This is a very lovely book. Full of great information for the more advanced decorator. It is a fine one to add to your permanent library, especially if you really enjoy making fondant/gumpaste flowers. She offers some of the more interesting and unusual flowers. She is from the U.K. so some of the flowers are not ones we get in the U.S.A. Most of these flowers require cutters, but she does include some that do not. There are good step by step directions, provided you do have some knowledge of this medium. The only flower that I can't find a cutter for here is the carnation and it looks as though it would be a great way to make it, too.

I THINK THIS IS AN EXCELLENT BOOK FOR ANYONE WHO KNOWS THE BASICS OF SUGAR FLOWER MAKING AND WOULD LIKE TO LEARN MORE. ITS WELL WRITTEN AND GIVES DETAILED INSTRUCTION AND MANY FLOWERS TO MAKE THAT ARE HARD TO TELL FROM THE REAL THING.

If you have any experience of gum paste flowers you will love this book. Excellent clear step by step colour pictures and good explanatory text. Glorious pictures of finished cakes and flower bouquets. Not for the beginner though as some of the techiniques are quite complex. Buy this book if you are looking for inspiration and a challenge .

Great Guide for Most of Us.......2007-10-01
For someone without a lot of baking experience who wants to know how to make a wide variety of breads and baked goods using readily available ingredients and supplies, this may be the best choice out there. There are recipes for virtually every type of non-pastry bread or baked flour product, without too many unnecessary details or confusing diversions from the task at hand. If you are an avid amateur baking purist, you might find the book's almost exclusive reliance on commonplace industrial leavening agents such as dry yeast and baking powder, and otherwise plain presentation of the art of baking, to be a trifle unsophisticated. However, the book also includes instructions for more elaborate procedures, such as making and using various leavening starters, for those so inclined. This book de-mystifies bread making and offers many helpful tips and shortcuts that are most welcome to those that just want to make a variety of breads in a typical home kitchen, without making a lifelong quest out of it. Illustrations are sparse, but are judiciously included.
The recipes I've tried were easy to follow and resulted in a delicious end product, every time. This is a cookbook, that can be taken into the kitchen and used one recipe at a time. You don't need to read large sections of the book or flip through multiple pages to follow most recipes. Consequently, there is a lot of repetition in the instructions and the book is thicker than it needs to be, strictly speaking. If you bake all the time the repetition will be unnecessary. But for most of us, the self-sufficent presentation will probably prove quite handy.

unusual recipes.......2007-09-27
I first tried the Blue Ribbon French Bread recipe while trying to find a Po-Boy bread formula. This recipe was just unique enough to be perfect! The author definitely isn't presenting the same old tired combinations every other cookbook author has. Clayton is unique. You might not appreciate it if you are a new baker but you will quickly enough. Easy to follow with a little thought and he allows for all the mixing scenarios.

These recipes are very easy to make and each one has been so delicious. I have been making bread for over 55 years, and these recipes are so varied and elegant on the palette. So different from any that I have made in the past. I would highly recommend this book to anyone who loves home made breads.

Well, you cannot beat this book for shear volume. Almost every single page on this very thick book has at least one recipe on it. Bernard Clayton has been baking bread for longer than a lot of us have been alive. I would bet that you will be able to find a version of whatever type of bread you are looking for in the book. I didn't give it five stars for personal reasons. I am an artisan bread baker and have gotten into the principles of using less yeast and going for the slow ferment. That being the case, the book feels 'dated' to me in areas where Bernard calls for what seems like so much yeast to me now, and sugar. That said, I do recommend this book and consider it a welcome addition to my collection, it is a wealth of recipes to have on ones' shelf in one volume. For beginners it is great because much of the recipes are very straight forward, no fussing around. And for the more experienced, or those that are into the slow-rise, etc,
one can just alter the technique.
an instant bread maker.......2007-04-09
I bought this book a year ago and I love it so much I had to take the time to tell someone about it. If you have never made bread before or thought it was too much work...all you need is this book and a stand up mixer to do the work for you. Most basic white breads can be ready for rising in 20 minutes without much work. The organization may look confusing at first glance, but it is not after making a few of the simple white breads which my family love and become disappointed when they see the store bought bread in the cupboard. The "rich white bread" recipe is a staple in our home and lasts for a full week when stored in the fridge -that is if it isn't eaten first. The festive bread recipes are also fun and bring something special to the holidays. The Finnish bread is excellent. For social get-togethers, you can bring the bread and still have plenty of time to get ready while it rises.

I agree with the others that this is the best cookbook on baking that I own. People generally like the baked goods I make from this book. Grandma's date-filled cookies, which I think are pictured on the cover are especially good as is the chocolate and orange cheesecake.
The BEST of the best..........2007-06-26
I thought I had lost this book during a move, and losing it took away my desire to bake altogether (though it didn't help that the missing box where it was also contained all of my other favorite cookbooks and loose recipes). When I checked here to get a replacement, the cheapest used was $50!!
Now that the replacement price has come down, I found the misiplaced box containing this book and the others, and now all I want to do is bake! How ironic that it was found while I was packing up our things for yet another move, so baking is out of the question!
It was a great disappointment to my family that I couldn't make my famous bread pudding during the holidays last winter, so they will all be very happy this year when I return to form! And I love the variety of delicious cookies that I give away as Christmas goodies to friends. Everyone always thinks that the cookie recipes must be family heirlooms, and they are shocked that they are actually simple recipes of Pillsbury origins!
I have many great baking cookbooks, but if I had to chose just one to keep for the rest of my life, this would be it!! Needless to say, it will be closely guarded during this next move so it doesn't get misplaced again!

This cookbook, and Pillsbury, have never let me down. The book covers everything from cookies to cakes to fancy desserts to yeast breads and coffee cakes. I have had this book for at least ten years now, and I have found many of the recipes to be 'tried and true'. They are thoroughly tested so you get very consistent, yummy results, and now that I live at high altitude, I really appreciate the adjustments included for every recipe. That has helped me learn how to adjust other cookbooks' recipes for high altitude too. The glossy pages withstand the occasional batter spatter, and the pictures make you want to try all the recipes! Like others have mentioned, my book's binding gave out too and a good chunk of the pages have detached. Still, it remains my favorite baking book.
Best cookbook ever - and I own a lot of cookbooks.......2005-01-03
If, in your whole life, you only buy one cookbook for baking, buy this one. I have had this book for years and I love it. There is not one bad recipe. All the staples are there: breads, cookies, pies, cakes, glazes, you name it. There is even a section on terminology, equipment, and it explains things like why you shouldn't substitute butter for shortening and vice versa. The only gripe I have is that the binding isn't terrific - some of the pages have come loose over the years (but then again, I bent the spine so the book would lie flat on the counter). Hark ye bakers: the chocolate chip banana bread on page 380 is better than sex.

I LOVE to bake and this is the best out of my extensive collection of cookbooks and recipes.I bought a copy in 1994 and have worn it out. The binding fell apart after five years; no worry...I got a three hole punch and put it in a 3-ring binder. That binder is held together with duct tape now! If you like a variety of recipes, with easy to follow directions and lots of nice photos of the food, this is the cookbook for you.

One of the most striking things about this book is it's well laid out design. Every recipe is easy to read and prepare. I wish more cookbooks would adapt a similar layout...
Yes, the liquid to water ratios are not always right, but with the variety of different bread machines out there, it is almost impossible to put in a recipe. This is also due to the fact that different flours absorb different amounts of water due to their variations in milling, age and variety. Be prepared to always finetune the dough consistency in your machine by adding small amounts of water.
This book is perfectly suited as an introduction into the art of baking bread and as a creative idea generator for new and unusual loafs. After kneading in the machine I have sometimes baked the breads in my home oven with even better results!

I love this book. The recipes given are for both 1 1/2 & 2 pound capacity, which gives the user a choice. The book is easy to read and offers special instructions for the more elaborate recipes. Most of the recipes use ingredients that most homes have on hand on a daily/weekly basis... there are not a lot of unique ingredients that you need to make a special trip to the grocery store for. I have not experienced one bad recipe and I've made nearly all of them. I usually bake at least two loaves; bringing one in to work to share... it disappears within a half hour.

I've made a small variety of different kinds of bread using the enclosed instructions that came with my bread machine. I've also noticed some inconsistancy from loaf to loaf. I've made a lot of very dense small loafs that tasted great but where pretty small and heavy. Now this is not inconsistancy from the machine but in the ingredience and the differences with the recipies and things you're supposed to conscious of when everything goes together.
This book provides a great overview on machine bread making with photos and explanations as to the how and why's of dough consistancy, what happens if your bread does or does not do certain things and how to adjust the ingredience. This has greatly helped me understand what I was doing and how to bring some consistancy into my bread making.
The recipies are ok. I actually only stick to making one kind of bread day in and day out. Although I have ventured off and tried some more of the interesting variety with good results. Mostly I've used this to help me understand the basics which I've applied to other recipies.
Best book I've found.......2004-04-25
This book is by far my favorite book. I especially enjoy all the shaped breads and dough recipes which are finished outside the bread machine. You can do more than bake a standard loaf with this book.

Baking Bible in Our Home.......2005-03-21
My mother gave me this book back in the 80's and now it's so well used that it's falling apart. It's a great book for Coloradans. I live at 6500 feet and the recipes work great. Now I'm buying a replacement book and another for my son, who is in culinary school and also loves the recipes. In fact, I use it twice as much as another cookbook I have. You can't lose with this one.

Sugarpaste Cake Decorating Techniques.......2002-10-10
The Complete Book of Cake Decorating With Sugarpaste by Sylvia Coward is filled with 50 original cake designs and step-by-step instructions for completing the cakes. The techniques encompassed in this book include floodwork (color flow), sugarpaste (rolled fondant), buttercream piping techniques, and pattern transfers.
The book includes an introduction that gives basic instruction in using decorating cones (parchment bags), decorating tubes (tips), glass stencils, ribbon work, and flowers (piped and sugarpaste). The final section of the book, and the most valuable for me, was a section of patterns. The author provided patterns for making sugarpaste flowers, floodwork collars, alphabet variations, and embroidery accents.

When I bought this book, I thought I'd be getting a book which tells me more about using sugarpaste to decorate cakes, new techniques, designs, etc.... I was wrong. It doesn't even have the drapes in sugarpaste.
As it turns out, it is basically a book with pictures of cakes, which have been decorated on a base of sugarpaste. Even the parts where there is some modelling done in sugarpaste, it doesn't seen very well described, or illustrated. Definitely something of a dissapointment. It spends as much time on piping icing as it does on sugarpaste.
I also have 'The International School of Sugarcraft' for beginners, and that tells me all that I need to know, and is better illustrated. However, if you need pictures of cakes for ideas, this may be an okay book for you.
DEFINITELY not a book for beginners!! It has directions like 'Shape the shoe from sugarpaste'!!! I mean, if I knew how to do that on command, then I won't be needing directions - I'd just be buying books with cakes in them, and making them myself. So much for step by step instructions....

This book illustrates the use of sugarpaste / fondant icing decoration of cakes in the European style. the designs are classical and traditional by todays standards but make for a good reference book as well as providing a variety of different techniques. some books are specialist in nature such as 'run-outs,' 'piping,''flowers' etc., so this is a good all rounder.
Not for "American" style cake decorators.......2001-03-31
This book is more for someone who makes European style cakes and already has the knowledge of fondant and gumpaste. Instructions would not be easy to follow for beginners, especially since the wording is European, hence the title "Sugarpaste". The cakes in this book, while most of them very pretty, are all fondant with ribbons and painting on them. The designs seem mostly to be for a pretty look and not a creative or "stand out" look.

Bernard Clayton has six very solid cookbooks to his credit, starting with The Complete Book of Breads, first published in the 1970s. Somehow it seems only fitting that he would wind his way, by book number seven, back to a big book about little breads. Does it fit in your palm? This appears to be the primary criterion for the breads in The Complete Book of Small Breads. There are beaten biscuits from the American South and steamed buns from China, pan dulce from Mexico and oatmeal flatbread from Norway, orange tiffin rolls from India and spice corn fritters from Indonesia--more than 100 recipes in all.
Some of the recipes will seem familiar to anyone who has used other Clayton cookbooks, for he has culled from his own greatest hits to fill this book. But he has downsized the recipes: "The book will appeal to those home bakers with small families or those with limited kitchen facilities," he writes. "The yield of most of the recipes is small, reduced to about half the quantity found in others."
Those new to baking and experienced bakers alike will enjoy Clayton's clear instructions. He takes into account bakers doing everything by hand as well as those who use mixers or food processors. Once you've become accustomed to the way Clayton lays out a recipe, you'll wonder what's wrong with every other cookbook author in the business.
But most of all, there's Clayton's easygoing attitude to spur you on to even more delicious discoveries. "I urge the home baker to see baking as a relaxed art," Clayton writes. Clayton's writing is, as always, friendly, clear, and concise. But there are disappointments as well as rewards. The butter crackers and hamburger buns were wonderful, but the hazelnut-buckwheat muffins were just so-so, and Mrs. McNab's Scones were so salty I had to throw them out. The book is fun to explore, though, and there's even a recipe for dog biscuits that my spaniel has been urging me to try...

The name fits very well! The book contains a large variety of breads, scones, cakes, cheesecakes, pies, puddings, and much more. It includes definitions of baking terms and ingredients, metric information, and useful tips scattered throughout the book. The recipes are clear, easy to follow, and the measurements are accurate. Also, some of the recipes are provided with making ahead instructions.
The book appeals with its beautiful photography. Any recipe without a picture does not really need one, either because it is very basic, or because its finishing is similar to another illustrated recipe. Moreover, some pictures illustrate the method of a recipe, such as dough shaping, or cake glazing.
I got complements for all the recipes I tried, including Texas Sheet Cake, Chocolate-Marshmallow Cake, Amazing Banana-Nut Roll, Peanut Butter- Chocolate Ripple Cheese cake, Fudge Brownies, and Apple-Walnut Cake with Caramel Sauce.

I have owned this book since it was first published, and it has never failed me. Every bread, cookie, cake, and muffin recipe works the first time and every time! At this point, I think I have made everything in it at least once, and now I know if I ever have to contribute to a potluck or party, I can count on the Complete Book of Baking! It is worth the investment!

I really think you should add another star to this book as it has magnificent recipies that are easy to follow and easy to understand especially when you are in a hurry to get bread baked, like I was when I got the book.
I loved the recipies and got alot of compliments on how wonderful the Bread tastes. I am pleased to announce that I was able to induct several neighbors to bread machine baking.They were all scared to use their bread machines..... not now!

If you are a whole-grain purist, this book is not for you. The whole wheat and other grains that are part of each recipe are only added in token amounts to be able to call the loaf unrefined. However, the majority of the flour used is white. This was disappointing and I do not recommend this book for that reason. As a matter of fact, I returned my copy. For "transition" loaves (that use mainly white flour for those not used to pure whole grain or weaning themselves off of it) and for "elite" recipes (using 100% whole grain), try George Burnett's The Breadman's Healthy Bread Book. The kinds of recipes are nearly identical (cinnamon-raisin, lemon-poppy seed, etc.) but even more varied. Plus, he gives amounts for 1 and 1 1/2 lb. loaves.
Healthy, easy and great tasting bread..........2000-05-03
I came across this book while ordering some books by Dr. Michael Murray (he wrote the forward for this book). I had received a bread machine as a wedding gift and had not used it much. Being on a bit of a health kick, I had thought bread was off limits. The author provides a huge selection of healthy breads that taste great. From fruit or vegetable breads to pizza crust and real bagels, she covers it all - with directions for different sized bread machines, along with a chapter about selecting a bread machine and even a troubleshooting chapter so you can remedy any problems with your loaves. She explains any special ingredients, and provides a great deal of nutritional information. I have other cookbooks, but this is the only one I use for bread making anymore. I love it so much that I have given copies as gifts to 2 friends and 1 very accomplished cook (my mother) and they all loved it. I had to buy a spare copy because mine gets borrowed so much. I honestly have not used any other cookbook as often as this one, and give it my highest recommendation.
