If you've just purchased your first modern pressure cooker, this is a great cookbook to teach you the basics of pressure cooking. The recipes are solid, easy to prepare, and don't require a lot of unusal ingredients. The Lentil Soup is one of our favorites. That said, we sometimes feel that the recipes are a little too simple -- the dishes come out tasting similar to something we could have prepared on our own (granted, the pressure cooker makes it much faster, which was the point, wasn't it?) We purchased this book with The Pressure Cooker Gourmet (by Victoria Wise) and we've found Wise's recipes to be much more, well, gourmet. Of course, with the enhanced flavor come trips to the supermarket hunting for strange ingredients and longer prep times. We end up using both books about an equal amount -- The Pressure Cooker Cookbook for something straightforward to prepare and home-cooked tasting, and The Pressure Cooker Gourmet for dishes we never could have prepared before that are well worth the extra work.

I bought this book for some new recipes and the recipes in this book are a nice mix of basic and different...Pretty much everything you would weant to make are in here. A great resource for anyone using a pressure cooker.

well Ive made a few recipees from this book and gotta say they are just ok...dont waste your $$$$....your pressure cooker should come with a recipee booklet and tips on how to use it...you can use recipees you already do or from a regular cookbook just by changing a few things like the amount of liquids you use (remember that the liquid doesnt evaperate like a regular pot so use a little less for thicker sauces or reduce uncovered after you've released the pressure)and the time.Hope this helps!

Listen, whether you use a pressure cooker or not the recipes in this book are winners! I have made several with my pressure cooker and several in the regular way and they have all been 4 star. Lots of compliments...from my KIDS!!! I made the New England Clam Chowder on Christmas Eve and my seafood hating family loved it!

Of about 4-5 pressure cooker cookbooks I have bought, this is far and away the best one, not even an issue. The recipes are fairly simple, easy to put together, easy to find/common ingredients, and they taste great. This is what a pressure cooker should do for you. There are good general guidelines on how to cook other things as well. While there are not a whole lot of recipes in here, they are all great and easy. If you have to have one pressure cooker cookbook, this is it!

I've made only a few recipes from this book, but I am completely sold on it. I became a big pressure cooker fan after the first recipe. The flavors are delicious (lentil soup is my favorite), and they are so simple! I feel like I am providing a very nutritious meal for my family--all the nutrients stay in the pot and it keeps my kitchen so clean. I can saute in the cooker, then cook the whole meal--so little clean-up, and the meals are eye-appealing, wholesome and delicious. Highly recommended.

I have liked every recipe I've tried in here so far. I just bought my first pressure cooker recently, and it is quite impressive how tender the meats turn out when you cook them using this method.

The Greek Beef Stew has very rich taste and a variety of spices. We eat it on a bed of rice. Try the Chicken in Vinegar, Beef Stroganoff, Pork Chops Stuffed with Apples and Jambalaya. Note on the Jambalaya - this tastes great, but you need to add extra chicken broth because it gets really thick and will scorch if you're not careful.

...this is not your basic meat and potatoes cookbook - but I think that is one of the STRONG POINTS!!! Many of these recipes use different vinegars and cooking wines which give them great flavors. While some of the spices and vinegars used might not be something you already have on your shelf, there is nothing in here so unusual that you can't buy it in a large grocery store. It's just a matter of buying them and putting them in the pantry. You will be glad you did, as you impress your family and guests with flavorful food.

I also have "The Pressured Cook" by Lorna Sass, but I like this cookbook better. I just wish they had put it in a ring binder so the the pages would stay open. I have to put a big knive across the top of the book to keep the pages flat while I am cooking.

Thought I wouldn't be getting much use out of this book but after reading these rave reviews decided to give it a second look. I tried several recipes but found them to be very salty especially the Black Bean Soup.Same for the Greek Lamb & Bean Stew as well as Italian Country Lamb & Whiite Bean Stew. Guess I will have to try some of the recommendations here. I was getting ready to purchase yet another PC cookbook as great method of cooking so will put that on hold and give this book a second chance. Hope all turns out as well as expected!

Now that I have more experience with pressure cookers, and collected a shelf of pressure cooker cookbooks, this is the cookbook I can't get enough of! I have learned to read carefully about when to bring to pressure, and when to heat without bringing up to pressure. If you like olive oil, garlic, and onions, you'll love her recipes.

I am addicted to Toula Patsalis's "Split Pea Soup with Ham", best eaten the second day. My husband declared that her Chicken Noodle Soup was superior to any I had served him before. He went ape over the Italian Potato, Rice & Spinach Soup; Corned Beef Brisket with Vegetables & Horseradish Sauce; Hunter's Beef Onion Stew; Chicken with Arborio Rice & Peppers; Chicken with Two Peppers & Noodles; and Tortellini & Chicken in Parmesan Cream Sauce. He thought Vegetable Soup with (breakfast) Sausage Bits would have been better without the sausage, and I haven't had the nerve to try the Paella again, yet. I am intrigued with her technique of cooking noodles in the pressure cooker, as it always takes so long to boil water to cook pasta, so I plan on making Fettuccine with Parsley Butter and Noodles Alfredo soon.

I don't recommend making the Split Pea Soup with a 4-quart electric pressure cooker, as the split peas can clog up the vents, but my 6-quart Cooks Essentials electric programmable pressure cooker works like a charm for her recipes. In fact, with the electric pressure cookers I have bought, the heavy pot allows me to skip the heat diffuser that Ms. Patsalis calls for frequently, which never worked all that well for me anyway.

This is the only pressure cooker cookbook I own. After 8 months of using it constantly, I am finally ready to buy another. Now the problem is...what other cookbook can live up to this one?

4 out of 5 stars Caution to pressure cooker beginners, but now a favorite.......2000-05-22

This was one of my first two pressure cooker cookbooks, selected per reviews by p.c. manufacturers as a good counterpoint to the heavily touted "The Pressured Cook" by Lorna Sass. Patsalis's book takes a Mediterranean approach, so there was little duplication.

(Written 5/11/00:) As a beginner in pressure cooking, I was wrong to make Paella as my first dish from this cookbook. The instructions confused me, and I overcooked the shrimp and scallops. Oops, that was costly! (Added 3/31/04: Read carefully whether she says "maintain pressure and cook" or whether she says "secure lid and cook over medium-low heat" to avoid my mistake.)

(Written 3/31/04:) I wrote the preceding paragraph almost 4 years ago. At this point, I am working through all the recipes because my husband and I enjoy them so much! Ms. Pasoulis has several recipes which cook pasta right along with the meat; my husband put me on notice that I must be prepared to make chicken with asparagus and cheese tortellini at a moment's craving (by allowing a few extra minutes, I can use frozen boneless chicken breasts!). And with a 6-quart programmable electric pressure cooker, I can skip the often recommended heat diffuser, with great success!

Ms. Pasoulis frequently begins a recipe by sauteing bacon, onions and garlic in olive oil. If you love that combination, you will love her recipes.

All in all, it is an interesting collection of recipes, but I urge beginners to exercise caution. Learn to use the pressure cooker with simpler recipes, but come back to this cookbook when you are comfortable!

    Eg, who wants to eat "rabbit with stewed prunes??"

      When I recently purchased a pressure cooker, a friend suggested this book and loaned me her copy. (I had already ordered copies of two of the Lorna Sass pressure cooking books, "Great Vegetarian Cooking Under Pressure" and her new one, "Pressure Perfect.") I saw so many recipes I wanted to try that I am purchasing this book, too. My friend has made many of the recipes for her family and vouches for them. This book is clear, practical, and the author has had many years of perfecting the recipes for his favorite Italian, Spanish, Portuguese, French, and North African dishes. I didn't find it intimidating at all.

      By the way, after researching various models, I chose the Kuhn Rikon 7.25 liter pressure cooker.       The book cover doesn't mention Meditteranean Cooking, although the Amazon listing does. This book focuses on how to use the pressure cooker to eat a healthier diet with a focus on Meditteranean cuisine. I read this book as part of deciding whether to get a pressure cooker (so can't yet tell you how great the recipes are). This was definitely one of the most interesting - it had the basics on pressure cooker use, but also focused on menus that weren't to me the "same old, same old."

      Everything I've made from this book has been delicious. I use it all the time. I don't think the ingredients are exotic! From reading the other customer reviews you can tell that the title should have emphasized the mediterranean aspect more but if super healthy delicious food is what you like, you'll like this book.

      This book was extremely disappointing. I was looking for my first book on pressure cooking, and this one had nothing that my family would have wanted to eat. It was more for someone who is looking for gormet fare and exotic ingredients than for someone who just wants to feed their family a tasty, healthy meal.

      Tom LaCalamita is The Italian Pressure Gourmet. Some cookbooks are, as a friend, full of information and some are simply filled with dependable recipes that are easy to prepare and delicious; This cookbook is both.

      I find the exact ingrediants are important to the final finish. When I don't know what a particular ingredient is, I ask GOOGLE. For instance: I found that Italian frying peppers are simply very special in themselves as such, but that you can substitute yellow sweet peppers and be very close.

      I enjoy the book. It helps a great deal with simple, easy to follow directions, in making the pressure cooker a normal method of cooking without emotional pressure.

      This book is good for basic pressure cooker info and recipes. There is a good bean cooking reference. However, some of the tastier recipes require you to place a casserole dish inside your pressure cooker. This doesn't work in my case (5 qt pressure cooker).

      I work and coming home to face a pile of raw ingredients that somehow must be converted into a dinner is pretty depressing sometimes. Besides, I'm hungry too!

      Many people don't think of the pressure cooker as a tool for speedy cooking, but you can make delicious stews (try the one in this book, it's wonderful) and other roasts and one-pot dishes really quickly. I really love the steamed chicken; it's so digestible and really delicious. It helps to have this cookbook because it isn't always easy to figure out how to convert a regular recipe to a pressure-cooked version. These recipes never fail. We got a T-Fal pressure cooker and really use it a lot. I even make desserts in it.

      I absolutely loved this book. It saved me so much time in the kitchen. The recipes were delightful as well. If you like this book, you'll love Angela Spenceley's two new books "A Taste of the Caribbean" and "Just Add Rum! Cookbook". Both books feature recipes which can be easily adapted to the pressure cooker. A must for any good cook who wishes to add exotic island cuisine to her list of accomplishements.

      The recipes in this book are easy to follow and taste wonderful. The Steam-Roasted Chicken (page 83) was falling off the bones and was very tender and juicy. The Low-fat Chicken Cacciatore (page 84) was just as wonderful. I had to buy my sister her own copy so she would quit taking mine.

      I bought the Better Homes and Gardens Pressure Cooker Cookbook at the same time I ordered the Faberware FPC400 Programmable Pressure Cooker. I was under the impression this cook book would be specific to the programmable pressure cooker but it's not. I've used a stove top pressure cooker for the past 20 years so I didn't need to add another cookbook to my collection for that type of use. I'm very disappointed with my selection because it is not what I expected. Does anyone have information about where I can get a cookbook for the Faberware FPC 400 programmable pressure cooker?!?

      I am a big fan of the Better Homes & Gardens cookbooks - the recipes are pretty traditional and rarely call for exotic ingredients (i.e. things that are not readily found in my pantry!). This book does have a good variety or recipes. The chapters are: Pressure Cooker Basics; Soups, Stews, Chiles and Chowders; Poultry and Meat; Vegetarian Main Dishes; Vegetable Side Dishes; Desserts.

      I *think* that this 2000 hardcover edition is exactly the same as the 1995 edition - the copyright date inside mine says 1995. So unless Amazon shipped me the wrong one, it's the same book. The hardcover is nice - it's spiralbound inside so it will be easy to cook from. But if you're looking to save a few bucks you can get the same recipes from the 1995 paperback edition.

      My mom had a pressure cooker when I was growing up in the '50s, and because she worked and had to get dinner on the table pretty fast, a large percentage of our meals were prepared in the pressure cooker. I particularly remember goulash and stews. And Mom's warnings about using it correctly so it wouldn't explode.

      I got one many years ago, but was always intimidated by it so rarely used it as anything other than a cooking pot. Recently, though, I decided to start experimenting. I'd bought this recipe book - how can you go wrong with BH&G? - so I hauled it out and waded in.

      The recipes are pretty basic - stews, pot roasts, variations on the chicken theme, some soups, and so on. I was looking for a pot roast, so I selected that recipe as my first. And immediately discovered a MAJOR goof in the recipe: It tells you to brown the meat in oil and then remove it before adding the vegetables and seasonings. Then it tells you to put the top back on and cook it under pressure for eight minutes. But it never tells you when to put the meat back into the pot! If I hadn't studied it carefully before I began cooking, I would have cooked the veggies without the meat and the meat would never have cooked. So I improvised and put the meat back in on top of the veggies before securing the lid.

      I'm an experienced cook, and I know that it's always a good idea to read a recipe through first. For newcomers, though, a mistake like this could spoil the experience for them. Pressure cooking is supposed to be an fast and easy way to prepare nutritious meals, and it is, IF the recipe is correct!

      So while I don't condemn the entire cookbook, I do suggest that you be sure to read the recipe through carefully first, and make sure it makes sense BEFORE you start cooking!

      I was very excited about dusting off my crock pot and simplifying my life! This is a beautifully illustrated cookbook that is nicely organized. The recipes are easy to follow. Unfortunately, the results are something else. The "Country-style Chicken Stew Provencal" had a great aroma but the chicken was overdone, the potatoes underdone, and the stew had far too much garlic to be palatable. The Portobello mushrooms turned everything a muddy color. I hope others have had more success with this very attractive cookbook.

      I borrowed this book from a friend and loved it. I totally disagree with a previous reviewer who said these meals were involved, contained ingredients that were hard to find and not very appetising. I stay at home with two very young children (both under 4), so trying to do anything complicated in the kitchen is out of the question. Thank God for crock pots. So far I have made the Meatball/Bow Tie Pasta soup, the Chicken Stroganoff, the Chicken Casserole with Swiss Cheese and the Cheese Tortellini soup and they have all been hits. Based on how well I liked this book, I'm going to buy Munson's pressure cooker cookbook.

      I bought this cookbook locally and I got it very cheaply. It is worth that, but I would not buy it full price. It has some good recipies in it, but many that are either very invovled, call for obscure ingredients, or aren't appetizing at all. but there are some that are a little different, and a good variety of more up-to-date recipies for slow cooker meals.

      I have tried two recipes from this book and liked the results of neither. The Asian Stir-Fry Stew was no substitute for a stir fried dish and a waste of good scallops. The Hearty Corn Chowder with Peas looked nothing like the accompanying photo and tasted so bad, that it went from the crock pot directly to the garbage disposal. The book has many beautiful illustrations but I am reluctant to waste good ingredients (and money) on a book that is long on promise, touting itself as the 'ultimate', but short on results. For people wanting to create a delicious meal with a short preparation time, 'Crock-It' is a better choice. For those of you who have the time to create more gourmet meals with your slow cooker, 'The Slow Cooker Ready and Waiting Cookbook'is an excellent resource.

      I really like this slow cooker cookbook. It's easy and has a variety of recipes that are healthy and low in fat. Nutritional analysis is provided for each recipe. There are a lot of creative recipes, not just your usual slow cooker fare. There are also a lot of beautiful photographs. This book is better than a lot of other slow cooker books I've seen. I'm sure there is something for everyone in this book!
