of them shouldn't be planted here at all, such as silver maple (browning at the edges of the leaves by the end of July, not just in my yard, but elsewhere in my neighborhood too), and salt cedar (a significant environmental hazard even within the Albuquerque metro area).
I liked the first part of this book the best - the general overview of gardening in New Mexico is informative and easy to read. The final section of the book, city-by-city plant guides, is just not very useful to me since I only garden in Albuquerque.

5 out of 5 stars Best Resource of New Mexico Landscapes and Gardens.......2001-12-10

Xeriscape doesn't mean ugly. This book will help you find plants that are pretty and that won't take up a lot of water. IT's a great book.

This is our reference book for when we are adding something to our yard. We have a full acre that we are working on (slowly!) and this book has helped us every step of the way.

The color pictures make it easy to see exactly what a plant looks like. The color pictures also help when you are trying to find the name of the tree in some yard that you thought was pretty. The information it has on each plant is very useful- it gives you the area it will grow best in (example: Albuquerque or statewide in the shade or statewide up to 800 feet elevation). The other thing that makes this book a good buy is the plant list for different areas. For example, there is a plant list for Gallup/Grants area. These lists give you trees, grasses, shrubs, flowers and more that will grow well in your area.

This is the best resource out there if you live in New Mexico and want to have a lovely landscaped area.

5 out of 5 stars stop wasting money and water!.......2000-04-07

Keeping plants alive in New Mexico is very difficult. If you're thinking of buying this book you already know this. If you do buy it you'll find out how to solve all of your yard and garden problems. This book tells you everything you need to know to successfully surround your home with attractive plants instead of the tiresome and difficult to maintain bluegrass lawn or gravel pit one sees so often in New Mexico.

Most importantly, the book lists plants suitable for every inhabited part of New Mexico. If you've learned to garden in Gallup but want to know what to plant in Deming or Santa Fe, this book is for you.

The plant lists and photographs make this book an essential money and water saving gardening tool for the New Mexico gardener. Buy it for yourself and give a copy to to your new neighbors!

We've just returned from our first visit to Oaxaca. The xeroxed copy of the Oaxaca section from Cooks Tour was the second most used reference (the street map was first). Since we bought this book nearly a decade ago, it's been the basic resource for information on fondas, markets, local specialties etc. Some of the recipes are such staples that I've forgotten their source until I run across them when using the book. HIGHLY RECOMMENDED.

5 out of 5 stars Delightful and Authentic Regional Guide to Mexican Cooking.......2002-09-06

This is a very fine collection of unpretentious, delicious recipes - wonderful food as cooked by real Mexicans. The descriptions of local markets and fondas are rendered with affection, humor and a healthy dose of common sense. In short, a book that should be in the collection of every Mexican cooking aficionado.

5 out of 5 stars Steve Sando is a Moron!.......2001-04-19

This book rocks! I don't know if Mr. Sando is used to Taco Bell or what? The food I have made form this book has all been superb. The flavor is authentic. Some of the recipies are simple and some quite involved! Not every recipe needs a list of 20+ ingredients and 3 pages of instructions to be wonderfully flavorful. The many types of moles are some of the best I have ever had. Anyone who looks in cookbooks for travel tips is delusional. Great cookbook!

5 out of 5 stars great cookbook and travel guide.......1998-01-04

This is a great cookbook. I've traveled a lot in Mexico and cooked a lot of Mexican food, using the classic cookbooks like Diana Kennedy's. The recipes that I've tried in this one are uniformly terrific. Just as important, the accompanying narratives and photos draw you back into the whole sensual experience of Mexico, so both the cooking and the eating take on an added dimension of rich experience.

          5 out of 5 stars A great adventure novel.......2007-06-28

I'll be brief. If you're a fan of adventure, of swashbuckling, of novels like Dumas' "The Count of Monte Cristo" - this book is for you. It's a thrilling novel and a great story in history and Pedro is an extremely interesting character that you'll come to love, even through all the mistakes he makes. Buy it, read it, and I don't think you'll be disappointed.

          3 out of 5 stars Adequate.......2006-08-28

This one had a lot of promise. Written by a fairly reputable author, still in print after fifty years, a best-seller in its time, and with the Cortez conquest of Mexico as its backdrop, it seemed like can't-miss historical fiction. Well, it isn't awful or anything, but there is much, much better out there.

The story is about Pedro de Vargas, the scion of a Spanish nobleman. His family becomes ensnared by the Inquisition through machinations of the one-dimensionally evil Diego de Silva, and they must flee Spain. The father and mother make it to Italy, and Pedro goes to Cuba, where he meets up with and joins the Cortez expedition.

This, of course, makes up the bulk of the novel and as far as it goes, it's pretty good. You really can't go wrong with subject matter such as this; my goodness, this has to be one of the most thrilling stories in history. And Shellabarger gets the details right: there's Cortez burning his ships, there's Montezuma as a Spanish captive, there's Alvarado massacring the natives, and there's the Spanish retreat on the night of tears.

The problem is that there's nothing especially illuminating about any of this. The Cortez character is about what you'd imagine him to be, no more, no less. The same for Montezuma, the vacillating emperor. History shows that he was weak-minded. He's weak-minded in the novel. The Spanish soldiers lusted for gold and were devoutly Catholic; the Aztecs practiced human sacrifice and lived in the stone age. Just like we've all been taught.

In the meantime our hero has a book-long love affair with a cabaret dancer and a book-long faithful friend who suffers his triumphs and tribulations along with him. The tension comes from de Silva who follows him all over the place to give Pedro and us something to worry about, and also the pretty but empty-headed noble girl he left behind in Spain and whom he feels guilty about not marrying.

Again, this isn't a terrible read. But for adventure, Sabatini and G. M. Fraser are more entertaining; for fiction with this subject matter, Aztec, by Gary Jennings, is more imaginative; and for a strictly historical aspect, The History of the Conquest of Mexico, by Prescott, though a history, is frankly more exciting.

5 out of 5 stars My all time favorite book.......2006-02-01

Captain From Castile is my all time favorite book. I have read Samuel Shellabarger's other novels and enjoyed them also, but "Captain" remains my favorite. When my husband (without my knowledge)stored the box with my hardbond issue in a storage unit when we moved, where it ended up getting ruined I was very upset. I have had to be content with the paperback version. I recently thought I was going to be able to purchase a new issue version, but could not get it afterall. Hopefully, it will be re-published and perhaps the full book be made into a movie as the one previously did not deal completely or well with the true contents of the story. Its a marvelous read of a period of history full of details that are wonderful and sad and delightful to read and re-read. I have been doing so since 1964.

          5 out of 5 stars A must read swashbuckler.......2005-09-16

"On the evening of June 28th, 1518, young Pedro de Vargas, aged nineteen, confessed his sins of the month to Father Juan Mendez."
So begins Captain from Castile, a great adventure set in Renaissance era Spain. Pedro de Vargas is an eminently likable young man who gets by through quick thinking and a deft hand. The story is quick paced, taking the reader on a journey that leaps from imprisonment in the dungeons of the Inquisition, to the invasion and conquest of Mexico to intrigues in the court of Emperor Charles V. The treatment of the native populations may come across as dated but definitely true to the views of the 1500s. This is pure swashbuckling action written at a time when Tyrone Power and Errol Flynn ruled the box office. Swashbuckler fans won't be disappointed with this book.

5 out of 5 stars In my Top Ten books of all time.......2005-01-15

I love this book completely. I found it in a used bookstore when I was thirteen (1993) and completely fell under its spell. It's an incredibly EPIC and rich tale, following Pedro de Vargas from the Spanish Inquisition at home to the New World, with lots of drama and swashbuckling in between. I must have read this yearly through early high school. However, it has probably sat on my shelf for the last 6 or 7 years, which is a tragedy. (Confession time: I am a NUT for historical epics, in both literature and film, I love the grandure, the sweeping scale, the broad vistas). Recently, I was gripped by a need to partake in something EPIC so I pulled this off the shelf and it's been such a delightful ride, again. I've been long enough removed from the story that, while it is familiar, I am still in suspense for all but the largest of plot twists. I'm so glad that this is being published again. This was written in the 40s and deserves a chance at a new audience.

After re-reading this recently, I found that it is even BETTER than I remembered. The story is so rich and complex...warm fuzzies! I stayed up WAY TOO LATE last night trying to get past all the "tense" moments so I could get some sleep. UG! But then, there were only twenty pages left so I stopped because I didn't want it to be over just yet. It was very interesting seeing the 16th Century Spaniards' sentiments toward the Native Americans, and then Shellabarger (the author) as an "enlightened" 1930's male trying to justify/explain them. Yet, the author had NO ISSUE with his characters' treatment of women. While several of the female characters are much more than dish rags (yay!) the concept of beating a woman into obedience is treated as an acceptable solution. I had forgotten that part and how it had rankled me during my readings of this a dozen years ago. Still, it's a tiny 2 page blight on a 500 page great adventure.
