Cut and Dry.. Iowa's Cousin Rick Black is by far the leader with us deer hunters and how we cook our harvest. I got a copy of 301 Venison Recipes from my uncle. I asked him why he was tossing it out? His reply? "Heck boy, I got The Deer Burger Cookbook and the Venison Cookbook by Cousin Rick Black"!
Yepper! Like everyone else. "We will stick with Rick" and his Deer Burger Cookbook and Bag Em and Tag Em.

Sorry about the bad review, but the truth hurts. I like every other hunter now days am a Big fan of Iowa's wildman Rick Black and his line of outdoor books. I will stick with Rick. My wife bought this book after I ,finally, brought home my first deer. We had venison roast ("Bag-o-Buck") for Thanksgiving that year. My son, who doesn't like anything that isn't from McDonalds, decided after that meal that he actually likes venison (darn it, that's less for me!)

This is the first of, I believe, three cookbooks by the Casadas. This is, without a doubt, the best venison cookbook in existance. I have about 20 venison cookbooks. This is the best. I really like the slow cooker section.

I have about 15 or so game cookbooks, this is one of the best! Simple, easy instructions and lots of excelent recipies. From simple to elegant and great variety. This is a cookbook that you will use over and over!
a cookbook for the everyday venison cook.......2000-08-22
This cookbook was mentioned in our local paper as "the best venison cookbook ever." I was tired of game cookbooks with exotic recipes, while meanwhile we have 100 pounds of venison in the freezer. This book is great!! Special recipes for prime cuts, yes; but also chapters on using the crockpot, ground venison, casseroles, grilling, stews, and soups. Within a month I had tried ten recipes and they were all excellent. You will not face the dilemma of a significant portion of frozen venison in October with this book. I only wish I had ordered it sooner.

A Book for Big Fans of Jerky.......2002-09-13
Whether you are a big fan of jerky, or a fan of big (lots) of jerky, this book has something for you. I never knew there were so many different recipes for jerky until I bought this book. The results taste far better than anything I've ever bought in a store. I highly recommend the book. Recipes frequently call for several pounds of meat, but you can either scale them down, or just use less meat and make more marinade than you need. The novice chef needn't worry: The recipes are very simple.
Another review notes that the author deviates from standard guidelines when it comes to cooking temperatures, and that's true. However, most recipes call for temperatures of 140 degrees, which is just slightly below the minimum temperature of 145 recommended by the FDA. When you consider that jerky spends 8-10 hours in the oven, I don't think food safety is an issue at these temperatures for anything other than pork, which the author recommends against.
Recipes that call for lower temperatures are left to the reader's discretion, but clearly marked as such.
Not recommended for USDA employees!.......2002-04-07
Livingston takes a definite outdoorsman approach to jerky. He is sharply critical of USDA safety regulations, and he doesn't believe in nitrate cure as a preservative (he includes it in a few recipes, but says it's for preserving the color of the meat, not as a safety procedure). Some of the air-drying recipes gave me the willies just thinking about them! Livingston's approach to safety is to use meat from trusted sources, which often means avoiding the local supermarket in favor of a butcher or processor. He says if you use meat from known sources you'll avoid many problems. Good advice, but not always practical.
The book is lively and readable, but too many of the recipes are for curing 10 pounds of meat -- I wish he'd included smaller-quantity versions of some of them.
This is NOT the definitive book for beginning jerky-makers, but it's probably a good buy for an experienced jerky-maker to add to his/her library.

I'm like everyone else, I am stuck on Iowa's Rick Black and his very funny but great cookbooks on wildgame. I dont want to be a copycat, but I reccemend the following books by Rick Black to my brothers of the timber: Bag Em and Tag Em is one of the best books on deer hunting that has ever been put to print. For the bird hunters you will love The Wild Turkey Cookbook, Bird Up!, and The Funky Duck Cookbook. Cookin with Beer is a clasic for a hunter. I highly rec, The Mountain Man Cookbook by Rick Black, and Trailer Trash Cookin' is the funnist cookbook my wife and I have ever read! Check out his reviews on Barns and Noble!

This is the most exhaustive book of Deer Recipes that I have ever seen. I just don't see how anyone could find any fault with it. Obviously the reader from Wisconsin who gave this book one star has an axe to grind.

I would recommend this wonderful cookbook to anyone. From a beginner in the kitchen to the culinary master. It offers a wide-range of recipes. Very easy to follow and understand. Not for beginners.......2006-11-24
This book looked thorough, and there are lots of 5-star reviews so I bought it, hoping to learn at least how to field dress a deer, and about how the animal can be used.
It is informative and interesting. Walrod writes well. But, after reading it (and the field dressing chapter several times), I still don't feel that I know how to gut a deer. It lacks the necessary descriptiveness or detail that I was looking for. For example, "...insert the knife at least four inches..." WHERE? In the anus? Four inches from the anus? Two inches? How doesn't that butcher the colon? I was left with as many questions as I had to begin with. The pictures didn't help. They're black & white and not very clear. Not enough either.
It's not without redemption though. I learned about the different cuts of meat, uses for them, etc. That was informative. (There are lots of recipies - but you can just search the internet for recipies.)
Can't help feeling a little let down by this book.
Must have for hunters of all skill levels.......2005-04-13
This is an excellent book! I bought it as a nice reference to the meat preperations and recipes (because I already do all that stuff myself). The second half of the book was new things for myself to learn about things to do with the deer remains. I will be making soap from the fat from now on, instead of leaving that stuff for the chickadees.
I've been wanting to take up taxidermy and thought this book might help. It goes into some detail (not as detailed as a taxidermy only book), but enough to make me more interested in taxidermy. You can't get into too much detail in only one chapter, but this book does tell enough of the process in one chapter. I'm going to buy some more detailed books on taxidermy, but this book really helped my interest in the subject.
Overall, I would highly recommend this to any, and all deer hunters. You may know how to field dress, butcher, etc, but you may not know everything else you can do. This is a must have, so buy it, you won't regret it.
This book pays for itself.......2004-07-29
I'm a reasonably successful deer hunter and we eat a lot of venison at our house, but I have always paid to have the deer butchered. From now on, I'll be doing it myself the easy way Walrod describes...and that will save me about $50. I've also learned things about aging meat for tenderness, making sausage, and there is some really interesting information about how to improve the flavor of venison. Also how to tan the hide myself, taxidermy, mounting antlers, and antler-craft. Even how to make soap (yes, soap, not soup) from the fat on a deer. This is a good book for any deer hunter.
