5 out of 5 stars Great resource!.......2007-02-08

This is a great resource to have for travelling. I love the tabbed setup that makes it easy to get to the section I need. Obviously a lot of thought was put in to making the book (with an amazing amount of info.) as easy to use as possible.

It is obvious that a great deal of thought and experimentation has been put forth in the making of this valuable resource!

After being gf (and other things free) for 5 years, I appreciate the resource as it will make it far more possible for me to visit Italy (and other countries in my future) maintaining my health as much as possible along the way! Well done!

I have dining cards and they work quite well, but the next time I travel, I will be packing this book to take as well, without a doubt!

4 out of 5 stars A Wonderful Resource For Dining Out Gluten Free.......2007-01-25

Eating when you're away from your own home is always a challenge when you are on a special diet.

In "Let's Eat Out!" Koeller and La France have put together an impressive amount of information to make life easier for travelers and people who just want to eat out with family and friends.

I found the book a bit difficult at first because there is just so much content to sort out. It's definitely not a book to digest in one sitting!

I soon realized it really is a combination of broad reference guide and quick reference "cheat sheets." Once that became clear, it was much easier to scan and use the table of contents and index to find specific information. You can choose to just use the quick guides or go to the more detailed explanations.

All in all, the authors cover a very broad topic in an orderly fashion that makes it easy to locate information for a variety of situations. They use 7 common cuisine types, from American Steak and Seafood to Thai, to analyze the issues a diner can expect to face. They offer comments on the ingredients, the way food is prepared and on likely sources of hidden cross contamination.

After you read a couple of these, you begin to see the patterns and it would not be so difficult to apply the same process to another type of food. As they point out, it's all about educating yourself and learning what questions to ask.

Poring through their food/menu analysis, I discovered to my dismay that the item I had been selecting from a fast food restaurant most likely contains hidden gluten that I would not have thought to question. I did wonder why I didn't feel good every time I ate there!

Not only does the book cover information about individual foods, styles of cuisine, and 10 common food allergens, it also provides specific information about travel including contact information for individual airlines and the special diets they provide, contact information for associations and organizations in many parts of the world and even some translation phrases.

I'd recommend "Let's Eat Out!" as a valuable reference book. It's especially useful for those who frequently eat out or travel and even better, those who'd like to eat out more but have hesitated to take the risk. It could open up a whole new world.

The authors deserve the recognition that their book received as a Benjamin Franklin award finalist for 2006 in the Health (Wellness/Nutrition) category.

3 out of 5 stars For gluten intolerance and food sensitivities.......2007-01-20

"Let's Eat Out!" covers a very difficult topic, restaurant dining for people with food allergies and intolerances. For adults who should avoid top allergens due to mild to moderate food allergies and intolerances, this can be a very useful book. I have already referenced it a few times for some restaurant inspiration, outside of my usual Asian selections.

The book itself is stylishly laid out with color-coded chapters, strategically placed photographs, useful charts, and sample menus. It addresses ten of the most common food allergens: dairy, eggs, wheat, gluten (an intolerance), soy, peanuts, tree nuts, corn, fish, and shellfish.

It should be noted, that this book was written with celiac disease, multiple food "sensitivities", and gluten intolerance in mind. It may not be very appropriate for those who have life-threatening food allergies or severe intolerances. This is not to blame the authors. The various styles of food preparation combined with a high risk of cross-contamination in food service kitchens, make this a complicated area to address. Though, as one food allergy mom pointed out to me, the "Allergy-Free" title is a bit deceiving in this respect.

Also, for those who do have true food allergies, this book should not be used as a dining bible, but more as a suggestion based resource for further research and diligence. As someone who lives with a milk protein allergy, I unfortunately noted many errors with respect to the foods listed as "not containing the allergen." Guacamole (often made with sour cream), margarine (frequently contains lactose and/or milk protein), and sausages (many brands contain cheese) were just a few that caused me to raise the red flag. Your own questions and food label reading would still be required when utilizing this book.

Luckily, the authors do relay what questions to ask, and in many different languages. Kim Koeller has traveled extensively while living with multiple food allergies. This is well evidenced by the resources provided, including a multi-lingual phrase section and what seems to be a very useful airline guide. For those most interested in travel, the authors of "Let's Eat Out!" have also produced a "Multi-Lingual Phrase Passport" for food allergies that is pocket-sized. I thought this was a very handy little guide!

3 out of 5 stars Let's Eat Out!.......2007-01-09

Basically, it says be suspicious of EVERYTHING. As a Celiac, I am already. This book did not help me and I was disappointed but I can see how it might help someone newly diagnosed. Being vigilant is the key.

3 out of 5 stars Its OK...........2006-12-22

I was a little disapointed because many of the allergy graphs show gluten as possible, so that isn't much of a help, since that was already a given. I guess if you are looking for some where to START looking for gluten in your food, then this is a place to start. If you have been doing it for a while, then you really don't need this book....

5 out of 5 stars Great book, worth the money.......2007-02-17

I recently discovered that my various symptoms were not in my head, but were in fact due to dairy allergy. Since giving up dairy, I no longer have aching joints, upset stomach, fatigue, hives, and a skin condition (since giving up dairy, the skin condition is almost completely gone). This book is the best book I've seen so far. The recipes are simple and tasty. If you're a true cheese lover like I am, I don't believe you're going to find anything that replaces the taste of cheese. So, if you're looking for something that tastes EXACTLY like dairy but isn't -- forget it. However, if you're willing to try something different so you can have better health, then this book is great. It's also a good source of information on dairy intolerance and allergy.

4 out of 5 stars not too bad for a 2% lover.......2006-11-10

I have had 4 or 5 recipes so far.And all have been great. Just had the honey lime chicken. EXCELLENT!!!! *Double up on the sauce recipe if you are a sauce lover.

5 out of 5 stars Try this cookbook FIRST if you are allergic to Milk!!!.......2006-01-16

I work full time, I have 2 kids, I don't have time to make all sorts of substitutes and marinate stuff for hours. This is simple, easy to follow book with results that are really tastey. INCLUDING DESSERTS!!! The whole family ate these reciepes no questions asked! They didn't even know that they were eating dairy free until I told them a week later. I have yet to have one reciepe flop!!
Some of the manufactures of subst items she lists are A LITTLE outdated, but we all know to check labels and I still found her tips very useful. I had been adjusting to not eating at all when in doubt, with this book I am starting to explore more in milk free cooking because I have less doubts.

As for "Cooking Without Milk: Milk-Free and Lactose-Free Recipes" Light a match and just burn your cash..not worth the paper it's on. I mean...Do you really need a recipe for a peanut and butter sandwich?

4 out of 5 stars Good for those allergic to milk and soy.......2005-08-01

My son is allergic to both dairy and soy. about 1/5th of all those with milk allergies are also allergic to soy. This book provides many recipes that do not rely heavily on milk substitutes and thus are a Godsend to thus of us who can't just add soy to make it work.

5 out of 5 stars excellent!.......2005-07-03

I bought this book (though not on Amazon) and I am very happy with it. I recently became very lactose intolerant and this was just the book I needed. One good thing about this book is that, unlike many other "milk-free" cookbooks, it doesn't just substitute soy milk for milk products. To me, the most important recipes are those for pancakes, french toast, muffins, biscuits, and many dessert recipes that usually use milk. I would recommend this book!

5 out of 5 stars Wonderful soup recipies.......2007-04-23

I am enjoying this book very much. In Fact, so much so that I have purchased it as a gift and recommended it to my friends. Our entire family and a good part of our extended family has gone dairy-free. Some for health reasons, others because of lactose intolerance and dairy allergies. When looking through my copy, I have so many dog eared pages, it is hard to pick my favorites. I will say though, that I LOVE the soup recipes. The soups have quickly become staples in our house when I need something nourishing, creamy and easy to prepare; the carrot and roasted red pepper soup, salmon and white corn chowder, the butternut squash and pear soup are divine. The corn souffle' is fool proof; easy, impressive, and delicious. The quick breads are a snap to assemble and I make them frequently. All in all, "Recipes for Dairy-Free Living" has made a wonderful addition to my cookbook collection and I highly recommend it. My only request and question is... When is the author going to write another one? Please!

1 out of 5 stars Only for thoes with extra free time and spending money........2006-06-19

Recipes For Dairy-Free living is not a great add to your home cookbook collection. I would tell most people to pass it up. While the author boasts "everything can be found in the supermarket" and over "100 innovative creations" you WON'T want to make many of these recipes. Not much in this book could be made quickly or on a tight budget. There is a large amount of ingredients and steps to most of the recipes. The sections on sauces, quick breads, and sweet endings are the best in the book, but still leave you wanting more. I found that this book isn't written for a new cook and there is no nutritional values given. I know it is very important to me to see how much calories, fat, calcium, and fiber that I'm eating. Go looking for another cookbook. It's not worth your money. And I bought mine used!!

5 out of 5 stars A Terrific Dairy-Free Cookbook!!!.......2003-11-22

I bought a copy of this book after reading a newspaper article on the author that also featured some of the recipes included in the book. It's a great addition to my cookbook collection. Although I don't have a problem with dairy foods, I have some friends that can't tolerate them, so I bought this book to help me create a dairy-free dinner party. It was a huge success. I found the recipes easy to prepare and my friends raved about the dishes I served. The biggest "hit" on the menu was the Coconut-Lime Seafood Stew and I had to prove that the Flourless Chocolate Almond Cake contained no dairy ingredients. I found the book to be very informative and liked the fact that I could find all the ingredients at a local grocery store. My "dairy challenged" friends all want a copy of this book, so part of my Christmas shopping is already taken care of!! Thanks Denise

5 out of 5 stars Holiday Menu Challenges.......2003-11-14

Some dear friends from out of town are coming to our house for Thanksgiving dinner. Stan is allergic to shellfish and his wife Louise has dairy allergies. Stan will be fine; I'll be cooking a turkey. But how can I find a substitute for creamy mashed potatoes and pumpkin pie with whipped cream? Thanksgiving wouldn't be the same without these traditions, so I went in search of some help at my local bookstore. I was surprised and delighted to find Denise Jardine's "Recipes for dairy free living". What a wonderful niche she has filled with this book. My goal was to create a wonderful holiday meal that accommodated dietary restrictions of my guests that was invisible to everyone. Now no one will feel left out or singled out, and I am confident about preparing and serving this menu. Denise has made the preparation a no-brainer by including a step-by-step planner. I was also delighted to discover the author has a website that provides, among other things, an opportunity to submit family recipes for dairy free transformation. BRAVO!

K.E. Reader from San Francisco

5 out of 5 stars Great dairy-free cookbook.......2003-11-10

I am enjoying this cookbook. For various health reasons, my family is trying to limit its intake of dairy products, which is tough to do. The recipes in "Dairy-Free Living" successfully substitute for dairy products, and the results are delicious. No recipe has disappointed me yet. I especially like the soups and the seafood stew. I also appreciate the entertainment/meal planning in this cookbook. I want a one-stop source for all my recipes. The meat and veggie dishes have been winners, too.

    Book Description

Devoted solely to the Specific Carbohydrate Diet™!

The Specific Carbohydrate Diet™ (SCD™) is a strict grain-free, lactose-free, and sucrose-free dietary regimen intended for those suffering from Crohn's disease and ulcerative colitis (both forms of IBD), celiac disease, IBS, cystic fibrosis, chronic diarrhea, candidiasis, and autism.

The Specific Carbohydrate Diet™ is based on the work of Elaine Gottschall, who wrote a groundbreaking book called Breaking the Vicious Cycle. In an effort to heal her daughter's Crohn's disease, Gottschall researched the role of intestinal microbes in the disease, and discovered research done for celiac disease that explained the importance of eliminating certain carbohydrates from the diet. By eliminating these carbohydrates, you can reduce the toxins produced by intestinal microbes and the corresponding mucus production that contributes -- and even causes -- digestive ailments like Crohn's, IBS, and celiac disease. What's more, this diet has been used by many parents who are turning to the SCD™ to help their children with developmental disorders.

      4 out of 5 stars Not a traditional cookbook.......2007-04-23

I agree with others this is certainly an excellent resource book, but want to point out that this book has a limited number of recipes. To the book's credit, these recipes include all the "standards" for dairy-free eating including Alfredo Sauce, Macaroni and Cheese, Tofu Sour Cream, Cream Cheese Alternative, etc. So, if you want information about Non-Dairy Living (i.e., its health benefits) and you don't mind that about half the book is a spreadsheet of store or internet products and their content (i.e., gluten-free, dairy-free, non-soy, vegan or Kosher), then this is the book for you.

      5 out of 5 stars Fantastic Resource--A must have for a dairy-free lifestyle!.......2007-04-12

This is an exceptionally detailed, organized, and informative book. The author writes in a very intelligent and easy to understand manner. The topics of each chapter are well-defined and information can be found very quickly. I was especially pleased with all of the additional resources made available at the end of the book.

Besides all of the information on food allergies and dairy-free concerns, the book also addresses the many challenges we face when dining out, preparing our own meals, and how to shop for ingredients. Preparing non-dairy meals and shopping can be time-consuming and challenging. Sometimes, those labels you find on food products are very confusing. Alisa's grocery shopping lists provided a way for me to quickly scan the categories I was most interested in and find those types of foods with little trouble at my local or specialty health food stores. The chapters on dairy-free alternatives and cooking without dairy illustrated that we can still make many of the meals we love without worrying about sacrificing taste. Restaurant tips include fast food, ethnic choices, and general ways on how to be more aware of what you are eating when information about ingredients are not readily stated on the menu.

All in all, this book is a tremendous reference for anyone who is interested in a dairy-free lifestyle. Although I personally do not have dairy allergies, following her advice worked well for me because I can still enjoy eating the foods I love but in a more healthy and balanced way.

You can literally pick this book up and "run with it" to the grocery store or the restaurant (or your own kitchen).
It is also a great reference book - it contains the latest research information regarding dairy and dairy alternatives.

I am currently using this book to "wean" our family off of our dairy addiction!
I am confident that, by using the recipes and the extensive list of additional resources, the transition should be a smooth one.
Well, except for that "addiction" part, but that is our job and it is a big one.

Thanks for writing a book that actually inspires you to make the change.

      5 out of 5 stars A wealth of information.......2007-02-07

"Page Turner" is not usually a term you'd use to describe a cookbook or lifestyle guide, but that's exactly what "Dairy Free Made Easy" is. Like a good mystery, this comprehensive guide to diary free living was filled with one "ah ha!" moment after another. Alisa Marie Fleming brings you the insider scoop on dairy, and all the havoc it can reap. From the revelatory chapter on "The Many Faces of Non-dairy Dieters" (thanks for the info on "acne and dairy!), to the excellent "Dining Out With Diary Free Style", to the encyclopedia-like "Grocery Shopping: Over 2000 Non-Dairy Products", this book continuously impressed me with its thoroughness, and helpful timely advice. Of particular note was the chapter on "Non-Dairy Milk Alternatives" which includes instructions on making your own rice milk, oat milk, soy milk, etc. -- a very helpful guide for those with growing concerns over cross-contamination.

As the mother of a dairy-allergic child, and an asthmatic toddler, and the wife of a lactose intolerant husband, "Dairy Free Made Easy" just made living dairy free a whole lot easier!

      5 out of 5 stars excellent resource.......2007-01-26

If you are trying to avoid dairy products in your diet, you may have found the excellent Web site: [...]. The site is constantly updated with product reviews, articles, announcements, discounts, etc. To make the information even more accessible, the sites founder, Alisa marie Fleming has put together a book entitled "Dairy Free Made Easy: Thousands of Foods, Hundreds of Tips, and Dozens of Recipes for Non-Dairy Living."

This well-researched book gives detailed information about dairy products - what they are, how they are processed, what is so special about dairy milk anyway, and answers questions about organic vs. conventional dairy products.

For those avoiding dairy products for health reasons, there is extensive information about allergies, lactose intolerance, whether dairy can help you to lose weight or to gain it, whether there is a link between consuming dairy products and certain cancers, acne, migraines, and other ailments. There is also great information about infant milk allergies and steps to prevent food allergies in babies. Fleming includes information about why breastfeeding is so important but she gives a comprehensive breakdown of infant formulas on the market with the pros and cons of the various choices.

Probably the most common concern of those giving up dairy products is where will they get their calcium. Fleming does an excellent job of dispelling the myth that dairy products are the best source of calcium (they're NOT!) and gives excellent advise for getting calcium from food and choosing a supplement if you feel you need one.

Fleming goes on to list non-dairy alternatives for milk, cream, cheese, etc., recommending products you can buy but also including easy ways to make the substitutions yourself. There is a small section of recipes with some yummy sounding dishes like "Easy Dairy-free Lasagna, Cream of Mushroom Soup (I can't wait to make that one!), 5-Star Ranch Dressing, Chocolate Tofu Ice Cream and Dairy-free Cheesecake.

Another really excellently done section is the chapter on dining out. Fleming goes through the various kinds of restaurants and lists dairy-free options for each, for example, she says that most dishes at Asian restaurants (Chinese, Japanese, Thai, and Vietnamese) are dairy-free though they may contain eggs. At Mexican restaurants, she suggests tacos, fahitas, tamales, and burritos - but tell them to hold the cheese and sour cream. More importantly (I think), she clues you into dishes that you might think are dairy-free but aren't, e.g. she tells you to "Skip the Tandoor and kabob entrees. Though they may appear dairy free, these specialities are typically meats and/or vegetables marinated in yogurt." For curries, Fleming recommends going to a Thai restaurant as Indian curries are usually made with cream.

Other helpful sections in the book tell how to decode food lables, lists of ingredients that really mean dairy (e.g. lactose, caseinate, whey), and foods that may contain dairy - some that even surprised me like tuna fish, chewing gum, chicken broth, and breath mints!

A large portion of the book is dedicated to profiling non-dairy products (over 2,000). A nice feature is that the products are ALL free of hydrogenated oils and high fructose corn syrup. (YAY!) The foods are listed in a chart format that lets you know if the product is in stores on can be purchased online, if it's gluten-free, soy-free, vegan, processed on dairy-free equipment, and is kosher certified.

The book also lists resources for finding dairy-free products and cookbooks. Although this book is not vegan, it is an excellent resource for vegans and anyone avoiding dairy. If you suffer from severe dairy allergies, I would say this is a definite must-have.
