The seller provided great service, but the book wasn't all that amazon advertized, great basic, but not amazing for those of us who have worked with the noodles before.

4 out of 5 stars Great gift for college students.......2007-09-10

I bought this book for my 18 year old college bound niece. She is a freshman at Loyola Marymount in L.A. and is on her own for the first time. I sent this book and a case of Ramen through Amazon to her at school. She loved the book and said 99% of the recipes are really simple and actually taste great. There is Parmesean Noodles, Alfredo noodles, mexican spaghetti and a chocolate crunchy noodle recipe. This is a definite buy for any college student or anyone looking for affordable ways to make meals, considering Ramen is like 10 cents a bag.

5 out of 5 stars everything using ramen m=noddles.......2007-08-12

I always loved the soup that you made with the ramin noddle packages but I never dreamed that you could make so many delicious things with the noodles. So glad I bought the cook book.

5 out of 5 stars Great for Couples on a Budget, too.......2007-04-05

At first glance, one might think this book is geared solely toward the college crowd. While it is certainly useful for them, its also very useful in our house of 30-somethings on a budget. Many of the recipes don't use the seasoning packet, so those with sodium concerns can relax. Most of the recipes are very easy and simple with cheap things you're likely to have on hand (i.e. hamburger, cheese, onion, sour cream, soup) and a lot of variety (soups, salads, beef, chicken, pork, etc.). Most of the recipes are for 2 servings, making it nice for couples, though certainly you could double it for a larger household. The book even has a plastic cover (to protect from splatters) and is spiral bound so you can lay it flat on the counter and read the recipes while you cook. There is plenty of space on each page to make notes (i.e. "next time add more onions"). The only negative thing is that most of these recipes use several pans -- you need one to boil the noodles in (why are there no microwave directions for Ramen Noodles?) while you're making the bulk of the recipe in another pan, then you have to drain the noodles with the strainer ... you get the idea. Totally worth 10 bucks, though.

Brace yourself for more pun-ishment from the playful Jack Prelutsky and illustrator James Stevenson, creators of The New Kid on the Block, Something Big Has Been Here, and A Pizza the Size of the Sun. More than 100 Prelutsky poems populate the pages--a mix of 8-year-old-boy humor, nonsense poetry in the tradition of Ogden Nash and Edward Lear, and clever, often unabashedly shameless, wordplay. While there are many, many doozies, our favorite is "Hiccup!," excerpted here:

I've tried gulping hiccup water,
stood upon my hiccup head,
held my breath until my hiccup
hiccup face turned hiccup red.

Chronic cogitators are celebrated in "Quibble Q. Quing" (who thinks about things), and wild imaginations in "Purple Orangutans:" ("Rabbits and parrots play tag in the stars, / marshmallows march in the meadows of Mars... / these are a few of the wonders I find / in the magic museum I keep in my mind.") Children find a kindred spirit in Prelutsky, a poet who knows full well that overweight underdogs and chocolate-covered salami and Sniffing Snutterwudds are always worth a giggle. Stevenson's understated (but always expressive) line drawings suit this silly collection to a T. (Perfect for reading aloud to younger readers, but wordsmiths ages 9 and older will pick up all the puns.) --Karin Snelson

One of the funniest poems we read was "I'm Stuck Inside a Seashell"! ...And one of the poems is "It's Raining Pigs and Noodles", just like the title (and they don't even just talk about pigs and noodles - they talk about all sorts of other things!)

All the poems are so funny and I was able to read some of them myself! ...And I learned never to take a bath all day and all night (Ha! Ha!)! I can't wait to read his other books!

Mom's note: "This collection of poems was simply adorable. I enjoyed reading them with my child as much as she enjoyed hearing them. ...And the simplicity of the poems allowed her to read some of them to me as well. A highly recommended bit of silliness!"

5 out of 5 stars Slurp!.......2007-01-23

In my opinion, the noodle is genius. It's fun to eat and takes on the flavor of whatever you put it in. This recipe collection really capitalizes on the variety of ways noodles are using in Asian cooking including recipes for things like Crispy Shrimp Balls, right alongside noodle soups like Udon. Every recipe in this collection is delicious and the pictures are beautiful. The clean design of the book makes it modern enough for a trendy coffee table. The reference guides for noodles are an added bonus. I will never get tired of his cookbook.
Thank you Ms. Simonds!

5 out of 5 stars Easy and Flavorful.......2006-08-03

I picked it up since I love Asian noodle dishes but have no Asian cookbooks and I haven't been disappointed yet. If you keep the staples around, it is so easy to pick up a few vegetable & protein items and throw together a tasty meal. I have made about 5 of the recipes so far and they've been delicious and satisfying, plus it's easy to improvise or make substutions based on availability of ingredients or preferences. The sauce:noodle ratio is perfect everytime. The recipes are economical and make nice leftovers! I also rate the book highly for design - it's very clean, modern, and easy to use, with close-up photos.

5 out of 5 stars Excellent.......2006-06-18

I bought this book because I adore Asian noodle dishes and I'm also usually pressed for time. I agree that the recipes may appear almost too Americanized when reading the ingredients, but always turn out wonderfully. I own many cookbooks but have found myself cooking from this one often.

5 out of 5 stars This is one of those rare books that you'll use over and over!.......2005-12-03

I don't usually hype cookbooks. However, this one is terrific for anyone who loves Asian food, but doesn't have a Thai or Vietnamese place right around the corner. The recipes are clearly written, and use ingredients that most decent supermarkets carry. My family has loved every dish I've made from this book: soups, salads, spring rolls, you name it. It's one of the best purchases I've ever made, and I have hundreds of cookbooks.

1 out of 5 stars Waste of money.......2005-02-09

If you like recipes that don't work, sauces that don't thicken, then this is the book for you. It's a collection of poorly written recipes that I would recommend you don't waste your money on.

If you're serious about Asian cooking, don't waste your time or money with this book.

Book Description

Savory Spaghetti Carbonara tossed with bits of pancetta, Spinach Lasagna layered with a long-simmered ragù, Gnocchi Gratin crowned with cheese and bread crumbs, sweet-and-spicy Thai noodles -- these are among the classic pasta, noodle, and dumpling recipes you will soon master with this book.

Williams-Sonoma Mastering Pasta, Noodles & Dumplings is a complete cooking course in a single volume. The opening describes the different types of fresh and dried pastas, dumplings, and Asian noodles available and the ingredients used to make them. You will also learn how to cook, season, and serve pasta, from reading your mise en place to adding restaurant-style finishing touches.

Basic recipes and key techniques then illustrate dozens indispensable culinary building blocks, such as how to judge when a pasta dough is mixed just right or how to dice an onion with ease. Troubleshooting tips show you what can go wrong and how to fix it without having to start all over again. Next the master recipes lead you step-by-step, with friendly text and instructive photographs, through every stage of preparation. These recipes include helpful advice other cookbooks assume you already know, and explain how to taste and season a dish as you go -- one of the most valuable kitchen secrets you can learn. The shorter recipes and variations in each chapter encourage you to continue practicing your newfound skills, building your repertory and your confidence at the same time. Finally, a guide to equipment and a glossary of ingredients round out your comprehensive pasta-making course.

In these pages, you will discover more than fifty classic recipes that tell you, in both pictures and words, how every dish you make should look and taste from beginning to end. Whether you are an aspiring novice or an accomplished home cook, Mastering Pasta, Noodles, and Dumplings is an invaluable source for the tricks, tips, and insider knowledge that, until now, you could learn only in cooking class.

Customer Reviews:

4 out of 5 stars Definitely a book for beginners.......2006-04-19

This review is written from the perspective of a serious home cook that has been studying cooking for 25 years and concentrating on Italian cooking for the last 10 years.

This book is targeted to beginning pasta makers. If you are a skilled pasta maker, there is nothing new in this book. However, if you are new to pasta this book is well done. The directions are well written and the photos of various stages of pasta production as also well done.

The book does an excellent job of telling you which shape of noodle goes best with a given sauce. This is something that the Italians take for granted that most Americans have not been taught.

I also thought the book did a nice job of teaching the reader how to make orecchiette, cavatelli, and ravioli.

If you are new to pasta making this is an excellent primer.

1 out of 5 stars Worthless book, and I am a fool!!!.......2005-11-14

My compliments to the photographer, but the content of this book is mighty thin. I thought I had finally found a book that would go beyond the basic pasta techniques and that would tell how to make noodles and dumplings. Burn my soul! This book has the basic pasta recipe along with a few recipes for sauces and such. There is nothing in this book that you won't find in a comprehensive cookbook like Betty Crocker. Spaetzle isn't even mentioned! Save your money, friends. Or wait a year until they sell the remainders for 50 cents.

Book Description

Noodle is a little dog who's very long from front to back and very short from top to bottom, which makes it hard for him to dig for bones. One day Noodle finds a wishbone, and the dog fairy arrives with a flip-flap of wings to grant him a wish: "What size and shape do you want to be?" Noodle asks all the animals at the zoo what he should wish for, only to discover he might just be perfect -- exactly the way he is. Originally published in 1937 by children's book greats Ludwig Bemelmans and Munro Leaf, NOODLE is a classic with a quiet wisdom that continues to hold true today.

I have a good friend in Vero Beach who owns a dachshund named Noodle. His birthday is next month and I bought the book as a gift for him and his "momma". It was a very sweet and compassionate book and I'm sure both my friend and Noodle will be as delighted with it as I was. Thanks for making it available.

I have called my sister's dachshund Noodle, instead of her real name Nola, forever. So now that sister is having a baby, and requested a library of baby books, what could have been more perfect????????
As a bonus, the reviews about the content have been wonderful.

Yes, a perfect book....with or without a connection to a real Noodle.

5 out of 5 stars Kid-tested.......2007-01-12

I gave several books for a 6-year-old on his birthday. This was his favorite.

5 out of 5 stars One of the BEST Children's books ever!!!.......2005-08-16

This book was originally published by Munro Leaf in 1937 and has been out of print for a VERY LONG time. This book has a great appeal to children because it is about animals and celebrates their many different traits. It also teaches the moral that everyone is unique and special in his or her own way, and that one should be proud of who they are. It is a story of a dachshund, Noodle, who gets one wish from a dog fairy. Noodle decides he wants to be a new size and shape, since being a dachshund he has short legs and a long body. The story is Noodle's quest to find out the best size and shape, and along the way he meets many zoo animals who all have different opinions. In the end Noodle realizes exactly what size and shape is best for him. This story was my mother's favorite book as a child, and my brother and I grew up reading this story with our pet dachshund. This book has been well-loved, and I am excited that it is back in print for children to love and cherish today.

Americans love pasta. But this doesn't mean we know about its many types, how best to serve it, or even how best to bring it from plate to mouth. Exploring these topics and more, The Cook's Illustrated Complete Book of Pasta and Noodles offers a comprehensive introduction to the world's pasta, from spaghetti, couscous, and spaetzle to ramen, udon, rice sticks, and more. Compiled from the pages of Cook's Illustrated, the magazine of culinary investigation, the book is a trove of illustrated step-by-step instructions (on rolling pasta dough, for example), hundreds of pasta and related recipes, tips on buying and storage, and other useful data. In chapters such as "Dried Semolina Pasta and Chinese Wheat Noodles," the book explores a particular pasta type and then provides useful supplementary information. Included, for example, are pasta-tasting results, a "gallery" of pasta shapes, and material on matching pasta shapes to sauces. Offered also are comprehensive saucing chapters that cover such pasta accompaniments as olive oil, butter, cheese, bread crumbs, canned and fresh tomatoes, and seafood, among many others. The recipes themselves are exhaustive and, as one might expect, models of accuracy and good taste. Included are the likes of Macaroni with Spinach and Gorgonzola, Lasagna with Shrimps and Scallops, Potato Gnocchi with Butter, Sage, and Parmesan Cheese, and Cellophane Noodle Salad with Charred Beef and Snow Peas. With master recipes for many of the basic pasta types and more than 300 illustrations, the book should enlighten pasta lovers while whetting their appetite for its many satisfactions. --Arthur Boehm

Book Description

How do you boil pasta? How much water and salt do you need? Should you add oil to the water? How well should you drain it? (Turn to page viii for the answers.)

One part cooking course, one part kitchen reference, and one part foolproof recipes, The Complete Book of Pasta and Noodles tells the story of flour and water like no other book on the market. Extensively covering the basics of pasta and noodles, this thoroughly researched and taste-tested guide is dedicated to the home cook who needs practical advice on everything from penne to pad thai. The experts at Cook's Illustrated present their knowledge and techniques in a hands-on way so that each and every step of the cooking process can be understood and easily executed. The authors leave room for interpretation and taste, of course, but you will not walk away from this book without knowing which olive oil to buy, why egg pastas tend to complement cream sauces, or how to mince garlic.

The book is arranged in four sections, exploring first dried semolina pasta, then fresh Italian-style pasta, Mediterranean pasta and European dumplings, and finally, Asian noodles. There are thirteen chapters devoted to sauces alone, and recipes are included with the type of pasta with which they work best -- from the simplest to the complex, but all within reach of the home cook. As a bonus, the book includes excellent photographs of the various pasta and noodle shapes, and impeccable illustrations clearly depict each step of key techniques. Special sections are devoted to such specific topics as "Are Electric Pasta Machines Worth the Money?" and "A Guide to Popular Cheeses."

"Cook's has always been the definitive word on any subject it tackles," says The Post and Courier, and The Complete Book of Pasta and Noodles will serve as the definitive reference volume for pasta lovers.

5 out of 5 stars Excellent Survey of all Things Noodle. Buy It!.......2007-05-16

`The Complete Book of Pasta and Noodles' by the Editors of `Cooks Illustrated' Magazine is one of those books whose outstanding value is obvious almost immediately upon opening to the Table of Contents. This was surprising to me, as this is not the case with most other `Cooks Illustrated' books. There is just something about the meeting of this subject with the classic `Cooks Illustrated' approach to things which comes up a winner.

The first positive impression is the excellent organization of the chapters into different types of pastas, noodles, and sauces for same. While there are many excellent books about on pasta dishes, most especially `The Top100 Best Pasta Sauces' by Diane Seed and just about any book by Marcella Hazan, Lidia Bastianich, or Ruth Rodgers and Rose Gray of London's River Café, this `Cooks Illustrated' volume organizes our thinking about the sauces to make us all much better at improvising our own pasta sauces. It divides pasta sauces into:

Olive Oil based sauces, both cooked and uncooked.
Pesto and other pureed sauces.
Butter and Cheese sauces, such as spaghetti alla Carbonara
Cream Sauces, such as Fettuccine Alfredo
Sauces with Bread Crumbs
Cooked Sauces with Fresh Tomatoes
Canned Tomato Sauces, such as Pasta Puttanesca and Vodka Cream sauce
Sauces with Vegetables, such as `cabbage and noodles' and `pasta Primavera'
Sauces with Beans and Lentils
Sauces with Meat, such as the classic Bolognese sauce
Sauces with Seafood, such as clam and other shellfish sauces.

Like Seed's book and virtually any other book on pasta and noodles, the subject really is pasta and noodle dishes, although this volume, true to its title, gives as much about actually making a wide variety of pastas. It also covers just about every conceivable form of noodle, including the German spatzle, the North African couscous, gnocchis (the bridge between the Italian and the German forms of dumpling), Japanese noodles (soba, somen, ramen, and udon) and Chinese noodles, especially rice and cellophane noodles.

The book can easily be forgiven for spending more time on the Italian noodle than on any other subject, as this is the primary interest of most English speaking readers. To this end, the book includes excellently detailed tutorials on making fresh pastas, with and without egg, with vegetable and herb additions, spatzle, and several varieties of gnocchi. It does not, however, teach us how to make couscous or any of the oriental noodle types, which is fine with me, as I believe they are techniques which require far more practice and patience than the classic Italian or German noodle.

I love a cookbook that sheds new light on a dish I've made a dozen times and consider `my own'. This is what happens here when I read the material on combining cabbage and noodles in a dish. It reminds me of how to best cut the cabbage, but it significantly adds to my knowledge of how to braise the cabbage and combine it with the noodles at just the right time.

`Cooks Illustrated' tends to squeeze a lot of the `joie de vivre' out of cooking in their articles by starting off with a clean slate, as if no one had ever made the dish they are discussing in an article. Cooking is one of those crafts where centuries of practice have pretty much arrived at the best way to do most things without loading us up with all the paraphernalia of experimental science. But, with this subject, proper respect is given to tradition, and to the recommendations of such culinary sages as Paula Wolfert on couscous and Marcella Hazan on pasta.

Their finest contributions are the sidebarred tutorials on everything from preparing artichokes to opening clams. This makes the book superb for the novices who happen to enjoy experimenting with their own variations of pasta dishes.

I must also mention that as a trade paperback, this manual of riches lists for less than $20, about half the cost of a book of recipes from an A-List culinary writer.

4 out of 5 stars Pasta many..........2007-02-13

This book is loaded with recipes. A one stop place to make any noodle of your dreams if that is what you are looking for. It is a thick book, the only negative is the binding. Too bad it is not spiral bound, but then a book that thick may have problems. Delicious recipes, but certainly be prepared to spend time in the kitchen.

5 out of 5 stars Cook's Illustrated Pasta and Noodle Cookbook.......2006-11-14

This was a pleasant surprise as it was a much thicker book than I had anticipated. It has lots of recipes for every kind of pasta and noodle imaginable, even rice, plus info on how to make pasta, which is why I ordered it. And it is the typical great quality of all Cook's Illustrated materials, with lots of helps and tips. Well worth it!

Complete is correct for this excellent resource. We use it regularly (5x weekly). Great recipes, tips and a wealth of information on all types of pasta. Highly recommend this Cook's Illustrated book.

Book Description

Sometimes I wonder
do lions use irons,
Do poodles
eat noodles,
Can chickens
read Dickens...

WHAT'S THAT? You don't know the answers, you haven't a clue? That's okay -- sometimes it's fun just to wonder. In this collection of playful poems there are musings about everything in a child's world, from "A Day at the Beach" to "My Friend's Freckles" (do they go all the way down to your toes?). The short verses are a delight to read aloud and are brought to life in funny, imaginative pictures. This book is sure to inspire plenty of giggles as it challenges readers to find the silliness in their own surroundings.

5 out of 5 stars Great Gift for Child's Birthday.......2006-08-15

After purchasing the book for my son, I decided to purchase this book for each of the families attending his birthday party. It was a great little party favor gift rather than candy or silly little noise makers. The art is very well put together to incorporate relevant pieces from each story. My son looks at the pictures and picks out different animals each time we read it. The story talks about riding on the tale of a whale and within the pictures you see a child riding the tale of a whale.

It may not have the greatest rhymes but it relates well to the familiar activities of children and catches their attention.

5 out of 5 stars Fabulous and Easy.......2007-08-23

This is the latest cookbook from my collection of cookbooks by Mrs. Su-Huei Huang. She makes cooking authentic Chinese food almost effortless. If you have limited time, but enjoy cooking at home, this is the perfect cookbook for you.

5 out of 5 stars One of the best cookbooks I have.......2007-05-30

I love this cookbook because it contains pictures of every dish that's in the book, the instructions are easy and simple to follow, and most importantly, the dishes are authentic Chinese food from the south to the north of China. We're Cantonese and we're tired of cooking cantonese at home so this book gave us more menu options. I have to say, with some experience in chinese cooking, this book contains some recipes that we already knew. But I think it'll be useful to those who doesn't have much experience in Chinese cooking because it contains basic information about the type of noodles, vegetable herbs and spices.
I was a bit disappointed with the dessert section as it only contain 10 recipes and we already knew how to cook most of them.

5 out of 5 stars AMAZING.......2007-05-03

I purchased this book along with some other Chinese cookbook and I have to say nothing compares to this book. Everything is simply described and easy to understand. There are pictures of every recipe and she also gives variations to recipes. My favorites are the wontons, so easy to make, and the Three Sauce Chicken, again so easy and delicious. I am sure in a few weeks that will change :)

I could not do without this book in my kitchen, I use it every day. This book is amazing!

I am chinese but grew up in US. Even though I do eat american food often I still miss good chinese food. Now that I moved away from my mother, I needed to cook something chinese myself and for my husband, so we turn to Wei Chuan. We have Wei chuan Thai book, Mexican and Sichuan book already and we like this series very much because it has concise steps, and makes great food. This book is no exception. I have already made 2 dishes from the book since 1 week ago we bought the book. We made Pork and Mustard Veg with noodle, and we made Lion's Head, and also our favorite dish, 3 sauces (or cups) chicken. All turned out pretty well and with preparation time and cooking all over 1 hour.

Tonight we are going to cook another one of my favorite that my mom cooks all the time, the Red Cooked Pork. There are actually many recipes in the book that are easy to follow and don't require that many exotic ingredients. IN fact we have most of the ingridents already before we went to the asian grocery to get some additional meats. (pork shoulder and minced pork). These days I am just tired of eating fatty greasy american food, and craves for some good simple chinese food that dosen't take too long to cook or prepare. This book is perfect and I am sure we will be using it a lot along with our Thai and mexican book.

5 out of 5 stars I love this cookbook!.......2005-11-15

It covers many of the rice and noodle dishes that are very popular for lunch, snack and dinner/cafe crowds. A very good book; it includes a handful of dessert dishes and it also covers popular and well known noodle and rice dishes from all over China. A definite must have if you love chinese rice and noodles.

Ground pork with Beijing sauce over rice, Three sauce chicken with rice, Savory meat sauce over rice, Braised beef over rice, Braised pigs feet over rice, Ma-po tofu over rice, Lions head on rice, Baked seafood rice, Hainan chicken rice, Taiwanese sticky rice, Cantonese clay pot sausage and rice, Taiwanese fried rice, Curry fried rice, Thousand year old eggs with pork congee, Beef congee, Chicken sesame noodles, Sechwan dan-dan noodles, Chi-ah noodle soup, Dan-tze noodles, Braised beef noodle soup, Beef hot pot with noodles, Braised yee-fu noodles, Double face golden noodles, Taiwanese fried noodles, Sa-tsa beef with noodles, Sesame flavored somen, Chinese chicken salad, Braised beef shank in soy sauce, Cantonese bbq pork, Taro tapioca with coconut milk, Creamy roasted black sesame, Almond jello, Boba milk tea.

This is just some of the recipes that are in this very nice book.

5 out of 5 stars Great Leadership Training Tools.......2007-01-05

50 More Ways to Use Your Noodle offered more GREAT ways to work with people, build teams, and have a great time. I've used the activities with junior high, high school, college, and adult age groups and they all enjoyed the activities and the follow-up discussions really helped open their eyes to new situations or ways of approaching challenges. Easy to follow instructions and fun reading. The biggest challenges I've faced with using these materials are deciding which of the fun activities to use and finding space to keep all of the noodle supplies between trainings! :-)
