Great recipes.......2007-05-12
This book has great recipes for the experienced brewer, but I found the beginning of the book to be somewhat unnecessary. It had a lot of advice for brewers just learning how to brew. I do not feel people buying a book of "Extreme Brewing" recipes are going to need advice about getting started in brewing. All in all, the book is worth the price for it's easy reading and great recipes.
A beginner's book, but not a bad one........2007-02-04
While this book has been put down pretty heavily by some of the other reviews, I have to say that, while this book isn't exactly for the super-experienced brewer (Radical Brewing is more for that.), this book does a good job of introducing brewing concepts up front, then pushing the reader to push the envelope and make something interesting.
This is a severely quick read with quite a few worthwhile recipes. For those out there who already know what they're doing, this book is pretty okay for the recipes in it. Particularly if you are a fan of Dogfish Head beer. For the beginner, it makes beginning homebrewing more interesting by offering more complex and interesting recipes up front, rather than pushing overly simplistic recipes other books tend to afford.
While this book isn't exceptionally deep and complex, it is entertaining and puts forth a bit of useful information here and there. Certainly not a reference manual, like The Brewmaster's Bible or Radical Brewing, but it is a worthwhile first brewing book in my opinion.
A great brewer, a disappointing book.......2007-01-17
Firstly, let me say that I respect Sam's achievements in brewing and applaud his creativity. I'm looking forward to more "extreme" offerings from Dogfish Head in the future. Unfortunately, my regard for this book does not match that of the author. It's really a bit of a mess. In trying to appeal to beginner and experienced brewer alike, I think it fails to satisfy either. The title would lead the consumer to believe that this is a guide for brewers (enthusiasts) to kick their brewing knowledge and techniques up a notch. However, the first sections of the book are an uninspired description of the extract brewing process, barely detailed enough for a beginning brewer. The book then describes how and when to use extreme brewing ingredients (non-traditional sugars, spices, herbs, etc). This is by far the most interesting part of the book, but is more applicable to an experienced brewer. The book then concludes with an extract/partial mash recipe section leaving us all-grain brewers hanging out in the breeze. Next time Sam, pick an audience and stick to it throughout the book.

For the title I felt this book not bringing it all home. It contains all extract recipes and is not that informative for the experienced home brewer. For beginners only.
Novice Recipe Book.......2006-11-30
Let me start by saying I like Sam's beers and he seemed like a good guy when I met him a while back.
When I heard about the book I was quite interested as I had recently read Radical Brewing (which is a fairly in depth examination of ingredients and techniques).
Extreme Brewing is a great book for a novice brewer who want some basic extract / partial mash recipes for what are currently viewed as some "extreme" craft brewes from Dogfish Head, Avery, Russian River, etc. The brewers and beers in the book are some of the best but there is no real depth of information for anyone who has been brewing for any length of time. I'm not an expert, but this book really had nothing new to offer in terms of brewing ingredients / techniques.
If you want some recipes for extract versions of some big beers, go for it. If you want to really explore brewing on a creative level - pass.

This book provides usefull and pertinent information all the way from the grape planting process to the wine making process. He walks you through every step carefully, but does not suggest a robotic structure for making wine, he leaves open oppertunies to show your own creativity.

I've purchased several "how to" wine books and this one is good, but not great. I would not rely on it as my only reference. Rather, it makes a very good companion for "From Vines to Wines."

Excellent.......2005-03-22
This binder is put together in a simple to follow format. There is section on the basics with excellent information on temperature and placement of briquets. The recipes are all easy to follow and good meals, nothing gourmet with strange or hard to find ingredients. Many outside of the "just put a roast in" type. Great breads and desserts too! Perfect for any dutch oven owner, especially a family or scout troop looking for one book with several good recipes.

This is an excellent book for those starting out in "D.O." cooking because unlike other books, it actually explains how to set the temperature -- i.e. how many briquets to use and where to place them. And, you can easily copy and laminate the recipes you want to use in camp thanks to the handy binder format. There are books out there with better recipes (sorry, recipes calling for Sprite are scary), but the reality is once you know HOW to cook with a DO, you can pretty much use any of your favorite recipes. i recently picked up "Classic Homemade Casseroles" at a used book store; it has more tempting ideas than this book.
Not exactly what I had in mind!.......2002-05-10
Overall, I think that this is a great cookbook. It's in a great 3-ring plastic binder that will stay open while you're cookin', and you can wipe off just about any "grahdoo" that you splatter on it. There are tons of recipes in it, but they're just not what I had in mind. I'm from Texas, and I know that most of the folks who wrote these recipes are from Utah and thereabouts. I guess they eat differently than I. Most of these recipes are modern dishes that you'd find in the kitchen, adapted for dutch ovens. But I was lookin' for more backwoods, down-home, stick-to-yer-ribs type grub. I'd rather have 20 good recipes like that. Another thing is that there's not much in the book about cookin' over an open fire, which I prefer because it's more authentic. Anyway, to each his own. Coincidentally, I'm still lookin'.
Important information.......2002-04-10
This book has very good information on temperature control. After purchasing several books on Dutch Oven cooking this one gave the best descriptions on temperature control methods. While I have yet to put the actual recipes into practice the emphasis placed on ensuring the fledgling DO cook's first experiments aren't disasters are appreciated.
lovin' dutch oven cookbook.......2000-04-27
This book was purchased to learn how to cook in a dutch oven for a living history presentation at my child's school. I learned how to perfectly season my new oven (it came out great) and I made the Pioneer Journey Cake which is an authentic mid 1800's wagon train recipe. Cakes can have a mind of their own in a modern gas oven, so I had my doubts, but with Joan's tips on calculating oven temperature it came out perfect the first time. This book offers tips and recipes for everyone from the beginner to the sophisticated oven user.

This is a pretty good guide if you already know a fair amount about wines and are just looking for recent statistics and prices. I find it helpful for eyeballing a 2001 Bordeaux or Chianti, and looking at which producers are consistently solid. It also give you a base for figuring out what prices should be. This guide doesn't provide much other info however, so if you're looking to learn about wines, check out some of the other guides out there like Robert Parker's.

Being a busy brewer, I seldom get the chance to travel far and sample the efforts of other North American brewers. Reading 'Best American Beers' has changed my priorities. I'm hitting the road with a tremendous thirst thanks to Myers' factual, concise descriptions and ridiculously witty prose!

Mr. Myers' book cuts through the fluff and BS put out by most brewery PR wonks, and tells the craft beer story like it REALLY is. I laughed, I cried, I ordered another beer (from Ben's recommended list, of course). His inights into Northwest beers are particularly inspired. I've also found that the book works great as an unusually tall beer coaster, too!
