what a gift it is to make great tasting vegan food in about 15 minutes (because that is really all of your labor that is required) and 6-8 hours later...yum! after trying three recipes from this book, i bought a 4qt. cooker in addition to my programable 6 qt.
i have not been sorry. i love how the flavors deepen with slow cooking and no standing over a stove and stirring. i used to get sick of "tasting" what i was making before it even hit the table. the recipes are also dependable. tonight we are having stuffed acorn squash, and i know it's going to be delicious!

I received this book as a gift. At first glance the recipes looked good, but what I was really looking for was easy wholesome veggie recipes. Instead the recipes and take more work than I have time for and use a lot of fake meat (soy) which we do not eat in our house. The 5 or 6 recipes we did make were not even that tasty. I will get my vegetarian slow recipes from internet searches from now on. I will be giving this book away.

I love this book! It has great recipes. My favorite by far is the mac and cheese forentine (it's vegan, the cheese sauce is cashews and white beans). Highly recommended, love it!

I bought a slow cooker after reading a copy of this book which I got from my library, then bought the book for myself, and later, a copy for my mother. I use this book atleast once a week and it has made maintaining a healthy vegan diet incredibly easy. I purchased a digital appliance timer for my slow cooker as recommended by the author, and am now able to cook while I sleep, when I'm at work, or outside. If you are a busy, active person with little time to spend in the kitchen, but insist on uncomplicated, delicious, healthy vegan meals with lots of variety, this is the book for you. I was very reluctant to purchase this cookbook based on previous feedbacks given. I'm glad I went ahead and bought it.
I have made the Spicy Black Bean Chili, the Maple Baked Beans, and the Good Morning Millet Melange. Right now the Perfect Hominy White Bean Chili is cooking in the crockpot. All of these recipes have been delicious.
I plan to try a lot more recipes in the cookbook and have the ingredients written down on my shopping list for the next 2 recipes I want to try "Not Your Mama's Pot Roast" and " Tempeh Etoufee".
The author certainly knows how to make the flavors come together in the recipes I have tried so far.
I have an inexpensive older 4 quart crockpot and I'm satisfied with the results.
This cookbook was a good buy.

The recipes look very interesting and tasty, however the carb levels are higher than some diabetic diets require. Since it is put out by the ADA I guess that I should have known that in advance.

I'm just embarrassed that after all my cooking experience I didn't spot how truly awful this cookbook is. I'm ashamed it took two experiments to confirm what I suspected -- YOU CAN'T COOK MEAT OR FISH ALONG WITH FRESH VEGETABLES (OTHER THAN ROOT VEGETABLES) AT HIGH TEMPERATURES AND EXPECT AN EDIBLE RESULT!! I made the Santa Fe Chicken -- ugh! -- and the Scallops and Sweet Potatoes -- even worse. Well, maybe I just tried the two worst recipes. I don't think so. So thanks DCPL for loaning me the book. However, not all is lost: The two-quart Le Creuset dutch oven is about the cutest non-animate thing I ever saw.
If you can only have 2 Cookbooks this is one of them!.......2007-08-23
The 2 cookbooks that have displaced the others on my book shelf are Glorious One-Pot Meals by Elizabeth Yarnell, and Four Ingredient CookBook by Joanna Farrow -printed by Hermes House, and in case you are wondering mashed potatoes is counted as one ingredient.
There is little to no overlap between the two in recipes, but a comparison between styles shows what I like/don't like about the "Glorious One Pot Meals" book:

-Spiral binding that lays flat makes more sense.
cons
-Lack of color pictures.
-The print IS rather small, especially as most pages have
blank space on them.
-Quantities should be given in metric as well as imperial for worldwide cooks.
However I don't think these slight negatives will prevent you from enjoying this book. I highly recommend both books.
By the way if you are concerned about your Le Creuset knobs melting at 450 degrees, you can now purchase stainless steel ones from bedbathbeyond for about $8 each.

Oven Magic.......2007-07-31
This cooking method is magic to me, since reason tells me it shouldn't work. Raw rice or pasta, fresh meat and vegetable, all baked together with a little liquid and seasoning, at too high a temp for too long. Not only does it work, the end result is amazingly good. Vegetables were my biggest surprise. They lightly share flavors but maintain their own texture and taste. The method somehow amps up the natural flavor of vegetables. It produced the sweetest acorn squash I've ever eaten. I began trying vegetables I don't usually care for, like turnips, with great results.
I also use plain, un-enameled cast iron. Ran across the book on Amazon and it sounded interesting. The only problem was the purchase of a small, enameled cast iron pan. If I bought the pan, I couldn't afford anything to go in it. I emailed Yarnell and asked if plain cast iron would work. She said it would, so I gave it a try. I ordered a Lodge Logic Serving Pot with Iron Cover, along with the book, and it's worked fine. This is a little 2-qt pre-seasoned dutch oven. I do have to reduce cooking times slightly, 5 to 10 minutes, probably because the pot is thicker and heavier than an enameled version.
Lodge sells this pot as pre-seasoned, but it did require a little initial work. I followed a foodie friend's advice and boiled a pot of water in it to remove any residue. Then I sprayed it with cooking spray and gave it one round of seasoning in the oven, using the company's seasoning method. This gave me the kind of cast iron finish that usually requires 3 or 4 rounds in the oven. I also give it a light coat of cooking spray after each use.
An oven thermometer was crucial for testing. I had no idea what my oven did at those high temps. Turned out to be about 5 degrees off, so I make the adjustment when I set the oven. About those blast furnace temps... I live in a hot, humid climate with a gas oven that heats the house like crazy, so I use this method from October to May. Seasonal, but a long season. Can't wait for cooler weather to play with the technique again. It's been a big hit at my table.

i was disappointed, many who i talked to recommended the Lorna Sass pressure cooking books. 90+% of the recipes were made with foods I would never consider eating. so for my family there may be 5 or 6 recipes that i would consider trying. if its made with foods they won't eat, then this cookbook was not meant for me. That's my opinion and i would guess that others find it very useful for them, but not for me.

I was looking for recipes that was easy and none complicated. To many of the recipes had ingredents that were not alway in your pantry. I also have the next Lorna J. Sass pressure cookers cook book. This book is very much the same as this one. But it has much of the alike recipes.

Some good recipes, but . . ........2006-03-20
I have only recently discovered the great and wonderful pressure cooker, and I wanted a one-pot meal type cookbook to get me started. There are some good recipes in this cookbook, but the majority of the recipes are on the exotic side. I like to try something new every now and then, but this cookbook is 75% exotic and 25% mainstream cooking, and I prefer my cookbooks balanced a little more the other way.

Misleading Title, but Worth its Weight in Saffron........2003-04-08
I bought this book without even looking inside it. That is testimony to the quality of "The Cook's Encyclopedia of" series, of which this is one, though it has been renamed for some reason.
I was initially disappointed, because my idea of one-pot cooking is that the contents of the one pot be a main dish, not a side dish. Many of these recipes are really side dishes. Not many people would consider Ratatouille as being a main dish, for example.
So why the five stars? Well, the ratatouille recipe is the best one I've ever seen -- simply wonderful! Also true of the other 20-odd recipes I've made from this book. Commenting on the review by Mr. Moore, where he says "the spices and combination of ingredients have a decidely European feel": He is quite correct, when the dish is a European one, such as Jansson's Temptation, Seafood Risotto, Cassoulet, or Italian Lamb Meatballs with Chilli Tomato Sauce (all of which are excellent, by the way -- the tricky risotto is particularly well-explained).
However, when the book moves further afield, to Morocco for five different tagines (the shellfish one is particularly good), or to India for a Goan Fish Casserole, or to Thailand for a tofu curry, I can assert that the ingredients, spices and techniques are absolutely authentic to their regions.
As with all of this series of books, the layout is almost perfect -- they'd be better eliminating the pointless "technique" photographs and enlarging the recipe font, but it is never necessary to turn a page while working on a recipe. The comprehensive index also works well -- rare in a cookbook.
I've only found one recipe where I immediately disagree with the author, and that is the otherwise excellent Chicken Gumbo. Where is the file roux? I know that excellent gumbos can be made without file, but if you're only going to include one gumbo recipe, it should have file in it. Strange omission, because the other recipe from Louisiana, the Jambalaya, is completely authentic.
One other gripe is that slow cookers are never mentioned, even though slow cookers are an absolute natural for many of these dishes. The author goes on at length about the different types of clay pot, but I have never noticed any actual advantage to clay pot cooking except for the presentation, when you walk into the dining room with tagine in hands, place it in the middle of the table, and whisk the top off with a flourish. It's just a small gripe, however, because most of these recipes can be done in a slow cooker without any change whatsoever except for increased cooking time.
I have five books from this series, and all five of them reside permanently on the top shelf of my 200+ cookbook library. I have used this one less than the others, but that's only because I got it fairly recently.
Beautifully Illustrated for European Cuisine.......2002-02-20
I purchased this book because I was looking for some recipes and tips for using my Romertopf clay cooker. The book does a thorough job of discussing the various types and techniques for cooking with glazed and unglazed clay pots, and examines other one-pot techniques (pan-frying, stir-frying pot-roasting)as well. But the real beauty of this book is the wealth of illustrations. Each recipe not only includes a picture of the finished dish, but several pictures showing the 'how to' of the recipe directions. The recipes are divided into clearly numbered steps again accompanied most of the time by an illustration.
I would have given this book five stars but for the fact that the book is designed primarily for European cooks and includes many recipes for dishes not particularly common in American kitchens. There are many dishes using lamb and the spices and the combination of ingredients have a decidedly European feel. That is not intended to be a negative comment as I intend to expand my culinary experience by trying some of the recipes that I have never tasted. But for Americans who like more traditional fare and are like me, looking to learn more about cooking with a clay pot, this book may be a disappointment.

The best thing about this cookbook is that it was meant for a homemaker. Virtually all the recipes can be made with items you have on hand in your cupboards and freezer. Simple, easy to follow instructions with excellent pictures of the finished casserole to help you choose which recipe to make! I bought one for a friend and then bought one for myself!

Considering any dish cooked in a covered pot (from a plain-old skillet to a smoke-filled wok) as fair game gives Linda and Fred Griffith a wide range. Using it to good advantage, they provide folk cooking that feels timely in dishes like a well-paprika'd chicken fricassee, a brilliantly simplified cassoulet, and a sensibly oven-baked risotto. Mostly, this book contains wintery simmered and baked dishes that appeal to meat eaters, though the Ragout of Mushrooms, Shallots, and Leeks and Five Bean Chili will please vegetarians. Unexpected dishes like tea-smoked scallops and a creamy rutabaga soup, along with creative versions of more pleasantly mundane dishes make this an interesting book. The Griffith's chatty, casually informative style make it a pleasure, too.

"Cooking Under Cover" offers 175 internationally inspired soups, stews, braises, casseroles and accompaniments, with a 15-page section of color photos by Alan Richardson.
The authors ("Onions, Onions, Onions," winner of James Beard Award) prefer fresh, organically grown ingredients (including meat) and suggest wines and accompaniments. Chapters include desserts (Chocolate Pecan Bread Pudding, Maple-braised Plums, Figs and Blackberries) and appetizers (Rustic Terrine, Chinese Pot Stickers) as well as vegetable dishes (Curried with ginger and mint, Creamed Spinach), beans and grains (Red Beans with Spicy Sausage, Polenta with Mascarpone) and breads (Under-Cover Corn Bread).
But the heart of the book is meat. How about Chicken Stew with Virginia Ham and Cornmeal Dumplings, or Nana's Chicken Fricasee which includes veal meatballs? Or Veal Shanks with Braised Lentils and Caramelized Onions, Pork Chops in Plum Sauce, or a real four-day Sauerbraten?
While none of the dishes are difficult and instructions are straightforward, the authors' loving attention to detail makes the book especially suitable for cooking moods and entertaining.

They sure mean it when they call them one pot wonders. Who would have thought that soups and stews could be so sophisticated. I am someone who often makes various chili dishes, crockpot meals and casseroles because I like to save time, but I needed a new bag of tricks. I like how it is organized by main ingredient which helps when I have meat or vegetables that I don't know what to do with. They also have some great desserts and for novices like me, some help with the basics. This should definitely be a staple in the kitchen

An early work.......2006-12-14
This is an early, perhaps one of the first full length, biographies of Pl Pot, the man who lead the Cambodian genocide. A prodigy of a middle class family he went to France where he became a radical communist and journeyed back with other Cambodians he had met where the led a long revolution against the government of Cambodia that lasted from 1965-1975. Upon gaining power they emptied the cities and some 2 million of an overall population of only 8 million, died in Cambodia. He suppressed and committed genocide against the Muslim Chams of Cambodia and he deported and murdered almost a quarter of a million Vietnamese. Despite the fact that he also destroyed the Chinese community of Cambodia he was supported by China. In 1976 the Vietnamese invaded and Pol Pot fled into the mountains. He and his movement, the Khmer Rouge, survived up until 2003. This book is therefore outdated but well written. Only two journalists, both of whome supported the genocide, were in Cambodia during the war and therefore there was little knowledge at the time.

Prof. Chandler discovered the real face behind Pol Pot (Saloth Sar), the initially enigmatic leader of the Red Khmer in Cambodia. He wrote a hallucinatory and tragic biography.
The background of Pol Pot is common for many Communist Party (CP) members. He was recruited by the local CP when he studied in a foreign country. For Pol Pot, it was in France where the CP was totally controlled by the USSR and her Stalinist doctrine. The USSR recruited foreign members everywhere in order to use them as antennas all over the world.
When Pol Pot took power in Cambodia, he applied the Stalinist doctrine ruthlessly.
The similarities with Stalin are eminently striking: power struggle at the top of the party and liquidation of the old fellows, savage party purges, murderous goulags, indiscriminate collectivization, ethnic cleansing, deportation, show trials, forced confessions under torture, affectionate with little daughter, considering as enemies of the State those Khmer who came from a foreign country, fear of assassination, suspicious, dictatorial (didn't accept the slightest form of criticism).
Under Pol Pot, it went even so far that people who 'knew' an enemy where executed. The result: a genocide. Even children and BABIES were put to death.
David Chandler shows us that Pol Pot was really a dedicated communist, a party man, an organization man, a utopian thinker who believed in his killer's utopia till the end: "I did everything for my country".
A blatant lie: he did it only for his Khmer country and only for those Khmer who (were forced to) agree(d) with him. In other words, his utopia was more than nationalism, it was racism. For Pol Pot knew that 'Class and hatred had produced the victory. So hatred had to be maintained'.
This book contains excellent explanations of the background of the Cambodian conflict with Vietnam, and how Cambodia became a chess piece in a world conflict between the US, China and the USSR. Pol Pot's regime was supported by the US, because Cambodia was an enemy of Vietnam, who was an ally of the USSR.
This book stresses also the disastrous role of the feudalist king Norodom Sihanouk and the decisive influence of the US bombings of Cambodia, which turned part of the Khmer peasantry in favour of the Red Khmer.
Pol Pot's regime is a shame for Western intelligentsia, because some of his cronies (Khieu Samphan) studied like Pol Pot at Western universities.
This terrible biography is a reminder of the deadly dangers of utopian doctrines, if they can be implemented by a totally convinced individual who possesses a dictatorial power in a single ountry. As David Chandler states: the genocide would have continued, if Pol Pot had stayed in power.

I thought that this book was extremely well written and intellectually stimulating. While providing as many details about Pol Pot's life as can be found, Chandler also integrates this information into the recent history of Cambodia. He seems to believe that Pol Pot and the Khmer Rouge can only be understood in the context of the times, and this definitely rings true after reading the book. True, he does offer a lot of interpretation and conjecture on Pol Pot's life and motives, but this is the job of the historian. Rarely do historical documents, especially documents about the Khmer Rouge, provide such information. Those who intend to understand and write about these events, are therefore forced to do this kind of interpretive work. So do not listen the first review given on this page. This book is awesome.
Pol Pot - still hard to grasp.......2003-02-16
If you are looking for a history of the Khmer Rouge regime, I'd rather recommend one of Ben Kiernan's books. If you are looking for a well-documented biography of Pol Pot, you are not going to like this book.
True, the author has gathered as much information on Pol Pot as possible, but that amount of information could be summarised on just a few pages. To make it into a book, you get a history of Cambodia - and there are better ones around than this one -, and lots of speculation about Pol Pot's psychology, which I found annoying.

I salute David Chandler for finding as much information on Pol Pot as he did. There just isn't much out there, which is a great shame.
Chandler does a good job with what he's got. I can't fault the guy for his research or his conclusions. However, I never got any kind of sense of Saloth Sar/Pol Pot. What were his interests? What really motivated him? We'll never know.
The version of this book that I read was updated to include Nate Thayer's interview and the last years of Pol Pot's life (to the extent that anyone knows about it). I'm eager to read Thayer's book (which is nearly impossible to get ahold of).
I'm afraid that this is as good as there's going to be until a scholar in a Cambodian university takes on this project. There's way more information here than anywhere else that I've seen, but it's still pretty thin. I hope more comes to light on this important historical figure.

Darn, can't find a copy to buy..........2002-10-25
I see Mr. Schloss has written other books of a similar nature - one on cookies, chocolate, pasta, and another using 3 ingredients for meals. Haven't checked those out but this cake book is great. Rich simple cakes, what's not to like? Going to try the lemon poppyseed today and I already have the ingredients for the sauerkraut cake and the sesame one. (Shucks, I'll just xerox the recipes I'm dying to try since I can't find a copy of the book).

I just happened to have checked this book out of our local library and it is breaking my heart to return it!
I've gone from hearing,
"This cake tastes like bread, Ma" and
" Whats wrong with the cake, Ma?" and
"Jen, maybe our oven is a bit wonky"
To hearing this:
" This is the best cake EVER Ma!" and
" My goodness, Jeni, I have got to get this recipe from you!" AND my husband-- who usually claims to not enjoy baked goods--is eating his words---and my cakes now! I only wish that I could afford the... price tag! I'll just have to write down nearly every recipe in the book!

Quick and Creative Versatility!.......2001-10-21
We do a lot of large group entertaining, intimate dinners for small groups, and carry dishes to church, school, and people's homes. This book is a must. With just a few ingredients and a little time, you can create something delicious and hold your head proud. I enjoy using various pans for an added touch. Sometimes I'll pipe a little lemon curd, fruit preserves,or fresh fruit on top to guild the lily. If you use an oval pan, around 3x9 or so, you can get two cakes from one recipe. That gives one to take to a friend and one to keep for yourself at home. I find the recipes very versitle, which is great, depending on what you have in stock. I highly recommend it. Enjoy!

An AWESOME Cookbook.......2001-09-09
I absolutely love this cookbook. Most of the ingredients can be kept on hand for those last minute dessert needs, recently discovered bake sale. The results are consistent and yummy. All recipes can be made using just a pot, a spoon and a baking pan so you will love the clean-up. This cookbook has a lot of variety -- some of my favorites are Amaretto Cake, Chocolate Almond Torte, and Vanilla Butter Cupcakes.

I have also never written a review for a book before, but I must say I couldn't pass this up! This is a staple in my kitchen. Whenever I have company, go over to someone's house, participate in an event, I know I can pull this book out of the cabinet and whip up something wonderful in under an hour. I hardly make desserts from anything else anymore, it's too much work!!! Bottom line: This should be a part of everyone's cookbook collection.

I returned this book as it did not give enough detail regarding time, nor did it give enough simple recipes. I am a new "slow cooker" & needed more help. There are much better books on the market.
Great Cookbook- easy, good food.......2001-09-13
This is not about fancy cooking or exotic ingredients. For the most part, this book is full of one pot meals that you can make with very little effort. Every recipe I have tried has been easy to make with on hand ingredients.
I particularly liked the wide variety of recipes: casserole recipes, crock pot recipes, wok recipes, one pan/pot recipes etc.
I refer to this one many times when planning meals or looking for a last minute meal to prepare.
