Book Description

“Anyone can cook in the French manner anywhere,” wrote Mesdames Beck, Bertholle, and Child, “with the right instruction.” And here is the book that, for forty years, has been teaching Americans how.

Mastering the Art of French Cooking is for both seasoned cooks and beginners who love good food and long to reproduce at home the savory delights of the classic cuisine, from the historic Gallic masterpieces to the seemingly artless perfection of a dish of spring-green peas. This beautiful book, with more than one hundred instructive illustrations, is revolutionary in its approach because:

• It leads the cook infallibly from the buying and handling of raw ingredients, through each essential step of a recipe, to the final creation of a delicate confection.
• It breaks down the classic cuisine into a logical sequence of themes and variations rather than presenting an endless and diffuse catalogue of recipes; the focus is on key recipes that form the backbone of French cookery and lend themselves to an infinite number of elaborations—bound to increase anyone’s culinary repertoire.
• It adapts classical techniques, wherever possible, to modern American conveniences.
• It shows Americans how to buy products, from any supermarket in the U.S.A., that reproduce the exact taste and texture of the French ingredients: equivalent meat cuts, for example; the right beans for a cassoulet; the appropriate fish and shellfish for a bouillabaisse.
• It offers suggestions for just the right accompaniment to each dish, including proper wines.

Since there has never been a book as instructive and as workable as Mastering the Art of French Cooking, the techniques learned here can be applied to recipes in all other French cookbooks, making them infinitely more usable. In compiling the secrets of famous cordons bleus, the authors have produced a magnificent volume that is sure to find the place of honor in every kitchen in America.

My wife and I have been looking for Volume one for ages, without luck.
This book came out as a 20th anniversary edition. Maybe other websites carry
this now, but it was easy to find on Amazon.

5 out of 5 stars The classic best.......2007-08-11

I bought it for my daughter for Christmas. Then I bought a new oven for myself with plans to borrow the book to get good at making French bread Julia's way. For anyone interested in high quality cooking, this is a must have for the book shelf.

It is painfully obvious alot of thought went into this book, but then again what would you expect from a master like Julia Child.I am in the reading stage and have'nt made any recipes yet,but was impressed early. This book is for anyone that loves to cook, amateur like me or pro.

Overseas 'customers'of Amazon are disadvantaged by the price of postage and often waiting time therefore it was gratifying to get 'Mastering the Art of French Cooking' within a few days. It is helpful for our customs if such packages are marked 'BOOK ONLY'. The book was in prisine condition. All books I have bought through Amazon have been in the condition stated but occasionally have taken a long time to arrive.

Book Description

A fusion of simplicity, healthy ingredients and just-right quantities, these delicious, exciting new recipes are designed for today's growing world of empty-nesters, couples without children and smaller households.

For millions of fast-paced, modern households, the old cookbook standard of "serves four" is increasingly outdated and a daily nuisance. With more than 77 million baby boomers adjusting to the Empty Nest Syndrome, and with their adult children setting up their own new homes, there is a mounting demand for quick, easy, healthy recipes yielding fewer servings.

But cooking for two people or even singles isn't as simple as cutting a recipe in half. In EatingWell Serves Two, the award-winning editors and recipe developers for America's leading food and nutrition magazine have created 150 dinner recipes from their hugely popular "Healthy in a Hurry" and "Serves Two" columns to meet the specific needs of smaller households.

More than a cookbook, EatingWell Serves Two provides a smart guide for how to shop in small quantities, how to store leftover ingredients, keep a well-stocked pantry and use easy cooking strategies that result in minimal waste while putting a healthy, delicious meal on the table in 45 minutes or less.

Filled with mouthwatering photography and tips on shopping, planning and simple cooking for two with healthy ingredients and without waste. Full-color throughout.

Customer Reviews:

5 out of 5 stars Delicious, easy, healthy.......2007-09-26

The book is large and sturdy and stands up well to typical kitchen abuse. It includes information on shopping healthily for two, as well as menu suggestions. Recipe chapters include: dinner salads, soups & stews, vegetarian mains, poultry, fish & seafood, meat, and accompaniments. In keeping with the healthy aim of the book, desserts are relegated to a several-page portion of the accompaniments chapter.

Small symbols mark particularly low-carb or high-fiber recipes. Each recipe estimates both "active minutes" spent preparing the dish as well as total minutes. There are make-ahead notes and detailed nutrition information. There's also a "nutrition bonus" note that points out any particular vitamin benefits found in that recipe. For example, the "Caesar Salad Three Ways" includes plenty of Selenium, Vitamin C, Vitamin A, and omega-3s (it also comes with a basic recipe as well as a shrimp and a chicken variation--hence "three ways"). Sometimes extra notes are included, for example, the Caesar Salad has a side note with instructions on making your own croutons. It also includes a delectable-looking photo; while photos aren't included with all of the recipes, there are certainly enough to make your mouth water!

I personally found not all of the flavors to my liking. Some were a bit bland, and some tried to make up for blandness in ways that just didn't appeal to my palate. A Lentil & Chicken Stew appealed to a friend of mine who particularly prefers bland food, but I just couldn't enjoy the lemon, dill, and chicken flavors together. On the other hand, she and I both loved the Creamy Artichoke & Spinach Soup, which takes a rather unusual approach to making a thick and creamy soup out of very healthy ingredients.

There's a really nice Grilled Peach Sundae recipe in the quick desserts section that we heartily enjoyed. While it's true that I found a few of their recipes to be not entirely memorable, on the whole they're quite good. The Eggplant-Cheddar Bake, for example, disappeared very quickly!

My only reservations with this book are definitely taste-dependent. If you don't enjoy the kind of semi-bland, lemony-chicken type of recipe that shows up in a lot of healthy eating cookbooks, then there will be some recipe sections in here that won't appeal to you. That said, there are plenty of people who will enjoy those recipes, and even the rest of us will find lots to work with in here!

5 out of 5 stars Versatile and delicious as well as healthy and quick.......2007-08-04

EatingWell Magazine aims these healthy and varied recipes at the empty nester who doesn't want to spend a lot of time in the kitchen or end up with leftovers. Preparation time (active and total) and nutrition info accompany all recipes as well as make-ahead instructions where applicable.

However, convenience and diet aside - these are versatile and delicious recipes. There's a whole chapter on dinner salads - Cobb Salad, Southeast Asian Scallops and Greens, Sweet and Salty Beef Salad, Orzo Salad with Chickpeas and Artichoke Hearts. Every one I tried was a winner and all came in at under 30 minutes.

Other must-have-again dishes include Lemony Asparagus Pasta, Creamy Artichoke and Spinach Soup, Marmalade chicken, Shrimp and Shiitake Stir-fry, Grilled Steak with Beets and Radicchio.

A few I plan never to try, like Turkey Fingers with Maple-Mustard Sauce and Asian Salisbury Steaks, but these are outnumbered by intriguing dishes like Pork Tenderloin with Gingered Mango Sauce and Pomegranate Duck. The book ends with chapters for "Quick" sauces, sides and desserts as well as a vegetable shopping and cooking guide and notes on cooking techniques and special ingredients.

Highly recommended for anyone with a small household.

5 out of 5 stars this is a fabulous cookbook!.......2007-07-23

I have dozens of cookbooks and it takes something special for me to keep one on my kitchen counter. This one certainly qualifies. I've tried several of the recipes and all were delicious and it is so nice not to have a ton of leftovers. I love that the nutritional information and suggested sides and included for each recipe.

What really makes this book a winner for me are the Notes. Every time I read an instruction or ingredient I'm not quite sure about, there is a Note exactly on point, anticipating my question. In addition, the tips regarding shopping in small quantities are very valuable.

If you're looking for a cookbook with delicious recipes and smaller quantities, don't pass this one up!

We have used this cookbook about 4 times a week since we got it.
Perfect portion sizes for 2 and lots of tasty good for you ideas.
This is the best healthy cookbook you could get if single or a couple.
Just double up the amounts for a family if you have a couple kids.

5 out of 5 stars Current Favorite Cookbook!!.......2007-06-26

I have been an Eating Well magazine subscriber for years, so I'm already a fan of their recipes. I find myself using this cookbook at least 4 or 5 times a week. The recipes are great tasting, easy to assemble, and often require even less time than the estimate given. The portion control of making just 2 servings is an excellent way to maintain recent weight loss for both my husband and myself. (No second helpings - but definitely enough to satisfy hunger!) I've also given the book as a wedding gift - it has beautiful illustrations as well as a wealth of shopping and ingredient tips. When healthy is this good and easy, why eat any other way?!

5 out of 5 stars Companion DVD rocks my world!.......2007-10-05

I bought the cookbook in conjunction with the companion DVD (sold separately). Personally, I see the cookbook as mere support for the video instruction. Bought alone--it would seem overly simplistic and even possibly frustrating that various recipes overlap. As support for the DVD explanation it makes perfect sense. Considering the set is for beginners in the raw food lifestyle it is absolutely fantastic. For people who already know all about juicing and vegetable preparation--it can seem a little trite at times--but for the average American ignorant to all things raw--the dvd helps you understand without feeling stupid or lost in strange new vocabularies and unusual foods.
I would have to say--for anyone who complains about the cost of the machines often used in raw fooding--sell your stove--and that alone will more than pay for any and all raw food supplies. That's what I did.
I have a juicer, dehydrator, blender, citrus juicer, food processor, water distiller,etc...all for far less than my old stove. I wouldn't buy this item without the DVD. Together they are a magical pair, great for an experienced raw foodist like myself and for sharing with all my friends who wonder how I can survive and thrive on a raw food diet. The information is practical for a busy life on the go, full of variety and unique flavors without complexity, fast, and tasty. Not to mention recipes similar to old comfort foods to satisfy any old lingering cravings. 5 stars all the way!

5 out of 5 stars The title ain't lyin'.......2007-09-19

This is a fantastic beginner raw foods book. None of the recipes require anything more complicated than a blender and food processor. I taste-tested some of the recipes with a few omnivores with great results. The Walnut Paté and Flourless Chocolate Cake paid for the book alone.

Don't be discouraged by the worst book cover design I've ever seen. The recipes are great. They also need a better food stylist, lighting designer, photographer but only b/c they are not doing this book justice.

5 out of 5 stars awesome recipe book!.......2007-09-12

This book is great! The first recipe I made called the "Guacamole Sandwich" was the best thing I've ever tasted! I'll never think about eating cooked food again! All of the recipes are simple, fast and easy to understand.

5 out of 5 stars I love this book!.......2007-09-07

I am a not a hard-core raw foodist. I just think incorporating raw foods is a good way to work towards a healthy diet. I have a few raw food books but this one has the easiest recipes to prepare. It's perfect for a beginner and even as I progress to more complicated meals, I come back to these recipes again and again. I particularly love the "Not Meatballs w/ Zucchini Pasta," "Mediterranean Kale" and "Walnut Pate." There are good desserts too, such as brownies... yum.

Also recommended: Raw Food, Real World-- More labor intensive recipes but excellent; has beautiful photos. Further, if you are ever in NYC, you may want to check out Pure Food and Wine-- I was skeptical (What?! A raw food restaurant? Come on!) but the food was very tasty and the restaurant had a cozy atmosphere...

5 out of 5 stars Great guide for raw food newbies.......2007-08-30

I am new to the raw food world and found this book by Jennifer Cornbleet to be a fantastic introduction! The recipes were enticing, instructions were simple, and the previously daunting task (for me!) of making interesting food in the context of a raw diet was made not only effortless but delicious with the help of this book. The chocolate mousse and marinara sauce became immediate favorites of mine. The not-tuna pate in sushi is another meal I really look forward to. I have continued to be inspired to incorporate more and more raw meals into my diet from this book and recommend it to anyone else who is getting started in this healthy way of eating!

Book Description

At last, a cookbook that brings Mexican food within easy reach, companion to the all-new PBS series.

In his previous books, Rick Bayless transformed America's understanding of Mexican cuisine, introducing authentic dishes and cooking methods as he walked readers through Mexican markets and street stalls.

As much as Rick loves the bold flavors of Mexican foods, he understands that preparing many Mexican specialties requires more time than most of us have. Mexican Everyday is written with the time sensitivities of modern life in mind. It is a collection of 90 full-flavored recipes—like Green Chile Chicken Tacos, Shrimp Ceviche Salad, Chipotle Steak with Black Beans—that meet three criteria for "everyday" food: 1) most need less than 30 minutes' involvement; 2) they have the fresh, clean taste of simple, authentic preparations; and 3) they are nutritionally balanced, full-featured meals—no elaborate side dishes required. Companion to a thirteen-part public television series, this book provides dishes you can eat with family and friends, day in and day out. Color throughout.

3 out of 5 stars Disappointed.......2007-07-30

I was disappointed when I received this book from Amazon and searched through for something to cook that night. The recipes have too many ingredients (involving an extra trip or more to the grocery store) - and just not realistic for the working people of the world. Mind you, the food was good, but I don't have time in my life for a majority of the recipes in this book.

5 out of 5 stars Wow, just incredable and great tasting recipes!.......2007-07-07

I've learned so much from this book! The recipes aren't only delicious but also healthy and affordable. It feels like a real treat with every new meal and even the regulars! I would recommend this book to anyone who would like to learn how to cook mexican with everything from the herbs and spices to where to find some of the hard to find items. I read the book from front to back and really got the full lesson you wouldn't normally get just jumping from recipe to recipe like I did for a while. I'll never look at Mexican the same!

4 out of 5 stars Tasty, very tasty.......2007-06-08

This is what I call traditional mexican food, for real, I am mexican by the way, and the flavor of the real mexican food has been captured in these recipes, although I must say that using masa harina in some of the recipes is not such a great idea, I know in some areas of Mexico it is used, but its taste overpowers everything else, so I would not use it, I would use corn starch instead, plain and simple. Besides that detail, the book definitely is worth it, if you like traditional mexican food; some dishes brought me back to my childhood years.

5 out of 5 stars Just Like The Homeland, same taste but less work!!!!.......2007-03-28

A must for your collection of Mexican cooking. You will re-live the mornings at home when the aroma chocked you to death but when you sat and ate it was all worth it!! If you truly love Authentic Mexican food will you understand what i am saying.

5 out of 5 stars love it!.......2007-10-08

to all those considering buying this book, consider no more!
what a gift it is to make great tasting vegan food in about 15 minutes (because that is really all of your labor that is required) and 6-8 hours later...yum! after trying three recipes from this book, i bought a 4qt. cooker in addition to my programable 6 qt.
i have not been sorry. i love how the flavors deepen with slow cooking and no standing over a stove and stirring. i used to get sick of "tasting" what i was making before it even hit the table. the recipes are also dependable. tonight we are having stuffed acorn squash, and i know it's going to be delicious!

1 out of 5 stars Doesn't deliver.......2007-10-03

I received this book as a gift. At first glance the recipes looked good, but what I was really looking for was easy wholesome veggie recipes. Instead the recipes and take more work than I have time for and use a lot of fake meat (soy) which we do not eat in our house. The 5 or 6 recipes we did make were not even that tasty. I will get my vegetarian slow recipes from internet searches from now on. I will be giving this book away.

5 out of 5 stars Awesome slow cooker recipes!.......2007-08-21

I love this book! It has great recipes. My favorite by far is the mac and cheese forentine (it's vegan, the cheese sauce is cashews and white beans). Highly recommended, love it!

5 out of 5 stars easy, delicious, and healthy.......2007-08-07

I bought a slow cooker after reading a copy of this book which I got from my library, then bought the book for myself, and later, a copy for my mother. I use this book atleast once a week and it has made maintaining a healthy vegan diet incredibly easy. I purchased a digital appliance timer for my slow cooker as recommended by the author, and am now able to cook while I sleep, when I'm at work, or outside. If you are a busy, active person with little time to spend in the kitchen, but insist on uncomplicated, delicious, healthy vegan meals with lots of variety, this is the book for you. I highly recommend the Breville slow cookerBreville 5.3 Qt Gourmet Slow Cooker SLC70XLif you are looking for a reliable slow cooker to accommodate the recipes in this cook book.

5 out of 5 stars EXCELLENT PURCHASE.......2007-07-24

I was very reluctant to purchase this cookbook based on previous feedbacks given. I'm glad I went ahead and bought it.

I have made the Spicy Black Bean Chili, the Maple Baked Beans, and the Good Morning Millet Melange. Right now the Perfect Hominy White Bean Chili is cooking in the crockpot. All of these recipes have been delicious.

I plan to try a lot more recipes in the cookbook and have the ingredients written down on my shopping list for the next 2 recipes I want to try "Not Your Mama's Pot Roast" and " Tempeh Etoufee".

The author certainly knows how to make the flavors come together in the recipes I have tried so far.

I have an inexpensive older 4 quart crockpot and I'm satisfied with the results.

This cookbook was a good buy.

Book Description

Small-Batch Baking is how to have your cake, and eat it all too. It's baking a plate of cookies (not 4 dozen) to greet the kids when they come home from school, or a few muffins (not 12) when that's all you need for Sunday brunch. It's for the perfect tart to end a small, romantic dinner--or the indulgence of a one-bowl dessert just for you (Honey Apple Oatmeal Crisp, anyone?). Most of all, it's to bring home the joy of baking, when home is just the two of you--small batches whip up quickly, clean up quickly, and don't require hours at the oven.

Written by Debby Maugans Nakos, who clearly possesses the Southern baking gene, Small-Batch Baking offers 200 irresistible recipes from across the baking spectrum: triple layer cakes, bundt cakes, angel food cakes; pies and tarts; cobblers, crisps, crumbles, and short cakes; cookies, bars, squares; biscuits, muffins, scones, breakfast breads; and a whole section just on Valentine Specials--Double Hot Chocolate Soufflés, Chèvre Cheesecakes with Honey Anise Ginger Syrup, Vanilla Banana Caramel Flan.

A batch of Cream-Filled Chocolate Cookies--that yields a half-dozen. A Coconut Layer Cake, just for two. Individual servings of Cinnamon French Toast Pudding or Southern Peach Cobbler with Bourbon Cream. It's all the bewitching pleasure of home-baked, but--finally--for just one or two.

Small Batch Baking has been easy and fun. The recipes are great, and there are plenty of recipes in a variety of categories from simple and basic to more complex and involved, for every stage of your baking needs. I've had a great deal of fun making up for the fact I never had an Easy Bake Oven as a kid. This fits that need and makes for easy portion control.

3 out of 5 stars Expensive!.......2007-07-12

Though the recipes in this book sound very appetizing, a lot of them call for liquers, heavy cream, and other high-fat ingredients like real butter. This not only makes the recipe high-fat, but expensive! I've made a couple of them, and have enjoyed the results, but they are not so good for one's cholesterol. Another problem I've had is using cans to bake small cakes. I don't know what they were like when Ms. Nakos was writing this book, but all the cans I've purchased products in lately have ridges running around the middle, and though I haven't yet tried baking in one of them, I imagine it would be hard to make the cake slide out. Also, I haven't been able to easily find tart pans with removable bottoms. Although it looks appealing, I find I haven't used this book much, and don't recommend it to anyone who wants a healthy diet.

5 out of 5 stars fantastic book.......2007-06-23

This is a great book for small families or anyone who wants just a taste of something. Everything's turned out well so far and I've given it as a gift along with small baking dishes (ramekins or small springforms).

5 out of 5 stars An idea whose come has come, brilliantly executed.......2007-05-01

Debby Maugans Nakos has written a present for those of us who love to bake but don't relish the thought of having 5 dozen cookies around to tempt us later. As we all know, in baking, due to a myriad of factors including heating times, one cannot simply decide to make 1/5 of a recipe and assume it will work (whatever 1/5 of egg yolk looks like anyway...) Nakos has done the hard work of figuring out the measurements for small-batch success. The baby cakes are amazing, but I particuarly love the cherry almond scones, lemon shortbread bars, and cheddar bacon biscuits. This is a gem of a book! I've bought it for 2 people as presents.

4 out of 5 stars Never tried the cans, but have made many recipes: great book.......2007-04-25

One of the big features of this book is the idea of baking cakes in cans. I haven't tried this, lacking the proper can opener. Rather, I bake in cupcake pans, and monitor the time carefully.

I've tried probably 20 recipes so far. I love baking, but we are only 2, and it's all too easy to eat most of a cake. These recipes usually make enough for 2-3, which is perfect.

To be clear, this is real baking: no shortcuts, and many recipes use several mixing bowls. If you're looking for something really quick and easy, this isn't the right book.

Also, many of the cake recipes use buttermilk. There is a shelf-stable buttermilk (maybe it's a powder?) that can be kept on hand, but I often sub with a little low-fat milk soured with lemon juice. Even plain yogurt will work.

AS for the recipes, I've had great results with almost everything. I've tried several kinds of cookies including chocolate chip, oatmeal (both varieties), peanut butter, and others, and I've always been happy with them. I've also tried several of the fruit crisp and cobbler style dishes, and have been happy with them. But I am most pleased with the cakes: they are always tasty and moist, with a nice texture. To me, cakes are the most difficult baked good to scale down, and I've loved having recipes made for small batches. Tonight I made the vanilla ound cake, and it was delicious.

However, I'll say that I wasn't thrilled with the carrot cake recipe (not carrot-y enough), and my two attempts at one of her breads were utter failures. Also, I tried th raspberry cheesecake, which was just okay. I haven't really tried the pies, however.

All in all, I would strongly recommend this to any motivated baker with a small household.

Book Description

This book is intended to be a useful cluster of quick and simple recipes. All are made with common ingredients and fresh produce available in most grocery stores. In Healthy Cooking for One, each dish has been designed to serve one, in sytle.

Fast food restaurants are not my favourite as they are mostly high in fats, carbohydrates and calories, and while fast food restaurants offer biggie sizes, I prefer the small sizes. When you talk about eating well, size matters. I like to cook my own food, because it is fresh, tasty and gives me control over the serving portion and the amount of fats that I intake. Even though I have a full time job; I prefer to dedicate a short time to prepare my own meals. I look for tasty and fast recipes that allow me some evening time for myself, while still eating well. Long cooking projects are being left for another book; this one is dedicated to those after-work, early-evening meals and snacks full of taste that can be made in a short time.

Being a single mom demands cooking in small portions and minimizing leftovers. Unlike others who might prefer to cook large amounts and leave leftovers for the next day, I would rather cook a smaller quantity of food of food and have minimal leftovers. For my taste, freshly prepared food just tastes better.

I choose fresh products: roots, fruits and vegetables. My favourite dishes range from sandwiches, dips and salads to stirfrys, all with a potpourri of different flavours.

If you are looking for ideas to prepare quick, tasty dishes, in single portions. . .this book is for you.

1 out of 5 stars Don't waste your money.......2006-09-25

This cookbook was a TOTAL waste of money. The recipes were so simple that a young child could do better without a cookbook.

1 out of 5 stars No nutritional information!.......2006-08-29

How can a book that proclaims itself as a healthy cookbook not have any nutritional information on any of the recipes? There were very few (black and white!) pictures and all the recipes seemed boring and uninspired. I would not recommend this book to anyone that likes food.

4 out of 5 stars different style.......2005-12-28

This book offers a different style and taste; I like the simple and quick recipes, good for those who like small portions instead of a heavy meal.

2 out of 5 stars Not worth the money.......2005-11-18

I was excited to get this book, hoping for some great ideas for meals for one. Instead what I got was a book with plenty of "dip" recipes and salad dressing recipes. Also a section on the cooking of plantains. There is one recipe with beef (ground beef with frozen veggies... yum! not!) and one with chicken. Save your money and forget this book. I may just return it and get my money back.

5 out of 5 stars Inspiring book with good taste.......2004-09-22

Very nice addition to my cookbook collection. I have a tendency to think bigger and complicated is better. This book is a very nice reminder that the right combination of foods can go very well together quickly and without too much fuss. Simple living is alive and well and sometimes it tastes good too. Photos make the cookbook for me and this one has photos that say it all.

Book Description

With Cover & Bake, the editors at Cook's Illustrated set out to revive the venerable casserole. From Turkey Tetrazzini and Chicken Divan to Crab Imperial and Hoppin' John, casserole cooking represents the ingenuity and practicality of the American cook. In Cover & Bake, the editors set out to investigate the old standards and in the process have re-imagined the art of the one-dish meal to meet the demands of today's cook.

Here you will find classic assemble and bake casseroles like Macaroni and Cheese and Creamy Chicken and Rice as well as more inventive dishes like Mediterranean Chicken Bake and Polenta Casserole with Italian Sausage. We've experimented with techniques that allow you to cook everything in just one pot where possible, avoiding the need for hours of preparation and clean up just to get a casserole in the oven. And nearly every recipe can be made ahead allowing busy cooks to serve these wholesome dishes on a busy weeknight.

Looking beyond what most people consider to be a casserole, the editors offer a rather original take on the subject with inventive skillet "casseroles," slow cooker meals that are really worth serving, pot pies with multiple topping options (many of which you can make ahead), oven braises and stews that cook in a low oven for hours so you won't have to stand over a hot stove, and breakfast and brunch dishes that can be assembled the night before.

In addition, this book contains all the relevant tastings and testings conducted in America's Test Kitchen. Learn which casserole dish is our hands-down favorite. Are all storage containers created the same? Want to know which slow cooker has the best combination of features?

In short, Cover & Bake is filled with 200 one-dish meals for everyday cooking. We've made these casseroles a whole lot better tasting while making sure that what everyone loves about casseroles remains - the fact that they are practical one-dish meals that require a minimum of fuss and last minute attention.

5 out of 5 stars Good recipes.......2007-04-26

I have made several recipes from this book and they have been great and easy to follow. this is the first cookbook I own from Cook's Illustrated and I'm now adding one more to my collection.

5 out of 5 stars My Favorite Cookbook.......2007-04-03

This is my favorite cookbook, and I use it often. It not only has wonderful recipes that I use often, but also features little snippets and articles such as which tomato paste is best, how to know if your eggs are fresh, and how to choose a dutch oven.

My favorite recipes are the Macaroni and Cheese, which is a favorite at pot luck dinners, the Beef Stroganoff, Beef and Guiness Stews, 4 cheese pasta with basil and tomatoes, and there are dozens more I haven't attempted yet.

This book is not about your mother's (or maybe just my mother's) casseroles. The ingredients are top notch and the result is fantastic. I've given it as a gift on several occasions and can't recommend it enough.

There is not, as another person mentioned, an abundance of photos, and I do wish there were more, but I'd prefer great recipes and fewer photos over fabulous glossy photos and lackluster recipes, which I've found in plenty of other books!

4 out of 5 stars Hungry for more pictures.......2007-03-08

I am inspired by photos of the finished products in any cookbook. So, this one disappointed with only a handful of photos. I would pay a few $ more for an abundance of delicious looking pictures. Cook's Illustrated is very dependable for excellent recipes and continues to be in this book. They have ironed out the wrinkles and achieve perfection with these recipes.

4 out of 5 stars Great recipes.......2007-02-05

When I look at reader reviews of cookbooks, I want to see names of specific recipes that were outstanding, so here's one I tried last night: page 61, Chicken Casserole with Spring Vegetables and Tarragon Cream Sauce (oh, gosh, I just noticed it says it's for 6-8 people, and my husband and I snarfed down half!) Any other recommendations out there??

5 out of 5 stars SO GOOD I BOUGHT TWO.......2007-01-09

This is a great cookbook for anyone that has to cook for a group or just likes to cook dishes that can be enjoyed for the next few days. It is filled with warm and comforting recipes from a wide range of backrounds. Every recipe I have tried has come out as wonderfully as it was described. As is the case with all of the Best Recipe Classics cook books by the Cooks Illustrated editors this book includes comprehensive descriptions of the history of the recipes as well as the trial and error lessons that the test kitchen discovered in the process of perfecting the recipe. I have enjoyed this book so much that I gave it to a friend for Christmas.

Book Description

"An engaging book about life at the Executive Mansion. . . . Hillary Clinton had charged this fiercely competitive, meticulously organized chef with bringing 'what's best about American food, wine, and entertaining to the White House.' His sophisticated contemporary food was generally considered some of the best ever served there."
—Marian Burros, New York Times

White House Chef

Join Walter Scheib as he serves up a taste—in stories and recipes—of his eleven years as White House chef under Presidents Bill Clinton and George W. Bush.

Scheib takes readers along on his whirlwind adventure, from his challenging audition process right up until his controversial departure. He describes his approach to meals ranging from the intimate (rooftop parties and surprise birthday celebrations for the Clintons; Tex-Mex brunches for the Bushes) to his creative approach to bringing contemporary American cuisine to the "people's house" (including innovative ways to serve state dinners for up to seven hundred people and picnics and holiday menus for several thousand guests).

Scheib goes beyond the kitchen and his job as chef. He shares what it is like to be part of President Clinton's motorcade (the "security bubble") and inside the White House during 9/11, revealing how he first evacuates his staff and then comes back to fix meals for hundreds of hungry security and rescue personnel. Staying cool under pressure also helps Scheib in other aspects of his job, such as withstanding the often-changing "temperature" of the White House and satisfying the culinary sensibilities of two very different first families.

Customer Reviews:

5 out of 5 stars Lively vignettes and fine recipes........2007-09-02

Walter Scheib provides stories and recipes of some eleven years as White House chef under Presidents Bill Clinton and George W. Bush, so anticipate a collection which is far more than your usual cookbook - and which will appeal to collections strong in culinary history and presidential trivia. Scheib was hired by Hillary Clinton in 1994 to become White House chef and faced taking an outdated kitchen focused on traditional French cuisine and making it a showcase for modern American foods. His memoir embraces some eleven years of culinary history at the White House under two different administrations and pairs original recipes with accounts of Presidential family encounters, making for both lively vignettes and fine recipes.

5 out of 5 stars A Special Guest.......2007-07-03

My husband and I own the Genesee Country Inn in Mumford, New York. Walter Scheib, the former White House Executive Chef, stayed with us while he attended and spoke at the "Hail to the Chief" fundraiser at the Genesee Country Village and Museum. Mr. Scheib has a plethora of fanscinating stories of life in the White House and especially in the White House kitchen. His eleven years serving two presidents is revealed in this "cookbook" filled with stories about living and working in the WH kitchen. From Chesela's favorite cookies to the First Ladies luncheons, Mr. Scheib takes you behind the scenes to what it is like to cook for the most powerful leaders in the world. This is a must read for anyone who enjoys cooking and kitchen poitics.

4 out of 5 stars A wonderful read and great look into the daily routine of White House living.......2007-06-05

Scheib has given us a pretty good look into the life of a White House chef under two administrations: one (the Clintons) that really wanted to make the White House into a place of entertainment and a place to show off America's best foods, and one that, well, isn't interested in that.

The recipes are good, interesting, and worth the cost of the book as well.

But what I find most interesting in the book, and what I was most hoping for when I ordered it, was a look at the non-flashy daily grind of life in the White House, and Scheib provides us many anecdotes, from Bill Clinton ordering huge steaks when his wife was away, to George Bush popping his head into the kitchen after a run and asking "What's for lunch?"

I enjoyed the stories of the giant dinners and elegant soirees, but it was the daily stuff I found most interesting: where the First Families enjoyed eating, their comfort foods, Chelsea Clinton making cookies with friends, Chelsea's first adult-style evening of entertaining, Scheib fighting with the purchasing staff to get better quality produce, that Bush likes his toasted cheese sandwiches cut at an angle, how the White House staff fill the elevator at lunch time making it difficult for the chef to get food to the president while still hot, the personalities of different people, and so on. While it is a world famous house, with incredibly important stuff going on, it's still a workplace for many with all the personality adventures of a workplace, and it's also home for one family that, for the most part, act like any other family or any other people. That is the aspect of the book I most appreciated, and which I wish had a lot more.

I also appreciate that Scheib refused to dish dirt on either family, or use the book as avenue to embarrass to sensationalize.

While the book is wonderful as it is, I think that a book about more than a decade in the White House deserves a lot more text. It reads much too quickly for subject matter that is this interesting and fascinating. Color photographs would have been more appropriate, too.

"White House Chef" shows some of the excitement of the big state dinners and other large entertainments, but is mostly an intimate look at some of the daily grind of the presidential family and the White House. Although we cannot all be president, we all eat, and so a book looking through the lens of food makes for a compelling read, tying us together on a more human level than just a biography or history book. But it should have been bigger, more in-depth, and with color photographs. Not many people are in a position to write a first-person account about being the chef at the White House. The rarity of that situation, I think, deserves a much more in-depth cover of the experience, and that's why I give this four stars.

2 out of 5 stars needs some help.......2007-05-14

Cookbooks are great as teaching tools, inspirations for new meals, or often just plain interesting reading....this book, teaches and sometimes inspires but it is bland, without color photos to share the chefs excitement, and therefore way overpriced...thumbs down.

4 out of 5 stars White House Chef: Eleven Years, Two Presidents, One Kitchen.......2007-03-25

Don't buy it if you're a Republican. The author can't help getting political as he contrasts the Clinton and Bush White Houses (the Clintons are wonderful, the Bushes not so great). Clintonites will eat it up. Good recipes, okay writing with excellent editing, fine pictures. Independents and hungry non-politicos will give this four stars.

5 out of 5 stars Terrific Cookbook!.......2007-07-29

The recipes are hearty and filling, taste and look great too. My husband raves each time something new comes from this book!

5 out of 5 stars --Very enjoyable--.......2006-04-20

COOKING FROM QUILT COUNTRY is a pleasure to read. The title comes from the fact that Amish and Mennonite people are famous for their quilt making skills.

This book gives a little background of the Mennonite and Amish sects and how they came into existence. The roots of the two groups originated with the Protestant Reformation and the Swiss Anabaptist movement. The leader was a Dutch priest by the name of Menno Simons.

This very informative book is filled with wonderful recipes and many photographs. Because the Mennonites and Amish have traditionally been farmers, they're also known for their wonderful foods. There are recipes for everyone here, but I was especially interested in the different vegetable dishes that are presented.

Cooking From Quilt Country is by far the best cookbook (and I have many) that I have ever seen. Whether you want to lose weight or gain weight , recipies can be adapted for your own use and taste . Best of all, recipies can be done "by the book itself". I would honestly say this could be the only cookbook one woulld ever need and definitely would make a lovely gift!

5 out of 5 stars This is a wonderful cookbook........2005-06-18

There are dozens of recipes I want to try. I tried the custard cornbread and there will be no going back---this is my new favorite cornbread recipe. And I had an excellent recipe which was often requested, but this is head and shoulders above it! And what a beautiful book! The photos are superlative. Wonderful for both reading and cooking.
