I was so pleased with the last book that these authors wrote that I really looked forward to this book. It is very well thought out in it's presentation of recipes and handy tips, and the recipes themselves are to die for. What I especially like about this book is the "Find it Fast Index", which breaks down the recipes into several categories from "Quick and Simple" to "Freezer Friendly" and several in between. It also has a very helpful Menu Planning Chapter for those of us who appreciate help in figuring out what to serve with what! I am still working my way through the recipes, but my favorite right now is Pear, Gorgonzola and Hazelnut Bundles. It is so delicious, and so quick and easy to prepare. I really like the variety of recipes, all the way from Nachos to more sophisticated recipes. The icing on the cake is that this book has been nominated for the best book in America in the Entertaining Category of the James Beard Foundation Awards, which is the equivelant of the Academy Awards, so I must not be the only one who loves it. I'm glad it's being recognized for the great book that it is!

I bought this book as soon as it came out last fall and so have used it a good deal over the holidays. The egg rolls are the best I have ever eaten and don't get me started on the smoke and fire beef kebabs.Everything that I've made from The Big Book of Appetizers has gotten terrific reviews from my family and friends. The authors give easy to follow directions for dishes that I would have been afraid to try before using their book. Apparently I'm not the only one to sing its praises since it has been nominated for a James Beard Award which is like the Oscars in the cookbook world. For the price (under 20 bucks) this book is one of the best deals going. Don't let the fact that there are no pictures stop you from taking a look at one of the best cookbooks of the year.

Beautiful photo on the cover, and NONE! inside. I am sorry. That feels just stingy to me. Only text, and not a single photograph. If you want a real book on how to make appetizers, get Martha's big handbook. (very good for when you have guests with different needs such as pregnant, nurseing, gluten allergy, nut allergy etc.)I know you may feel indifferent to her, but the woman really knows how to cook, and how to share her knowledge. As for this book; save your money.

I gave this book to my girlfriend for Christmas. She loved it and she has made many recipes from the book. She is a very professional (but amatuer) cook and said this was the one of the best cook books she has ever come across. She reads a lot for Cook's Illustrated, so she knows what she is talking about. As Creative Director of AUDIN Web Design, I thought the cover was very well laid and made my mouth water. there are some recipes I would stay away from and in fact one them made me sick on several occasions.

The Essential Appetizers Cookbook is not only beautifully photographed, one of the things I love best in an great cookbook, but I found the recipes, directions,and ingredients easy to read, follow, and find, in that order. I used several of the recipes for a formal tea, and they proved to be a triumphant success. I highly recommend this book to those who love to entertain guests, and are looking for unique recipes which are fresh, eye appealing, and enormously scrumptious bites that will delight the taste buds of connoisseurs of the epicurean world, as well as friends and family alike. This book offers a wide variety of recipes, however; if you fail to find a recipe here, you can certainly use the book as a springboard to launch your culinary imagination in search of the "perfect appetizers." In other words, great book!

This book is full of beautiful pictures that will stimulate your appetite, but don't hate it because it is beautiful. There's a lot of substance in here in addition to its tremendous visual appeal. The book is about presentation as much as it is about techniques and ingredients, and as such it lends itself to strong visuals. It will stimulate your imagination as well, for there are myriad ideas included here that you can adapt and use as you see fit. I buy way too many cookbooks, but if I were to get rid of most of them, this among the few I would keep, and the Appetizer book is one of the best in the "The Essential..." series. Check them out- there are several out there, and I think they are great cookbooks over-all. When you consider the price, however, they are fabulous. I originally bought this as a gift for someone else, but decided that I just couldn't part with it. Since then I've purchased two more from the same series (see my other reviews). Bon Apetite!

I found this book to be an absolute lifesaver when it comes to preparing appetizers for my guests. Whether you ar hosting a small get together or a large dinner party, the selection will satisfy every palette. I was also able to actually create cuisine themes, such as 'Sushi', 'Tex-Mex',and 'Party Time', using the appetizer selection as the starting point. The pictures and step-by-step instructions make each appetizer a delight to create. For anyone interested in both the pleasure of preparing food, and bragging rights, this book will become instrumental when entertaining.

Do you like entertaining? If you do than you'll enjoy this book. It is full of ideas as to what to serve for friends who come for afternoon tea, snacks for friends who drop by to say hello, the mouthwatering recipes for your guests who come for cocktails and the stylish appetizers for dinner parties. The recipes are easy to follow and the attractive photos guide you as to how the end result should be. Most of the recipes in this book are Asian influenced with some Mediterranean twists and the presentation styles used are minimalist. It is a perfect guide for chic and effortless entertaining. The recipe for herbed pancakes with pear and blue cheese topping is simply delicious.

    This is a book I bought because of the color illustrations, not for the recipes. It has about 270 pages of recipes, about 90+ color illustrations, and an index thereafter. There are photos with some clever ideas I will use for plating and decorating, however I will use other appetizer books for the actual preparation of tasty foods..

    I find I recommend Hors D'Oeuvres by Eric Treuille and Victoria Blashford-Snell most often to friends, because of it's tasty items and abundant photos with up to date clever ideas. This 1996 book by Arno Schmidt has been "left in the dust" by so many newer books. With the competition and high cost of color illustrations, I doubt a second edition is coming out.

    The portions are for 50 to 100+ bite sized pieces of food...it's not hard to downsize this to half or less, however it is an incovenience to do so in general, an dsome recipes can not be downsized because of limiting ingredients such as small amounts of baking powder.

    On the plus side, there is very good advice on service policies, such as continually collecting soiled equipment, how to best replenish a buffet table, when to refill wine, and has nice little personal touches included. Learn just how many cold canapes or hot hors d'oeuvres to make per person, depending on how long the guests will be nibbling on them (till the main meal is served), and this book gives good suggestions on how to best vary the types of goodies...things a home cook might not have considered, but could mean a disaster to an unprepared caterer.

    Some items include mini-corn muffins with indented tops to take red caviar and sour cream, cheese curd, or chili and dried cranberries fillings; there are small popovers with shrimp and dill filling, salmon, basil and mustard filling, or whitefish, apple, and caper filling. There's salmon with fennel crust, or salmon with horseradish crust.

    Try fried leaves and herbs, or various fried items for small groups; it can be hard to keep fried items hot and crunchy. He doesn't give an oil temperature, so trial and error will provide guidance. A nice novelty is transparent potato chips with herbs sandwiched between two chips, or sushi style items which are easy to pick up by their rice bottoms.

    Make roast salted whole shrimp in their shells...I'd add some Old Bay, Cajun, or other spices as a marinade with some olive oil to liven them up, and realize these "messy" goodies are best for a buffet table, and not well tolerated as a "butler served" goodie, to be eaten while walking with a drink in one hand.

    Maybe I'll try fried grapes, whisky shrimp, empanadas, or curried beef with chutney filling.

    In view of several other wonderful appetizer books I have, this is not going to be read for it's recipes, but it will have strips of paper placed on food preparation photos I like, so this only gets 3 stars, and that's only if one gets it at a quite good price.

    The glossy photos in this pricey book can help spark your imagination to come up with interesting-looking starters. I found several of the actual recipes, however, bland and uninteresting. Also beware that many of the photos are printed backwards or upside down so captions don't match. While sometimes pretty and pleasant, the look of the food is frequently rococo and overdone--the book doesn't follow its own advice to keep the presentation simple and the decorations in harmony with the setting. ...

    Book cover is glossy(front and back). Pages are thick, glossy and heavy weight. Pictures, although color, do not appear to have been arranged by a professional food stylist...assumed in this era. Book gives ingredients and measurements in both European and American formats (grams vs. ounces). Comparing this book to other titles avaliable in market place today, book is too expensive for what you get. Glitzy buy vacuous.

    I received this book as a Christmas gift a few days ago and have not been able to put it down since! I agree with the writer from California that it is certainly not for the new cook, but as a part-time caterer, I have finally found the ultimate source for entertaining. There are no definite cooking times listed, and it's taken for granted that the reader is familiar with basic techniques (like for preparing pastries and mousse). If you're up to the challenge, the results will be spectacular and your friends will be amazed. The photographs are beautiful and inspiring!

    The Book of Hors D'Oeuvres and Canapes is an excellent book for the professional caterer, but is certainly not meant for the average or even above average cook. When I received the book, I was entranced by the stunning food presentations. On closer inspection I realized that the work involved to actually create the dishes would overwhelm anyone who had not gone to cooking school. Also, the portions are huge. Each recipe makes an average of 60 hors d'oeuvres or canapes. If the author ever makes a book for the lay person, I would be the first to buy it. But I will leave this one for the pros.

    I am disagreeing with most reviews, if you do not like goat cheese, don't buy this. If you have no access to buying wild mushrooms, don't buy this. If you don't like tuna, salmon or lamb, don't buy this. I was looking for a more practical appetizer book with common things I buy each week at the grocery, many recipes with goat cheese, caviar, salmon, tuna, and lamb just don't fit my lifestyle or my budget. If you like eggplant, oysters, lamb and swordfish recipes then go for it!

    I have had the pleasure of attending Hugh's culinary cooking camp in Napa and own all of his cookbooks. There is a reason.
    Hugh's recipes are simple to prepare, always have a "wow" factor, and above all else, taste fantastic. The other important ingredient in Hugh's cookbooks is that the recipes are 100% trustworthy. This is not something that I will say for many cookbooks. His recipes are designed for the home cook and have been tested and re-tested so that you can trust the recipe.

    So stock up your pantry with hoisin, coconut milk, and yster sauce and have fun making his recipes! Some of my favourites in the book are the Pan-Fried Scallop Dumplings with Coconut -Herb Glaze, the Spicy Thai Meatballs Wrapped in Lettuce, and he Quesadillas with Barbecued Meat and Brie. All are wonderful.

    Hugh makes cooking fun and his flavours are intense and exciting. You won't be disappointed at your next dinner party!

    This really is a great cookbook. Easy to follow recipes (although some ingredients are hard to find in a small town in the middle of nowhere, where we live), and everything tastes good. I'd highly recommend it to anyone wanting to expand their cooking.

    I received this book as a present, and I am very pleasantly surprised by this book. This book contains modern and creative twists on traditional American dishes as well as other food of ethnic origin making its way into mainstream. All the dishes I've made from it have turned out to be very delicious, the steps are simple to follow, and most of the ingredients are available at well-stocked supermakets. I was surprised how many things I used to have to buy can be made so easy with so little time or effort. This was what I had hoped my Moosewood cookbook would be, but this book actually succeeds because of it is more focused, placing emphasis on beauty through simplicity rather than purely just inventiveness.
    Another part I really like about this book is that it actually contain a decent breakfast section. From now on I no longer have to rely on omlettes or toast for breakfast, but instead I can have banana french toast, different muffins, etc.
    The recipes here are very straightforward, so they are suitable for most levels of cooks. The only possible drawback is that there are no pictures (though you won't need them), and there are no directions on preparation techniques, so I would suggest this book for those with at least some rudimentary kitchen skills.

    This is one of my favorite cookbooks. I have been vegetarian for many years and I am an avid cook, and this book has provided nothing but perfect food, without meat, every time I have used it. The salads are great, the breakfast foods are great, the entrees are great. You name it, in this book, it's all good.
    The recipes are well-tested and well-written recipes. A must have.

    Yes, it's quirky (read: British-oriented with all the cute spelling and different names for food items), but the recipes are grouped usefully, the recipes look delicious and not painstaking to prepare, and the recipes also are not of food that's too esoteric to get ahold of at a good supermarket, for the most part.

    There is lots of useful, practical information on hosting a party, including etiquette tips. And what is especially useful is the VARIETY of types of parties/occasions/celebrations this book provides pertinent information on.

    Also, the presentatin is fabulous with great pictures, diagrams, etc.

    If you ever want to host a party --be it a gala for 100+ or yummy snacks for friends on Oscar night or an intimate picnic....BUY THIS BOOK!
