This book gives information about alternatives to refined sugar. It is a very good book with excellent recipes (from simple cookies -the chocolate shortbread sounds terrific- to cakes and ice creams. But, something important, be ready to buy or order (there is a page of sources. Fantastic!) "Sucanat" or "maple sugar", "rice syrup" or "maple syrup". Because if you do not have these on hand, you cannot try the recipes. There are also some recipes with honey, an ingredient that is easier to find.

Most of the cookbooks I own come with the appliances I buy. This book is an exception. I enjoy the flavours of maple syrup and honey and was delighted to find a cookbook that caters to my tastes. I find the recipes easy to follow. I'm not an expert in the kitchen. Beside each recipe is a margin where the author has put some notes and room enough for you to enter any notes you may want to as well. At the end of some recipes are tips that give you a clue as to what to expect if you've never had the experience of, "Carmelizing Maple Syrup", for example. Another tip I really liked was the suggestion of using a variety of apples in my apple pie. That was a tasty surprise. The Pastry recipe, which she credits to Julia Child, is the best I've ever had. If you are a chocolate lover, try Aunt Josephine's Chocolate Cake. It's heavenly. I find the author's approach to the reader to be like a personal tutorial. It's like she's right there watching over and encouraging your every move. I haven't tried all the recipes yet but I'm getting a little braver as I tackle the standards: date squares, brownies, pies, and cookies. Thank you Carrie Davis for the "Naturally Sweet Baker".

As a professed chocoholic I was prepared only to savour the chocolate recipes in Carrie Davis's The Naturally Sweet Baker. But to be fair, I didn't restrict myself to those, although there is an ample supply. And I have to admit, that Davis's Maple Mousse is just about the nicest dessert I have ever made or eaten! And my guests raved about it too.

Of course, Aunt Josephine's Chocolate Cake was a real winner as well. This cookbook is a great resource for information about alternatives to refined sugar in your baking, and an absolute treasure trove of recipes. Check it out for some fun, adventure and delicious treats!

This is a good book. It gives you the nutritional breakdowns which is nice, and compares them to the same products made with sugar. She uses healthy ingredients, but not much in the way of whole grains. It's definitely low-carb friendly, as you can easily see how many carbs each recipe will set you back. None of the recipies include other sugar sources which is nice to see in a stevia cookbook.

The Rich Ricotta Cheese Pie was a huge hit with my family. Also tried the cannoli with excellent results. The best part is NOOO guilt since all the deserts are sugarless. Can't wait to try the rest.

The recipes are interesting and fill the hunger for "sweet" desserts for those of us who must limit their sugar intake. However, some of the baking instructions leave parts out -- baking temps, for example. As I am an experienced baker, I didn't have much trouble with this. Also, I found the times not exactly correct for my oven -- the book has them much too long. Despite these drawbacks, I would still recommend purchase of this book.

Buy this book if you want recipes that use Splenda products. Don't buy it if you want recipes that are low-calorie, low-fat, or even low-sugar (some contain a Splenda product but are also loaded with corn syrup or molasses). The occasional nod is made to calorie reduction where no particular work is required to adjust the recipe, for example replacing the regular milk in a recipe with low-fat milk. But by and large, nothing else has been done to standard baking recipes except to swap some Splenda product or other for sugar.

I have been using stevia as my SOLE sugar replacement for just about a year now with the aid of several cookbooks to keep me going. I find it hard to use many recipes that ask for non-nutritive sweeteners because they usually happen to be low-carb, high-protein/fat, and animal products abound. My first breath of fresh air to this dilema was this book. It uses whole grain flours and provides many purely vegetarian (vegan) alternative recipes.

I have one issue with the book that leads to two problems, but I cannot seem to find a stevia cookbook that has risen above it yet. The author seems to be using a low quality of stevia, and chooses to remedy this with higher amounts of fat and calories to compensate. This is unfortunate because stevia's sweetness and bitterness varies with the brand and I have found that much of the optional fats and sugars in the recipes are unnecessary with a higher quality. However, this is easily remedied, and can be helpful when cooking for less adapted palates. (By the way, I am not a low-fat proponent by any means, so when I say this, I really do mean unnecessary)

Just as an FYI, some of my favorite brands of stevia (with regards to both price and taste) are KAL's brand of pure organic stevia extract, and NOW foods conventional stevia extract, in that order. KAL's seems to be a little bit stronger and less bitter than NOW's brand, but NOW's will definitely do the job.

My preferred cookbooks for stevia at the moment actually have little to do with stevia. They are the all fruit-sweetened dessert cookbooks on the market, either for toddlers or health-nut adults, that rely on fruit juice concentrates and fruit purees to sweeten desserts. I use these because the concentrate is easily replaced with an equal amount of water (or juice for flavor) and less concentrated purees (dates for apricots or applesauce), which can then be sweetened up the wazoo with stevia, or that is, to taste. The older, naturally sweetened hippie dessert books also come in handy, and I have foud that in baked goods, one cup of liquid sweetener (i.e. maple syrup etc...) can be readily replaced with equal parts applesauce and milk or water to make a cup, with a bit extra leavening agent to compensate the fruit's acidity. Also, if a recipe uses white flour and sugar, a direct replacement of whole grain flour and simply omitting the sugar works worderfully. The whole grain requires more liquid than the refined, so it works well by compensating for the omission of the dry sweeteners.

So if your looking for a bit of an intro to stevia, this will do the job, provided you look into a better tasting stevia than the ones recommended in the book (Sweet leaf and wisdom herbs brands, OK in tea...I guess I am spoiled). However, if you are looking into expanding your repotoire, I would recommend converting recipes from your older "naturally" sweetened recipes, I beleive you might be a bit more pleased.

As a recently diagnosed diabetic I thought that my days of wonderful desserts were over! Then a friend found The Type 2 Diabetes Desserts Cookbook at our local library and brought it to me to read. I have thoroughly enjoyed reading about Ms. Sonerals diabetic experiences as she writes about being a diabetic with an up-beat point of view. The book, not only has recipes for delicious sounding desserts, but also useful cooking hints and information. As a confirmed 'sweet-a-holic', I must say that after reading this book, my outlook for dealing with the diabetes is definitely brighter! Thank you, Lois Soneral. ...

It's also different because each recipe makes one or two servings--no waste, no leftovers--for people with diabetes who are living alone or with one other person. No-Fuss Diabetes Recipes for 1 or 2 presents 125 recipes--both traditional and ethnically diverse--that "match good taste with good health" and don't require odd, hard-to-find ingredients. Each major section (breakfast, lunch, dinner) opens with 5 quick recipes that require no more than 8 ingredients and no more than 20 minutes to prepare. Most recipes are modifications of foods you've always liked: Huevos Rancheros, several types of muffins, Black Bean Burritos, Sweet and Sour Chicken, Chocolate Pudding, Scallop Fettuccini.
