5 out of 5 stars An Extra Cup of Coffee for the Sterns, Please!.......2002-12-28

I don't buy cookbooks, but I like food. This book turned me into a real Stern junkie. It's like travelling all over the country with them to the best diners and greasy spoons.

Now you can duplicate what they say makes American food great. I love the New England recipes the most, but everything's interesting.

5 out of 5 stars My Favorite Cookbook.......2002-12-04

This is my favorite cookbook of all time. I lent my copy to a friend who has some restraunts and he lent it to one of his chefs and I never saw it again. It is currently out of print, although I don't know why, so I was overjoyed to find a used copy on Amazon.com. Almost every recipt in this book is a keeper from Doe's Eat Place Shrimp to the Yankee Red Flannel Hash. My mouth is watering just thinking about it. If you like to cook do yourself a favor and track down a used copy of this book.

5 out of 5 stars A Great Regional Cookbook!!.......2000-09-22

Do you like to explore the USA? Do you love regional restaurants? Do you like to cook? Then you'll probably love this cookbook! It's too bad it's so hard to find, because it is without a doubt my favorite cookbook, maybe even my favorite book ever. Jane and Michael Stern, long time food writers of note, have gone out of their way to find local restaurants which feature regional specialties and then replicate the recipes so we can cook "like the locals". From clams in New England and New York delis in the North, through real Buffalo Wings and Cincinnati chili, Pot Likker and Hoppin' John in the south, to Western steak and eggs, they take us around the USA through our stomachs. Where else can you find Basque inspired garlic-laden recipes from Shepherd's Hotels in Nevada? My favorite part are the recipes from the Navajo Indian reservation, with the Hopi lamb stew Nok Qui Vi being the best of the best! If you track this book down and like to cook, buy it immediately! Then have a blast adding new dishes to your resume and dreaming of your next road trip. Happy Eating!

Barbecue is not about grilling food fast over high heat. That's something else, delicious in its own right, but something else entirely. Barbecue is about marginal cuts of meat (for the most part), about smoke, about fires burning so low and slow you hardly ever see the flicker of a flame. Barbecue is about succulent pork ribs as dark as sin just falling off the bone and dripping with glorious sweet pork godliness. Or enjoying the effects that 12 to 18 hours of smoking has on beef brisket.

The trick is, how do you do it? How do you master a cooking technique all but ignored in favor of fast and hot? The answer lies in Smoke & Spice. Authors Jamison and Jamison provide all the information you're ever going to need to run a real barbecue. Tips and techniques abound on every page--accompanied with countless recipes that stretch the barbecue imagination. And seeing that one cannot live on barbecue alone (though that's a challenge well worth considering) there are just as many recipes included for all the good food that accompanies barbecue--from Scalloped Green Chile Potatoes to South-of-the-Border Garlic Soup to Buttermilk Onion Rings and even Bourbon Peaches. If smoke in your eyes makes your mouth water, this is the primer for you! --Schuyler Ingle

Book Description

300-plus recipes. The only cookbook devoted to smoke-cooked barbecue, a hot trend.

5 out of 5 stars Great book with a lot of great ideas and recipes.......2007-08-07

This is a great book on smoking. It has great tips and recipes. Highly recommended for new and existing cooks who want to use smokers. We tried getting this type of information online and it just takes to long and the information is incomplete. This book fills in the gaps and doesn't leave you wondering.

5 out of 5 stars Excellent book.......2007-07-17

A lot of recipes and very detailed information. A must have!!!
My only suggestion would be to dedicate a whole chapter to setting up the fire. There is no info about it in the book.
I think any barbecue book is incomplete without helping the user setup and maintain the temperature. I mean, this is not an oven where you can set it and forget it. Maintaining 200F in a smoker is a talent I think.

3 out of 5 stars Impractical.......2007-07-09

Most of the recipes are too elaborate-- too many ingredients-- too much preparation time. This was a disappointment.

4 out of 5 stars Winter reading and Summer smoking.......2007-07-06

Smoke & Spice makes you want to smoke something year round. You will catch yourself actually reading this cookbook and following it to the letter--then guarding your secret recipe! In the South we use hickory. After reading Smoke & Spice, you'll want to try every hardwood in the forest.

4 out of 5 stars Smoked Foods.......2007-07-03

This cook book was great in helping a newcomer to a smoker. It's a great guide to how to use a smoker and how to smoke different foods.

5 out of 5 stars A Lasting Classic.......2000-10-09

The authors provide a remarkable history of beer in America, from colonial times to as current as the printing of the book. Much of the book involves regional (i.e., Northeast, Midwest, Northwest) stories commonly of 10-12 pages, followed by at least 20-30 recipes from the region that pair especially well with beer.

The quality and diversity of recipes provided is incredible, and any recipe I've made has received rave reviews. Following are some of the items that really stood out -- Beer Rocks (a family favorite), Wisconsin Cheese and Beer Soup, Onion Bread, Beer and Horseradish Mustard, Fresh Beer Sausage, New Orleans Hot Pot, Basic Brine for Seafood, Smoked Fish, Caponata, Porter Pot Roast, Barbecued Shrimp, Liptauer Cheese, Pennsylvania Dutch Stuffed Onions, Bainbridge Island Smoked Fish Chowder, Smoked Trout Pate, Soft Pretzels (recipe has a misprint -- use 1 1/2 cups milk, not 1/2), and Onion Rings (the best I've ever made at home). I could go on ...

Real Beer and Good Eats was the first cookbook I purchased and I've had it now for over 7 years. Since then, I've accumulated 50+ cookbooks and 100+ cooking magazines. I can honestly say that this book is one of the few that I find myself returning to again and again for solid recipes and cooking ideas. It has proven to be a lasting classic, and I wish it were back in print so I could give it to more people as a gift.

4 out of 5 stars Everything you always wanted to know about cooking with beer.......1998-08-25

I've had this book on my shelf for several years and find myself turning to it not just for recipes, but for general information about the many styles of beer outlines in its pages. The recipes are easy to follow and the ones I've tried have been delicous. I particularly like the Beer and Horseradish Mustard, try it with brats or their recipe for soft pretzels. I wish I had more time to cook so I could explore more recipes.

This will help you try some meals that you love but can't find someone to make for you. Now you can stop calling your mama, sister, and bugging your wife to find out how to make great dishes. I know it is hard for us to read instructions but this is an easy read and fillingly rewarding.

5 out of 5 stars www.valderbeebeshow.com.......2006-03-05

A cook book, a history book a great gift! I love a man who cooks, and Real Men, do cook. My husband James cooks brunch each Sunday and my friend Terry Allen (p. 40) of Dallas, has found his place in cooking history with his heritages dishes preserved in the book. Real Men Cook highlights exceptional, amazing men cooking mouth watering dishes. Give your favorite guy a copy of this `real men' cookbook and you can support a great non-profit that celebrates ordinary American men being extraordinary in major cities; Dallas, Chicago, Los Angles, New Orleans, and all across the America.

5 out of 5 stars Tasteful.......2005-12-11

Kofi and his wife, Yvette, are co-founders of Real Men Cook for Charity. They sponsor the Real Men Cookout, which is a Father's Day Charity event designed to celebrate black men as positive role models--everyday men, as well as celebrities. The charity started in Chicago and today, it is celebrated in over twelve cities. The cookbook is more than just recipes. There are stories/essays and poems to help celebrate the African American culture by and about many different people. The stories are just as good as the food. Enjoy!

5 out of 5 stars A Wonderful Tribute to Fathers who cook.......2005-04-29

This book is a culmination of recipes and stories from a unique annual family event "Real Men Cook", which focuses on the joys of fatherhood and cooking. This book is a wonderful addition to the library of anyone who finds joy in preparing meals for the ones they love.

Book Description

In 1946 Worcester Diner #790 arrived by truck and was installed at 3 Bridge Street in Gardiner, Maine. Under the name of Heald's Diner, it served employees of Gardiner's mills and factories with an emphasis on ample portions served quickly. The diner is still at 3 Bridge Street, still a marvel of efficiency and art moderne design, still a local gathering place, still serving the same warm, flaky biscuits. But under the ownership of Mike Giberson and Neil Anderson since 1988, the little A1 Diner (as it is now known) draws customers (and restaurant reviews) from far and wide with its wonderfully eclectic menu (you can order Bouillabaisse or meatloaf), its emphasis on fresh, local food, and its upscale deli and specialty food store next door, A1 To Go. This is a small business success story, filled with characters from either side of the counter, packed with recipes and kitchen notes, enjoyable down to the last bite.

A handful of black-and-white photographs illustrate this excellent cookbook of authentic diner delicacies.

Customer Reviews:

3 out of 5 stars Decent basic advice, a little dated.......2004-11-18

This book is a decent, easy to read introduction to the basics of low-fat cooking and eating. It will teach you how to read nutrition labels and the like. The humor, and the writing in general, are not great, but very readable if you like your information easy to swallow.

Unfortunately, the advice is a little bit dated about the specifics of, for instance, what the legal requirements are for a product to be called "low fat." When in doubt, do your own research. It also does not take into account any recent findings about, for instance, the glycemic index. If you are well versed in these things, the book will not help you.

For some, the most helpful part will be the final chapter, called "Embarrassingly Simple Recipes." If you have no idea how to cook, or no idea how to cook low fat, this will get you started, with recipes for how to cook skinless, boneless chicken breasts and how to make simple dishes with a variety of grains, vegetables, and fruits. There are a fair number of these recipes - definitely enough to get you started, if that's what you need. Again, if you can already cook low-fat or you want a real cookbook, this is not what you need.

5 out of 5 stars best book i've read for a normal person trying to eat well.......1997-09-03

I am learning to live a low fat life and have looked at and read several books that were boring and preachy. This book makes it easy to catch on and understand why we all should eat differently. It's also funny. It's like sitting at my neighbor's kitchen table and chatting while a great dinner is being prepared
