Rose Levy Beranbaum's The Cake Bible introduced readers to a newly illuminating baking-book approach--a precisely detailed yet accessible recipe format emphasizing baking science. The Bread Bible follows the same plan, offering 150 recipes, arranged by type, for a great variety of baked goods--from muffins, popovers, and English muffins to sandwich loaves, focaccia, rolls, hearth breads, rye bread, challah, and more, with a particularly vivid (and passionate) stop at sourdough loaves. Instruction is abetted by 32 pages of photos plus 300 step-by-step illustrations that depict, for example, bagel forming, in exact, imitable detail. In addition, an introductory section, "The Ten Essential Steps of Making Bread," includes a particularly lucid discussion on the way yeast works plus an invaluable comparison of kneading methods. All this is impressive indeed, and readers bitten by the bread-baking bug will welcome the ultra-thorough Beranbaum approach. The less committed may find her technical demands too painstaking (her baguette recipe requires two starters, for example; though simpler loaves are, of course, offered) or even impractical (ingredient quantities using grams are sometimes given in minute fractions, requiring a special scale). The frequent inclusion of alternate mixing methods and equipment options can also make the formulas unwieldy. On the other hand, features like Pointers for Success and Understanding often yield exciting discovery as well as rewarding results. Rose Levy Beranbaum has done a magnificent job with this book. Her instructions for each loaf are perfectly detailed, and I've yet to have one of her recipes fail. Some here have faulted her recipes for being repetitive in their details. However, I see this as a positive. I would rather not have to flip to five different parts of a book in order to make a loaf of bread. Provided that repeating a part of the instructions doesn't take up large amounts of space, it's worthwhile. I also really appreciate the introductory descriptions and stories she writes for the various breads. They really get you excited about making the various loaves of bread. You have to try making the pita bread, as watching them puff up in your oven is amazing. Her pizza crust is also the best I've made. Oh, and if you try the rosemary foccaccia, be patient, and magic will happen! At just over 20 minutes in the mixer, a wonderful dough ball will form. I suggest you watch the process, as you can see the gluten forming before your eyes. I can't recommend this book highly enough, and if you've ever got questions, check out her blog, Real Baking with Rose, where she answers reader questions all the time!

If you want to learn how to bake bread, you must get this cookbook. Some other reviewers have complained that the book is too long, the recipes too complicated, or the author is too scientific. I disagree. To me, having this cookbook is like having a brilliant teacher in your kitchen--one who explains what you are doing, offers encouragement, and tells you why things might have gone wrong. In a yearlong project, I baked every loaf of bread in The Bread Bible, and the quality of what I--a novice bread baker--was able to turn out was extremely gratifying to me. I had only one mishap (the rosemary focaccia, the bread I started with and one of the more difficult ones in the book), but when I made it a second time, carefully following every instruction, it was wonderful. If your method of cooking is to add a little of this and a little of that and see what happens, this is probably not the book for you. But if you want to bake perfect bread, guided by one of the best bakers on the planet, buy this book.

I just adore Rose Levy Bearnbaum's style of writing cookbooks. While, it is certainly not for the occasional baker, enthusiasts will hang on ever word. My first Rose book purchase was the Cake Bible about 12 years ago. The Cake Bible is still my go-to for cakes and now the Bread Bible is the same for my bread baking endeavors.

Rose is a passionate baker and it shows in her books.

I really enjoy this book. It has everything from everyday recipes to special occasion breads and everthing in between. It has great illustrations and the recipes cover all skill levels.

This book is just wonderful! I have been baking bread by hand for several years now and have thouroughly enjoyed it, but this book has helped me to stretch beyond the recipe and try some new things. In the past 2 weeks, I think I have made 7 recipes out of this book. I just can't seem to stop. The Bulgur Oatmeal bread, I think, is the best bread I have ever tasted. Absolutely AMAZING! I also made the Sesame Burger Buns, Whole Wheat Long Rolls, Vienna Bread, Pain Campagne and Farm-Style White Bread with Cardamom. I have probably 200 cookbooks and this is my new favorite! A must read!

This is a fine cookbook. It explains in detail the ins and outs of yeast and flour. The recipes are good, but I was expecting a little more pizazz, a little more creativity and a few more fundamental recipes. I would like it if next time they include more "bread machine" recipes for a 2 pound loaf, and a few more bagel recipes.

If you need a basic bread book, this one will do nicely.

Weighing almost as much as a small child, Beth Hensperger's The Bread Bible contains 300 recipes, plus slice after slice of baking wisdom. Hensperger certainly knows her bread: she is the author of several other yeasty numbers, including the mouthwatering Bread for All Seasons and the feisty Breads of the Southwest. Her Bible features simple, basic breads, such as White Mountain Bread, French Bread, and an Old-Fashioned 100 Percent Whole-Wheat Bread, as well as fancier breads such as Brown Rice Bread with Dutch Crunch Topping and a tangy Anadama Bread with Tillamook Cheddar Cheese. Not forgotten are scones, biscuits, pizzas, croissants, waffles, muffins--and even coffee cakes. As can be expected from such a hefty, all-encompassing volume, many breads demand the skills of agile and able bakers. Crescia al Formaggio, an aesthetically pleasing savory cheese bread, requires scrupulous time-keeping and copious amounts of elbow grease and patience. Of course, the rewards are high. Happily, many other loaves can be whipped up in a bread machine, and are equally satisfying. An Old-Fashioned Oatmeal Bread using Irish oats makes everything good with the world with its rich, nutty texture. These are great breads: relatively simple to make with absolutely great doughs. If you bake much bread, you will recognize the wonderful quality of her dough - firm, easy to handle, with that wonderful yeast tang.

I really enjoy this cookbook; I cook the banana bread recipe from this every time I get 3 mashy bananas. I keep running through different recipes, and I've still not gotten a bread disaster. I tend to mostly use my bread machine's dough cycle, and form the bread myself, but since I got a higher quality bread machine, the recipes are also working fabulously in the various machine cycles. I highly recommend this book; lack of illustrations seem to bother some, but it's not really been an issue for me.

This is the first of two books by the same name `The Bread Bible' written by Beth Hensperger and published by Chronicle Books in 1999. The second book with this title, written by Rose Levy Beranbaum and published by W. W. Norton & Company in 2003 I have reviewed earlier, before I discovered this title.

This occurrence is actually a rare good fortune, as it gives us a chance to compare two essays of exactly the same subject and pick that effort which does the better job on the subject. Both authors appear to have ample credentials for the chuzpah required to write a book with such a pretentious title. Ms. Hensperger has written five other books on bread baking and Ms. Beranbaum has written three other large, well received books on baking, two of which are also `bibles' on their topics.

Ms. Hensperger gives us 473 pages of text and 21 pages of index at $32.50 while Ms. Beranbaum gives us 608 pages of text and 21 pages of index for $35.00. Ms. Hensperger gives us 25 very useful introductory pages on equipment, flour, and general techniques. Ms. Beranbaum gives us 62 pages of what I considered to be a model of culinary writing on the ten essential steps to making bread. This is the first sign that Ms. Beranbaum is aiming at a much more sophisticated audience than Ms. Hensperger.

Ms. Hensperger gives us no color photographs or diagrams illustrating techniques. The few line drawings seem to be primarily for decoration. Ms. Beranbaum's book provides four sections of full color photographs of the baked products essayed in the book. She also provides many pages of expertly done line drawings illustrating baking techniques such as the `business letter fold', layering foccacia with herbs, and making sticky buns. Other line drawings give very good pictures of baking equipment.

Ms. Hensperger's Table of Contents with the name of each and every recipe spelled out is much more to my taste than Ms. Beranbaum's simple chapter headings. Fitting Ms. Hensperger's home baker orientation, she has two whole chapters devoted to using a food processor and a bread machine for bread recipes. Ms. Beranbaum discusses bread machines, finds useful things they can do, but ultimately keeps them on the sidelines due to their small capacity and the tendency of most to heat the dough, causing a too fast rise in the dough for optimum taste. Rose is certainly not a Luddite, as she makes extensive use of the KitchenAid stand mixer and its big brother the Hobart stand mixer. I prefer to not use bread machines. If you are comfortable with them, Ms. Hensperger may have more to offer you.

It is no surprise that both authors deal with brioche. Ms. Hensperger includes four recipes for brioche and three variations. All are embedded in a chapter on egg breads including Challah. Ms. Beranbaum devotes a whole chapter of 45 pages to brioche, including Challah, cinnamon buns, panettone, and a provocatively named `stud muffin'. Lots of variations on each recipe are given. As with all recipes, Ms. Beranbaum's approach is much more detailed and precise. The most obvious sign is that all of Rose's recipes give ingredients in both volume and weight in imperial and metric units. This feature alone would swing my choice in favor of Ms. Beranbaum's work. Another example of Rose's precision is that she specifies the high gluten brands of all-purpose flour rather than simple `all-purpose flour. I am constantly amazed at the variety in recipes for brioche. Like every other authoritative recipe, both recommend an overnight rise, but the two recipes start the sponge in much different ways, with Ms. Beranbaum using a much more finicky approach, being very careful to avoid exposing the yeast in the sponge to salt than Ms. Hensperger. When separating the dough to be put into molds, Ms. Hensperger is unconcerned about differences in size. Ms. Beranbaum is not compulsive about same sizes, but does recommend a scale to achieve uniform amounts of dough in the molds.

Neither author oversimplifies her procedures, but Rose Beranbaum consistently gives a much more professional instruction and a deeper understanding about what is going on along the way. Both have an ample amount of passion and love for what they are doing. If you are a home baker and can find Ms. Hensperger's book at a good discount, you will not go wrong. If you are a baking hobbyist or even aspiring to being a professional baker, then Ms. Beranbaum's book is the one you want. Both are excellent. Ms. Beranbaum and her publishers seem to have invested much more energy, money, and precision into their volume.

Judging from other reviewers comments, some errors have been detected in this book. The same is true of Ms Beranbaum's book. This issue is a wash and I have stopped holding a small number of minor errors like that against cookbooks.

    New Directions was Father Merton,s first publisher and always produced art house quality books meant to last. This tradition only improves with age as this New DIrections reprint issue continues the tradition of high quality books which are a joy to handle and to hold.

    I find the Liturgical Press reprint of this monumental work of Psalm theology to be hard to read and easily broken, like a small trade paperback. This New Directions reprint on the other hand has a generous size and a beautiful lay out with generous margins for your own meditations. I especially appreciate the illustrations of various aspects of the ancient French Catalan Devot Christ which I have not seen in many decades, and am deeply moved to contemplate once more within these pages.

    Any spiritual library requires this volume of Father Mertons meditations and teachings of the Psalms, the cornerstone of any monastic prayer life, the cornerstone of the Rule and life of Our Holy Father Saint Benedict, who requires their full reading weekly and regularly. And this beautiful and merciful reprint by New Directions fills their contemplation with a great and gentle joy.

    This volume of Father Mertons early writings also still comes with Imprimatur and Nihil Obstat, etc., for those who require such things.

    Who better then Thomas Merton, a poet and a monk, to share his feelings on the most significant and influential collection of religious poems ever written? In this book Merton teaches us that the Psalms not only sum up the teachings of the Old Testament, but they can serve as actual nourishment for those whose vocation is the life of prayer. This book offers inspiration on the Psalms and shows us how they can lead us become closer to God.

    I highly recommend this book to all. And especially to those who seek to come closer to God daily in their contemplative life. Thomas Merton was Father Louis of the Order of Cistercians of the Strict Observance and lived daily with the Psalms.

    I commend New Directions for issuing a facsimile reprint of the original of this valuable book. Who would not say that here is a publishing company of enduring and impeccable taste? I have a copy of the original cloth bound book- it is beautiful, and easily one of my top twenty favorite books. I believe this is the book that comes most surely from Merton the poet. His consideration of the Psalms is inspired; the language in this book is as severe and ecstatic as are the Psalms themselves, and his insight into their relevance is without peer. The brevity of Merton's exposition is part of its potency. Nothing is wasted. Like the Psalms themselves, the veins of this book run deep in kingly rivers, announcing the heart of God like a morning song. Merton's interior acquisition of that song is of epic intensity, yet simple as clean water. I believe "Bread in the Wilderness" surpasses even "Seeds of Contemplation" in directness, common heart, and indeed artistic beauty. It's an indescribably beautiful book that moves, aches and rocks, and leads one, ultimately, to the inmost core of revelation, which is, after all, believability. Merton's references to the Psalms can be traced like a monk's thread throughout all of his writing, from the earliest books up through the posthumously published Journals. This book gives us a clear understanding of how constantly faithful Thomas Merton remained not only to the brilliant song of the Psalms themselves, but to the music of his own exceeding heart. And the woodcut Christ on the cover is so unfailingly Cistercian! This is a book that will live forever.

    When Thomas Merton, a Trappist Monk, wrote BREAD IN THE WILDERNESS, he had fallen in love with the Psalms of the Old Testament. As a monk, he had chanted the Psalms every day of the week. The monks still do this today. This book is certaily about the Psalms as it relates to people seeking to understand God and Christ. In only the way Thomas Merton can write, one will discover many practical truths about the Psalms. As Merton writes, "The Psalms are theolgy. That means that they place us in direct contact with God, through the assent of faith in His revelation." Even though this is a brief book, it contains large amount of material for thought and study. There are five divisions in the book, and each division highlights how God speaks through the Psalms. To the poet, there are many Psalms of importance. As Merton writes, "The Psalms are poems, and poems have a meanng, although the poet has no obligation to make his meaning immediately clear to anyone who does not want to make an effort to discover it." One of the most ineresting things about the book is how Merton sees Jesus Christ throughout the Psalms. Maybe Merton says it best whe he writes, "The Psalms are more that language. They contain within themselves the silence of high mountains and the silence of heaven. It is only when we stand at the bottom of the mountain that it is hard for us to distinguish the language of the Psalter from the tongues of the earth..." In this book, Merton makes the Psalms come alive. This is a book worth reading.

    Bread Not Stone:
    This collection of essays, were written between 1979 and 85 by one of the leading exegetes, who pioneered Feminist theologians to launch a challenge to the patterns and critique the traditions of patriarchal exegesis. The essays and speech, which dealt with the feminist liberation struggle to Biblical interpretation do not engage in the theory or practice of exegesis, with a minor exception. Sch-Fiorenza's follows from her earlier book In Memory of Her, which tackled this issue. Pheme Perkins comments, "These essays do a much better job than that book does in explaining the method behind the practice."

    Sch-Fiorenza Hermeneutic:
    Schüssler Fiorenza does not support treating the Bible as a timeless archetype, but calls for "re-visioning the Bible as-prototype." The required revision will do justice to the churches; once our experience is the 'canon' for evaluating Scripture, and the Bible is critically scrutinized in its light. She stresses, "No biblical patriarchal text that perpetuates violence against women, children, or 'slaves' should be accorded the status of divine revelation if we do not want to turn the God of the Bible into a God of violence."
    Her conclusion is clear; a feminist critical hermeneutic "does not appeal to the Bible as its primary source but begins with women's own experience and vision of liberation."

    Challenge of Feminist Biblical Interpretation:
    A feminist hermeneutic would argue that she cannot be content with any that perpetuate patriarchal domination and hierarchy. We must unmask them as texts promoting patriarchal violence. The biblical text must be evaluated in the light of feminist struggle for women freedom and identity. Phyllis Trible, in her 'Texts of Terror', published same year, expressed those non accepted notions; "Sadly, the scriptures of faith have failed to perceive and interpret the nuances of this story [tragedy of the daughter of Jephthah].

    Feminist Theology as Liberating:
    Sch-Fiorenza argues, women can only discover God's grace and presence in their struggle for liberation, as Dr. Perkins has concluded, "That feminist hermeneutics must part company even with liberation theology. The latter can indeed find a well-established 'option for the poor' as a principle of biblical faith and can claim obedience to biblical revelation for its projects of social justice."

    Pioneering Theologian:
    Elisabeth Schüssler Fiorenza, [Theologicum (MDiv), Lic. Theol., U. of Würzburg, Dr. Theol., U. of Münster] is Professor of Divinity, Harvard, a cofounder and editor of the Journal of Feminist Studies in Religion and a coeditor of Concilium. She was elected the first woman president of the Society of Biblical Literature. She has done pioneering work in biblical interpretation and feminist theology, and is one of the first advocates of Feminist theology, through feminist critical hermeneutic, she contributed to changing the face of theology, and influence many others contemporary liberation voices.

    This is going to be a combination rating. First of all, in content Fiorenza's book is easily 5 stars. She is exceptionally insightful into the process and presuppositions of biblical interpretation. One important stance that I appreciate is her argument that no interpretation of the biblical author's intended historical meaning is unbiased (like most claim to be). In other words, it's not possible for anyone interpreting the Bible to arrive at an objective historical evaluation of the text. Why? Because both the biblical authors and the Bible's interpreters are framed by their own social and political status. We must recognize this for two reasons. One, to see that the biblical culture and all mainstream interpretation comes from men, which subconsciously supports male dominance. And two, to hear the voices of women, those submerged in the biblical story and those who have not participated in biblical interpretation. When we hear all people's voices, especially those of the oppressed, we can free the biblical text from existing as historical "stone" to speak to us today as "bread" to the equality and justice that God intends!

    As for readability this work is usually difficult going, and here I can only give it 3 starts. This is a very scholarly piece and requires a lot of patience for the average reader (like myself). Make sure you read the 1995 reprint of the book, which contains an Afterword that is very helpful in summing up her takes and includes her reflections on reviews of the book. If I were just starting out on this quest, this isn't the first book on biblical interpretation I'd read. Maybe start out with an easier work like Feminist Biblical Interpretation by Letty Russell, and especially Fiorenza's article in it.

    All in all this is a great book. I feel fortunate to grasp probably only a small part of what she is thinking. I will be reading her follow-up books to this one: But She Said and Sharing Her Word. If you have patience, you will be truly blessed by Fiorenza's powerful insight into biblical interpretation, and you will see that the Bible from the eyes of women is equally as valid as from the eyes of men, and must be heard! (And if anyone out there knows how to get any of her lectures on tape, please let me know.)

    I have given this book several times as a gift, and each time it gets oohs and aahs when unwrapped. The picture does it no justice. The content is just as the summary above states. It's easy to read and nicely presented.
