The tastes and influence of the Hunan region of China are fully explored in Fuchsia Dunlop's Revolutionary Chinese Cookbook, which provides over a hundred dishes easy to make and accompanied by color photos and stories from the province. Dishes come with historical introduction, many a cultural insight, and the author's own experiences discovering and cooking the dish: all these factors make for a fine and well-rounded cookbook which goes far beyond the usual light Hunan coverage to probe the depth of Chinese culture and cuisine, making it a 'must' for any serious collection offering Chinese cookbooks beyond one or two basics.
Worthy successor to "Land of Plenty".......2007-06-10
Ms. Dunlop continues to amaze and delight with her second book. The current tome educates the reader in the disciplines of cooking (as well as) ancient Chinese history (Appendix: the Main Chinese Dynasties), language (Appendix: Glossary of Chinese Characters) and contemporary history (revolutionarily centric). Echos of David, Grigson and Fisher resonate. [Not unsurprising considering her Cantabrixian education! (superb bibliography)] I haven't yet tried any of the recipes, so cannot vouch for their efficacy - but, they have a good feel about them. Will become a classic by aficionados.

I cherish my copy of Dunlop's _Land of Plenty_, and had eagerly awaited this new book. I've cooked 15 or so recipes from this book so far, and all of them have been perfectly successful. My favorite so far is her rendition of red-cooked pork (Chairman Mao's Red-Braised Pork), and some others I've made which were wonderful were her Tiger-Skin Steamed Pork, Beef Slivers with Coriander, her unctuous & delectable Steamed Eggs, and a delicious dish of stir-fried baby greens & shrimp. Ooh, and another extraordinarily delicious dish: Stir-fried Zucchini with Salty Duck Egg Yolks. Yum!
I think that _Land of Plenty_ is still her best book, but this is a close second. The essays in _Land of Plenty_, for instance, are just superb, particularly the one about tea.
I'm wishing this cook & author a LONG life so she can continue to explore the food & food culture of China, and write many more books to share her learning with us.
Even Better than Her First Chinese Cookery Book!.......2007-03-02
I enjoyed her first cookbook on Sichuan cookery, Land of Plenty, and I like this second book on Hunan cookery even more, with even more helpful beautiful photos. As far as portion sizes, she states "all recipes serve two people with one or two other dishes and rice, or four people, with 3 or 4 other dishes and rice".
The Sichuan and Hunan cuisines differ from each other as New Orleans Southern food differs from South Carolina Southern cuisine, and yet both of Dunlop's cuisines are clearly hotter and spicier "Chinese" to our tastes. Hunan folks are said to like food with chilies "fire-hot-hot" whereas Sichuan's dominant style is a mix of chili hot and the peculiar "mouth numbing", from the Sichuan "peppercorns".
The Hunan recipes in this Revolutionary Cookbook are straightforward, nearly all ingredients can be obtained from a local Chinese or Asian grocery store. The only one I can't find is "purple perilla", for which Asian basil is not quite a substitute. Not a problem.
The 120 recipe instructions are for preparing simple, straightforward "comfort food", and the food comes out tasting very good. It's lighter, and not gooey, like the cornstarch-laden Americanized Chinese food.
Delights include: Spicy steamed pork buns, BBQ'd lamb chops, Changde Clay-bowl chicken, yellow cooked salt cod in chili sauce, with most fish dishes steamed. Try Chairman Mao's red braised pork, or one of it's 7 supplied variations. I think Ms. Dunlop overdoes the Chairman Mao bit, putting his cheery face on many, many pages for no good reason; it contributes little to understanding of him, or of the Hunan cookery. I'd rather have had more beautiful photos of food and other aspects of Chinese culture and people, instead of so many of Mao's images.
Have you had the traditional Hunan dish- "General Tso's Chicken"? Guess again! FYI, She met the accepted creator of this NON-Hunan dish, with added sugar for US tastes, created in the 1970's in New York by Hunan chef Peng Chang-Kuei! And yes, most Hunanese have never tasted this bogus, yet popular dish that is known in the USA as the "quintessential Hunan dish"! To adjust for tastes, she has both a Hunan version, and a USA version of Gerneral Tso's to choose from.
From her first book being shown to a Chinese friend of mine from Chengdu,who cooked from it and proclaimed it "the real thing" I know that Ms. Dunlop's current book is gonna be just as accurate. No, I do not currently have an authentic Hunan friend to vouch for the recipes, and I do not mind, I like what spicy hot things I have cooked so far!
Just as an aside- Her photo is only somewhat kind to her, it is an oldie, and she looks better than that in person. She clearly "knows her stuff"; I recommend meeting/hearing her on her book tour.
Buy this, and buy the Sichuan book, Land of Plenty, and cook and taste authentic Chinese "comfort food" as it tastes in China... It's a lot better than the cornstarch-laden "Chinese" food served in most US restaurants.
I look forward to her next books.

Delicious and easy to make recipes.......2007-08-27
This is an excellent cook book on American barbequeing and the recipes I have made have been easy to make and delicious.I have been a bit dubious about some of the recipes after I have read the ingredients list but every time the recipes have turned out better than expected but exactly how the author Ray Lampe described.For instance I made the creamy coleslaw and it didn't sound like it would be that good but it was easy to make and the best coleslaw I have tasted.By contrast I have made a coleslaw from 'The Best Recipe cook book American Classics'and this has had a long description and went into great detail about every stage of making the coleslaw but the end result has been very disappointing.The book also contains little anecdotes about each recipe and the world of competition barbequeing and this all adds to the book.Overall this is an excellent book and I will be buying the rest of Ray Lampe's cook books.

I had the pleasure of meeting Dr. BBQ at the Arkansas Literary Festival a couple of years ago. I bought his book then, and recently purchased another for my son.
Unlike most cookbooks, this one isn't just recipes and clinical information about the ingredients and preparation methods. Dr. BBQ includes stories about the people behind the recipes, as well as his own philosophy about weighty questions such as: Gas, charcoal, wood or pellets? Charcoal? Well then, chunk or briquette?
And to the people who insist that using gas isn't the way to prepare REAL bbq or charcoal isn't and so on, the Dr. suggests that unless they are going out naked and killing an animal with a stick before cooking it then THEY aren't really preparing bbq the traditional way either.
Good fun, good food, good guy. The recipes are easy to follow and produce great Q, but I must admit, I use this book for inspiration much more than for the recipes.

A perfect companion for your Gas Grill.......2006-07-12
Let me first say that I love barbecuing, and I guess you do, or you wouldn't even be checking this or any other barbecue book. I try to grill my family dinners almost every weekend, so I would have to say that I have put on thousands of barbecues this far. I own several barbecue and grilling books, and this is one of the best. I consider this book great because with the recipes on it I can try every now and then to make something a little bit different (I guess just to avoid a mutiny among my family crew, Ja Ja).
I don't have to do a fancy or hard to find ingredients, or follow step-by-steps a recipe that might requires to long, but I get great ideas that help me introduce variations that keep the weekends barbecues interesting and fun the whole family.
In this book you will find some recipe or idea that you can try, or just learn something new from the "Basics of Gourmet Gas grilling" included at the beginning of the book.
Last, but not least, always enjoy the experience of barbecuing and grilling at home, with or without this book. With your own recipes or with borrowed recipes. Just enjoy the moment and have a lot of fun with family and friends around the grill.

I was always good at BBQ'ing with the Gas Grill, but i ran out of ideas on what to do next. This book is amazing, it opened up a whole new BBQ world to me, and encouraged me to experiment more. There isnt one recipie i tried that i didnt like. My personal favorite is the Briskett!

What you wont find hear is Basics, or the answer to the number one newbie-cue question "Whats the best way to make ribs?"
Yes - there are a few simple basics in this book, but if you want to be the envy of the block or block party - buy this book. My personal favorite is the Tennessee Pork Loin - and my mouth waters just thinking about it. Do it up right with an 'entire loin', and watch the mouths of your guests as theirs chins drop to the ground.
There are some great rubs, sauces and glazes as well as some new and exciting recipes.
If you are looking for Ribs from basic to intricate get his Ribs Ribs Outrageous Ribs. No serious Q-er should go without reading that book, and incorporating some of the ideas until you can either make or call them your own...

This book contains a lot of great recipes. I especially like the TN pork loin, his Dr. Pepper bbq sauce, and the pork sates. The instructions have always been clear, and nothing I've made has failed to impress. The book also contains bbq folklore that some people might find interesting. The stories about bbq weren't the highlight of the book for me.
If I were only getting one Raichlen book, it would be "How To Grill." That book has less recipes, but it has pictures and covers more details on grilling technique. "How to Grill" also felt better organized to me. If you're new to bbq, "How to Grill" is definately the way to go. Grillmasters may want to go with this book for extra recipes and stories.
Another issue I have with Raichlen is his ingredients lists. Often, he uses what I would call exotic ingredients and unusual cuts of meat. These recipes have pushed me to try new things, but it's also kind of a pain that many of the recipes require trips to Asian markets or other specialty foods stores.
BBQ for the open-minded.......2007-02-24
If you view BBQ in the broadest possible sense, this book is for you. If, on the other hand, you really believe in the differences between BBQ, grilling, smoking, cooking out, or roasting a hot dog on a stick, and that these methods are never to cross paths, then your delicate sensibilities may be offended. The bottom line; buy this book, forget everything you think you know about BBQ, open your mind, and have some fun with fire and food!

If you love to BBQ and try new recipes this is the perfect book. My husbad bought this book on a whim two years ago and we're been using it constantly since. We recently purchased another copy of the book for my father. The pages have been marked and he's ready to throw some meat on the barbie and try out some of the recipes.
There is great information on where the recipe came from and how the cooking and grilling style evolved. Enjoy!

Deborah does an amazing job with this how - to on outdoor cooking. beautiful pictures and designs to inspire even the most uncreative of readers. highly recommended - she even includes pictures of her own amazing outdoor kitchen which is just a testament to her knowedge and experience. even if you are just looking for ideas or creative possibilities pick up a copy and you will not be disappointed- you truly get what you pay for. i wish i could just carry out all of the projects she puts in here!

This book, a BBQ grill, and a few good buddies or family members is a match made in heaven. The pictures make me want to grill everything they list as my mouth waters while I read. The directions are easy to understand, filled in with overall useful grilling tips like how to cut and prepare your meats, to prep work and preheating, and even how to dazzle your meal with the perfect grill marks.
If you use to just get by while grilling or were only okay with the meal that you just cooked you need to pick up this book! Also expand your diet because it's so easy to try new recipes from this book.... Pick this up and enjoy every meal!

I have made more recipes from this cookbook than any other book in my collection. Just the chicken recipes alone are worth it. I was never expecting it to be a favorite when I originally purchased it. My sister now owns it too and has given it a pretty good workout also. Relatively easy with plenty of good photos. You will not regret owning it and no I don't work for Weber.

This book has revealed the mysteries of grilling in a fun, simple format. Each food type is initially presented with a conceptual explanation and then followed by specific recipes which help solidify your plan for what you want to do. The resulting meals are noticably better. The book can then be referenced to refine your grilling technique even more - the author's have pulled off the ultimate guidebook!

1st of all, this guy has won 400 awards!
2nd, this book is packed with tons of recipes for anything you can grill or BBQ.
3rd tons of techniques, rubs, marinades, special home-made ketchups, mustards slathers.
Finally, the detail in this book is outstanding! Many BBQ/grilling books have great recipes, but don't give enough HOW-TO details that give you the delicious final product.
Great Recipes, Good Instruction.......2007-05-01
I'd rate this as a great recipe book, and a good but not great BBQ instruction book. The author is not shy about telling you how good he is and he wants you to be just as proficient at cooking up great food.
The book's recipes cover all kinds of meats, including beef, pork, lamb, chicken and even goat, plus there was a chapter on fish, an unexpected bonus. Whole sections are dedicated to rubs, mops, sauces, and all other manner of BBQ flavorings. The author includes some helpful information for hot grilling foods as well, because its not every day you can spend 16 hours smoking a brisket or 6 hours slow cooking spare ribs.
The only drawback to this book in my eyes is that its explanation of cooking techniques are adequate but not great. A few pictures or diagrams might have helped, as I found myself puzzled trying to figure out a few of his explanations for specific methods. Overall, however, I'm glad I bought this book and look forward to using it for years to come.

Until this summer, my two best culinary dishes were peanut butter & jelly on a bagel and power bars served freshly from the wrapper. Then I got a Weber grill as a gift and decided that I had better learn how to use it properly.
I bought this book and also 'Weber's Big Book of Grilling' after reading positive reviews about both. Both books are fantastic. They cover the basics of how to run, outfit and maintain your grill. Also both have great sections that give tips on how to best prepare different types of meat/veggies. The rest of the book is composed of amazing grill recipes with beautiful color photography of the outcome. I am a very visual person and I love this book.
I can honestly say that by simply following the recipes in this book step by step, I have successfully cooked ribs, burgers, chicken and tri-tip for crowds of friends and family this summer and have gotten RAVE reviews. This is something entirely new to me since I previous had no cooking ability (as I mentioned). This book is great! As a final note, this book is slightly more advanced than Weber's Big Book of Grilling, but both are sufficiently friendly for the novice. My recommendation is to buy both - you won't be disappointed.

I received the book as a gift and i'm glad i did. Every other BBQ book is not nearly as informative as this one. Besides the recipes theres an entire section on rubs, marinades, and sauces. It gives info on the various types and cuts of meats. I used the info in this book to make my own rub and bbq sauce that has won awards

I have 3 Weber cookbooks, and each one is exceptional. The Weber cookbook author, Jamie Purviance, really has a great sense of taste and the ability to combine interesting ingredients to make grilled food great. One thing I was wary of with these book was I thought it may be one giant advertisement for Weber grills, but that is not the case (although I must admit I am a Weber fan, all of my grills have been Webers).
The focus is simply on the food, and it is done so well. Purviance seems to like Californian-style food, that is, lots of Mexican influence with spices and avacados and corn, etc. The recipes are well written and easy to follow, and are accopanied by large, full-color pictures that make you want to try every recipe.
I have made many of the recipes in this book, and have yet to be disappointed. They are great for a tailgate or a backyard BBQ party, and you'll soon gladly find yourself burning through your fair share of charcoal if you get this book. Definitely recommended!

This is my son's favorite tv chef; I bought this for him for his birthday, and right away made several recipes, that all worked perfectly (often they do not!) The flavors were interesting and the directions clear and helpful. The desserts are fabulous too, especially the ice cream sundae frozen pie; I've already made it twice. The cookbook is a fun read and the recipes delicious! My family loves grilled food and bobby flay just makes it more interesting with his combination of flavors and unusual food pairings.

I am a huge Bobby Flay fan, and this book turns out some great recipes, but they are very time consuming, difficult recipes. If you want to turn out some high-end barbecue dishes, this book is for you. Be prepared to put in some serious prep time though.

I purchased this as a gift for my brother. He is not a NASCAR fan (as I am) but he was looking for a good outdoor grilling cookbook. These receipes are great and for the NASCAR fans there are photos and short stories from the track. In fact, I may end up borrowing this book when I head to the races this year! Overall I would highly recommend this book for anyone looking for great tasting recipes for your backyard barbeque or tailgating at your favorite sporting event.
