Williams-Sonoma Mastering: Cakes, Frostings & Fillings takes readers through the steps require to bake a cake successfully beginning with the most simple steps through to completing fairly complex recipes. The author, begins with a general description of the most common ingredients and what to look for when you buy them. She then explains how the various types of ingredients in a cake affect its structure, texture, moistness, etc. While somewhat technical in nature, the language is very simple and easy to understand.

The book includes picture-by-picture steps to help you learn basic baking techniques if you are unfamiliar with them (examples include separating eggs, zesting citrus, whipping egg whites, folding, and many more). For a beginner without an experienced person to show them the ropes, this is ideal.

The recipes are divided into sections with the first being various frostings and then moving on to Simple Cakes, Cake Layers & Sheet Cakes, and Special Occasion cakes. All of the recipes are very clearly presented including photos of the key steps and little tips in the margin to help you with some of the fine points. There is also something of a building block approach here where you can master the Simple Cakes and use those skills as you move up toward the Special Occasion cakes.

It's hard to find fault with this book. If I had to name one complaint, it's that the title is a trifle misleading. If you are already an advanced baker, I'm not sure this book will be the key to "Mastering Cakes." On the other hand, I'm a beginner and find it invaluable. Many techniques like folding were something of a mystery to me and this cookbook really helped me understand them. It's hard to overstate how helpful the photos are and how concise and clear the text is.

I strongly recommend the purchase of this book!
I've been a Pastry Chef for about 5 years now and this book is really thorough, the step-by-step is really well done, a great buy for both experienced and beginner Chefs. Even better if you're just a home baker! It has clear explanations about the HOWs and WHYs in cake batters, fillings and frostings.
The photos are also beautiful and it makes you want to try every recipe.
I only got mine a couple of days ago, so I'm still reading some theory and will try the recipes soon. I'll be back to let you know how it went.
The only downside was that the cover got dented during trasportation and I really don't want to return it, as I would have to wait another month or so to get another one.
Great purchase otherwise!!!

All I can say is WOW!! I can't recommend this book enough! Recipes are easy to follow, no fancy-smancy never heard of before ingredients and best of all; most recipes only make 12 muffins. So for people that don't have an army to feed, it's nice! I recommend the awesome Blackberry muffins, which are my favorite to make. Every recipe I've tried has come out great, and the muffins freeze well too. BUY the book, you won't be dissapointed! Happy baking :)

No hard-to-source ingredients. No are-they-cooked-are-they-raw musings while you stare into the oven. No only-use-these-fruits-picked-by-the-light-of-a-full-moon pernickityness. Just straightforward instructions, delightful ingredients and splendid results. My favourites are the Cheddar Cheese Muffins - because my sons don't eat cheese so my husband and I can relax eating them - and the Cinnamon-Buttermilk Muffins which are especially wonderful for breakfast. Buy this for everyone you know who has even the tiniest interest in baking. Deirdre, Dublin, Ireland.

I never so much as picked up a spatula before I bought this book so I can say as the ultimate rookie that this book will give you excellent results. The recipe's are easy and the instructions are coherent. My only complaint would be that I often was a bit surprised at the consistency of the batter. I would have liked a description beyond "slightly lumpy" to know what to expect. I love this book and have bought another from the series.

Of the countless cookbooks I own, this book has the best compilation of breakfast quick breads. Nearly every recipe sounds and looks so good! The ones I've tried I would definitely make again, and I have every intention of working my way through nearly all the sweet recipes and a couple of the savory ones as well. The book is well laid out, every recipe is accompanied by a beautiful picture, and the instructions are simple. If you like to satisfy your sweet tooth in the morning, as I do, then this is the book for you!

This is my favorite go to cookbook for prep ahead breakfast. The recipes are delicious every time. And, when guests arrive I don't have to worry 'Will the recipe turn out'.

There are more than just muffins in the book. There are breads and coffee cakes. As I type this I am eating the Spiced Apple Coffee Cake. The recipes aren't complicated. In fact, they are very simple and call for ordinary ingrediants. But, who would have thought that you could make a muffin that tastes like a dognut! Williams Sonoma did, and it does. The secret ingrediant? Buttermilk.

Other favorites of mine in the book are the rasberry muffins, the jam filled muffins, the chocolate chip muffins, and the pear muffins. I have used the batter for the rasberry muffins with many other fruits - one of our favorites is peaches. This books gives you an awesome base and you can mix and match and get creative without worry! I made my sister a batch of the cherry muffins with the coconut topping and plan on baking more when she delivers her first child...

Excellent for a beginner and tasty enough for the expert cook.

Although the pictures in this book are quite beatiful, I find the instructions and recipes a bit vague at times, and down right misleading at others. The croissant recipe was a total failure when I tried it, and I think there was too much liquid in the dough to adequately fold it. I've used other croissant recipes and had great success, so I fault the recipe. In addition, the sour dough bread recipe has an inconsistency about whether or not to use milk or water for the starter, and when I called Williams-Sonoma, they were unable to resolve my question, directing me to contact one of their stores for help. Some of the recipes are in fact quite good, such as the currant scones, and the honey whole wheat bread, but I no longer trust the book, not being sure of a recipe until I've tested it myself. I'd expect to be able to trust that the recipes have been tested and that the text has been reviewed before publishing. In short, I wouldn't recommned this book.

I received this cookbook as a gift, and was amazed with its beautiful pictures. Unfortunately, of the three recipes I've tried (profiteroles, ginger cookies, and pizza dough), none came out right. I'm a regular baker so have adjusted them accordingly, but it's still disappointing when you can't trust the written recipe.

For sweet and savory and absolutely YUM recipes, this cookbook is a must! This book does not assume the reader has in depth knowledge of baking and details everything from necessary equipment, ingredients and techniques, all with beautiful photographs!

With recipes from breads, tarts, cookies, cakes and frostings, sauces and toppings, this book includes everything for you to make absolutely delicious treats at home. Highly recommended!

FYI: Since posting this review, I have made banana bread and creme caramel from this book and both turned out very well and were a hit. I used half and half instead of heavy cream in the creme caramel and it did not affect the taste.

I collect cookbooks and can never resist buying another one that sounds promising. This cookbook is a keeper. I have tried 12 of the recipes so far with perfect results and compliments from the eaters! I like a well-illustrated book with easy-to-read print and clear but not pretentiously over-explained directions. This cookbook meets all my criteria. I am very impressed. The Apple Cake with optional Maple Icing got rave reviews at a recent bake sale, and my grandchildren love it as a snack without the icing. The Vanilla Wafers are tender and delicious. The Lemon Chiffon Cake turned out looking exactly as illustrated. The recipes are all interesting but do not require one to be a professional chef to achieve professional results. Highly recommended.

    I have made 2 recipes from this book - orange pound cake and chocolate decadence. They turn out delicious and look exactly like the pictures. I am one of those who need pictures as reference points. I really appreciate the details given in the recipes (i.e. beat til ... it looks like ...; approximately ... 5 mins ...) as I am still a novice baker. I also have Nigella Lawson's recipe book ... the recipes here are easier and for my own experience, the results turn out better. I only give it 4 stars as another review pointed out, this books has a lot of frozen desserts that require the use of ice cream maker which are not as important for me who like to bake. However, for those who love ALL desserts, this is a very pretty and easy to follow cookbook.

    I was hoping this book would have a similar selection from the small, but amazing "Desserts : Collection" book from WS. The desserts listed in this book are pretty good, but of the ~150 recipes, only a small percentage of those are really appealing. About 1/3 of the book is dedicated to frozen and fruit desserts. Traditional desserts, such as cakes, cookies, pies, tarts, custards, mouses, and cheesecakes are given little coverage in comparison. While the recipes for the sorbets and ice creams do look good, you must have an ice cream maker/freezer to make them. Compared to the "Desserts : Collection" WS book, which only had about 40 recipes, this one misses the mark in my opinion. It isn't a bad choice for someone looking to make unique fruity or frozen desserts, but for traditional dessert making and preparation, you may have to look elsewhere. I picked up this book for less than Amazon retail, so it wasn't a bad purchase, but for the money, there are better books out there.

    I let my 13 year old daughter pick the first dessert from this book and she chose the Peanutbutter Cheesecake. While the picture looked good - peanutbutter? In cheesecake? My husband and I turned our nose up at the thought and were pretty sure we would not be eating it, but let me tell ya...it was freaken good! I can't wait to make more desserts from this book. The pictures are beautiful and my finished product was pretty darn close to the photo. I weighed my ingredents instead of measuring them and the results were fantastic. I only gave this book a four star rating instead of a five because I have not made any other recipes from it, but I highly recommend this one.

    I am not a novice in the kitchen - that's for sure. But with the help of this book, I've managed to make some of the nicest cookies I've ever made. I found the recipes easy to follow and clear instructions. The smells in the kitchen are so good, we've often eaten the goods before they are cooled properly. If you are a little kitchen challenged, this is for you because as I mentioned, I'm finally getting some serious results (and putting on a pound or two).

    I have had excellent experiences using this book. Although some of the recipes call for non-standard kitchen equipment (like Madeleine trays or silicon baking sheet liners) most of the recipes are both easy to use and very good to eat. I particularly liked the chocolate chip cookie recipe; it never fails to turn out chewy and delicious chocolate chip cookies.

    The recipes in this cookbook are very straightforward and easy-to-follow. And at this price, it's totally worth it, because you'll definitely find at least two or three recipes you'll fall in love with. I personally love the Gingersnaps, and they've been a big hit with my family as well. Give yourself a little extra time the first time you prepare any of these recipes: they're not hard, but you'll definitely get better/faster at it the more you do it. Highly recommended for anyone, whether you're a master chef or just a beginner -- the great photos and straightforward directions are perfect for any skill level!

    As with the reviewer of "Wonderful," I had this on my wish list since I saw it on Amazon.com. Having just received it, I have made the chocolate-chip cookies (still searching for the best recipe!), blondies, butterscotch-coconut cookies, and espresso bars. Of course they all turned out wonderful! The pictures in the book are luscious, as will all William Sonoma's books. I feel the author does a good job of presenting cookies with varied flavors (espresso, fruit, chocolate, ginger, etc.) and giving a wide variety of cookies to choose from (bars, rolled, drop). I definitely recommend this book to anyone who loves cookies or just simply enjoys looking at beautiful food photography.

    I had this on my wish list for a long time. I received this as a birthday gift in the mail from Amazon recently. I couldn't wait to make some of these cookies. They all look so wonderful. As the holidays get closer I am sure I will turn to this book more and more. The recipes are straight forward and clear. They are easy for a non-professional to follow. Great fun!

    One thing that was common to all my cook books till now was: i tried a couple of recipes , and then put them on the shelf . Until this one !!! . not only is the graphics beautiful , so are the pictures ( really wanna get you starting ) , the recipes are simple , easy to follow , and best of all , they come out perfectly !!!! . The successes of the first few recipes got me to try almost the entire book (only a matter of time before i do....... ) .
    In short an absolute enjoyment . If you love easy , fun , good cooking ,you'de love this book .

    I returned the book to Williams-Sonoma after I attempted 3 recipes with disappointing results. I wonder how many of the recipes were actually tested in the kitchen.

    I have a few of the books in this series. The Cake and Ice Cream books are my favorites. The recipes are outstanding -- well-written and produce great results. The sidebars provide invaluable tips. If you enjoy the science behind cooking -- ala America's Test Kitchen/Cooks Illustrated and Alton Brown, you will enjoy the books in this series. WS, unlike Cooks Illustrated, presents just the winning method.

    There is a good range of recipes -- simple birthday and carrot cakes to a very elegant rolled chestnut cream cake. There's enough variety within the recipes so that the user can find a cake for any occassion. The cake basics section is a nice, but short reference section.

    This book represents a nice collection of recipies and good reference information -- it's a nice addition to the kitchen library. I know WS just introduced its Mastering series of books, including one on cakes. Those books are intended to be "a cooking class in a book" and break down the basics of cake making for true novices or those who have ploblems getting their cakes to turn out right. For more advanced techniques and/or all the science behind cakes, try The Cake Bible.

    The instructions in this book are clear, and the recipes are good. We've made about 4 recipes in this since we got it for Christmas. The instructions are written so my 6 year-old daughter can understand them, and (with some help) she can understand the recipe. Many of the recipes are made with ingredients that are either around the house or easy to get. I recommend this as a starter book for kids who enjoy being in the kitchen.

    I traveled to a few different stores to puruse their cookbooks for kids. My children (3 & 5) love to cook and bake with me, and I was looking for a book with good pictures/illustrations, and recipes that were easy to make with them, but also good to eat. This one, found in a kitchen store, fit the bill. The pictures are lucious and plentiful and I can easily invite the children to pick a recipe by looking through the cookbook themselves at the pictures. The recipes are well written, and have render so far great results. I really like how that offer up a list of all items needed at the begining of each recipe. Great book for anyone wanting to bake with their young children or want to give a book to an older child ready to try on their own.

    I just bought this book for my 3 year old and I to cook. This a wonderful book with excellent recipes and beautiful pictures. The book is pleasant and simple to understand. It provides nice photos of ingredients and shows kids doing the tasks. I love the simple, yet delicious recipes and it doesn't rush through the recipes -- gives lots of photos so your child can learn and get excited about cooking. I am buying more for my friends with children -- a wonderful gift!

    Not your average cookbook for children, Williams-Sonoma Kids Baking provides a basic course in baking written just for kids. The instructions are written at a child's reading level and include how to measure ingredients, correctly break eggs, beating ingredients, testing for doneness, etc. Even all the photographs are children doing the tasks.

    The recipes were obviously chosen to be ones that children like to eat and include cookies, breads, pretzels, pizza, pies, and cake. Williams-Sonoma Kid's Baking is a great introduction to cooking that children can read their self and is highly recommended.

    I love this book. The chocolate ice cream recipe turned out phenomenal! (Better than Haagen Daaz!) The trick is to make the ice cream mix the night before and have one of the new canister style ice cream makers.

    "Frozen Desserts" is a fairly large cookbook, but that's o.k. because so is the dark font the publisher used for tired, old eyes like mine. That, and the photo of the strawberry ice cream on the front of the cookbook is what initially sold me. The added bonus was all the info on the types of recipes included, how to serve, how to store, basic recipes, key techniques, and then all the "fancy" recipes for ice cream and gelato, sorbets and granitas.

    There is even a section of key ingredients and tools for making all the recipes. The photos are professionally done and will make you want to try every recipe. I was not disappointed with the Strawberry Ice Cream that I made and enjoyed on Mother's Day! I still missed having my kiddos with me, but the ice cream helped comfort me that day. We'll have to plan to make the Pistachio Gelato or the Chocolate Sorbet when they are here again.
