Book Description

A Year in Our Test Kitchen

This volume represents the best of the best from America's most famous test kitchen. Every year, our editors and cooks develop nearly 1,000 recipes for our magazines, books, and public television show. The Best of America's Test Kitchen contains our absolute favorite recipes from the past year. Come share our successes (and learn about some interesting failures) in this book packed with step-by-step photographs, opinionated equipment and ingredient recommendations, and common-sense information that will make you a better cook. Following are just a few things we learned in our test kitchen this year.

A "PUDDING" MIXTURE MAKES THE MOISTEST CAKE. For a layer cake that's extra-chocolaty and super-moist, add a homemade pudding mix (unsweetened chocolate, cocoa, and sugar cooked with a little water) to the batter.

YES, YOU CAN BUY A DECENT inexpensive STEAK. Our expert tasters sampled 12 inexpensive supermarket cuts and found two that can rival any fancy steak.

GELATIN IS THE SECRET TO GREAT MEAT LOAF. Forget about buying three kinds of ground meat. You can use only beef—and get tender results—by adding a pinch of gelatin.

Sometimes the Cheaper Pan Is The Best Option. Our equipment testers set out to compile a list of must-have pots and pans for any kitchen and in the process learned that the high-priced brands are not always the best.

You'll find many other equipment tests throughout the book, on everything from hand blenders and deep fryers to vegetable peelers and meat pounders.

For the best chicken ever, poke holes in the skin (so fat can escape) and rub the bird with cornstarch. The result is an extra-crisp coating that's almost crunchy.

Today’s busy lifestyles make it impractical to plan the kind of multicourse feasts one might wish. An easy and exciting solution is the venerable dutch oven pot. In this follow-up to their successful The Cast Iron Skillet Cookbook, Sharon Kramis and Julie Kramis Hearne show off the many virtues of this kitchen essential. The dutch oven excels at everything from simmering to baking, working equally well on the stovetop and in the oven. The book begins with an informative history of the pot, along with a discussion of various cooking methods. From there it moves into such mouthwatering dishes as Slow Cooked Pork with Smoky Barbeque Sauce and Slaw, Smothered Chicken with Sautéed Morels, Fresh Vegetable Estouffade, Northwest Bouillabaisse, and Ms. Kate’s Spoon Bread. Whether using a well-used and blackened garage-sale find, or the latest celery-green item from La Creuset, contemporary chefs can satisfy the most exacting palates with this entertaining cookbook.

While this book has great sounding recipes, not many of them are practical -- I would only use them if I wanted something real special (and different.)

5 out of 5 stars The Dutch Oven Cookbok.......2007-04-11

This recipe book is great, since receiving it I bet I have tried at least 5 of the recipes and loved them all. I'm so glad I ordered it.

5 out of 5 stars One Of The Best Cookbooks.......2007-03-09

This is one of the best cookbooks that I have ever purchased. The recipes are simple to follow and do not call for exotic ingredients. The recipes we tried have all come out excellent and I wouldn't adjust any of the ingredients, cooking times or amounts. Well worth the money! It looks like it will get plenty of use in our house.

Customer Reviews:

5 out of 5 stars Great help for budding cabinetmakers.......2007-06-27

I have read this book nearly cover to cover and have found it easy reading as well as most informative for a beginning/intermediate woodworker. The photos are very clear and the articles are easy to understand. I can't wait to put some new methods to the test.

1 out of 5 stars I wish I could rate it zero stars.......2007-04-27

Not worth the money buy a different book if you are interesting in learning how to build kitchen cabinets. This book is random and appears to be chapters of previously published material.

3 out of 5 stars NOT WHAT I EXSPECTED.......2007-01-10

This book was not at all what I was looking for. There were too many opions on cabinet building in one book none of which were in any detail. Too general and the various contributors at times condemed the styles of one another. Seemed as though they put together monthly issues of various woodworking magazines. Not what I exspected

5 out of 5 stars Good reference book for woodworkers.......2005-11-29

I liked this book. It challenges you to move past basic cabinet making to furniture quality construction. It includes good detail and suggestions that improve your skills. This book has the quality of it's namesake magazine.

Customer Reviews:

5 out of 5 stars Love it!.......2007-09-03

I love this cookbook. I got it 2 wks ago for my b-day. At 34, I have grown up using teflon pans, so cast iron cooking is new to me. I have made a lot of the recipes, and they all have been great! The meatloaf, the roast chicken with rosemary garlic and maple balsamic glaze, the chicken with herbed dumplings. One of my fav's is the garlic spiced prawns - a easy quick meal. My whole family of picky eaters ate the beef brisket. All ready it has notations written in it and a few spill spots - the hallmarks of a favorite cookbook.

5 out of 5 stars Incredile Recipes!.......2007-09-02

This is my favorite cookbook, and I've started getting more copies and giving them as gifts. There are many wonderful, easy recipes to choose from. They call for interesting combinations of ingredients, and the results are mouth-watering with unique flavors. My favorite is Skillet-Roasted Chicken with Rosemary, Garlic and Balsamic Glaze, but there are many other wonderful gems such as Pan-Seared Wild King Salmon with Dill Tartar Sauce, or even just the Moist Cornbread.

5 out of 5 stars Good recipes.......2007-03-21

I just got this book today so I have not had time to cook anything from it yet, but the recipes look great.

What impressed me the most was this is a real cookbook. It does NOT call for canned processed foods, but real food! I can't wait to try my first recipe.

5 out of 5 stars Awesome.......2007-03-18

Bought some enameled cast iron pots (Lodge, and at a steep discount at a superstore) and after cooking some tried and true recipes with them, decided to expand my horizons and buy a cookbook just for the cast iron pots. I read the reviews and looked at some other cast iron cookbooks before I went to Barnes and Nobles to check it out. Loved how the simple and attractive the book was and really liked how they sounded.

Made my first meal from the book tonight and I love it! Going on another reviewer's suggestion, I made the Chicken and Apples and Roasted Rosemary Potatoes. Worked out fabulously, even though I refused to buy the Calvados for the chicken/apple dinner. Instead I used a much cheaper brandy and a quality apple cider as a substitute, mixing them half and half. It was still absolutely delicious. My college age son even said that I had to show him how to make it before he moved out on his own, lol. That alone says a lot. The rosemary potatoes were good and simple to make.

Very happy with it all. I'm planning on trying the pomegranite glazed lamb chops next with the skillet roasted asparagus.

4 out of 5 stars Several great recipes.......2007-03-17

I'd buy this again as a gift for someone. Nice and well detailed recipes.
Good one

I've lost 9 lbs. in the last 5 days and have had some type of Italian dish EVERYDAY!! Plan on using this book on a VERY regular basis!!

I've not used this book as much as I have some of the other Weight Watchers cook books but this one is just as good. If your love to cook Italian food, and want to stay within your points, this one will have you covered. Things covered in this book are Pizza and pasta based dishes along with several not so Americanized Italian dishes. You'll get recipes for making home made pasta as well as several types of breads that won't blow your diet.

5 out of 5 stars Fantastic book.......2006-01-30

We love this book. I haven't made a recipe from it that we don't like, and my husband is a picky eater!
Even though I am no longer strictly following the Weight Watchers plan we still turn to this book for our favorites.

Loss Forgiveness and Restoration. The Face of Christ illustration and the accompanying story that has changed lives all around the globe.First it is a truelife story of an advertising executive an artist and a pastor Joe Castillo and the way God changed him. It also tells of the many lives touched by this simple illustration.Done before a live audience the very first time it had a powerful impact on those who watched. This motivated the artist to reproduce it in pen ink prints. As an artist Joes struggle to make a living was suddenly compounded by having his wife diagnosed with cancer. They had no insurance to cover the mounting debt but at an opportune time a friend offered to reproduce the artwork on marble plaques and pay royalties. The sales of the plaques were amazing surely this was the answer to all their financial problems But the story seems to grind to a halt. The friend refuses to pay royalties on the artwork that is selling world wide and Joe loses his wife to cancer. It becomes a daily struggle to forgive the man who was profiting from his artwork and overcome the bitterness at the loss of his wife. The plaques seem to show up everywhere compounding his anger and resentment. For Joe it became a bitter symbol of everything that had gone wrong. If you have ever struggled with forgiveness. If some events in your life just dont make sense God can use this artwork and the story that goes with it to help you put the pieces together.

5 out of 5 stars The Best Cook Book in My Kitchen.......1999-12-23

I love this cook book! It's just full of recipes for that wonderful Amish food, and the thing I really love about it is that for the most part, the ingredients are items you probably already have in your kitchen, as opposed to some of the "coffee table" cookbooks you have to travel to France in order to get the ingredients they call for. I wouldn't be without this one, and I've just finished ordering it as a gift. Get this one, you'll love it.

5 out of 5 stars Wonderful accurate cook book with good stories.......1998-09-23

My neighbor has cooked with some of these recipes for years (she is 76). She was so happy to find these recipes written so that she can give them to her daughter, grand daughters and great grand daughters. The author is an excellant authority on Amish cooking.

5 out of 5 stars Mrs. Fields Best-130 Delicious Cookie and Dessert Recipes.......2004-07-21

I have just received my sixth copy of Mrs. Fields Best Cookie Book Ever. My daugher found it at the library-very old, yellow, torn. She and her daughters were writing recipes and trying recipes from it and they are delicious. Maybe this is an old cookbook but it keeps up with modern times. Now all my daughters and two granddaughters have it. What a rare find! Most were brand new and bought used and were in perfect condition. Most not even out of wrappers.

4 out of 5 stars good one to have in the kitchen.......2002-04-28

I like the fact that there's a variety of different cookies.
I've also made quiet a number of them. All taste pretty good.
Flavor combinations of the cookies surprised me at first but
proven good aroma and pleasing on the palet. My favorite is
the Banana chocolate chip cookies.Except I replace the chocolate chips for white chocolate chips it brings out the flavor of the bananas. The only thing I don't like about this book is that
I wish it had more recipes.

5 out of 5 stars My favorite cookie book!.......2001-12-04

This is my favorite cookie cookbook. Pictures of every recipe, is what makes it special. I'm on my second copy.

4 out of 5 stars first impressions.......2001-09-15

"Cookies" is almost synonymous with "Mrs. Fields" and that's what attracted me to this book. I expected Mrs. Fields' recipe for her famous chocolate chip cookies to be revealed -- unfortunately, it isn't. The recipes are standard cookie recipes, with an emphasis on chocolate chip types. There's even one recipe that calls for the use of all kinds (semisweet, white, bittersweet) in one cookie. What I like are the pictures. The cookies look just like the ones I make at home and that, to me, is reassuring. I also like the straightforward way in which the recipes are presented. They all look simple and easy to do. The book encourages and gives one the confidence to go into the kitchen and bake.

5 out of 5 stars Mrs.Fields Great Cookies!!!.......2001-02-26

This is the most tastiest book in the world!!!! The recipes in here are decadent. This is my favourite cookie book in the world!!! I try to bake 1 recipe from it a week and it is an enjoyable experience!!!

Book Description

Joza Brizova

In Czechoslovakia, a country known for fine cooks, a copy of Varime Zdrave Chutne a Hospodarne graces nearly every kitchen. Now this best-selling Czechoslovak cookbook has been adapted for American use. The Czechoslovak Cookbook contains over 500 authentic recipes that convey the essence of Czechoslovak cuisine.

Hearty soups made from modest ingredients are one of the hallmarks of Czechoslovak cuisine. Contained in this volume are recipes for such favorites as Garlic Soup, Creamed Fish Soup, and Rye Bread Soup. Robust meat dishes include Ginger Roast Beef, Braised Beef with Vegetables and Sour Cream, Beef Goulash, Tartar Beefsteak, Mutton with Marjoram, Veal Cutlets with Mushrooms, Stuffed Breast of Veal, Veal Paprika, Roast Pork with Capers, Braised Sweetbreads, and a variety of pates.

The poultry and game chapter contains recipes for Chicken Paprika, Roast Capon, Roast Goose. Stuffed Roast Squab, Roast Hare with Sour Cream, and Leg of Venison with Red Wine.

The Czechs are particularly fond of meals centered around egg dishes and dumplings, for instance Baked Eggs with Chicken Livers, Farina Omelet, Noodle Souffle with Cherries and Nuts, Noodles with Farmer Cheese, Napkin Dumplings, Dumplings with Smoked Meat, and Sour Cream Pancakes. Rounded out with a vegetable dish like Sauteed Cabbage, Green Beans Paprika, or Stuffed Kale Rolls, these entrees make a tasty and inexpensive dinner.

The Czechs are justifiably famous for their baking, and The Czechoslovak Cookbook is full of delectable baked goods: Bohemian Biscuits. Crisp Potato Sticks, Salt Rolls, Pretzels, Christmas Twist, Checkerboard Cookies, Bishop's Bread, and Honey Cake.

Suitable for both the experienced cook and the novice who hasn't ventured beyond broiling a steak, The Czechoslovak Cookbook is a valuable asset to any kitchen.

4 out of 5 stars Many good, traditional recipes.......2007-08-08

I've owned this book for years and use it frequently. As a Czech, I find it quite authentic. Many of the recipes come out just as I remember them from my childhood. The BUCHTY recipe is excellent, for example, as are many or the CUKROVI ones. I am surprised by the reviewer who says some of the dishes aren't authentic, because I've always had the impression that this book was a translation of a Czech cookbook. I agree with those reviewers who say that some of the dishes are unpractical or unpalatable in the American context. But such is the nature of Czech food! I like the fact that the names of the dishes are given in Czech and in English. My one problem with the book is the poorly organized index. Otherwise, DOBROU CHUT!

4 out of 5 stars Czech Cooking.......2005-10-22

I have several local Czech cookbooks, but this one is much better. The recipes are true Czech and not American-Czech which are some of the area cookbooks. I like the American recipe name with the Czech name under it. I am married to a Czech and he has enjoyed the pasteries I have made.

5 out of 5 stars Authentic Indeed.......2004-12-26

The original Brizova publication features simple, solid cooking and uses ingredients most kitchens readily have on hand. I haven't seen anything out of the ordinary in the cookbook, save to say if you don't like tongue and tripe and liver and heart, then simply take a pass at the recipes that use it.

The real trick to honest Czech cooking is to make a tasty dish out of a few simple ingredients and to prepare it well. As in America, Czechs cook to their own taste (thus the arguments regarding spices) creating personalized specialties from standbys such as dumplings, strudel, kolache and breads, fixing it to suit the tastes of those they cook for.

Certain foods are a staple ~ dumplings, potatoes, rye bread; root vegetables such rutabaga, parsnips, celery root, turnips. Kale, cabbage, cauliflower, and celery are also frequently used. Horseradish and vinegar are common condiments, often sweetened to taste with a little sugar. Czechs aren't afraid of butter, lard, chicken fat, goose greese, sausage, cured meats, cheese (farmer's cheese, cottage cheese .. not the hard cheese) and sour cream. Perhaps not food to eat while on a diet because it will stick to your ribs and fill you up and keep you going and going.

All in all, I treasure my taped up, spotted, tattered copy of Ms Brizova's original book and browse it frequently, each time revisiting my childhood. Here's timeless old-country cooking that will never go out of style.

3 out of 5 stars Good, with qualifications.......2004-09-19

As a Czech I can say that this book is good, if somewhat misleading. There are a great many recipes in the book that most Czechs have probably never heard of, and if they have, have never themselves had. As with people in most of the countries in Europe, Czechs have their tried and true favorites which they cook, by American standards, very frequently. If one only knew as a non-Czech what these best hits were they would not be dissatisfied with this book. However there is much room to go astray. Nevertheless I find some of the recipes in this book to be very good and have had the occasion to cook them for other czechs who enthusiastically agreed with me. The Time-Life book that covers the cooking of Austria, Hungary, and Czechoslovakia is an excellent book with fewer disappointments for the non-native person. But, if you like to experiment, you will eventually stumble upon some very good recipes with this book as well.

4 out of 5 stars Pretty good Czech cookbook.......2003-09-09

I have to disagree with Rita's review - I am Czech (I came here from Prague with my parents when I was very young), and grew up with Czech cooking. I don't remember my family ever using mace & nutmeg in recipes (although we did use a little bit of allspice in our goulash)... Also, as for the flours used in the desserts, I don't find them hard to find. The local grocery store carries the grainier-type flour, Wondra, which works perfectly well in the recipes. I do admit, though, that there are a few recipes in this book that I find strange & wouldn't try them... But overall, the book has some good recipes.

As for adapting these for 'today's cook' - I think the recipes lose a LOT if you "Americanize" them. The reason it is Czech food is just that - it's Czech, not American. It may use some different ingredients, but that is what makes it inherently Czech. Otherwise, you'll just get American. And why buy the book? Some things you just can't substitute.

5 out of 5 stars New Vegetarain.......2007-05-14

No, I'm not actually a vegetarian but after cooking from this cookbook I may as well become one. My husband wanted me to start cooking with less meat and I had a very hard time doing it because most of the vegetarian dishes I cooked seemed so blah to me. This book has revolutionized my life! Awesome, awesome dishes.

4 out of 5 stars Good stuff.......2007-05-13

After purchasing this book in a bookstore it was immediately "borrowed" by a vegetarian relative. My only recourse was to order another for myself. We obviously enjoy the recipies. I find all Williams-Sonoma cookbooks worthwhile.

4 out of 5 stars Nice vegetarian resource that covers multiple ethnic cuisines.......2006-07-10

A passionate home cook that has been honing her cooking skills for the last 25 years, concentrating on Italian cooking for the last 10 years, writes this review. My favorite cookbooks are "The Professional Chef" by the Culinary Institute and "Culinary Artistry". With more than 500 cookbooks in my collection I am usually disappointed in my recent cookbook acquisitions. This book is a nice addition to any cookbook library if you have a vegetarian in your family or just want to add a few meatless meals to your family table.

The book is subdivided as follows:
Introduction
Starters and Salads
Soups and Stews
Sauteed & Stir Fried Vegetables
Boiled and Steamed Vegetables
Baked, Roasted and Grilled Vegetables
Beans and Legumes
Pasta, Polenta & Rice
Eggs and Cheese
Basic Recipes & Techniques

This book is vegetarian, not vegan. However, there are many recipes in the book that are vegan or that can be easily changed to make them vegan. As a new follower of the mostly vegan "Eat to Live" plan I have been purchasing vegetarian cookbooks with abandon looking for new flavor ideas. This book has added a number of new recipes to my cooking repertoire.

My overall observations about the book are as follows:

Pros:
1. Book covers many ethnic cuisines in its recipes
2. Recipe directions are very thorough
3. Covers many different techniques for preparing veggies (stir fry, baking, roasting, grilling, etc.)
4. Many but not all of the recipes are healthy
5. Color photographs of all the dishes are provided
6. Small book, doesn't take up too much room on the counter
7. Nice sturdy binding that will stand up to many years of constant use

Cons:
1. No desserts
2. Uses while flour where whole wheat would work
3. Uses full fat-bechamel where low-fat bechamel would work and be a healthier option
4. Uses full fat cream a little too liberally

As a cook that relies mostly on Italian Cuisine and that is new to mostly vegan cooking I found many ideas in this book that I could add to my family table. If you wish to expand your cooking to include multiple ethnicities in a vegetarian environment I would recommend this book. I have given this book 4 stars instead of 5 because it did not try to make the recipes healthier by reducing the white flour and full fat dairy where appropriate.

5 out of 5 stars excellent gift for new (and old) cooks.......2007-01-14

I use this book in my household extensively and have since it came out. I also use this book in my private practice to teach my patients how to cook healthy. There is a section on how to buy meats, cheeses etc and why using whole grains and lean meats is a better option than processed, high fat versions. I use Sandra's recipes for patients suffering from diabetes, hypertension, kidney disease, high cholesterol and for weight loss. There are 600 recipes so it does not become boring. The best part is that once you realize just how simple healthful cooking can be, you can adapt your favorite recipes using Sandra's tips. I say, give this book to a son or daughter moving off to college, or to a newlywed couple, then get a copy for yourself. If you love pizza, lasagna, meatloaf, hamburgers and fries, stroganoff and fettucine alfredo, you need to buy this book.

5 out of 5 stars Stellar Cookbook.......2006-09-06

I have owned this cookbook for years and, regardless of what new cookbook I buy, I always find myself coming back to these easy, healthy, and delicious recipes. The ingredients are readily available; instructions are clear and thorough. My family, even my husband, is particularly fond of the "new" versions of classic dishes (e.g. beef stroganoff, macaroni and cheese) as well as the innovative recipes. I've regularly given this book for wedding showers and house warmings. It is definitely a worthwhile purchase.

5 out of 5 stars Excellent book.......2004-09-08

This book makes more sense than anything I have read in a long time, and I have read just about every low-carb book there is. It adds a new perspective
by tying everything together. The first part describes the theory and science behind all low-carb diets and does a superb job of clarifying the differences between low-carb and reduced-carb diets. There is also an excellent discussion of good carbs and the glycemic index. The "choose how you want to lose" approach with the accompanying menus is both practical and useful. Chapters on stocking the pantry and dining out are outstanding. There are also lots of recipes that are easy, really good, and do not require a lot of exotic or expensive ingredients. All in all, this is a first rate guide to lower-carb living.

5 out of 5 stars The whole office can't be wrong!.......2003-05-23

Most of my dessert recipes are Julia Child-style rich, but I recently got this book from the library to see how well I could make low-fat, whole-wheat baking work (I've been baking since I was 8 and use mostly my own recipes). Yesterday I made my usual white flour, high-fat, high-sugar banana bread for my entire office, which everyone loved. Today I made the whole wheat Brown Sugar Banana Bread from the bread section of this cookbook, without the nuts, and the ENTIRE office is raving about it! Everyone ate both kinds and declared this one just as good, if not better. I also got a number of her other cookbooks and have been VERY impressed with the recipes. Definitely a must-have for any kitchen.

5 out of 5 stars Lowfat and healthy recipes that are easy and taste great.......2003-04-12

This cookbook is great! There are some traditional dishes that have been revamped so they are still flavorful, but lower in fat. The recipes are very easy to make with ingredients that can be found almost anywhere. I have substituted ingredients(like another reviewer), and the results have still been incredible. I have made several recipes including the Pasta with Scallops in Creamy Tomato Sauce, The Pasta with Shrimp Florentine, and a few of the muffin recipes. Everything has turned out very well so far. I am delighted, my husband is delighted, and most likely you will be as well.
