I remember cheese fondly although I don't eat it anymore. Jo Stepaniak's The Ultimate Uncheese Cookbook offers recipes which make a valiant attempt to imitate the texture and flavor of dairy products, but the most successful aspect of the book is that it makes the comfort food quality of cheese available to those who may have never expected to experience it again.


My favorite recipes from the book so far are the Gooey Grilled Cheez, the Durritas seasoning (the taste of Nacho Cheese Dorritos), the Unprocessed Cheez Sauce (I like it on burritos), Spinafels (Spinach Ricotta Balls), the French Onion Soup Gruyere and most recently the Philadelphia Potato Chowder. The book contains a variety of salads, dressings, soups, pasta dishes, deserts, and block uncheeses. Everything I have tried from The Ultimate Uncheese Cookbook has turned out nicely. I strongly recommend this book to vegans (or to anyone else) who would like to experience a unique collection of comfort foods.

Wow, talk about a cheesy resource! With my focus on all things dairy-free, I was amazed that I had not yet picked up a copy of this cookbook. I think that two things held me back: I don't really miss cheese, as I was never a big fan of the stuff; and I couldn't imagine an entire cookbook focused on one type of food.

Well unbeknownst to me, this wasn't just a book about making fake cheddar. Sure, it contains tons of made from scratch cheezes, from slicing Swizz Cheez, to the softer Brie, to a saucy Nacho Cheez. Yet, it goes so many steps further, reminding me just how many foods rely on that creamy and cheesy taste. Blintzes, fondue, pesto, pizza, quiche, alfredo sauce, cheesecakes, French onion soup, lasagna ... you name it and the author Jo Stepaniak has the recipe answer. I was impressed.

Seriously, this is a must have book for any former cheese-loving vegan or dairy-free consumer. Sure, creating an exact duplicate sans dairy can be an uphill battle, and depending on each person's tastes, one recipe or another may not be their perfect fit. But I would be truly shocked if you couldn't find at least a handful of recipes in this cookbook to soothe your inner cheese-craving beast.

I recently trialed the Traditional Macaroni and Cheez, and can't wait to sample some of the calzones (I do miss pizza) and focaccias.

Making the actual "cheeses" does require a few ingredients that may be new-to-you. Luckily, there really are just a handful of these special ingredients required, allowing you to buy a good sized package of each once, and then reap the rewards of various "cheeses" for months. Also, while tofu definitely makes itself known in this cookbook, a surprising number of recipes are soy-free. In a good majority of the recipes, the author uses a variety of nuts, seeds, beans, grains, and seasonings to achieve the right consistency and flavor.

I just purchased this book, and today I made the Gee Wiz. I'm telling you, this stuff is incredible. I've read most of the reviews here and I took the advise offered. I used a bit less lemon juice and a bit less Nutritional yeast. It was a hit with the entire family. DH and I have gone vegan for medical reasons. He really misses his cheese. This stuff hit the spot. He was ready to eat the entire container. I can't wait to try more of the recipes. When I do, I will be back to update my review.

Ok for those who want to know, it does not taste exactly like cheese.
However if I had not been the one to make it and had it on snack table with crackers, I would have been asking for the cheese spread recipe. It is really that good. I will definitely be making more of this and I will be taking it to homes that are not vegan. I can't wait to see their reactions.

As a vegetarian who is struggling to break a cheese habit in order to go completely vegan, this book is a God send. The recipes are absolutely delicious, and I've even used my slow cooker with several. Try it; you'll be glad you did!

You'll have to have access to a health foods/specialty store to buy some of the ingredients but if you're on a dairy-free restriction this book can at least help you have some sort of normalcy back to your diet. If you're used to eating gooey dairy goodness this food probably won't live up but if you've been missing your big ol' bowl of mac-n-cheese while living with new restrictions the recipe here will come pretty close. Good food, easy directions and a great resource for hard-to-find alternative foods.

This book makes some pretty false assumptions based on hyped, unscientific claims. Go to the reviews for "The Whole Soy Story," by Kaayla T. Daniel, and you will get previews of a book that alarmingly shows soy products to be a danger to health. Evidence is mounting that soy is an anti-nutrient, that in fact it is an extremely unhealthy substance. The way soy is manufactured, processed, and chemically altered, it has no remaining "food" value to speak of.

Far too many of the tofu recipes in this book consist of taking a block of tofu, slicing it, frying the slices and then covering them with sauce. (Tofu with Mole Sauce, I'm looking at you!)

Other recipes fail because they simply try to replace meat with tofu or tempeh, rather than trying to be completely new recipes in which the soy product can shine on its own, rather than as a substitute.

So far, there are only 2 recipes that I would recommend - the Spinach Burgers and the Brown Rice Pilaf. The rest? Meh. I'm still looking for a really good tofu cookbook.

I purchased this book shortly after switching to a vegetarian diet. What a life saver, especially to the novice vegetarian!

Most vegetarian cookbooks I had found relied upon excess cheese for protien. Or worse yet, many books that claim to be vegetarian use such things as chicken broth, fish, shellfish, and other products which contain animal products (which in my book is NOT vegetarian).

This book is different from the others. It shows many ways to use soy products; not relying just upon tofu, but introducing tempeh, soy milk, and soy cheese. Yes! There is more to a vegetarian diet that just tofu (which is quite good when prepared correctly). And the variety of recipes are quite nice. The recipes cover salads, main dishes, and even some desserts. You can prepare an entire meal just from this book.

The instructions are easy to follow and the resulting food is quite tasty!

What a pleasure! -- a creative, easy-to-follow, healthy cookbook with recipes that TASTE GREAT! Greenberg leaves no soy question unanswered, from Soy Split Pea Soup to Tofu Tiramisu. The recipes are clear and very innovative, covering ethnic foods from all over the world, like Pumpkin Tofu Cheesecake and Soy Potstickers. Every recipe also provides nutrition information on calories, carbs, cholesterol, fiber, sodium, etc. As a food historian, I appreciate the intelligence and attention to detail in this book and what must have been years coming up with and testing all these creative recipes. An appendix on where to get soy products and information is also very helpful, as are the comparisons between soy products and dairy, other beans, etc. It's a great book for when you want to eat healthy but don't want to compromise on flavor. Mangia!

I bought this cookbook a few years ago when I had just decided to eliminate eating meat/fish etc from my diet. At the time I wasn't "ready" for all the tofu etc but I gradually grew to love it and I'm so glad I keptthis cookbook around. It has so many tasty recipes - there are nice bean salads, hearty stews, a paella, desserts etc. Each recipe has nutritional contents too. One thing that turns some people off is that many of the recipes that are take-offs on previously meat-laden recipes are called by their meat names (e.g. Soy Sausage Potato Chowder or the Soy Meat Loaf). It doesn't phase me though and sometimes helps me to get my husband to try it. Lots of interesting recipes for tempeh. Some recipes (like the curried eggplant) use soy yogurt too. Its a fun cookbook and so far so good in terms of being tasty. Definitely recommend this one!

I bought this book as a gift for someone else, and was very disappointed in the content and quality of the book once it arrived. The book appears to advertise using one particular kind of tofu, which may or may not be widely available. I was uncomfortable giving it to someone who may not be able to buy that brand in their local store. The perils of online shopping, I guess.

Akasha Richmond's simple recipes are full of flavor and, better yet, healthy vitamins and minerals. Her baking blend is a wonderful substitution for yogurt, sour cream or eggs. Although her recipes for appetizers, soups, salads, sandwiches and main meals are great (try the lettuce tacos, pumpkin soup, sante fe tostada salad, and the Russian Noodle pudding), the desserts are fabulous--to die for. Like REAL DESSERTS!!!! The Banana Choolate Chip Snack cake and chocolate raspberry cakes are great--What more can you ask for--flavor and health--in one or more bites!

I only recently decided to become vegetarian and bought this book based on some of the reviews I had read. Its a great book! I wasn't much of a tofu fan prior to this but there are some really inventive recipes in here. Its written I think by the makers of the brand Mori-Nu Tofu b/c its listed by brand in each recipe and if I had known that I may not have bought the book but let me tell ya, they know tofu. The recipes are good - especially for someone new to cooking w/ tofu. They have a whole front section dedicated to different tofu cooking techniques and tips. Each recipe has tips on serving ideas as well

The recipes are clear, well balanced and...imaginative. My husband and I live in the South of Spain, and unfortunately we can only find firm tofu. Neverteless, I tried the recipes and they turn out to be delicious. My friends love them too.

I purchased this book as a gift for a friend that recently decided to become vegetarian. I am unfamiliar with tofu and tofu cooking, as is she, so I thought it might be helpful to have a cookbook with tasty meatless recipes. Mind you, I haven't tried any of the recipes in this book, they may be delicious, but what I found disapointing is THERE ARE NO PICTURES (except for the three on the cover.) I hope the recipes in this book taste more appealing than the book is to look at.

Love the variety if offers, from breakfasts to desserts. Each time I sit down to plan my meals for the week, this one is right by my side. Anyone accustomed to flavorful meats seeking alternatives will love this book. Also the perfect size; not cumbersome to have in the kitchen.

I was bothered by the title of this book, which implied strongly that tofu is a thing that must be disguised or improved, requiring the proverbial "spoonful of sugar" to be palatable. I bought it anyway because flipping though the recipes looked very interesting, and I reasoned that if the author really felt that way about tofu, she probably wouldn't be writing a tofu cookbook... right?

I've had the cookbook for a few months and probably made about a dozen different recipes so far. Every one has been a hit with me and with my family. Two of the soups have have already become family standards. My favorite is one with Thai red curry, coconut milk and butternut squash. I'm a big fan of Thai food and could make this soup every week if I weren't committed to variety.

I haven't tried any of the sauces, but not a single recipe I've tried has been a dud.

I have had this book for a couple of years and I cook from it frequently. It is true that many of the recipes call for frying, but the tofu is usually pan-fried in a very small quantity of oil. There are many Asian-inspired recipes, which doesn't bother me, because I find them all to be delicious. The recipe for Asian stock is great and it lends a lot of flavor to the dishes that use it. The szechuan tofu and green beans (which uses the mushroom soy sauce that one reviewer mentioned) is worth the small investment in a bottle of such an odd ingredient and the recipe is so good that I have gone through a big bottle of mushroom soy sauce using it only to make that one dish! And while it is true that some of the recipes are not vegetarian or vegan, I just want to add that I have been a vegetarian for a long time and I own dozens of vegetarian cookbooks, and for some reason the best ones are written by people who are not vegetarian!

I bought this cookbook after checking it out from the library two times in a row. It was so good, I wanted one! In fact, it was so good I bought two, one for me and one for my best friend.

Most of the recipes are vegetarian, and can be adapted to vegan if needed. The entire book is worth the price for the soy chorizo recipe. It is excellent.

I am a vegetarian and this is the perfect book for anyone else who is. It's more veggie friendly rather than vegan friendly, but I'm sure you can substitute a lot of the ingredients. This is a great cookbook that has resulted in numerous wonderful meals for me. I would say that there was only one recipe in this book that I tried and didn't love.

The ingredients and instructions are presented in a clear and concise manner. This book may be a bit older, but I've used several cookbooks and this is the one that I always keep coming back to. I only wish that it would indicate difficulty level and prep time amounts.

I have been exploring tofu and other meat alternatives since my gastric bypass surgery over a year ago. I still have not been able to stomach meat. I bought several tofu books and vegetarian books and this was by far the superior one I've purchased. What I like about the book:
1. The large easy to read fonts.

2. Each recipe is layed out in steps for preparing the meal.

3. I love that the nutritional values per serving are given!!! There are so many books that do not include that information and its extrememly helpful for persons who are trying to track what they eat.

4. The recipes are appealing and simple and so far all have been mmm! mmm! good to grrreat!!

5. The recipes are broken up into segments like Dips & Spreads; Soups; Side dishes: etc. Then at the begining of each segment is an alphebetical list of the recipes in that section. So you don't always have to go to the index in the back of the book. You can turn to the segment and glance down the list of recipes to find the one you are looking for.

Because I know I will be using the book often, I took it to Fed-ExKinko's and had it spiral bound. I can't imagine anyone being disappointed in this book. Remember its a tofu cookbook, not necessarily a vegetarian cookbook although most recipes in it are vegetarian or can easily be adjusted to fit the vegetarian fare.

My only disappointment with this book is that she relies too heavily on soy sauce, too much sodium not to mention the family tires of the taste if used more than once a week. Otherwise, I like the use of every day ingredients.

I've owned this book for several years and cooked many (not all) of the recipes in it. You would not think that tofu baked with a little peanut butter and garlic powder would end up tasting like ricotta cheese, but I swear to you, it completely does, yet the fat content is drastically reduced. Louise Hagler is a tofu master! There are tofu salad dressings which imitate dairy, many tofu savory dishes, and even tofu desserts. The best thing about this cookbook are the super-simple recipes, like fried tofu, which you do in the oven, and tofu loaf, which is a veggie meatloaf. Highly recommended if only for the ideas you'll have on how to treat tofu.

I really like this cookbook. The recipes taste great and are often acceptible for non vegetarians as well. I love that they are easy to make and use ingredients that I usually have on hand.

There are some minor annoyances with the bi-cultural aspect of the cookbook. The author tries to make the book suitable for both British and American English speakers, and this results in 1 chili (chilli) etc. On the other hand: I really like the fact that the author gives both metric and imperial measurements and says that you can use them interchangeably. I like to measure some things in tablespoons/cups and other things in grams. This cookbook is the only one that lets me do that.

This is truly a recipe book, not a book that goes into great detail about nutrition and vegetarianism. The recipes, with the exception of the desserts, are healthy, using whole foods. You can usually easily reduce the oil and/or salt to make them even more healthy. I do wish the author would use more vegetables, or give options to make meals richer in vegetables by listing possible vegetable side dishes.

I highly recommend this cookbook if you want to use more tofu in your diet. If ingredients like "sea salt" put you off and you do not think to just use regular salt instead, this cookbook may not be for you though.

One of my co-workers told me about this book after she labeled me a Carbotarian, since I eat more carbohydrates than I do vegetables. The reason is because grocery stores and most restaurants are not equipped for a large selection of vegetarian food. I pretty much gave up on finding great meals to cook that weren't bland or completely green. But when I went to the Soul Vegetarian East restaurant in Chicago (where I live) and tasted all of these soul food dishes they made with tofu and soy, it threw me off. I realized then that there are creative ways to make food that I used to eat before I became a vegetarian. My co-worker, who does eat meat, was even impressed with this book. I was elated to find out that there was a way for me to eat breakfast food (Tofu Scramble) without dealing with that gross white thing in real eggs. I bought it for that recipe alone, plus this book has great advice for how to take care of tofu. I never knew you could freeze it until I read it in this book. I wasted no time jumping on Amazon.com to buy it. Nothing in this cookbook is hard for me to find, and for the most part, I already have this stuff sitting in my refrigerator so I'll finally get to use it.

I got this hoping that it would fit into my busy lifestyle. Well, there are only a few recipes that are both quick and easy. On top of that I was looking to add tofu to the list of things I eat, not replace every kind of dairy product with a soy product. So, if you have time to go shopping for not so common ingredients like sea salt, have a liquidizer, and are a vegan, this book would be perfect for you.

I originally borrowed this book and after trying a few of the recipes, just had to have it. I couldn't believe that tofu could taste this good! Anyone can use this book and even disquise tofu so your "No I would never eat that friends" can be tricked into changing their minds! Give it a shot!

This is a cookbook that is easy to read. Not only that, but I have found that a high percentage of the recipes are useable and appealing. That says a lot about a cookbook in my estimation. A real pleasure. Though each of these dishes contain tofu of some type, you wouldn't know it by sight or taste. Try the hot apples with cashew cream!

I've been a vegetarian most of life, but have unsuccessfully found a good, simple tofu cookbook - until now. I've made numerous recipes from this book and every recipe is easy, quick and delicious. It is gourmet without the elusive ingredients. If you like to cook, you'll most likely have all of the ingredients in your pantry. The first recipe I made was the tofu chocolate mousse (go light on the almond extract) for my semi-vegetarian husband. He couldn't even tell it was tofu. I HIGHLY recommend this cookbook.

The main reason I bought this book (other than I need to slow down on my meat consumption) is for the pictures. It shows me how my dish should look and inspires me to actually cook (which I like to do, but HATE cleaning up). The recipes are ok, not too many hard-to-find ingredients, but I would have liked to see more quick dishes.

I am neither Vegetarian nor Vegan and am used to eating delightful meals in delightful restaurants world-wide. When I met my Vegan boyfriend I was in despair as to what to cook for him. Everything I tried tasted the same (to me). But Lorna Sass has saved me! Her meals are superb! Subtle yet zesty! Those that grumble about too many ingredients are churlish. Each recipe is worth whatever effort it takes to track down what is required. These are meals of the finest order. Yes, they take time! But the end result is well worth it. It has turned Vegan cooking into a pleasure, rather than a chore. The recipes with fish I will reserve for myself. For the rest, Vegan boyfriend is eternally grateful, and so am I. The spinach/dill soup would be a rave even in Paris!

I bought this book hoping I would find new ways to incorperate soy foods into my diet with simple recipies and I did. I also found fantastic examples of asian style cooking which I also love! This is a wonderful book. I am lucky enough to live near 3 great asian markets with helpful owners that show me the way through finding some of the ingedients but most of them can be found in a regular grocery store. I have never bothered to write a review for a book before but this one compelled me. Buy it!

Exotic spices, fresh ideas on how to prepare soy products! My own cooking taste like someone else cooked dinner! Terrific soup recipes to warm a dark winters night. Very tasty deserts. Love the glossary that describes how to handle tempeh, miso and cooking with soymilk, helpful for a new vegan cook.

    .......I prize this cookbook because it allows me to live a healthy lifestyle without sacrificing my love of great cooking and eating. Tofu can be introduced into almost any meal and this cookbook proves it. The trick is in the diverse textures in which tofu may be purchased. Firm tofu is great in a stir-fry, medium tofu works well in ground meat and soft tofu blends wonderfully into many dessert recipes. You get all the benefits of introducing soy protein into your diet, and barely notice the tofu because other flavors aren't sacrificed.

    There are 120 recipes in this cookbook divided into chapters such as: Breakfast, Brunch and Lunch; Appetizers, Dips, Spreads and Sauces; Soups and Salads; Vegetables and Side Dishes; Fish and Meat Main Dishes; and Desserts. Each recipe also includes a nutritional analysis. Please note that this is not a diet cookbook. Some of the desserts are low-fat but many are also quite fattening!

    Some recipes I've tried and can recommend: Spanish Eggplant, Baked Potato Croquettes, Beans, Lentils and Tofu in a Spicy Tomato Sauce, Low-Fat Turkey Burgers, and Lemon Squares. Best of all, each one comes complete with full nutritional analysis including calorie count, fat and fiber gram count and vitamins per serving. Not only for strict vegetarians, traditional meat recipes are included to demonstrate tofu's versatility, such as low fat chicken or turkey burger or stuffed chicken breasts with Alfredo sauce. Other easy vegetarian entrees include Beans, Lentils and Tofu in Spicy Tomato Sauce, my personal favorite.
