Recipes are bland.......2007-09-01
I own this book and the recipes are bland. Most have salt and pepper as the main seasoning. This book also lacks continuity. What i mean is that each recipe seems to have a unique ingredient. So i cant just stock up on basics and prepare several meals from that. Each time i go to prepare a meal there is some new ingredient which i dont have and now have to buy.
Also some of the recipes arent "extremely low carb". One recipe was 10 effective carbs (ie. net carbs) per small serving and about 25 carbs total. My normal portion size was like 40 net carbs!

Those who gave this a good review must not have tried any of the recipes.
The book title says extreme lo-carb meals on the go. It is none of these things.
A lot of the recipes contain low carb breads, pastas and tortillas which is fine if you have no weight to lose.
The book promises fast recipes but tells you in the introduction that to the author fast means that the recipes can be cooked in less than an hour. Many of the recipes require that you prep ingredients in advance, the author calls "make ahead".
Many of the recipes call for expensive, hard to find substitutions for sugar, wheat, and syrups.
The only good recipes in the book, which were few and far between, I already had from free, online, low carb sites. (I saw two recipes out of the whole book that I would try and already had seen them online.)
A huge disappointment and I was very excited by the reveiws given so I thought this would be a good resource for me.
Save your money. Search online for the same recipes without the expensive ingredient substitutes.

This is my "go to" cookbook and believe me I have a lot of them! I have been a lo-carber for 8 years. This book has easy to find ingredients and easy recipes. It is a must have for any low carb dieter. Buy it, you won't be sorry.

A lot of the recipes in this book are too simple and the food turns out bland. The 500 Low Carb Recipes book is much better.

Many of these "recipes" shouldn't even be considered recipes. For example, "The only 15 minute wings I could figure out" consists of chicken wings and sprinkle-on seasoning of your choice. The "Tortilla pizza" consists of a tortilla, pizza sauce, and cheese. Are you kidding me?!? Also, there are entire chapters devoted to burgers and eggs. Instead, consider Agatston's The South Beach Diet Quick & Easy Cookbook --not quite as quick and easy (or insulting), but much more interesting!

I sucessfully did low carb in 1999 and lost all the weight I needed o and then in 2003 after birth of my daughter decided to go Low CArb for life as a lifestyle not a short term weigh reduction technique.
ANd I absolutely love this book!!! I have actually made many many recipes from this book as well as Dana's other books...versus many other cookbook low carb and regular where I have only made 1 or 2 things. The recipes are more simple than her regular cookbook and that is perfect sometimes I just need a good idea when I can't think of anything to cook for lunch or dinner quickly.
I enjoy trying more involved recipes with more specialized ingredents for special meals weekends or company. Any special ingreadents called for in the books I have been able to locate at Kroger, Walmart or for a few items my local health food store. Keep it up Dana many of us Low Carb for Lifers are still out there

I was very pleased with this cook book. The recipes are easy to read and understand and everything I've tried so far has been great! I would recommend this to anyone who's trying to keep their daily intake of carbs to a minimum but would still like to enjoy what they're eating.

I ordered several low carb cookbooks when I decided to start preparing more food at home, and this is the only one I use. I don't have a lot of time to spend preparing or even shopping for my food, and the 3-ingredient recipes really keep things simple. No more going to the store to buy all those exotic ingredients you will never use again.
There is also a handy shopping list of ingredients to have in your cupboard each week - I didn't even have garlic in mine - that make shopping without a meal plan do-able.
The other thing I like about this cookbook, is that everything I make tastes great. And for me, that's saying something. My sister was astonished that I am cooking at all, and when I prepared the fantastic asparagus with fried capers at her house - from memory, with ingredients she had on hand - she immediately bought her own copy.
I highly recommend this book to anyone who wants to control the carbs in their diet by cooking tasty food at home, but who doesn't have the time, skill or inclination to learn more complex cooking methods.

after exhausting every recipe in the south beach diet cookbooks, i needed some new ideas. this book is great. so many great ideas that often times, you already have the ingredients in your fridge. the recipes are all coded, Very Low Carb, Indulgent Low Carb or Low Carb. This helps to balance out a weekly meal plan and keep you on target. i'm so glad i bought this book.

I have been a low carber for years and have lots of low carb cookbooks and I have to say that this book was disapointing. The recipes are things I've already seen or won't make. Some of the carb counts were pretty high too. If you have other low Carb cookbooks you probobly don't need this one.

I love the tastes and textures used in the recipes. The only drawback is how complicated (as in time consuming) some of the recipes are. With three ingredients each, I expected recipes I could quickly whip up. Some are, but some aren't.

I have always been skeptical of Rozanne Gold's 1-2-3 approach, thinking three ingredients couldn't possibly yield the kind of results I expect. Boy, was I wrong. The recipes in this book are terrific and jam-packed full of flavor. Among those I have tried are: the Pecan-Crusted Chicken Breasts (intensely flavored and incredibly good - hot or cold), the Miso-Glazed Chicken Breasts (yummy), the Salmon Steaks with Cornichon Vinaigrette (lovely), the Green Beans with Pesto and Walnuts (great), "Creamed" Spinach (my husband repeatedly asks for it), the Sauteed Grape Tomeatoes with Shallots (delish), and Smokey Joe Burgers (nice twist for burgers). I use this book at least once a week.

The recipes really are low carb. They are generally low or no-sucrose, too (after all, carbs break down to sugar; they're really much the same thing). These are genuinely useful recipes for dishes you would really want to serve. They use ordinary ingredients most of the time. When an exotic ingredient is required, there will be a footnote telling you where to locate it. These recipes are not complicated; most use no more than five ingredients, and can be assembled within a few minutes. In general, this is a truly practical cookbook.

I like the idea of this book, but it uses a lot of vegetarian foods that I don't particularly care for. Great for a start up vegetarian, or for a seasoned one, but not really for me. I kept the book, but will edit them more to my liking.
Lower-carb, NOT low-carb.......2007-01-03
Ground meatless (some kind of vegetarian ground meat substitute by Morning Farms) is a staple in this author's recipes. But my biggest gripe is that these recipes are NOT low carb. They lean more toward being low-fat.
Sure, the recipes are lower in carbohydrates than most, but someone following Atkins or similar might be disappointed. Extra-thick Peach Milkshake, which use frozen peaches and fat-free whipped topping (which has sugar in it!) has 26 grams of carbs per serving. That is more than a day's worth of carbs allowed on the Induction plan..
Whole Wheat Muffin Bites: 22 grams per serving; Pork Pastry Squares: 32 grams; Taco Salad: 18 grams...and the list just goes on.
Now, if you aren't following Atkins or some other strict low-carb diet and are just looking to cut back on the carbs and the fat then this book could be a good choice. The recipes look to be simple and the Slow-Roasted Beef & Bell Peppers Stew (10grams) sounds yummy, as does the Zucchini Skillet Dish (6 grams)and Broiled Eggplant Italiano (12 grams).
Low Carb and low fat - is that what you really want?.......2006-03-01
I've read through the whole book, but haven't actually tried any of the recipes yet. They sound good, but she uses non-fat products frequently. A good low carb diet needs good fats included in it. If I use these recipes I will be using products that still have the fat in them.

This is my first review but I had to let people know that this book is so easy, fast and the best tasting food I ever made. We tried all kinds of new foods through this book that I normally wouldn't buy. I'm no cook but even my finicky kids loved these recipes. It's also nice to know we're eating healthier. Great book!!!

Tod Dimmick books are beyond helpful; they are also fun, creative and realistic. With nearly 250 recipes, Tod has branched out into the Low-Carb lifestyle. Each recipe also provides a complete nutritional analysis for carbs and protein.
The Italian Herb Omelet is delicious to make and has no carbohydrates, so if you skip the toast, you are already ahead of the game for the day. The "Magic Eggs" chapter brightens up your morning with recipes that include healthy ingredients like baby spinach (more like adding herbs than spinach) and portobello mushrooms and salmon.
By rolling roast beef up in watercress there is no need for rolls and the tuna salad wraps encourage you to enjoy tuna without bread. By just changing one aspect of a recipe, Tod succeeds in cutting out the carbs or making the recipe very low carb.

Useful, delightful, but not strictly LOW carb recipes.......2005-06-18
Along comes another LC cookbook, sayeth the powers at Amazon, and lo I buy and test; for such is the compulsion of the dieting reviewer.
Not normally someone to pick up the books with titles that suggest I may have lower-than-average intelligence (guilty conscience perhaps?), nevertheless I couldn't resist the allure of "quick and easy". Tod Dimmick has written a cookbook that promises several things in the introduction:
* Use high-quality, low-carb ingredients
* Keep it simple
* Call for accessible ingredients
* Avoid processed foods
* Take advantage of quick cooking methods
* Keep an eye on saturated fat
* Control expense
* Add in fun and flavor
My job, as I see it, is to test how well these promises are carried out by actually performing the recipes in my average home kitchen. This time I tried four appetizers, three breakfasts (aside from the ever-present omelet recipes that *every* LCCB has, and which I am tiring of rapidly; besides, it's hard to mess up a basic egg/meat/veggie recipe if your cooking method is good), two seafood main courses, a meat loaf, a kid-friendly chicken dinner, a salad and three dessert selections. Additionally, there were a few dozen recipes that were so similar to recipes from other LCCBs that I didn't even need to try them yet again to know exactly how they would turn out - simple and classic dishes that are universally LC, like grilled steak with seasonings, wine, and butter or roasted veggie side dishes. In all, I feel confidently familiar with at least half of the recipes in TCIGTQ&ELCM.
My verdict: this book lived up to its promises, mostly. There were few enough ingredients, easy to understand instructions, and everything was fresh, unprocessed, inexpensive and accessible at my supermarket. Vegetables were emphasized in most main dish recipes, putting an end to the myth that LC means lacking nutrition and variety. There was a lot of leeway in choosing cuts of meat based on personal preference and budget. Nearly everything had a built-in guarantee of good flavor because that is what you get when you use a very few fresh, unprocessed ingredients in simple recipes that call for quick cooking methods. Looked at that way, it's hard for this cookbook to fail.
As for being low carb, my impression is that about half of the overall recipes were truly a traditional, Atkins-style low carb, the other half is what might be called "good carb", of the kind that you might find on a South Beach diet, for instance. I suppose that somebody on a "good carb" type diet would have no trouble with the low carb dishes, but a traditional Atkins dieter would have to stay away from the "good carb" recipes for sure. Some high-carb fruits were called for frequently in the breakfast and dessert sections: also, unprocessed bran was used as a substitute for many starchy things including bread crumbs, and while that's okay for some LC diets, it's troublesome for Atkins and Paleo diets. That does limit a strict low-carber severely, and it was a little disappointing to me, given the title that promised *low* carb. I just wish that the Good Carb and Low Carb recipes were marked as such.
I can sincerely rave that I loved what I tried (exceptions: anything that tried to imitate bakery items that are normally made with wheat flour. The pancake and cookie recipes blew chunks IMHO. Sorry Mr. Dimmick, but soy flour and other LC bake mixes just don't taste right). Even where it wasn't terribly original, this cookbook can't be faulted for taking advantage of the tried-and-true. Sometimes all I needed was a reminder that yes, stuffed peppers can be translated low carb, and that Oh yeah, classic salsa and hot artichoke dips are ready-made as low carb. What can I say, there is a fine line between Id__t and genius.

I was really impresed by the Idiot's Guide to low carbing. Where certain other low carb books are thinly veiled attempts to bash the lifestyle, the Idiot's Guide explains why this way of life is so healthy.
The book is primarily full of great low carb recipes. There are breakfasts, lunches, dinners, snacks, desserts, and even an entire section dedicated to kid-friendly meals.
These aren't obscure meals that take a gourmet to appreciate. They are quick, easy, and very tasty. You get a lightning chicken stew, almond oatmeal cookies, meatloaf, chicken marsala, and tostadas. There are meals for vegetarians, meals for steak-lovers, and everyone in between.
There's also information on low carbing, if you somehow got this book without knowing what a low carb diet is about. There's background information about carbs, about how our modern diet is overloaded with sugar. It encourages you to eat fresh fruits and veggies, to find balance in your food.

An Idiot's For Smart People!.......2005-05-04
In a motivated mood, I asked my doctor recently to give me a good diet plan so I could take off many unwanted pounds. He didn't skip a beat. He told me that a healthy, balanced diet with low carbohydrate intake and daily exercise works. I have been at it for over three months now and the results in terms of pounds and inches lost are excellent. What a great way to lose weight, in a healthy manner, with a minimal amount of suffering. I am not feeling hungry, although I still long for certain foods. Thus, I have been experimenting with various low carbohydrate recipes, as I have grown a little bored with broiled meats, fish, omelettes and plain salad.
Tod Dimmick's "The Complete Idiot's Guide to Quick and Easy Low-Carb Meals" is more than worthy of your attention if you are looking for good tasting food and meals with low carb counts. The book is designed for people on the go, who do not aspire to be Julia Child, and wish to adhere to a low carbohydrate lifestyle. All the recipes in this book, (almost 250), can be prepared in 20 minutes or less. From stocking your pantry through terrific ways to prepare breakfast, lunch, dinner, appetizers, snacks - there are choices galore to make your meals more exciting and interesting. Low carb doesn't have to mean "deprived." There is even a section for kids, who are difficult to tempt, especially when their friends are gorging on fast foods.
I have had the cookbook for a little over a week and checked-out the chapters on fish, white meat, beef and lamb, bean cuisine, salads, veggies and desserts. So far, I have made: Low-Carb French Toast with Fresh Strawberries (yum!), Low-Carb Toasted Almond Wheat Cereal, and Florentine Scramble for breakfast; Ham and Swiss Roll-Ups, Turkey, Arugula and Almond Roll-Ups, an Open-Faced Tomato and Provolone Sandwich, and a Tuna Salad Wrap for lunch; Ginger Scallops, Broiled Lemon-Rosemary Chicken with Green Beans and Almonds, Red Beans and Rice, Herbed White Beans with Baby Spinach and Meatloaf for dinner; and Cheater' Crustless Chocolate Cheesecake (outrageous!), and Chocolate Chip Cookies. Needless to say, I feel much more motivated and less restricted as far as food is concerned.
I also want to add that exercise is so important in the weight loss process. Even walking for a half hour everyday will help considerably. I highly recommend this cookbook. It will help you to enjoy the process of becoming a slimmer, healthier person. Good luck and ENJOY!

Low Carb exchanges.......2005-07-21
In reference to previous review-any diabetic, who has to watch their simple carb intake to live, knows that 1 carb exchange does equal 15 grams. That's the standard used by anyone, including doctors and dieticians for meal plans. As a diabetic, with a prescribed meal plan from a dietician, I am allowed anywhere from 45-75 grams of carbs for each meal, depending on which one of the three meals I am eating. This of course is also based on height and body weight. 20 grams of carbs per day is not healthy for a prolonged period of time. Best recomendation is moderation of a good mixture of fresh foods.
Cookbook Title is Misleading.......2005-06-29
This cookbook is NOT low carb. The editorial statement says that in the book 1 carb equals 15g carbohydrate. Pa-lease, give us all a break, many low carbers do not use more than 20g carb per day...let alone 15g or more per meal.

As someone currently following the reduced carb lifestyle....I love this book. Tonight I made the Walnut Streusel Muffins and served them with coffee to my non-carb watching family. Yep, they had no idea that they were eating something first of all that was healthy and second of all, sugar-free and only 2.5 carbs. I have so many favorites in this book that I could not choose only one favorite. I was pleased that with buying a few key ingredients you can make almost all the recipes in the book. The author gives a very clear description of exactly what ingredients you need to begin this fun journey. I learned quite a bit about soy powders and the different types. I could not say enough things about this book!

The psyllium pits!.......2005-05-18
The recipes were the pits. They consist of hard to find ingredients. When you finshed reading the recipe it didn't even sound like it would be satisfying. The recipes call for flaxseed and psyllium for baking. I think psyllium is one of the main ingrediants in Metamucil. What are flaxseeds? Sorry that does not spark my appetite. This is just my personal opinion.
Disappointing and outdated.......2005-02-15
I was disappointed with this book. A limited ingredient list is used over and over in some uninspiring combinations; nearly every recipe relies on either soy protein powder or whey protein powder, and neither one in my experience results in desserts that taste like *the real thing*.
The only two sweeteners used are sucralose and stevia. No mention is made of other popular sugar alcohols like maltitol, xylitol, and erythritol. The book was published in Feb. 2003, maybe these sweeteners weren't as readily available then...
At present you can find better recipes and learn more about new low-carb products by going online.
Just didn't like the recipes.......2004-03-30
I tried really hard to like this book, but almost everything I made turned out, well, yucky. I didn't like a single recipe that included any kind of protein powder (that includes most of the cookies, cakes, waffles and candies). The only exception was the mocha shake, although I had to omit half the gelatin to make it drinkable. I haven't tried any of the pie or psyllium-based cookie recipies, so I can't speak for those.
That said, I really enjoyed the section on the art of indulgence, which I think is worth the two stars.

Everything tastes very odd, and yes, I can cook, so It wasnt a question of loose nut between the book and the mixing bowl, ha ha. I agree with one of the other reviews, in that there are easier and tastier ways to prepare some of the dishes, BESIDES using pork rinds and guar gum over and over. I was very dissapointed and I am returning this book and the companion dessert book.
Excellent Low Carb Cookbook!.......2004-04-27
I'm so pleased with this low carb cookbook that I just had to write a review. I had purchased many cookbooks but unfortunately all of them had very high carb counts and when you need to stick to 20-30 carbs a day, you need recipes that are delicious and will work for you. This great cookbook has so many terrific recipes and ALL are under 10 carbs per serving, most around 5 grams of carbs per serving. Now this is what a true low carb cookbook should be. Also, I know the author has come out with a 2nd revised edition of this book and I'm going to order that one too! I don't need to go any further... treat yourself to a real low carb cookbook written by a Registered Nurse who has lost a lot of weight herself and lives the low carb lifestyle.
One more thing.... if you like sweet treats then you should order the best low carb desserts book I've found to date called Eat Yourself Thin With Fabulous Desserts!

This book should have been titled, "Eat Yourself Thin, by Eating Tons of Pork Rinds". So many recipes call for pork rinds--yuck!! I understand that the Atkins diet uses them a lot, but this book calls itself a "low carb cookbook", not an "exclusive Atkins cookbook". Very misleading. I won't use crushed up pig fat--not very healthy!!!!!

All of the recipes make servings of 12 or more, this is great if a family is on this plan but, i'm just one person and the recipes cannot be broken down for my use. Would love a book of recipes for one or two.

I had a hard time deciding how many stars to give this book. Its carb levels are inappropriate for me (as well as the bigger portion of the low-carb community), but I'm trying to keep that out of my review as much as possible. Otherwise, what is good is very good, and what is bad is incredibly annoying.
APPROPRIATENESS:
Before you buy this book, I highly recommend checking it out of the library if you can, to make sure that its carb levels are appropriate to your plan. This may be a good choice for people on a reduced-carb diet (like South Beach), but the carb content is way too high for the weight loss phases of traditional low-carb diets like Atkins. Most of the first-section (lowest-carb) meals are over 10g net carbs, and some are higher, so you can very quickly go over the 20-30g net carbs that most people on Atkins do during Phases 1 & 2. The second and third sections are much higher, and may exceed what some people can eat in maintenance phases. (Depending on personal body chemistry.)
That said, they could pretty easily be adapted to be lower-carb by cutting the portions of veggies (if memory serves, one recipe has an entire tomato and 2 cups of spinach per serving), and cutting or substituting ingredients that aren't allowed on your plan. You'll just have to do the nutritional math yourself. (I've started writing my version of the recipes, along with nutritional info, right below the recipe in my copy.)
THE GOOD:
These recipes are fast, easy and tasty. Not all of them were my style, but I can see that someone with different tastes would really enjoy the ones that I wouldn't. Most use a small list of ingredients, which is always helpful. I can't remember seeing any specialty ingredients either.
THE BAD:
By biggest complaint about this book is that the nutritional information is lumped together for a multi-part dish, and in some cases, an entire meal. For example, most of the second section's breakfasts are actually a dish that would belong in the first section, plus a bowl of bran cereal or oatmeal, but the nutritional counts include both dishes. If they were listed as two dishes, it would be much easier to select and adapt recipes. This means that anyone who wants to eat one of the dishes separately (maybe you can't have bran cereal yet, or maybe you just don't like it) has to recalculate the entire dish separately. This is such a hassle, and would have been so easy to do properly, that I'm subtracting a full two stars.
Not my favorite.......2006-08-10
The book is okay. It would probably work fine for someone on the Southbeach, rather than the Atkins diet. It does give full menus at three stages of weightloss, but some of them are too complicated for my busy lifestyle. It depends on what your definition of "in minutes" is. I was hoping for meals that would take between 15 and 25 minutes, no such luck.
How Low Can You Go? Lower than THIS!.......2005-07-11
As a Type 2 diabetic who can only maintain any control over my blood sugars and weight through a strict low-carb regime, I had high hopes for this book. I hoped that it would provide me with inspirations for meals that would make low-carb life more palatable, and for meals that I could share with my non-diabetic husband.
WHOOPS! These recipes are NOT what I call low-carb. I would gain weight steadily if I ate from the plans in this book. I found one recipe with 46 grams of carbs per serving!
Unless you are someone who currently lives mostly on bread, cereals, fruit, soda, and desserts, this book will *not* help you reduce carbs more than a little. Shy away from it and read anything by Atkins.
What I recommend if you're a diabetic is Richard Bernstein's wonderful book, *Dr. Bernstein's Diabetes Solution*. I am sure that following the principles he outlines is adding years to my life - not to mention the ten pounds it has, initially, removed from my body!

I got a small sample of these terrific recipes and the diet program in the Body by Jake Cardio Cruiser Rev Up the Results Program. It made me run right out and buy the book! I was not dissapointed.
Very limited application.......2005-02-19
The recipes in this book are not suitable for those on Atkins diet (with which I was able to lose over 30% of my weight in a year, then maintain the loss for five years ), nor for those who have substantial amounts of weight to lose. Gassenheimer, for example, makes it appear that one should be at a high carbohydrate intake (presumably, at goal weight) within six weeks, and the 75 grams of carbs allowed in the middle section are far beyond the level at which most could expect any significant weight loss. There are huge amounts of grains included - which are far from low carbohydrate, only high in fibre. Atkins dieters, and those on other truly low carb programmes, would not have grains on their 'ongoing weight loss menus' at all.
One must use this book with discrimination, and not accept the author's statements as gospel, because they are heavily flavoured by varied sources. For example, regarding main dishes, the protein portions are far too small for most, and would prevent the appetite reduction that is critical for low carb dieting to be successful (unless one is seeking to lose very little.) The ingredients include many grains, and grain products are not suited for low carb dieters unless they are at 'maintenance' level. Gassenheimer recommends all low-fat ingredients, and lists, for example, that one may have 'as many as four eggs a week,' when truly low carb programmes have no such restrictions. In fact, for Atkins dieters, the low fat items can hinder weight loss.
The recipes are no worse than those in many low carb cookbooks, though they are hardly gourmet treats. But what is key is that dieters must consult the guidelines of the specific programme they follow, and by no means increase carb counts in such a short period if they wish to succeed.
This book is suited to those who want to drop perhaps five to ten pounds, with an approach that is 'low carb' only by contrast with the ADA food pyramid, not in actuality. One could lose four to ten times as much weight on a truly low carb programme.

It is my PLEASURE to review Belinda Schweinhart's "Low Carb
Recipes..Fast and Easy"!
Belinda is a low carb success story herself, losing 40 pounds in
six months and maintaining that weight loss since 1998! In addition to being a recipe developer, Belinda ran a restaurant for six years and served her delectable culinary creations to packed houses every day. She knows the importance of FAST, EASY and GREAT tasting meals.
Belinda was a pioneer in developing low carb cookbooks back in
1999. She was "low carb, when low carb wasn't cool".

Low carb doesn't have to mean mostly HIGH fat recipes!!.......2002-02-02
Following Tony Perrone's 50-30-20 plan, and wanted some low-carb recipes. Seems like there's a very unhealthy amount of fat in most of these recipes. Most of the entrees have fat from the 30's all the way up to 69 grams of fat! We're eating 50% protein, 30% carb, and 20% fat, which is a much more normal way of eating. We feel wonderful and are losing body fat in a healthy way. Although Tony Perrone has 10 plans based on questionnaires, including a short-term insulin buster diet that involves all fat and protein, we prefer a plan we can live with the rest of our life. We don't have to worry about ketones. We live normally. There is no way I would make meals like these, loaded with all this fat. I'm returning this book.
Food is good, but............2001-06-07
So far I've liked all the recipes that I've tried from this book. They are very simple and easy to make using widely available food. However, I do not like the binding either, not for the price. Also, I prefer to avoid all artificial sweetners. Too many of the recipes call for it in my opinion, and I'm not just talking about the dessert recipes. Finally, I'm not sure how serving sizes were determined. Using children?? Some of the recipes I've had to double up on the serving sizes just to make a decent portion. This isn't really a big problem as long as you remember to double your carb count too, but it irritates me.

The recipes are excellent! I am eating something different everyday! I never knew you could do so much with cauliflower (used to hate the stuff). The recipes are simple and easy to follow. The other wonderful thing about the cookbook are the resources that are provided: where to buy, what to buy, what is it. They are invaluable to a newbie like me.
