Book Description

Today’s busy lifestyles make it impractical to plan the kind of multicourse feasts one might wish. An easy and exciting solution is the venerable dutch oven pot. In this follow-up to their successful The Cast Iron Skillet Cookbook, Sharon Kramis and Julie Kramis Hearne show off the many virtues of this kitchen essential. The dutch oven excels at everything from simmering to baking, working equally well on the stovetop and in the oven. The book begins with an informative history of the pot, along with a discussion of various cooking methods. From there it moves into such mouthwatering dishes as Slow Cooked Pork with Smoky Barbeque Sauce and Slaw, Smothered Chicken with Sautéed Morels, Fresh Vegetable Estouffade, Northwest Bouillabaisse, and Ms. Kate’s Spoon Bread. Whether using a well-used and blackened garage-sale find, or the latest celery-green item from La Creuset, contemporary chefs can satisfy the most exacting palates with this entertaining cookbook.

While this book has great sounding recipes, not many of them are practical -- I would only use them if I wanted something real special (and different.)

5 out of 5 stars The Dutch Oven Cookbok.......2007-04-11

This recipe book is great, since receiving it I bet I have tried at least 5 of the recipes and loved them all. I'm so glad I ordered it.

5 out of 5 stars One Of The Best Cookbooks.......2007-03-09

This is one of the best cookbooks that I have ever purchased. The recipes are simple to follow and do not call for exotic ingredients. The recipes we tried have all come out excellent and I wouldn't adjust any of the ingredients, cooking times or amounts. Well worth the money! It looks like it will get plenty of use in our house.

The recipes are simple to work with, and the side stories are a wonderful bonus!

5 out of 5 stars Dutch Oven cooking at it's best.......2006-03-26

For me as a German "Dutch Oven Lover" this cookbook is an easy and efficient way of learning how to cook with a Dutch Oven; the recipes are explained in detail and easy to change with other ingredients that are handy.
The highlights of this book are the tales which are very amusing and informative at the same time. It gives this cookbook a touch of a Wild West story book, nicely to read and entertaining.
When did you read - really read - a cookbook last time?
This book was fun to read and I learned a lot of "handling" my Dutch Oven and outdoor cooking.

5 out of 5 stars Too Funny.......2002-02-08

I havn't had the opertunity to try the recipes yet but this cookbook is a great read. The recipes all look basic enough with a good mix of simple supermarket ingrediants as well as wild game recipes. I have about a 1/2 dozen dutch oven cookbooks and these are by far the best read so far. Unfortunatly despite the listing this is *not* spiral bound and wont stay open while cooking hands free. The second book, "more Cee dub's Dutch Oven and other camp cookin" is still spiral bound.

5 out of 5 stars Best ever cookbook!.......2001-08-02

Never have I laughed so much as I did reading this cookbook. The stories are great and the recipes are even better. I used this book extensively while camping this year and it was the first time I ever used a DO(dutch oven). When my very picky middle daughter started looking for seconds and thirds at our meals, I knew I had learned a good thing. If anyone is just starting out or even is already using a dutch oven, this book is a must have! (Try the blackberry dump cake, I had'em licking out the dutchy!!) You will enjoy and use this book again and again!

5 out of 5 stars This Book is EXCELLENT!.......2000-05-30

While not being much of a cook myself, I have found this book to be truly enlightening. (It helps to have a good cookbook for those of us who aren't blessed with the gifts of Cee Dub) It is not only filled with all kinds of great recipies, but they are organized in a way that makes it easy to find something interesting to make... whether cooking in the back yard or out camping with the whole family. I know that this book will be one that gets USED! Plus, it is full of great stories from an incredible person. I have to admit that this is the first cook book that I have been able to sit down and read for enjoyment as well as MUST HAVE Dutch Oven tips and recipies. A must have for the outdoorsman!

5 out of 5 stars the cadillac of cookbooks.......2007-04-07

a few months ago i got on this cast iron kick, bought a couple skillets and a pair of dutch ovens and all the tools and was ready to be a camp cook, only problem was, I had no dutch oven recipes. I read a few reviews and decided that experience was the best teacher and Cee Dub seemed to fit the bill. I've gotta tell ya, ol Cee Dub puts it all together in a very easily understood cookbook that explains things in great detail, not to mention that the best parts may well be the stories he shares. if you want an education on how to cook with a DO, this book is the real deal. a word to the wise, dont buy junk iron, LODGE is the best of the best, bar none, remember, you're only going to buy it once so you might as well have the best.

5 out of 5 stars "More" Duch Ocen cooking at it's best.......2006-03-26

The follow up of the first book is based on the same success recipe - easy to prepare, detailed cooking recipes for Dutch Oven's and entertained with amusing and entertaining Tall Tales.
I own both "Cee Dub's and other Camp Cookin'" books and the second book is not a refreshing of the first book, the recipes are different and it seems that Cee Dub is full of Tall Tales to make this cookbook an outdoor story novel.
This 2nd book is also like the 1st one highly recommended for lovers of outdoor and especially Dutch Oven cooking lovers.
I recently bought my second Duch Oven to get deeper into the described secrets of Duch Oven cooking.

4 out of 5 stars Good reading & recipes.......2001-07-12

This books tells you the basics of how to get started with dutch oven cooking, and includes very simple recipes for novices such as myself. I enjoy this book! It includes humorous side stories which are good reading.

5 out of 5 stars We want More Cee Dub.......2000-07-12

After reading Cee Dub's first book and then his new Second book, we can only conclude that it is a must for the camp cook. The recipes are delicious, healthy and easy to produce. Cee Dub also indicates how to spice each recipe up with our own preferred tastes. His tall tales make you want to read the book in one sitting. However the recipes make you want to start cooking. Having lived near the area Cee Dub refers to in his travels, I can imagine seeing him out there on the river and in the backcountry where I work and play. Cee Dub gives little tid- bits of hints to make every camp cook more seasoned and makes every upcoming trip a feat to look forward to. His stories of "pards" gone by touch the soul of anyone who enjoys good times, friends and family. I would like to know the "real story" behind some of the antics going on in Ceedub' s camps. I doubt people would ever want to leave with such a gracious host, great cook, and even better story teller. Keep up the great work, Cee Dub, we will never put you down!

5 out of 5 stars Cee Dub continues the legend !.......2000-07-07

Once again Cee Dub in rare form - Whether you're already a great dutch oven cook or just beginning - this book will turn you into a "Great River Chef" or "Great Camp Cook". You can even turn your backyard cookout into a neighborhood happening - Great Value - "No Class"

5 out of 5 stars Excellent.......2005-03-22

This binder is put together in a simple to follow format. There is section on the basics with excellent information on temperature and placement of briquets. The recipes are all easy to follow and good meals, nothing gourmet with strange or hard to find ingredients. Many outside of the "just put a roast in" type. Great breads and desserts too! Perfect for any dutch oven owner, especially a family or scout troop looking for one book with several good recipes.

4 out of 5 stars Includes the "how to".......2004-10-06

This is an excellent book for those starting out in "D.O." cooking because unlike other books, it actually explains how to set the temperature -- i.e. how many briquets to use and where to place them. And, you can easily copy and laminate the recipes you want to use in camp thanks to the handy binder format. There are books out there with better recipes (sorry, recipes calling for Sprite are scary), but the reality is once you know HOW to cook with a DO, you can pretty much use any of your favorite recipes. i recently picked up "Classic Homemade Casseroles" at a used book store; it has more tempting ideas than this book.

3 out of 5 stars Not exactly what I had in mind!.......2002-05-10

Overall, I think that this is a great cookbook. It's in a great 3-ring plastic binder that will stay open while you're cookin', and you can wipe off just about any "grahdoo" that you splatter on it. There are tons of recipes in it, but they're just not what I had in mind. I'm from Texas, and I know that most of the folks who wrote these recipes are from Utah and thereabouts. I guess they eat differently than I. Most of these recipes are modern dishes that you'd find in the kitchen, adapted for dutch ovens. But I was lookin' for more backwoods, down-home, stick-to-yer-ribs type grub. I'd rather have 20 good recipes like that. Another thing is that there's not much in the book about cookin' over an open fire, which I prefer because it's more authentic. Anyway, to each his own. Coincidentally, I'm still lookin'.

5 out of 5 stars Important information.......2002-04-10

This book has very good information on temperature control. After purchasing several books on Dutch Oven cooking this one gave the best descriptions on temperature control methods. While I have yet to put the actual recipes into practice the emphasis placed on ensuring the fledgling DO cook's first experiments aren't disasters are appreciated.

5 out of 5 stars lovin' dutch oven cookbook.......2000-04-27

This book was purchased to learn how to cook in a dutch oven for a living history presentation at my child's school. I learned how to perfectly season my new oven (it came out great) and I made the Pioneer Journey Cake which is an authentic mid 1800's wagon train recipe. Cakes can have a mind of their own in a modern gas oven, so I had my doubts, but with Joan's tips on calculating oven temperature it came out perfect the first time. This book offers tips and recipes for everyone from the beginner to the sophisticated oven user.

I was a bit disappointed by this book. There wasn't a great variety of recipes and most were geared to outdoor cooking. I'll be looking for another cookbook.

5 out of 5 stars The start of a love affair: this book, dutch ovens and me.......2001-08-19

15 years ago I came across this book. Since then I and my family have enjoyed dozens of meals cooked in dutch ovens, both while camping and at home. All of my dutch oven cooking was not from this book, but this book taught me how. I was a complete novice. I didn't even know what a dutch oven was. Now I'm called on for every local block party in Mount Prospect, Illinois to cook my famouns secret cobbler recipies. Well they are all from this book. Great for beginners!

4 out of 5 stars A very good Dutch oven cook book with about 50 recipes.......1999-01-14

A good inrtoduction on preparing and cooking with a Dutch oven on charcoal. There is a section on Dutch oven tools that has good ideas but leaves out a charcoal starter which I use all the time. The book also includes a lot of recipes and good ideas.

5 out of 5 stars Outdoor Dutch Oven Cookbook by Sheila Mills.......2007-09-29

Interesting, informative, and very helpful. Looking forward to more of the same in cookbooks.

5 out of 5 stars Not just for outdoor cooking!.......2006-11-11

This book contains fabulous recipes that can be made at home as well without using a Dutch oven. It is filled with ideas that are simple and fast to prepare with easily obtained ingredients. The author uses recipes that have been tried and refined by people whose business it is to entertain and please hungry folks with delicious food. These recipes are a notch above most one-pot recipes I have encountered. I purchased one as a gift for my outdoor-loving friends and ended up ordering one for my home as well.

3 out of 5 stars Too Complicated.......2006-09-27

All the recipes are pretty advanced (and expensive). I'd like to see more easy dishes that don't take 5 hours to prepare and $100 per oven.

5 out of 5 stars The Outdoor Dutch Oven Cookbook .......2005-10-20

This is well organized and appealing book for outdoor cooker. If you have cast iron dutch oven, you have to have this one.

4 out of 5 stars Great receipes, assumes basic skill however.......2005-09-29

I have been collecting and trying dutch oven receipes for some time and found the content of the Outdoor Dutch Oven book very solid. Some receipes are too involved for outdoor trips, but would work just fine in the kitchen. I originally checked the book out of the library, but was so impressed I thought it deserved to be purchased. The comments regarding no instruction on dutch oven skills are valid. You'll want another resource for that.

Customer Reviews:

5 out of 5 stars Small cookbook.......2007-03-21

I will admit to being surprised when I got this at how small the book is, but its full of info and perfect for taking camping. I agree with others, there is no instructions on how many coals to use or for placement, but once you have used a DO a few times, it all becomes second nature.

I use mine one the stove or in the oven. We don't camp often but I use my DO at least twice a week. With a recipe that needs a few hours to cook, I make it in the backyard on a charcoal BBQ'er and it works great. I have had no problems at all figuring out cook times and temps.

5 out of 5 stars From an intriguing Peppermint Pound Cake to Potato Soup, here's a fine pocket presentation also recommended for in-home use........2006-12-11

Many dutch oven cookbooks on the market are weighty and daunting: not so the 4th updated edition of a near-pocket guide Dutch Oven Cooking, which is perfect for taking along and meal planning for a camping trip. It's the outdoors orientation which differentiates this from similar-sounding, home-oriented coverages, offering up dishes perfect for campfires and overnights and moving the dutch oven from indoors to outside. From an intriguing Peppermint Pound Cake to Potato Soup, here's a fine pocket presentation also recommended for in-home use.

5 out of 5 stars Dutch Oven Use and Care, Plus Varied Recipes.......2005-11-07

This is a five-star classic, and for the price can't be beat. The author covers selection, use and maintenace of Dutch ovens, as well as providing a good mix of recipe types (fish, poultry, deserts, etc.). I especially recommend the fish and rice recipe!

4 out of 5 stars A Good 'Take Along' Cast Iron Cookbook.......2000-03-28

This is an excellant beginners Dutch Oven Cookbook. This book fits inside my dutch oven and I take it with me camping. I had no problem with the cooking temperatures or times given in the book. Excellant advice and some very good recipes for a beginner. Every fire is different and every Dutch Oven cooking experience is different. This book will help keep the disasters to a minimum.

3 out of 5 stars Better for camp cooks with some experience........1998-11-21

The introductory material on buying, seasoning and cleaning the oven is excellent. The suggested additional equipment is reasonable and easily obtainable. The lack of temperature information and baking times of the individual recipes is a serious shortcoming to beginning dutch oven cooks as is the lack of information on the amount of coals necessary to produce a specific temperatures. Overall, an excellent cook book, but better for more experienced cooks.

5 out of 5 stars A Treat For the Taste Buds.......2007-01-04

The art of dutch oven cooking has been dying for a long time. What my mother taught me was very little and I do remember great food from that cooking. I just wanted to bring back that comfortable feeling once again and to enjoy the basically hassle free cooking again. There is so much you can do with a dutch oven and I'm glad that they are still making them. I hope that there will be an increase in cooking the old fashioned, healthy way.

5 out of 5 stars It was the first.......2001-02-12

Today, cooking with a Dutch oven is all the rage and this book started it all. Every Dutch oven cook should own this book, no matter how many other Dutch oven cookbooks they own. Don Holm had the guts to write the first book in modern times (that being in the 1960s) about cooking with a Dutch oven. In fact, when Holm contacted Lodge about purchasing some ovens to perfect his recipes, he was informed that Dutch ovens were no longer in production. The rebound of this once essential and now popular way to cook in the great outdoors can be attributed to one person and one book, the Old Fashioned Dutch Oven Cookbook, by Don Holm. Sure, other authors have now jumped on the band wagon and written their take on the cast iron cooking pot, just as there are now more books than ever about vegetable gardening and fly fishing. But Holm was the first, and this book was the inspiration for many of the others. The author goes beyond what most readers would expect from a cookbook. He takes that extra step and provides a bundle of outdoor stories that outdoor lovers, and others, will enjoy. And, besides a history of the Dutch oven and the stories, Holm provides many useful recipes for beginners and experienced cooks as well. This book is a good study for all serious Dutch oven cooks and beginners as well. Once again, every Dutch oven cook should own this book, no matter how many other Dutch oven cookbooks they own.

1 out of 5 stars A lot of ego stroking, no substance.......1999-11-07

the author spends a lot of my time telling me how good he is as a writer, and then I find many of his recipes do not work properly, or are so vague they could lead to disaster. there are just too many good Dutch Oven cookbooks today to have to put up with this author.

4 out of 5 stars An entertaining book about dutch ovens, history and recipies.......1999-06-17

This was the first book I ever read abour dutch ovens. It provides a good sense of its history, care, etc.as well as a wide variety of recipies. The chapter on sourdough cooking started me on a whole new adventure. Pleasant reading.

4 out of 5 stars A good choice.......2007-03-21

I got this cookbook even though there were no reviews, something I usually never do, but I'm glad I did. A few of the recipes rely on packaged foods which is why I gave it 4 stars instead of 5, but overall there are a lot of recipes I'm excited to try.

the book is the perfect size for taking along camping, or for just storing in the kitchen, and its a great price. The book has a lot of info on DO, care, how to cook with charcoal, etc. and in the back is a section on cooking for crowds which is very helpful for feeding large gatherings.

Overall I'm very happy with this cookbook
