Okay, but not exactly what I was looking for.......2007-07-13
My objective was simple-fast, small amount of common ingredients, appealing meal ideas.
This book called for some strange ingredients, some of the recipes looked tedious, and I really just wasn't very attracted to any of the meal ideas in here. Not the type of food I am going to be able to get husband to eat either, so I wound up sending it back.
I have had great success so far with a few other books:

This is the most used cookbook in my house. It features simple to find and use ingredients and all recipes are quick and tasty, not to mention quite healthy. I have given this book out as gifts to two others already and they both have given it similar reviews.

I have about 12 lowfat cookbooks in my collection. This cookbook and volume 1 in the series are my favorites because the recipies taste great and they are very easy to make. You will love this cookbook!
My favorite cookbook.......2003-12-23
This is the cookbook I depend on. I am a Lifetime member of Weight Watchers, and I used this book (and the other Quick and Healthy) when I was losing weight, and still use it all the time now that I am maintaining. There is enough nutritional information to calculate points. The ingredients are all readily available in our small town. You don't spend all afternoon in the kitchen. Everybody likes the result! I can't say enough good things about these books.

Fantastic book!.......2007-02-14
I have by now made six of the recipes in this book, one of them (the brownies) three times. Most cookbooks that I keep have an eight in ten success record. This book, however, is ten out of ten. The brownie recipe is one of the best I've ever tasted and certainly the best I've ever made. The fruitcake ended up being the highlight of a recent holiday potluck. The coconut poppy seed cake was the perfect birthday cake, and the reason I'm reviewing the book at this moment is that I handed a slice of spice cake to a co-worker who praised it for a good three minutes.
I always knew Malgieri was a great baking book author. I didn't realize how great until just this moment. I haven't had a failure yet from this book, and I can't even say that about classics like "The Joy of Cooking." Bravo, Mr. Malgieri!
p.s. Buy this book if you want to make some scrumptious, lower fat and calorie, desserts.
a simple and easy book for the everyday baker.......2007-01-06
I am a starter baker, so my husband bought this book for me as a Christmas present. I love the concept presented here by Nick Malgieri - real ingredients (real butter, real sugar, etc), less the amount, and still delicious desserts. I have tried two recipes so far, and both have turned out well (even though the tart crust contains only THREE tablespoons of butter, a minor miracle indeed!). What I also like about this book is that the ingredients and the equipment are simple and common in local supermarkets. None of the recipes requires fancy, exorbitantly priced rarities from the other side of the world. In addition, the recipes cover a range of dessert genres: chocolates (with an entire section devoted to it), cakes, tarts and pastries, ice creams, cookies. Nick also teaches you the basics of ingredients and baking techniques, along with helpful tips - so the book is educational as well (my husband was reading it for fun the other day!). One thing that this book doesn't have, but that I would've appreciated having, is prep time. Otherwise, no complaints from me. I look forward to trying all the recipes in 2007!
Lightened Desserts Done Right. Buy It........2006-12-29
`Perfect Light Desserts' by baking teacher extraordinare, Nick Malgieri and veteran cookbook author David Joachim is a classic meld of baking technique and substitution cooking, fitting the skills of the two authors. There is probably no other baking writer's work on a `healthy' baking book I would expect more from than Malgieri, since I always go to his books first whenever there is a specific kind of recipe I wish to make. He doesn't always have what I want, but every time I use his recipe, the results exceed my expectations. I have even found better recipes in his book, especially `How to Bake' than I have in books which specialize in the subject I am searching.
David Joachim's contribution is utterly appropriate, as his latest opus was `The Food Substitutions Bible', being an encyclopedia of what ingredients, as in lower calorie for higher calorie, can be swapped for what.
The authors' introduction shows their technique is entirely in the direction I would have hoped. They use no `non-fat' ingredients and no artificial sweeteners, although they do use `lowered' fat products. Just as I am fond of Rachael Ray's take on fast cooking without relying on prepared convenience foods, these authors fill their book with low calorie and low fat recipes by concentrating on those recipes which tend to be lower in the bad stuff to begin with.
There is little mystery to how the recipe slimming is done. First, as stated above, the authors choose recipes that are not high in sugar and fat to begin with. Second, high fat ingredients such as dairy products are replaced with `moderate' fat substitutes or dairy products with extra body such as buttermilk or yogurt. Third, fat is replaced with vegetable products such as applesauce. Fourth, rich icings are removed, so bulking up with rich stuff is an option. The classic examples of all these techniques put together would be a cheesecake recipe replacing cream cheese with ricotta and a carrot cake which makes heavy use of vegetable textures to begin with. Both these examples are also classic cases of picking good recipes to begin with. The ricotta cheesecake is not a diet faddy invention, it is based on an old Neapolitan recipe.
The authors claim to have maintained reasonably sized portions. I suspect a good symptom of the Americans' inflated notion of portion size is that these portions seem just a bit on the small size. When I am not in `dieting' mode, I would not imagine getting 8 portions from a 9-inch fruit pie or even less 16 portions from a 10-inch Bundt pan cake. But, the portions all seem to be of reasonable size, and most of the time, the calorie count for the portion is actually well below the target of 300 calories per portion.
One corollary to the fourth technique above is that there are very few double crusted pie recipes in the book. And, the pie crust recipes are all for a single 9 inch piecrust or maybe a 10 inch tart crust. Virtually the only caveat I have about the book is that unlike some of Malgieri's other books, this is not a serious tutorial on baking techniques. This is not to say there are no good guidelines and lessons here. Just the opposite. It's just that you will do much better with this book if you are already a fairly adept baker. The recipes for the pastry crusts, for example, assume you know most of the tricks of the trade in making a nicely flaky crust with a food processor. I am not overly fond of using the food processor and I do fine with my old-fashioned dough cutter. But, since these recipes use less butter and even less water, I suggest you go along with the recommended food processor technique, as this will work better on the smaller quantities.
On the other side of the coin, I find things in this book that I would expect and do not find in a lot of other books. My favorite is a little table showing when many popular fruits are in season. Unless you are a strict carbophobic, it is clear to both me and the authors that fruit is one of the very best ingredients for healthy desserts.
One thing to take very seriously is that this is not a book on baking in general, but only on DESSERTS. This means there are no recipes for lower calorie biscuits, breads, muffins, or breakfast pastries. But, you do get a generous helping of recipes for vegetable bulked breads.
It is no surprise that the book starts with chocolate, as that seems to be everyone's favorite dessert ingredient (except for my mother, probably because she spent several decades working in a candy factory). The very best news about chocolate is that not only is it not, in itself, fattening, it is literally good for you, just like tea and (dare we hope) coffee. The bad side of chocolate is from the level of sugar added to cut its natural bitterness. The authors accommodate this by using sugar-free baker's chocolate plus complex sweeteners or use Dutch process cocoa power, which is less bitter than unprocessed cocoa powder. My only regret here is that while there are many fine chocolate recipes, a classic chocolate layer cake is not among them. The authors redeem themselves by giving us a `healthy' recipe for chocolate chip cookies (sorry, no nuts). Even better is the even healthier oatmeal raisin cookies. Now why didn't I get this book before Christmas!
Reading this book in December makes one regret that all the best berries and stone fruits are out of season. Just Wait!!!
Reduced Calorie Desserts.......2006-10-27
Malgieri certainly is a fine baker, as his extensive cookbooks demonstrate. Here he teams up with healthfood writer Joachim to provide dessert collection with reduced caloric recipes, each said to be under 300 calories. Each recipe has nutritional breakdown.
They achieve this by reducing or eliminating amount of sugar, butter and eggs. They do not use articial sweeteners or egg substitutes or whole grain flours. One can try and substitute some of this out if glycemic index is important.
There are some fine recipes in this collection with nice large format, paper stock and color photos galore, along with Source recommendations, Ingredients & Equipment discussion. I'm into the likes of Gratin of Summer Berries (with a magnificent sabayon topping); Honey and Hazelnut Biscotti; Earl Grey Panna Cotta; Strawberry Meringue Tart; Chocolate Banana Custard Tart.
Another winner from Nick Malgieri.......2006-10-26
I always trust his books. They have been better than any other baking books I have used. I was a litttle put off that with so few calories the desserts would be good. No need to worry. The brownies alone are worth the price of the book. This is a wonderful book to have right before the holidays.

Its ok. The main reason I got this cookbook, based on the title, is to avoid excessive sugar, or, hopefully, to cut it out completely. The cookbook offers carbs and useable carbs, as a total, but doesn't list sugars specifically. Also, I would have prefered some photos. Its functional, I would go to this book with a mission or a plan. Its not something I will leisurely look through for ideas.

While there is some useful nutritional information in this book, I think that the book is misleading in several ways and I don't think it was worth the purchase.
It's misleading to title it "every calorie counts" and then tell the reader she in not counting the calories from sugar alcohols used to replace the sugar in many recipes. She claims there is no reliable way to count those calories yet those calories are routinely listed on food labels and the product labels of the sugar alcohol manufacturers.
It's also misleading to say there are 500 recipes in the book when many are but small moderations of one master recipe. Do readers really need 6 variations of the cauliflower "mashed potatoes" recipe or 11 variations of the cauliflower rice recipe? It also annoys me that she only included a few baked goods recipes when her previous books had more of them.
Further, the book claims that these are recipes "the whole family will love"; yet many of the recipes are not just not mainstream. Do kids really love roasted turnips or cumin mushrooms (or the 6 variations on it)?
If you are a low carber or if you have a family to feed and are looking for ways to replace mainstream recipes with healthier alternatives, I think there are better and more creative mainstream books out there, even some of Dana's previous books. I just wanted to post this review because I want others to be aware of what I consider to be shortcomings in this book. I have returned my copy.

Every cookbook author should read her books. She has a down to earth, easy to understand style that makes it seem as if she is just your friend or neighbor sharing her recipes with you. I own nearly every book she has written already and plan to buy the rest as soon as my social security check arrives. I have also purchased them all for my daugher and her husband, avid low carbers as well.

This is an outstanding example of a cookbook that accomplishes its stated purpose. These are excellent recipes which produce very agreeable and enjoyable dishes with a minimum of fuss. With each new recipe I keep thinking, "Well, THIS one isn't going to turn out be as good as the others
have...", but everything keeps coming together and turning out great. Working out of this book, I've had a 100% success rate - out of a dozen tries, I've turned out a dozen dishes I'd want to make again...and roommates, girlfriends and guests have all been quite pleased, so it's not just me.
Another argument in favor of this cookbook is that it is very reasonably priced. Collectors of high priced chef-oriented volumes (Thomas Keller, Daniel Bourdain, or even Tyler, Giada and their Food Network peers) will find it somewhat plain and lacking in presentation (it's nicely put together, but without a lot of fancy production or food photography)...but if you are just looking for a lot of "bang" for your cookbook dollar, this one delivers.
Two caveats - as a previous reviewer mentioned, although these recipes aren't especially exotic, neither are they oriented toward children who are picky eaters. In other words, some of the fancier dishes are not going to fly with the "mac'n'cheese and pizza" crowd. This is definitely adult oriented fare for the most part. And on the other hand, this isn't the fare you would cook to impress a first date - it's excellent stuff, but not especially exotic or impressive looking. That's why I called it a "compromise" in the review title. Save these recipes for friends, family and loved ones who just want something good on the table.
Although it isn't formatted to reach the single/couple cooking demographic, I still have come to prefer "Jeanne Jones' Healthy Cooking" over my previous favorite in that category, "Healthy Cooking For Two (or Just You) by Francine Price. Even though Price's book is nicely designed and has a brilliant format, this book simply has better recipes - each book takes a lot of "shortcuts" that simplify meal prep, but Jones' approach is both more meticulous and also more worth the effort. (And the leftovers are invariably devoured for lunch the next day.)
Not a "Family" Cookbook.......2004-05-14
This book was not at all what I expected. I was looking for fast and healthy meals to put in front of my family every night; and with the title being "...For People Who Don't Have Time To Cook", I assumed it was geared towards busy families. Unfortunately, the majority of the recipes are not kid-friendly. Dishes like Cider-Poached Salmon with Spiced Pear Sauce, Grilled Swordfish on Herbed Couscous with Vegetable Minestrone, and Middle Eastern Lamb Stew are not likely to please my brood. I sent this book back. 2 stars because the presentation of the book is nice, and I'm sure someone looking for fancy dishes like these would enjoy it.
More than you could ever want in a cookbook!.......2003-05-14
I never dreamt I'd see the day when I, of all non-cooking people, would say these words but wow, what a terrific cookbook Jeanne Jones' HEALTHY COOKING is! And you may be asking yourself "if she's a non-cooking person how would she know this is a great cookbook?" Well, I'll tell you. Because cooking is my father's absolute favorite hobby, I've been handed down many a cookbook from him with his hopes that maybe, just maybe, one of them might spark the hidden cook in me. But until HEALTHY COOKING I've never picked up a cookbook and looked at it more than once before placing it on the shelf to collect dust (let alone actually cook something out of it).
So anyway, back to why this book is wonderful. In addition to the obvious perks of the recipes being healthy and fast (the fast part making cooking relatively painless for those of us who don't wish to be in the kitchen any longer than absolutely necessary) the beginning of the book gives great advice on topics such as setting up your kitchen, purchasing poultry, storing food, and much more; the margins of the recipe pages are chock full of tips; but my absolute favorite is the "Spin Off" section at the bottom of each recipe which provides useful ideas for what to do with those pesky leftovers (invaluable information for those of us cooking for only one or two people). What more could you ask for in a cookbook? A sincere thank you to Jeanne Jones for creating such a tremendous cookbook as it's accomplished a feat none other, neither book nor human, could. You got a non-cook cooking!
My favorite cookbook!.......2001-05-14
This cookbook was the first one I ever bought...and it remains my favorite, even after getting married and amassing a very large cookbook collection. What I love about the book is that all of the recipes are very easy to prepare, yet taste as good as or better than most high-fat recipes. I am a registered nurse, so I am very careful to cook healthful food at home. There are recipes for everything from breakfast and brunch dishes to lunch dinner, dessert, and holiday menus. The Herbed Lemon Chicken is one of our favorite company dishes. This week I am making the following recipes from the cookbook: Tortilla Soup, Lemon-Tarragon Chicken on Cannellini beans, Shrimp Fettuccine, Beef Spaghetti Pie Ole, and Fat Free Fudge Brownies. A lot of the dishes can be prepared ahead of time, so it's a great book for entertaining or preparing holiday meals, as well. Enjoy!
This is one of the most useful cookbooks I own............2001-01-15
....and I own a lot of cookbooks! Let's face it, who WANTS to cook healthy? When you put so much time, trouble, and expense into cooking what you hope are tasty meals, it's safe to assume that anything loaded with fat and calories will be a big hit. It's not such a sure bet when you're using low-fat this, and reduced-sodium that. But when my husband's doctor ordered him to switch to a low-cholesterol diet, I had to figure something out! I started looking through my many cookbooks, and came across this one by Jeanne Jones. I have to admit, I've had it for a while, and I never had used it much before now. But once I got to really looking at it, I thought, "Hey, these sound really good....like real food!" I went through the entire book and flagged all the recipes that sounded good to me...and when I was finished, there were a LOT of flags sticking out of the book! I made three of the recipes that first week, and my husband didn't even KNOW he was eating healthy! The Baked Quesadillas and Overnight Cheese Strata were every bit as tasty as any recipe using full-fat ingredients. The Tarragon Chicken and Pasta Bake drew rave reviews, and he even took the leftovers to work the next day to nuke for lunch. There's also a great recipe for Fettucine Alfredo, which as we all know, is "Heart Attack on a Plate" in it's original form. This one used fat-free cream cheese and skim milk. Who knew they could taste so good?
The only change I make to the recipes is to add a bit of salt. Since this is technically a "healthy" cookbook, not just low-fat, the author tends to skimp on salt. Since we don't need to do that, I go ahead a add just a bit, but if you are on a low-sodium diet, then the recipes would be just right for you. Next up on the menu....Chile Rellenos Casserole! Or will it be Ham & Cheese Calzone? Hmmmm.....

Being overweight, I hate to even hear the word "diet." I have tried diets of all kinds and I just can't stay with them because the foods are not satisfying to me. JoAnna Lund's "Healthy Exchanges Cookbook: It's Not a Diet, It's a Way of Life" is a good book for tips on life and has recipes that satisfy even a big guy like me. I have noticed that since I have been using her recipes, I am shedding a few pounds and without doing the diet word. If you need to get a few pounds off then join me in using this book as a guide.

Simple, fairly tasty, low-fat dishes.......2002-02-13
I'm using this cookbook to help me learn how to "low-fat-ize" my cooking. I like that Lund uses everyday ingredients and tells you up front what you need to keep on hand to cook from her book on short notice. The recipes are pretty easy to make and, while they'll never be four-star fare, are adequate for Tuesday night meals for the family.
I do have one quibble: Most of the recipes that use ground beef call for only 8 ounces. This usually requires that I saw a pound block of hamburger in half, which I find really annoying. It's enough to make me make double batches and freeze the rest.
The "classic" Joanna Lund cookbook........1999-02-28
I have lost 82 pounds with Joanna Lund's recipes. I have five of her cookbooks and this is my favorite. There are some excellent, real food recipes in this book that my whole family loves. She makes it easy too; the ingredients are easy to find in your store and the meals are made in minutes. Try it, you won't be disappointed!!

This book has over 120 heart healthy, delicious recipes for vegans and non-vegans alike! Let me get this out of the way...my absolute, hands down, favorite recipe in this book: "Linguine With Spicy Red Garbanzo Sauce". The simplicity of the healthful ingredients was a real shock to me. I figured ok, another spaghetti recipe...It is so much more. Serve it with some "Cheezy Garlic Bread" and a spinach salad topped with "Tomato-Garlic Dressing". Do your palate and your heart a favor...With a mere 21 calories and 0 fat, this dressing packs a punch! Of course if you've been missing ranch, there is the "Classic Ranch Dressing" to try as well...so creamy! The "Moroccan CousCous" is authentic and tasty. I love it! "Garlic Infused Smashed Potatoes" are heavenly when smothered in "Golden Gravy". It almost seems wrong that there is 0 guilt associated with these dishes! Looking for breakfast? Try what is (in my opionion) a vegan's best friend...flax! The "Flaxjacks" on page 40 are a tasty way to start your day right. I like to top them with "Peanut Whip" instead of jam. "Tropical Style Museli" is filling and healthful, I love it with a dash of vanilla rice milk.
Of course there are too many recipes to review them all here, but I always save room for dessert...in this book namely the "Apple Crisp". Simple, traditional and stunning...a real crowd-pleasing crisp.
This book is chock full of recipes, 14 days of menus, information to keep your heart happy and extensive information on ingredients. I like that the grain section even offers pressure-cooker alternatives for most of the dishes.

Heart Healthy = Yummy Food!.......2004-01-31
I recently purchased this book for my father who was diagnosed with high blood pressure and cholesterol. He's a pretty dedicated meat eater, but he's loved all of the recipes he's tried from this book! I especially like the menu plan--it gives me great ideas for deciding on my weekly menu. Some of my favorite recipes include Buckwheat Banana Pancakes, Cream of Broccoli Chowder and Fennel with Italian Style Tofu Steaks. The addition of flax to a number of the recipes is also appreciated. This book is a must for any Joanne-fan and is a great intro to heart-healthy compassion eating!

This book is excellent! All of Joanne Stepaniak's works are well worth the money. This book has variations of some of her previous recipes that are just as good or even better! Specifically, she has substituted flax and flax oil to make some previous recipes even more appropriate for those with heart/health concerns. The recipes in this new book are definitely NOT mere copies from previous books! I anxiously await Joanne's next book and will be first in line at the book store!

Great cookbook for the low-fat cook.......2007-04-27
The cookbook is full of recipes that are truly fast. The cookbook focuses on low-fat cooking and doesn't rely on processed or convenience foods too much like other timesaver cookbooks. In our family, we do not follow a low-fat approach, so it doesn't appeal to us but to anyone who prefers a low-fat diet, you will love this cookbook.

This is a good cookbook with tons of awesome ideas that don't require too many ideas. I love how it has all of the recipes separated into carb categories so it's easy to choose from the list.

My objective was simple-fast, small amount of common ingredients, appealing meal ideas.
This book called for some strange ingredients, some of the recipes looked tedious, and I really just wasn't very attracted to any of the meal ideas in here. Not the type of food I am going to be able to get husband to eat either, so I wound up sending it back.

Although the title says it "Quick & Healthy", I found out that most of the ingrediants in a lot of the recipes isn't something that the average person would have in their home. But there are some great hints for subsituting items.

I have been on a mission to turn over a new leaf and start eatting healthy. I have bought a few healthy cook books and they were hard to follow. By luck, I stumbled upon this book on Amazon.com. This is exactly what I was looking for! Simple, easy to follow recipes. Delicious and they don't seem low fat at all. I made the Wheat Pancakes for my family today and they loved them. I also made the Herb Potato Salad and it was a breeze and so yummy. I'm going to make the Cialantro & Coconut Milk Chicken tonight. I can't wait to make more.

I've recommended this book to many people and I've also given the book as a present on various occasions (pregnancy, weddings etc...). The author presents easy to follow recipes that are as tasty as they are healthy!
I'm sorry that it's only available via used book sources (but at least it's still available). I've since moved to a vegetarian diet and can adapt many of the recipes to my current standards.

I ran across this book in a used bookstore and thought, "$4, no big deal." I'm currently ordering it for my family for Christmas. I'm not much of a cookbook reader yet I find myself picking this book up as I head to the bathroom for a long soak in the tub.
I've tried a handful of dishes and have been pleased with each creation. In fact, the left overs I bring to work result in comments such as, "what smells so good?" I love admitting I'm the humble (yeah, right!) cook.
One draw back has been that I didn't have many of the spices and grains as staples in my kitchen which has resulted in a bit of an investment. Additionally, some of the items I've never seen, tasted or heard of and I find myself frustrated as I comb the shelves of the whole foods store. But, I don't want to discount the sense of accomplishment when I do find an item. And, I must remember that all adventures take a bit of work.
If you are looking for a cookbook that will excite your taste buds, support a healthy life and spark your creativity, this is the book for you.
Tasty, healthy recipes for lowfat, low carb cooking.......1998-10-08
I find this an excellent book of recipes that take very little time. They are not only healthy, but tastier than most of my other recipes. I have been losing weight and eating great food following this cookbook - it is also easy to use if you are following the zone diet, or the Atkins diet (just add more oil), fits well into low fat diets as well.
Good tasting, good-for-you food........1998-09-16
My mother used this book and two others by Harriet Roth to help my father lower his cholesterol four years ago. My son was three then, and he loved the food, too. Lots of tasty recipes in Roth's books, along with some interesting commentary and common sense about eating and preparing food. Some of the recipes can be pretty labor intensive, especially for the two week diet that helps dramatically lower your cholesterol, but it does work - my father's level dropped significantly in that two weeks, and he lost 10 pounds, too.
