The power of this book to help a reader make bread is twofold: first, a clear and interesting discussion of the ingredients and processes responsible for different types of flavor emerging in a baked loaf of bread, and second, a diverse collection of stellar recipes that produce great results. Bread is touchy, and Reinhart informs the reader more deeply than other cookbook authors, ensuring that you not only learn techniques but also learn why they are important.

I have been been baking bread for 30 yrs. and this is by far the best of bread cook books in my collection. It answers all the questions I have ever had and more. I wish I had this book 25 yrs. ago and I would have never bought another. Happy baking.

I have read many books on making bread and this has to be one of the best.
The author's explanation of the twelve steps of bread, is the best way of explaining how bread is made. I think every bread maker should read and re-read this section to understand the causes of bad bread, to rectify or avoid them.
I would recommend this book to every baker.

Call it Bread Baking 101. Reinhart's classroom like approach is indeed a reminder to school days and I resigned myself to the approach to fully understand (if that's at all possible) the fundamentals of bread. The science behind the process is dry, but necessary in understanding how the dough is transforming in each step.
Bottom line? I loved the book. I made my first batch of baguettes the other week and they came out fine. I frequently referred back to the early chapters checking my progress along the way. It's my second attempt at bread baking - I tried 20 years ago to disappointing results. The difference - certainly more practical experience at cooking in general, far better kitchen gadgets, but I'd say my new education from The Bread Baker's Apprentice is the biggest change!

This book is excellently made, beautiful images, very detailed instructions, exact formulas (or not?).
I bake my bread because I want perfect bread, and after following Mr Reinhard guidelines my breads are still a long, long way from the breads pictured in the book, breads come out correctly but don't even get near the breads pictured despited the huge efforts I've been doing. I follow some of the formulas and I see in the picture how they hold a beatiful dough while my dough slips between my fingers, his doughs raise beautifully while mine get thick and dense (tasty anyway).
I don't understand how I'm the only one to rate so low this book but I assure you that before reading the book using fresh yeast and tweaking the recipies more or less by intuition I got better results. The use of this book, up to the moment has been very frustating to me.
Despite the extensively detailed explanations I guess Mr Reinhard keeps a lot of secrets for himself.

Current CIA baking instructors are in the process of replacing this book as it's not the best teaching instrument because the science is ignored and factually incorrect at places. All of this from a current student.

The techniques and recipes it contains are great. There's just so much information for the inquisitive chef or cook to delve into...I would definitely recommend this book to anyone that has turned baking into a serious hobby or profession.

When I bought this book,I knew it would be very advanced,but I was very wrong. This book is a cake catalog of the things that Colette Peters can do. The pictures are great,and there are a lot of ideas,but very little explaining and how-to photos. I thought I would learn how to make crooked cakes,but it turns out I learned more from a blog than this book.If you want ideas,it's great,if you want directions,search somewhere else.

I bought this book for my mom for mother's day and asked her to make me the seashell shaped cake for my birthday yesterday and she was pretty intimidated at first not thinking she'd be able to pull off such a realistic work of art..especially because she had never even used fondant before...but she soon found out it was WAYYY EASIER than she ever imagined! :) Collette really breaks down the process for the common kitchen dweller. You don't have to be Picasso to create these masterpieces. This book provides excellent descriptions, precise illustrations and absolutely gorgeous photographs! 5stars!! :)

I am someone who really admires Colette's work. I had bought all of her cake books except this one and "Colette's Christmas" (going for $200 now as opposed to the usual $30+-... what does that tell you about her popularity??) (YOU GO GIRL) However, I just received Colette's Cakes and am a little disappointed. This must be one of Colette's 1st books. These cakes offered no real challenge at all for me. Hey, I guess you have to start somewhere. Colette has grown and developed so much!! I really am one of her biggest fans!! Just thought you might want to know this book is a little light on the creative side, compared to Colette's work we know and love today!! :) P.S. - Her Chocolate Bourbon Cake Recipe in her book "Colette's Birthday Cakes" is UNBELIEVABLY delicious!!! I made the cover cake and was SO "THE HERO" at that party!! Thanks Colette!! :D

I would have to say that this book may not be nearly as good as Colette's Christmas book, but it still gets a well deserved 5 stars!!!! The cakes are realistic for someone to make with a little skill in cake decorating and a willingness to "get over themselves" on whether or not they're able to do it. Even if one has never worked with fondant before, the books explanations are easy to follow. I especially like the incorporation of tools from around the house that can be used for cake decorating. This book is very good for the beginner ready to delve into cake decorating because it covers basic techniques in a simple to use format.

I purchased the book today and I've decided to return it. Kudos to the authors for figuring out how to use fondant for cookies. However, if I tell you to buy fondant, roll it, cut it with the same cookie cutter, adhere it to the cookie with corn syrup and decorate with royal icing -- you don't need to buy the book.
The photography is beautiful, but the book didn't inspire me as other decorating books have. If you are a fondant novice, this may not be the book for you as it lacks detailed instructions. I would also recommend practicing with royal icing before you begin your cookie project. Some designs use royal icing flowers, but there are no instructions about how to make them. These can be purchased at a cake decorating store or you can use other resources to learn to pipe them.
I was looking forward to this book, but it has turned out to be a disappointment.

I am new with fondant icing on cookies but found it really easy to decorate the cookies with fondant instead of the usual royal icing but not so keen on the ribbons decoration. Their sugar cookie recipe is also very delicious and quite soft in texture.
I recomment this book for a beginner.
Professional Results Fast.......2007-06-18
What I love about this book: The cookies are covered in fondant. This method allows me to decorate in half the time. Cookies decorated the traditional way, with a sugar glaze, are often too sweet ar simply don't taste good. NOt to mention time consuming to decorate. If you have a favorite, great tasting fondant recipe this technique will give you cookies that taste as good as they look. I would not use commercial fondant on these cookies as this type of fondant usually don't taste good.
Some things I don't like: inedible decorations like fabric bows, no templates.
Overall I still am very pleased with this book. I use it as an inspiration for my own cookie designs. The pleasure alone that I get from browsing it makes it money well spent
A useful book, with a couple of caveats.......2007-05-31
I like that I now understand the basic method for decorating cookies using fondant. I do feel the book is at times slightly short on details, for beginners anyway. For some examples:
*Necessary tools are not always explained, such as what a border cutter is.
*There is no indication of how to attach the stick to a cookie on designs that require that.
*Complicated designs, such as squiggly pattern of accent fondant on top of a shoe cookie (displayed in a photo), sometimes do not include instructions for how to achieve that affect.
Also, a note about how fondant compares in taste and texture to cookies frosted with royal icing would be nice.
One final note: Although there are a few supplier web sites provided at the end of the book, I haven't been able to find all of the sugar flowers like the ones the authors used in the book, or where one could order many flowers of just one color. Since readers may want to try the designs in the book, it would be good if more specific info were given about where to locate the items needed.
But all in all, a good book.

The only thing I didn't like in this entire book were the non-edible bows that were used. I love to have everything edible except for the wrapper. The designs and the detail were amazing, and this is a book I will use over and over again. I even checked out their website and am a true fan now.

I've read through several of the other reviews that have stated that this book isn't meant for a beginner; however, when I first began to decorate cakes in culinary school (and I mean I had literally NEVER picked up a piping bag before).
Was I able to decorate a cake like Margaret Braun from reading the book??? Of course not!
I don't think that this was ever the point of the book. The artist, Magaret Braun, tells you to practice, practice, practice!
The more experience that I've gotten, the better I've gotten at decorating cakes.
If you're looking for a book that you can buy and immediately duplicate, then you're not going to find it in this book.
If you're looking for a book that will take you something to strive for, this is it.

This book is amazing, I love this woman. However, this book is NOT for the beginner in cake design. Had I bought it during my novice days, I would have been dissapointed. Now that I know what's going on in cake decorating and design, I understood every single instruction given on this book. I used to beat myself over the head to try to design the most beautiful cake ever. With a few tricks of the trade given by this author, now I can. I am no expert like Margaret is, but my ideas are now flowing. The way she crafts the chalices as cake toppers, it's the most simple way possible. The technique is there, the rest is up to your imagination. I AM VERY PLEASED WITH THIS BOOK. I love it, and I browse it every day to get more inspirations and ideas.

I read the reviews to help me purchase items,but I think I just got very excited with my order and shouldnt have purchased this item. I already have several cupcake books. As other reviews have stated this book is great for a kids' cookbook. I was looking for a cupcake book to inspire me - different designs, new things. I think I will shelve this book for when my baby gets a little older. I bought this book primarily because I also wanted to learn about how to make the "wonky cake or topsy turvy cake". I was also disappointed in the instructions for this particular cake. However, she can give great instructions as evidenced by the section on how to make cake jewelry & how to decorate the cakes, as was also noted by another reviewer. Additionally, her stands that she shows in this book are available on her website which is fine as I couldn't find them anywhere else.
I was disappointed especially since it was such a long wait for the book but the pictures are pretty and there are some great instructions on how to do some of the decorations, just not the instructions I was looking for.
Here's hoping Toba Garrett will come out with a book discussing how to do these cakes.

I purchased this book with very high hopes, because Lindy's cakes are so spectacular. However, I was a little disappointed. Her specialty is the wonky cakes like the one on the cover, but I found her instructions were pretty sparse. I have learned more about how to put together wonky cakes from free online tutorials than from the info in this book. I also think the photography was insufficient. All of the photos of the wonky cake construction are shown from the top, looking down on the top of the cake. This isn't helpful in seeing how the wonky cake is supposed to look from the side.
There are only 2 recipes included, one for chocolate cake and one for madeira. Both recipes are presented in chart form (use this amount of ingredients for this size cake) with another chart for fruit additions.
There are lots of instructions for using "cake jewelry" (wire and beading to decorate the cakes) and specialty cookie cutters that look great but are also an unbelievable amount of work.
There are complete decorating instructions for 15 different cakes in 3 categories: round, square and creative (odd shapes).
All of the cakes are gorgeous, but most look extremely intimidating to try to make. But the title of this book is "Cakes to Inspire and Desire", not "Cakes to Whip Up in a Few Minutes". And they certainly do inspire!

Wonderful Cookies with Fabulous Instructions.......1998-12-13
This cookbook is filled with mouth-watering cookies that are as luscious to look at as they are to eat. Better still, even a neophyte baker such as myself can follow the clear, easy to understand instructions that accompany each recipe. Peanut butter lovers should not miss the peanut butter cookies in this book!
Charming and Delicious Fun.......1998-07-13
A delightfully refreshing take on the traditional art of cookie making. Whenever I bake these cookie for friends or for a function they always draw rave reviews. Good for either an afternoon project with a child or baking a fancy treat for a party. I especially love the Cactus Cookies and Devon Cream Sugar Cookies. An all around great book, it even includes insruction for packing cookies to ship to childen at college! Beautiful photography!
