4 out of 5 stars This book is not bad.......2007-08-23

I like this book, its just what I needed but I wish the author could've provided pictures of the recipes, that would've made it more exciting. Overall, I would recommend this book.

3 out of 5 stars If you have tons of time, money , effort OR are looking for fresh ideas, this is okay.......2007-03-09

I am home all day and have lots and lots of experience in cooking all kinds of foods ranging from easy to very difficult. While the recipes in this are not super difficult, this is not a cookbook for most of us.

Personally, I got this book to make dieting EASIER. I wanted a list of things I can throw together for 3 meals a day, and end up with about 1200 calories no matter which I picked from each meal choice. This book, doesn't do that.

For example, for breakfasts: individual fruit platters with hot popovers (huh?) or Fresh Banana-Oat Bread and vanilla yogurt with sliced fresh peaches. Geez! That is a lot of work for BREAKFAST!

Lunches: Curried Tuna and Pecans in Pita Halves with Ambrosia Fruits. Sure Or Wild Rice-Sausage Chowder with fresh tomato
I mean, I have all day, and I'm not making this for lunch. Dinner, maybe.

Dinner: Snapper on a bed of spinach-cheese sauce, basil baked tomatoes and gingered rice. I'm exhausted just thinking about it.

If you want NEW and FRESH recipe ideas, this really is a great book, so I gave it three stars. But for most regular joes, this is not a great book, recipes are too complicated and if it's too much effort to just eat every day, folks will drop their diet and eat pasta and chips instead.

3 out of 5 stars Measurements.......2007-01-31

I too thought that this book would be a big help to one person on a diet or with a restricted diet. Maybe if the portion amounts, sizes (e.g., 1 cup or 3 oz.) were added it would be more helpful. As it is all the recipes say for four and so I guess you make the recipe and then measure the entire amount and divide by four to get the portion amounts. There are also no carbohydrates listed. I was disappointed.

5 out of 5 stars Quick & Easy Recipes is very true........2007-01-17

These recipes for the most part have items you would already have at home. They are simple and very good. My husband and I have enjoyed everything we have cooked. To me, this is a must have if you are trying to either lose weight or just trying to stay healthy. I wish she had more that I could find.

2 out of 5 stars Seems Good, but Isn't..........2007-01-15

I thought this cookbook was going to be great to help me eat 1200 calories a day. Unfortunately, the recipes in this book are so unusual for lunch and dinner that I didn't even attempt them. If you're cooking just for yourself, it's probably fine, but don't expect your family to like dappling in recipes such as rolled ham with cream cheese and sweet red poppy fruit-lettuce platter.

I'm glad that I bought the American Heart Association Low-Calorie Cookbook: More than 200 Delicious Recipes for Healthy Eating. You can still manage your 1200 calorie diet using this book and the recipes are much more down to earth than this cookbook. You can read my review on that cookbook to get a better idea of what you can make for a meer 300-400 calories a meal. PLUS DESSERT!!!

5 out of 5 stars All your Favorite Foods - Lots of Fun!.......2006-05-12

Love this book! Lots of great recipes and easy planning.

3 out of 5 stars Not What I Thought.......2006-03-16

I had thought this book would be full of common recipes but instead the recipes have lots of ingredients & are just more than I was looking for.

5 out of 5 stars Great for the beginning cook!.......2005-12-29

I was a little intimidated when I saw the recipes, because some of them have a lot of ingredients. Well, a lot for me, who's more of a '4 ingredients or less' type of person. But they're explained really well, and the steps themselves are simple. The ingredients that I've encountered so far are simple to find, and the results are tasty, simple food. Some of the receipes might be a little too elementary for people who have a clue in the kitchen, but I really don't, so it helps me out a lot. Plus, there's a section for kid-friendly dishes, and another that puts together menus for 'fancy meals' with 2-3 dishes. They're a bit more exotic than the tuna salad and angel hair pasta picatta I've tackled thus far.

Oh, and before the section on recipes they have general cooking tips, which is really great. I really like the 'aisle-by-aisle' guide section. It helps to know how to properly store the fruits and veggies I get (and for how long), and what the different health aspects are to different types of fish or poultry or beef, or what different spices are typically used for.

So, for me, this was a great book. Now my only problem is I have so many leftovers piling up because I want to try everything!

5 out of 5 stars Terrific!.......2004-05-16

This is a great companion to Joy Bauer's groundbreaking 90/10 Plan. This is a diet plan that doesn't feel like one and offers stunning results without giving anything up. The recipes are accessible, easy to prepare, and offer a wide range of options for even the fussiest of eaters. This is a book to be used for years to come.

5 out of 5 stars Great book.......2007-09-18

Dana writes the most useful cookbooks - no pictures but the recipes are easy and delicious.

2 out of 5 stars Photos would have been nice..........2007-08-26

Its ok. The main reason I got this cookbook, based on the title, is to avoid excessive sugar, or, hopefully, to cut it out completely. The cookbook offers carbs and useable carbs, as a total, but doesn't list sugars specifically. Also, I would have prefered some photos. Its functional, I would go to this book with a mission or a plan. Its not something I will leisurely look through for ideas.

5 out of 5 stars very good recipes.......2007-07-27

I am currently on a super low calorie diet when I get off of that this should be very useful in keeping it off

2 out of 5 stars An average guy.......2007-06-16

While there is some useful nutritional information in this book, I think that the book is misleading in several ways and I don't think it was worth the purchase.

It's misleading to title it "every calorie counts" and then tell the reader she in not counting the calories from sugar alcohols used to replace the sugar in many recipes. She claims there is no reliable way to count those calories yet those calories are routinely listed on food labels and the product labels of the sugar alcohol manufacturers.

It's also misleading to say there are 500 recipes in the book when many are but small moderations of one master recipe. Do readers really need 6 variations of the cauliflower "mashed potatoes" recipe or 11 variations of the cauliflower rice recipe? It also annoys me that she only included a few baked goods recipes when her previous books had more of them.

Further, the book claims that these are recipes "the whole family will love"; yet many of the recipes are not just not mainstream. Do kids really love roasted turnips or cumin mushrooms (or the 6 variations on it)?

If you are a low carber or if you have a family to feed and are looking for ways to replace mainstream recipes with healthier alternatives, I think there are better and more creative mainstream books out there, even some of Dana's previous books. I just wanted to post this review because I want others to be aware of what I consider to be shortcomings in this book. I have returned my copy.

5 out of 5 stars Dana is the best!!.......2007-05-27

Every cookbook author should read her books. She has a down to earth, easy to understand style that makes it seem as if she is just your friend or neighbor sharing her recipes with you. I own nearly every book she has written already and plan to buy the rest as soon as my social security check arrives. I have also purchased them all for my daugher and her husband, avid low carbers as well.

5 out of 5 stars The recipes allow one to truly recreate the spa experience........1999-11-08

I was a guest for one week at The Golden Door in Escondido, CA the week of September 7, 1997. The experience was one of a lifetime. The most memorable experiences were the meals. And no, we are not talking all nuts, grains, oats, and greens! Although I am vegatarian, there was chicken, salmon, and other meat served to non-vegetarians. I remeber thinking, "If I can get food like this at home, who needs to go to a spa?" A "conscious cooking" lesson in Michel Stroot's kitchen at the spa was one of the featured events that Wednesday September 10. The cooking was surprisingly simple, yet the results elegant and delicious. The basic concepts of healthy cooking were emphasized - and fortified with a cooking demonstration. Dahl and an apple pie were made while the audience watched - from start to finish - under an hour. And yes, we ate the proceeds. Oh, and there were invaluable tips on making stocks - the real secret to adding flavor without the "bad stuff". The audience observed the Golden Door trademark vegetable broth being made (we lined up for this deliciou concotion like lemmings every day at 10:50 AM). I for one was shocked at how easy it was to please so many with such little effort. I couldn't wait to get home and try out what I had learned. Fortunately for me, the recipe book came out soon after my stay at the spa. I can honestly say that the recipes are quite easy to follow. The ingredients required are obtained with relative ease. Most importantly, the results are EXACTLY like being at the spa! That life-changing week in September 1997 now lives on every day of my life. I highly recommend this book for the simple, elegant, healthful, and delicious recipes contained in it. Vegan and vegetarian recipes are included. (I had my first vegetarian hamburger at the spa - and had to ask the staff to make sure I had not received a burger made with some sort of meat by mistake! )

Simplicity as an art form creates the intrigue and attraction of Healthy 1-2-3, a nutritional cookbook that utilizes only three ingredients per recipe. Award-winning chef and author Rozanne Gold continues her 1-2-3 series with this "Healthy" entry, made with the calorie-conscious cook or host in mind.

Though three ingredients quickly can be construed as a restriction, Gold cleverly maneuvers around her own concept, all the while abetting her healthy cause. If, for example, she has a recipe featuring a particular vegetable, she uses that vegetable's own broth to create the sauce for the dish. The Roasted Asparagus and Orange Salad with Asparagus "Fettuccine" uses a fresh orange vinaigrette (tossed with roasted asparagus) and a fettuccine that is not pasta, but rather actually shaved asparagus stocks.

Gold also gives nutrition lessons throughout--teaching that all foods groups have an important place in a balanced, nutritional diet. Even foods that are high in fat and calories, such as Brie cheese, contain important nutrients that the body needs, even though they've been stricken from many diet plans.

The recipe selection addresses the full range of potential users, from the average hungry guest to the most assiduous, observant vegan. For example, the beverage combination of watermelon, pineapple juice, and fresh mint for a Watermelon Splash is simple in both preparation and the expectation of the pallet, while Immune Tea, made of kombu, shiitake mushrooms, and fresh cilantro, will probably be a stretch for the average American tastes. The quality of food photography and bold colors of this book add an extra flair to the healthy recipes. --Teresa Simanton

Book Description

In the kitchen, award-winning chef Rozanne Gold proves (again) that three is a magic number. On a mission to provide health-conscious home cooks with a remarkable assortment of appealing, wholesome dishes, Gold maximizes the flavor in her recipes by removing extraneous ingredients and reducing calories and fat. The secret lies in simplicity: Each recipe in Healthy 1-2-3 uses only three ingredients!

Eschewing today's exclusively pro-protein, anti-carbohydrate trends, Healthy 1-2-3 demonstrates that proper nutrition is all in the balance. There are no forbidden foods. Everything from red meat to red wine has its place. The vivid, unadulterated taste of the best ingredients reawakens the senses and reminds us just how satisfying real food can be. Let Gold, the "diva of culinary minimalism," count the ways: Poached Salmon with Cilantro-Yogurt Sauce; Polenta Tart with "Melted" Tomatoes; Cumin-Crusted Lamb with Apricots; Steamed Mustard Greens with Roasted Garlic Butter; Warm Rhubarb Compote; and Chocolate Mousse Cake.

Because all of the dishes are low in fat and/or calories, Healthy 1-2-3 can help promote weight loss or maintenance. If weight isn't an issue, then simply take advantage of all the latest research on the inherent and healthful benefits of fresh, natural ingredients. With enticing, daringly easy recipes, Healthy 1-2-3 offers a sustainable way-of-life diet. It's a delicious new way to eat everything.

5 out of 5 stars This is my Bible for weight loss!.......2006-07-02

I've cooked almost everything in this book and it has all been over-the-top good. I especially love the walnut cake and the chicken with avacado and mango mousse. The swordfish with corn and chilie cream is also outstanding and a favorite when I entertain. I have all but one of her books and I'm going to buy that one now!

4 out of 5 stars Beautiful and Inspiring, if not always pracitical.......2004-10-23

I bought this as one of the first cookbooks I ever purchased while in collge. Ambitious is one word for that!
This cookbook is beautiful and inspiring. The photos are wonderful, it has suggested meals (with their nutritional analysis). I really love how original and unusual many of these recipes are. This is not the kind of cookbook that insists you substitue applesauce for butter and other such nonsense- rather, these are recipes that are inherently healthy but delicious in everyway nonetheless.
I made a huge 11 lb ribeye roast recipe from the cookbook (cured in salt, fresh dill) and served it with the wasabi butter asaparagus for a big family Passover meal. It was a HUGE hit, and the family wants wasabi butter on everything now.
I've also made the pink grapefruit with guava syryp and candied violets (which were a trick to find), many of the little salads, and even the 'laughing milk', a strange drink made of whipped egg whites and sugar. The fish recipes are simple and among my favorites.
My only complaint about this book is that some of the recipes are the author trying so hard to force a dish out of three ingredients that the recipe becomes cumbersome and over-complicated. I like the recipes that benefit from the simplicity of using only a few ingredients, rather than seeing how many different ways you can use broccoli in one dish.
Also, unless you live in New York City and know where to find the fish market or the produce market where chefs shop, there are some ingredients that you will simply never find.
Overall, I do adore this cookbook and I drag it out time and time again when I want to make something fun and a bit exotic.

5 out of 5 stars Delicious Food, but not Easy or Cheap.......2004-01-29

This is one of my favorite cookbooks. However, because there are so few ingredients, you need really good quality ones to pull these recipes off, which makes them relatively expensive. There are some cheap meals (Pasta in the style of Sardinia, one of my favorites, about $10.00 for a 3 person meal) but expect to spend between $30-$50 dollars for every entrée serving 3-4, with appetizers a little less. Nor does the number of ingredients guarantee speed or simplicity - most of theses recipes take 45 min - 3 hours. However, if you have the time and money, I have made some fantastic dishes with this book. They're so good they don't even taste healthy.

2 out of 5 stars Good if you can obtain the exotic ingredients.......2002-06-08

This book would be good if I had a bigger food budget as many of the recipes call for more exotic foods and spices than I generally keep in my kitchen, or can afford to buy. Lots of good pictures to drool over though.

5 out of 5 stars A Must-Have Cookbook.......2001-10-31

Overall, this is the best cookbook I've ever used. Every recipe I've made is absolutely delicious, and for non-veggie eaters like myself, it is a God send. This is because the book encourages one to try different types of vegetables cooked in different ways and with different sauces & accompaniaments. Don't be fooled though--while some of the recipes are quick and simple to make, some take quite a lot of time--all the better to savor the finished meal, however. This book has truly taught me to enjoy the entire process of cooking, from shopping for the best ingredients, preparing the meal, then enjoying it with a nice glass of wine.

These recipes definately save fat, calories and time. The meals taste great and you don't feel like you are sacrificing on taste. Some recipes do take a little more time than the book states but they are well worth it. I also like that they break down the calories by what percent come from fat. I like the recipe tips offered in the book as well as how the book is broken down by desserts, meatless, fish, etc. This is a winner which I will send to my friends.

5 out of 5 stars Doesn't taste low fat or low cal............2005-05-23

I plan my weekly menus from this book every Sunday morning. There is something in there for every day of the week.... chicken, beef, pork, seafood and even pasta..... all low fat and low calorie. The recipes are so easy and the ingredients are typically your normal kitchen staples with an occassional item added to the normal shopping list.

There's nothing like getting home after a long day at work and still having to make dinner. That's where the Quick & Easy part comes in. These recipes make getting dinner on the table a snap. Usually with-in 30 minutes or less.

You can't go wrong with this book. Every recipe is easy to follow and tasts great. We haven't made 1 thing in the past 4 months that we did not enjoy and we cook from these cookbooks everyday. I had several other cookbooks where I had written on pages "YUCK!" or "NO GOOD" when I've tried a recipe and didn't like it. Not one of the Cooking Light recipes have I done this to. I've since thrown away all the cookbooks I had that are not Cooking Light.

I own 17 other Cooking Light cookbooks, some have easier recipes than others, but this one is my favorite. The taste of the meal is as if you had ordered it from a very good restaurant. My husband and I recently went on a cruise and he said "I like your cooking from those cookbooks better than the cruise food". What more can I say? Buy it, you'll love the way you look and feel. Slimmer and healthier.

5 out of 5 stars Outstanding Taste & Real Time Saver.......2003-04-20

This book has by far the easiest and best-tasting recipies. It is perfect for a small family who are health concious and prefer spending time together rather than in the kitchen. The meals are so flavorfully creative and my family just loves everything that comes out of this book. The best part is the book has great time-saving and serving suggestions that really complement each other. I would recommend it to everyone.

This is one of the early books and has nutrition and exercise information included. There are a couple of recipes I am interested to try. The previous owner had flagged a Mexican salad that looks good.

5 out of 5 stars Best cookbook ever.......2007-07-02

The Complete Cooking Light Cookbook has become my absolute favorite cookbook, serving as an excellent reference guide and source of new, healthy recipes. I've fixed numerous recipes from the book that were a great hit with my family and friends. If you only buy one cookbook, this is the cookbook to have.

Great cookbook. Blueberry coffee cake on cover of book is outstanding and easy to make.

2 out of 5 stars a little less fat, but alot less rewarding.......2007-02-05

The low-fat craze that was the rage in the 1980s and 1990s is continuing to wane, due in part to the increasing obesity and the realization that "low fat" doesn't necessarily mean "more healthy." This complete cooking light cookbook has recipies that, by and large, result in less flavorful and less "competent" cooking, with (in my opinion, at least) minimal "health" advantages vis-a-vis any reasonable cooking practices. Take the chicken pot pie recipie in this book, for example. Following this recipe results in a bland, very watery mess -- toped with hardened chunks of crust made with flower and butter. Neither the filling, nor the crust, will leave you satisfied. (Don't they test the recipes?) Anyway, I gave it two stars for some low fat desserts that were not terrible. A quick look through the Amazon.com collection of cookbooks will result in many better alternatives.

I purchased this book because my daughter-in-law has one, and I was impressed with hers. I did order this book, and after looking it over, I decided to order the New Complete Cooking Light Cookbook. I am waiting for it to be delivered. I know I will enjoy it.
