Reasonable cookbook.......2005-12-31
This cookbook has some interesting recipes which are not particularly hard to make (like all vegetarian recipes, tends to use lots of ingredients). My main complaint is that it's not particularly authentic and is more an Americanized-vegetarian version of Mexican. If you want authentic, I think you need to keep looking.
No pumpkin in the Pumpkin-Rum Rice Pudding.......2005-11-20
The back cover of the book lists several titles of sample recipes, such as the Pumpkin-Rum Rice Pudding. So I looked up the recipe in the cookbook. Although the side note on page 149 writes, "Canned pumpkin brings a taste of autumn to this savory rice pudding treat," there is no pumpkin in the list of ingredients! and it is not mentioned in the recipe steps either! This is poor editing of a cookbook and makes me wonder whether other recipes in the cookbook have the complete list of ingredients and right amounts... Also, if you are used to GOOD authentic Mexican food, the recipes won't satisfy your cravings.

Definitely helped me get started on a few basic ones. Some salsa tips are great. I had a hard time finding some of the ingredients though. All said and done, it's a good value for money.
Excellent cookbook for fast, low-fat Mexican food!.......2001-02-24
This is terrific cookbook! After reading the reviews below I had mixed fellings about spending the money on this book, but I am glad I did! Our family has tried numerous recipes from the cookbook and each one has been excellent. The ingredients and measurements are right on the mark and each dish leaves you wanting more. The Calabacita Vegetable Burritos, Mexican Rice and Peas, Vegetable and Brown Rice Burritos, and Risotto Burrito with Sweet Potato were excellent. Even my husband asked for seconds which is saying at lot! Try this book...you will enjoy it!

I disgree with the reviewer from NYC. I've been cooking out of this book for a couple of months now and find the recipes easy and very tasty. Even my 17-year-old stepson really likes them. I've prepared Calabacita Vegetable Burritos, Eggplant and Red Bean Chilaquiles, Tamale Bean Pie, Portobello Burritos with Spinach and Goat Cheese, and Baked Tempeh Chilaquiles. OK, so they all don't take less than 30 minutes to prepare. I guess that's because I choose to chop, slice, and dice the veggies myself rather than use a food processor. I'm happy if dinner is on the table an hour after I get home from work
The other books in this series are also good--Low Fast and Fat and Low Fast and Fat Pasta. I also got the Low Fat and Fast Asian, which is a disappointment because it has so many weird ingredients that you can't pick up at the grocery store.
But try the Low Fat and Fast Mexican--you'll like it!

Little too fat for me........2007-02-03
I'm a vegetarian because I try to be careful about the food I eat. While there some useful recipes in the book. I found that many were just way to high on the fat-o-meter and I will probably not use the book too much.

This cookbook is one of my alltime favorites, and I have A LOT of cookbooks. The recipes are simple yet delicious. The bits of history and folklore are delightful. The classics are here in top form, and are often presented with new and innovative twists in addition to traditional preparation. This is a must have for ANYBODY wanting to cook up some good Mexican food, not just vegetarians!

All the favorites are in here - quesadillas, guacamole, wide variety of salads, enchiladas, moles, cillies rellenos, tamales etc. A number of dishes I'm not familiar with too which makes it fun. Recipes are all pretty straightforward and easy except for a few. Would have been nice to have some photographs but the text is good.
Vegetarian Spin on Classic Southern Mexican Cuisine.......2003-01-01
I bought this book in San Cristobal during a backpacking trip through Mexico a number of years ago. Thinking what an unusual and serendipitous find this was - authentic southern Mexican dishes retooled for the vegetarian - I was excited to get it home and sample some of the recipes.
I've been consistently impressed with the book and the dishes made from it since. Thankfully, Kippy Nigh provides a detailed listing of Mexican ingredients and techniques as primer for the non-Mexican cook, who has most likely never tasted let alone attempted to prepare authentic Mexican cuisine. In "A Taste of Mexico" you'll find recipes for typical market food such as quesadillas filled with unusual but delicious ingredients such as huitlacoche or fleur de calabasa (which I became addicted to while traveling), chilaquiles, chayotes, empanadas, and horchata, as well as more familiar favorites.
Much of the book focuses on recipes that don't traditionally call for meat such as vegetable soups, appetizers, salads, beans, and accompaniments. However, many main dishes are modified by replacing the meat with TVP, a soy product that does a reasonable job replicating the taste and texture of ground meat, as in the case of her enchilada, chile relleno and tostada recipes. When I've made these dishes for non-vegetarian friends they're always surprised that they don't contain meat.
This is definitely a book I recommend to vegetarians and non-vegetarians alike.

Not Great.......2006-08-17
First, this isn't vegan at all for anyone preferring that. Nor is this a healthy cookbook instead using lots of butter, sour cream, mayo, canned mushroom soup... in many of the recipes. No suggestions of light cooking or fresh inspired ingredients. There are much better books out there if you love mexican food.

A Wise Approach to Mexican Cuisine.......2006-05-09
I acquired this book while living in San Francisco, where cheap delicious fresh Mexican food was so readily available that I never bothered making it in my own kitchen. Now, living in the Midwest, I'm delighted to have Victoria Wise as a guide.
I would emphasize the term "guide" because Wise's book encourages and at times necessitates taking matters into your own hands. The prefatory remarks that frame each recipe prove helpful and engaging. Another Amazon.com viewer faults Wise for including tomato paste and water in a recipe for "Fresh Tomato Salsa." However, the reviewer neglects to mention that both ingredients are marked optional: "a little sugar or tomato paste is included if the tomatoes need sweetening or thickening," and add water "as needed, depending on how juicy the tomatoes are." The book teaches rather than directs. Thankfully so: "Savory Chickpea and Walnut Empanada Filling" proved delicious, though only after I increased the spices (doubling! the cumin) to suit my taste.
Like many cookbooks published by Chronicle, the recipes are heavily inflected by California cuisine. Witness "An Unclassic Tostada" comprised of black beans, Golden Rice, and mango. Or a twist on the Caesar: a salad of romaine with creamy Roquefort dressing and cornmeal chili strips. "Authentic cuisine" simply does not exist anywhere, and Wise keeps this always in mind. The introduction emphasizes the many influences present in Mexican cooking, and each recipe's prefatory remarks nicely contextualize the dish-- reporting on her research and acknowledging elements gleaned from "upscale turista restaurants" and one-man stands in Coyouacan.
The dough for empanadas is mind-blowing: shockingly easy and simple but always a hit at parties. Wise's thoughtful book keeps Mexican food alive and interesting...even when tomatoes aren't at their ideal juiciest.
A mixed bag.......2004-07-04
I like Mexican and was very happy to find a vegetarian Mexican cookbook that looked good. Needless to say I was disappointed.
For starters, the "fresh tomato salsa" includes tomato paste and water! Other recipes are better, but nothing really stands out. Pictures are rare and with all the cheese in them the food does not qaulify as healthy. This is not a cookbook I end up using often.

Chapters include salsa and condiments (piquant sauce, smoky tomato ketchup, papaya and peanut salsa); tortilla cuisine (chiles con queso, chick pea and walnut empanadas); soups (melon and potato, avocado vichyssoise); pasta, rice and beans (vermicelli with tomatoes and chipotle chiles, Mexican pilaf, bean cakes); salads and vegetables (fava bean stew, cactus paddle salad); sweets (flan, rice pudding).
Gorgeous color photos are large close-ups of beatifully presented dishes and, while this is no low-fat cookbook, Wise uses no lard and has reduced fat in many recipes. She includes a glossary with preparation tips.
creative mexican recipes.......1999-11-07
You might want to start with "vermicelli with tomatoes and chipotle chilies". It is a definite crowd pleaser and a very different way to prepare pasta from the traditional italian. With this recipe and several others, Victoria Wise has put together a very successful mix of flavorful and relatively easy dishes. She also provides a sufficient glossary of terms and a short history of Mexican cuisine--important for a beginner.

A different perspective.......2007-08-24
I happen to quite like this book and the series as a whole. They are very much about giving people options and suggestions when venturing into a new way of cooking and a great help with easing the transition that many folks struggle with.
With regards to the previous review, I am not really sure how many cookbooks out there actually contain nutritional info. I would suggest it's advisable that anyone starting to eat a vegan diet, should have (and/or should seek) a basic sense of vegan nutrition.
And yes, many of the recipes contain nuts. But that is because nuts are one important source of minerals, vitamins, protein and fat when eating vegan. There are also a large number of recipes with wheat, which doesn't help folks out that are gluten intolerant. Yet it is a *vegan* cookbook. Not a 'nut-free' or 'gluten-free' cookbook.
Nor does it claim to contain authentic vegan recipes from Mexico. Mexican food is generally not vegan. (Neither is Italian, Thai...etc)But the series uses the influences and spices of the different countries, altering recipes in order to fit into a range of ingredients that don't contain animal products. It does what it says on the tin - it's a vegan cook book.
So I would recommend this book and the series as a whole, especially for people just starting out with vegan food or those simply wanting to learn how to fix tasty food without meat, eggs or diary.
Finally, as for the 'dessertspoons' etc. The books are published in the UK, by a British author. US cookbooks rarely translate cups, teaspoons and tablespoons into grams (which tends to be a more common way of communicating amounts of ingredients required for a recipe in the UK). It's a small cultural difference and not something that should hold folks off from ordering the books. Anyone with the ability to use a web browser should be able to handle a quick search on the internet in order to translate. :)
whole series terrible.......2004-11-10
I ordered four vegan cookbooks from this author (Italian, Mexican, Indian, Caribbean). I hate them all. First off, they are small and contain few recipes. Half the recipes they contain are for items I either wouldn't cook from scratch (tortilla's) or are so basic they are found in every other cookbook on my shelf (tomato sauce).
Next, the books are from the UK so you better know how much a dessertspoon is, what "hard vegan cheese" is, as well as know what an aubergine or courgette is. There is no glossary or nutritional information given in any of the books for any of the recipes.
But by far, the most irritating feature of this author and her books is her love of nuts. No matter what cuisine the book is suppose to be about, the recipes are filled with nuts....walnuts, filbernuts, hazelnuts, etc. It would be fair to say that at least 2/3'rds of the recipes in each book contain nuts. In the Italian book 7 of 8 recipes in one chapter contain nuts! I've eaten in many an Italian restaurant and not once have I ever had a dish with walnuts in it. This woman is nuts for nuts.
So, even at the low price, I cannot recommend these books to anyone, especially those with nut allergies.

Vegetarian With A Mexican Flair.......2003-05-23
Kippy Nigh's book provides an interesting view into the healthy side of Mexican cuisine with recipes that are appealing to anyone's palate, vegetarian or not. Of course, it is written in Spanish and the measurements are metric so that may put a crimp in the ease of reading if your brain is not fine-tuned in both. There are several wonderfully easy recipes for anyone who entertains Mexican guests---agua de horchata, agua de jamaica, and yummy atoles. There are also clever recipes that incorporate tofu and chile sauces. This book was recommended to me by an expert native Mexican chef which testifies to its authenticity and "buen sabor", good flavor---the touchstone and measuring stick to a Mexican and anyone else for that matter. I recommend the book to anyone who reads Spanish and desires help in learning some of the basics of Mexican cuisine, a cuisine that rathers naturally incorporates vegetarian principles.

This book has a great cover, it's a good shape (square) and even more important, it's written by one of Britain's best new-wave vegetarian food writers and cooks, Sarah Beattie. She definitely stands in the vanguard of modern vegetarian food - not worthy, dull and difficult, not old-fashioned or clichéd but helping the reader create food that is beautiful, fun, delicious and life-affirming. This book zips through not just the basics of Mexican food but more unusual stuff too - cactus soup, for instance. It uses inexpensive, easily-obtainable ingredients and yet always inspires you with the author's passion for, and interest in, the magic of food.

Good news for adventursome vegetarians.......2007-08-04
A very well thought out and intriguing set of options for vegetarians who are tired of steamed vegetables and tofu. My only criticism is that the book is too short!

This is an attractive, comb-bound book featuring vegetarian Mexican recipes. Favorites include salsa verde, black bean dip, veggie quesadillas, huevos rancheros, tortilla soup, tofu taco salad, frijoles, chile hominy, mexican pizza, mushroom enchiladas, bean tacos, green corn tamales, flan sangria and Mexican mocha. At $6.95 this book makes a great gift.

I use this book every week. Now I make all my own tortillas, tamales, moles, enchilada sauces and broth and it is all fantastic! I am very grateful to have found this book. My criteria is "Would I pay money for this dish in a restaurant?" and for everything I have cooked out of this book, the answer has been yes!
A nice start for meatless Mexican fare.......2001-06-12
For anyone interested in authentic south west and mexican style food sans the meet this is a wonderful starter book. We live in California where picky taste buds abound when it comes to simple as well as nutritious and authentic ethnic fare. And this is also a recipe book that is healthy food, although I admit that we are a low fat food family as well.

I found this book to be very enjoyable. Being a chile fanatic, the red-hot combinations in some of the recipes were exactly to my taste.Being a vegetarian as well also helped! I love Mexican food but can never find that elusive combination of Mexican-Vegetarian; here it is! The Yellow Mole with Vegetables inspired me to invent a similar soup which went down (literally!) like a house on fire. The Banana tree in my garden helped me to enjoy "Verdura Pibil". I would recommend this book!
Save your money. This text is uninspiring and uninteresting........1999-01-29
This is one of the few cookbooks that I have purchased (my collection is in excess of 500 volumes) that I have found to be totally disappointing and uninspiring in its content. There was not a single recipe that I found even remotely tempting. Not one that I was interested in making. Nor was there any useful information imparted vis a vis cooking techniques. Save your money, look for something else.
