The recipes in this cookbook are amazing, producing very well-balanced and complicated-tasting dishes. The Risotto with Porcini Mushrooms and Escarole is one of our favorites. To get these great results, the recipes in this book can be somewhat lenthy, complicated, and/or require unusal ingredients. When we don't have the time (or we're fresh out of escarole), we balance this book with the much simpler (both in terms of taste and preparation) recipes from The Pressure Cooker Cookbook by Toula Patsalis. The Pressure Cooker Gourmet contains a great collection of recipes we never would have been able to prepare before -- although they sometimes can be difficult, the dishes that result are well worth the effort!

I have been cooking "from scratch" for more than 30 years and own more than 50 cookbooks, including most of the great classics. Favorite cookbook authors I return to again and agin include Julia Child, Craig Claiborn, Christopher Kimball, Diana Kennedy, Ruth Reichl, Irene Kuo, Paul Prudhomme and Irma Rombauer (& her descendents). I love ethnic food, gourmet food and great American regional home cooking. The best cookbooks provide detailed techniques and enough information so a confident cook can develop variations based on personal taste and available ingredients. I was dissappointed to find that this book fails in that regard. I purchased it hoping it would be like Barbara Kafka's Microwave Gourmet (still the best on its subject), laying out what this kitchen utensil is best suited for and honestly explaining what it can and cannot do well. Instead, the author seems to believe the pressure cooker should be able to tackle any task. For example, she includes several recipes for items like seafood that are best cooked quickly, but leaves out foods that benefit from long, slow cooking, like soups, sauces and stews. There are only two barebones recipes for stock, one for beef stew (Bouef Bourgiugnon), and a few for odd soups and sauces (like a "blonde onion soup" but no French Onion Soup, a lentil soup but no other legume soups, a Bolognese sauce that dumps raw beef and tomatoes in all at once in violation of all principals I have learned), and several recipes for things like custard and cheesecake. There are unusual, tasty recipes in here, and excellent directions on timing, but I agree with another reviewer who warns that her temperature recommendations are way too high.

When I bought a pressure cooker, I wasn't sure which book to buy out of the myriad books in the store. The reason I bought this was because it was the cheapest! It just goes to show you that something cheap can be a rare and wonderful find. The recipes are just delicious and very easy to make, even for a novice cook. I've had great fun experimenting on my husband and son and nothing beats a hearty stew in the middle of a Calgary winter. What used to take me all day in a slow cooker, now takes just 30 minutes, even with the cheapest, toughest cuts of meat. Buying this book has certainly made my meat purchasing easier, because I'm saving money buying cheaper cuts but not sacrificing quality in the end result.
The desserts in here are delicious and melt in your mouth. Don't listen to people who baulk at making cheesecake in a pressure cooker. Cinda's Layered White and Dark Chocolate Cheesecake is heaven on a fork. It took me 10 minutes to prepare and and exactly 20 minutes to cook, just like the recipe says. I had compliments galore from my husband and he doesn't usually like sweet desserts! I will never go back to eating store bought cheesecake again.
Some of the recipes I would never make - like the fish recipes. Fish doesn't take that long to cook and you're not saving yourself much time that way, but the ribs and campfire beans recipes are fantastic and if you like risotto, this book is for you. Vegetarians don't miss out either. Beans and lentils are provided for and the results are outstanding. Cinda gives you lots of information about the history of the pressure cooker and safety and cleaning tips. She also gives a breakdown of cooking times for various foods in the front of the book. I use this index a lot when I'm making things like beans and lentils.
I usually follow the recipes fairly closely, but I cut corners where I can. Instead of using chicken breasts which can be expensive, sometimes I just substitute a whole chicken and the end result in the same. And the great thing about a pressure cooker is, I don't even defrost my whole chicken. I just prepare the recipe as stated and cook the chicken for 30 minutes. And you would never know it had previously been frozen solid. It's soft and moist and just delicious. Try the Coq Au Vin. C'est magnifique!
I just love this book, so much so that my copy is well worn and slightly ragged and I've only had it less than a year. This book is clearly written and well laid out and has a wealth of information. But I took one star off, because there are only a few high gloss colour photographs of the finished recipes. More photos would have been nice but that's the only bad thing I can say about it. It's the best [money] I ever spent!

When I recently purchased a pressure cooker, a friend suggested this book and loaned me her copy. (I had already ordered copies of two of the Lorna Sass pressure cooking books, "Great Vegetarian Cooking Under Pressure" and her new one, "Pressure Perfect.") I saw so many recipes I wanted to try that I am purchasing this book, too. My friend has made many of the recipes for her family and vouches for them. This book is clear, practical, and the author has had many years of perfecting the recipes for his favorite Italian, Spanish, Portuguese, French, and North African dishes. I didn't find it intimidating at all.
By the way, after researching various models, I chose the Kuhn Rikon 7.25 liter pressure cooker. This Swiss line, which comes in a variety of sizes and shapes, has been called by the NY Times "The Mercedes of pressure cookers" and is renowned for quality and excellent customer service. For cooking grains and legumes, I also got an Ohsawa Pot, a lidded ceramic pot that fits inside.

The book cover doesn't mention Meditteranean Cooking, although the Amazon listing does. This book focuses on how to use the pressure cooker to eat a healthier diet with a focus on Meditteranean cuisine. I read this book as part of deciding whether to get a pressure cooker (so can't yet tell you how great the recipes are). This was definitely one of the most interesting - it had the basics on pressure cooker use, but also focused on menus that weren't to me the "same old, same old."

Everything I've made from this book has been delicious. I use it all the time. I don't think the ingredients are exotic! From reading the other customer reviews you can tell that the title should have emphasized the mediterranean aspect more but if super healthy delicious food is what you like, you'll like this book.

This book was extremely disappointing. I was looking for my first book on pressure cooking, and this one had nothing that my family would have wanted to eat. It was more for someone who is looking for gormet fare and exotic ingredients than for someone who just wants to feed their family a tasty, healthy meal.
Easing the Pressure.......2002-09-02
Tom LaCalamita is The Italian Pressure Gourmet. Some cookbooks are, as a friend, full of information and some are simply filled with dependable recipes that are easy to prepare and delicious; This cookbook is both.
I find the exact ingrediants are important to the final finish. When I don't know what a particular ingredient is, I ask GOOGLE. For instance: I found that Italian frying peppers are simply very special in themselves as such, but that you can substitute yellow sweet peppers and be very close.
I enjoy the book. It helps a great deal with simple, easy to follow directions, in making the pressure cooker a normal method of cooking without emotional pressure.

This book is good for basic pressure cooker info and recipes. There is a good bean cooking reference. However, some of the tastier recipes require you to place a casserole dish inside your pressure cooker. This doesn't work in my case (5 qt pressure cooker).

I work and coming home to face a pile of raw ingredients that somehow must be converted into a dinner is pretty depressing sometimes. Besides, I'm hungry too!
Many people don't think of the pressure cooker as a tool for speedy cooking, but you can make delicious stews (try the one in this book, it's wonderful) and other roasts and one-pot dishes really quickly. I really love the steamed chicken; it's so digestible and really delicious. It helps to have this cookbook because it isn't always easy to figure out how to convert a regular recipe to a pressure-cooked version. These recipes never fail. We got a T-Fal pressure cooker and really use it a lot. I even make desserts in it.

I absolutely loved this book. It saved me so much time in the kitchen. The recipes were delightful as well. If you like this book, you'll love Angela Spenceley's two new books "A Taste of the Caribbean" and "Just Add Rum! Cookbook". Both books feature recipes which can be easily adapted to the pressure cooker. A must for any good cook who wishes to add exotic island cuisine to her list of accomplishements.

The recipes in this book are easy to follow and taste wonderful. The Steam-Roasted Chicken (page 83) was falling off the bones and was very tender and juicy. The Low-fat Chicken Cacciatore (page 84) was just as wonderful. I had to buy my sister her own copy so she would quit taking mine.

I have tried several recipes out of this book and have decided that I can do better. Some of the recipes are average and some are almost inedible. True, they do seem rather healthy and I have lost weight trying the recipes, but it is probably because I'm not eating much!

I picked this cookbook up after spending sometime trying recipes from Carol Heding Munson's crock pot book, "Smart Crockery cooking." My experience with that book was so wonderful, every recipe was absolutely delicious. When I saw "Smart Pressure Cooker Recipes," I decided to pick this book up strictly on my experience with the crock pot book.
The recipes are generally one page long, a few go on to a second page. The book is well edited so it's very readable and well laid out.
Again, so far every recipe I've tried has been delicious. If you want to buy only one pressure cooker cook book, this is the one.

After flipping through many books at the bookstore, I thought this one looked the best. I really like it! The meals are practical (normal ingredients and standard prep times) and they taste very good. Its seems to be getting harder to find cookbooks that have easy to find ingredients and don't take forever to prepare. This book is worth its price.

Beautiful Illustrations, Simple Recipes, BUT................2004-01-25
I was very excited about dusting off my crock pot and simplifying my life! This is a beautifully illustrated cookbook that is nicely organized. The recipes are easy to follow. Unfortunately, the results are something else. The "Country-style Chicken Stew Provencal" had a great aroma but the chicken was overdone, the potatoes underdone, and the stew had far too much garlic to be palatable. The Portobello mushrooms turned everything a muddy color. I hope others have had more success with this very attractive cookbook.
An Excellent Cookbook.......2003-03-10
I borrowed this book from a friend and loved it. I totally disagree with a previous reviewer who said these meals were involved, contained ingredients that were hard to find and not very appetising. I stay at home with two very young children (both under 4), so trying to do anything complicated in the kitchen is out of the question. Thank God for crock pots. So far I have made the Meatball/Bow Tie Pasta soup, the Chicken Stroganoff, the Chicken Casserole with Swiss Cheese and the Cheese Tortellini soup and they have all been hits. Based on how well I liked this book, I'm going to buy Munson's pressure cooker cookbook.

I bought this cookbook locally and I got it very cheaply. It is worth that, but I would not buy it full price. It has some good recipies in it, but many that are either very invovled, call for obscure ingredients, or aren't appetizing at all. but there are some that are a little different, and a good variety of more up-to-date recipies for slow cooker meals.

I have tried two recipes from this book and liked the results of neither. The Asian Stir-Fry Stew was no substitute for a stir fried dish and a waste of good scallops. The Hearty Corn Chowder with Peas looked nothing like the accompanying photo and tasted so bad, that it went from the crock pot directly to the garbage disposal. The book has many beautiful illustrations but I am reluctant to waste good ingredients (and money) on a book that is long on promise, touting itself as the 'ultimate', but short on results. For people wanting to create a delicious meal with a short preparation time, 'Crock-It' is a better choice. For those of you who have the time to create more gourmet meals with your slow cooker, 'The Slow Cooker Ready and Waiting Cookbook'is an excellent resource.

I really like this slow cooker cookbook. It's easy and has a variety of recipes that are healthy and low in fat. Nutritional analysis is provided for each recipe. There are a lot of creative recipes, not just your usual slow cooker fare. There are also a lot of beautiful photographs. This book is better than a lot of other slow cooker books I've seen. I'm sure there is something for everyone in this book!
