This really is a great cookbook. Easy to follow recipes (although some ingredients are hard to find in a small town in the middle of nowhere, where we live), and everything tastes good. I'd highly recommend it to anyone wanting to expand their cooking.

I received this book as a present, and I am very pleasantly surprised by this book. This book contains modern and creative twists on traditional American dishes as well as other food of ethnic origin making its way into mainstream. All the dishes I've made from it have turned out to be very delicious, the steps are simple to follow, and most of the ingredients are available at well-stocked supermakets. I was surprised how many things I used to have to buy can be made so easy with so little time or effort. This was what I had hoped my Moosewood cookbook would be, but this book actually succeeds because of it is more focused, placing emphasis on beauty through simplicity rather than purely just inventiveness.
Another part I really like about this book is that it actually contain a decent breakfast section. From now on I no longer have to rely on omlettes or toast for breakfast, but instead I can have banana french toast, different muffins, etc.
The recipes here are very straightforward, so they are suitable for most levels of cooks. The only possible drawback is that there are no pictures (though you won't need them), and there are no directions on preparation techniques, so I would suggest this book for those with at least some rudimentary kitchen skills.

This is one of my favorite cookbooks. I have been vegetarian for many years and I am an avid cook, and this book has provided nothing but perfect food, without meat, every time I have used it. The salads are great, the breakfast foods are great, the entrees are great. You name it, in this book, it's all good.
The recipes are well-tested and well-written recipes. A must have.

    Anytime El Nino has the price of a head of lettuce breaking the $2 barrier, it's time to march to the cookbook shelf for inspiration. Reaching for Salad Days is well in order, for Marcel Desaulniers has produced an elegant little book that gives salad a refreshing spin.

    A lovely chapter on greens leads the book, and Desaulniers follows right along with chapters on beans, grains, and fruits. But these are only the baseline ingredients, the bedrock on which a grand, dinner salad might be built. This book is all about building, about mixing and matching. One is tempted to believe that Desaulniers played with paper dolls as a child, for the same theory is at work: Once the outfits are cut out, it's simply a matter of assembling the final production according to one's taste.

    Take, for example, the salad of sliced beets, curly endive, red bliss potato salad, honey mustard roasted walnuts, and meaux mustard vinaigrette. There are four separate recipes at work here, which might seem intimidating at first. But it's all really quite short and sweet. A minimum of muss and fuss, and then on to the assemblage.

    But here's the kicker, having given you the recipe for the baseline assembled salad, Desaulniers gives the reader two ways to stretch, in this case with recipes for walnut-crusted stripped bass on the one hand, and honey duck stir-fry on the other. By adding either ingredient, what started as an elegant dinner salad changes into an entrée salad. A main course.

    Desaulniers' primary and obvious point of concern is the home cook. He works up his recipes in a home kitchen, with home kitchen equipment and appliances. He writes clear and encouraging recipes, lists all the tools a cook will need, and slathers on the insider tips. The net effect of all this is to bring the home cook right into the heart of real cooking. And there's a whole world of difference between that and following a recipe. --Schuyler Ingle

    I love this cookbook. I have been using it for about 5 years and still find things of interest. I particularly like the fact that the book tells you how to prepare and present the whole meal, with each menu broken down into: the dressing, the salad itself, assembly of the dish and always two choices of meat or fish to accompany the meal. I often spice up a meal with just a part of a salad - ratatouille tonight and maybe saffron infused arborio rice cakes another day. The ingredients are easy to find and the methodology easy to follow. If you like salads and want something a little different, then this is the book.

    These are main-dish salads. Each recipe has several components to it, and two variations on top of that to top things off. One of my favorite recipes in this book is "Sliced Beets with Curly Endive, Red Bliss Potato Salad, Honey Mustard Roasted Walnuts, and Meaux Mustard Vinaigrette." I'm not normally fond of beets, but they're fantastic in this recipe. The honey mustard roasted walnuts have the perfect blend of sharp and sweet tastes. There are a couple of ingredients you might have trouble finding, but they're generally things you can easily substitute for. The first variation for this recipe is the Walnut-Crusted Striped Bass, and there's also a Honey Duck Stir-Fry variation.

    Each recipe has the same "Chef's Touch" section as in "Death by Chocolate," giving suggestions for substitution (the aforementioned mustard), storage, and so on, including even wine suggestions in some cases. My only negative comment on this recipe was that the vinaigrette was too oily for our taste, but it's easy enough to reduce the amount of oil. Each recipe serves four hungry people, and could easily be stretched to 6 or 8 as a side dish.

    If you're familiar with Desaulniers' "Death by Chocolate" series, then you're already familiar with his cookbook style. He describes everything in detail, not because it's necessarily complex, but because he wants to make sure he doesn't leave anything out or confuse the reader. Also, while his recipes are usually calculated to be not overly difficult, they do tend to be time-consuming, and often involve a handful of different components that need to be put together. You don't need to be an expert to use his cookbooks, but you do need to be willing to spend time and effort in the kitchen.

    But as always, he truly comes through in the flavor department. Peppered Honey Peaches with Warm Pecan Cakes, "Bitter" Salad Greens, and Sour Mash Vinaigrette. Variations: Turkey Scallopine with Basil and Zinfandel; Pecan-Crusted Soft-Shell Crab. Or maybe you'd prefer Mandarin Orange Basmati Rice with Sesame Stir-Fried Vegetables, Tangy Red Cabbage, and Szechuan Peppercorn Vinaigrette. Variations: Orange and Cilantro Barbecued Catfish; Charred Flank Steak. Truly, there's something in here to appeal to almost anyone.

    Marcel Desaulniers, author of some of the most wickedly good dessert cookbooks in my cupboard, releases a cookbook full of more virtuous dishes, probably for those of us who've indulged one time too many in his myriad chocolate desserts.

    One thing I particularly like about this book is the serving sizes. Unlike many cookbooks, where the number of servings listed is sometimes (or usually) optimistic, when a recipe in THIS book lists 4 servings, it means 4 VERY generous servings. Also, love or hate the ingredients that go into the salads, all of them turn out looking so delicious that it's (ironically) almost a shame to eat them.

    Be warned, however - I would NOT recommend this cookbook to beginners. It can take several hours to prepare one of these salads. When I purchased it, I was expecting dozens of recipes for salads consisting of 6 or 7 ingredients, tops, which you can toss together and serve with a dressing. Wrong. Many of these salad recipes are actually 2 to 4 small recipes combined into one dish (even more if you decide to compliment the salad with the extra "variation" recipes), and the number of different ingredients required for these recipes easily goes from 12-15. Also, many of these ingredients are not things casual cooks will have lying around the house (I have no idea where to find Moutarde de Meaux Pommery mustard), so you have to specifically be in the mood to make a certain salad - you can't just whip one of them together right when you come home from work. Rainy weekends are ideal for many of these recipes.

    One thing that I don't believe this book tells you (I may be mistaken), but which many people should guess anyway, is that all of the pasta recipes in this book can easily be substituted with the plain dry kind you buy in supermarkets. If the pasta is flavored (green onion fettucini, for example), you can simply add a bit of the herb/vegetable that was to go in the pasta directly into the salad.

    One minor quibble with this book is that compared to other books by this author, there doesn't seem to be as many recipes, perhaps because due to the fact that each salad recipe is composed of several smaller recipes. Most of these are quite good, and the dressing recipes can obviously be made on their own for every day salads. Also, a grilled lemon chicken breast recipe accompanying one of the pasta salad recipes makes an outstanding ciabatta sandwich. In the end, the recipe(s) that make up one salad can often be made on their own for any number of occasions, which is a major plus.

    Overall, the salad recipes as a whole are too difficult to make for me to recommend it to beginners, but cooking enthusiasts and/or people looking for substantial, nutritious meals should definitely give it a whirl!

    This is just a marvelous example of the chef who is inventive and researches the items and prep with the at-home type cook in mind. He presents very original, creative salad entrees with a huge array of ingredients, e.g. nuts, berries, fish, fowl, beef, etc. but then adds item options as well as prep and presentation advice along with two additions to the basic salad recipe if so inclined. The possibilities are endless! So good to those of us who enjoy just a great salad as the meal! Marcel is one of the best cookbook producers around .... from chocholate to burgers to salads.

    Do you love ordering meal-sized salads at restaurants but never make them at home? Then this is the book you need to buy. The salads in this book are scrumptious and colorful. The interesting thing to me about this book is that it presents a couple of variations on each salad. For example one of the recipes in this book is Penne Pasta and Spinach with Oven-Roasted Plum Tomatoes, Toasted Walnuts, Curly Endive, and Cracked Black Pepper Vinaigrette. It has two variations, the grilled chicken breast variation and the pan-seared salmon variation. I would consider this book appropriate for someone with intermediate cooking skills but if you are a novice cook the instructions are excellent and would help you build your skill set.

    Authors English and Sampson are aiming, with The Figs Table, at the 15 best pizza recipes out of Todd English's award-winning restaurant, Figs. But to get there--poor reader--you will have to pass through one impossibly flavorful ordeal after another, starting right up front with such basics as roasted garlic, balsamic onions, and fig jam.

    we hv used many different cook books, but his book is always the favorite among all of us.
    it is not only clearly stated " how to....", but also "simple and down to earth" food, not the fancy ones u see among other cook books.

    After thoroughly enjoying the Olives cookbook and Olives dessert, I was disapointed at the simplicity of this cookbook. I was expecting more eye opening dishes from the master of Mediterranean cooking.

    This cookbook is one of my favorites. Right now, the roasted tomato sauce is bubbling away in my oven. Picture this: fresh or even canned plummed tomatoes, sliced onion, olive oil, herbs--simply dump it all in a roasting pan, come back in an hour and you've got a superb sauce. Most of the recipes are this simple: honest, fresh, quality ingredients, simply prepared, with great results.

    Todd English would not want to know how many friends have hand-copied recipes from my Figs Table cookbook--his publisher might sue me. I live near Boston, so everyone knows and loves Figs restaurant and the foodies will always spot the book in my kitchen and want to page through it. Inevitably, they will ask for pen and paper to copy recipes. I do think SOME of them actually bought the book.

    In addition to the roasted tomato sauce, Olivia's chicken is another recipe I make at least a couple of times a month. I need to buy a pizza stone so that I can try the pizza recipes. I have had great luck with every recipe from this book.
    You won't be dissappointed if you buy this book.

    5 out of 5 stars Incredible pizza crust and toppings, plus lots more.......2003-03-05

    So far I've mainly made the pizza recipes in this book, but they alone are worth the price. The crust recipe is heavenly and quite easy to make. The dough balls are so light and fluffy after rising that they practically float off the board. They hardly need any working and cook in 6-7 minutes on a baking stone into a uniquely thin, light, crunchy and tasty crust.

    One thing to watch out for, however, is that English specifies fresh yeast for the pizza dough. I had trouble finding that, so I used the active dry yeast commonly found in supermarkets, and after one try it worked perfectly. The equivalent measure for the two teaspoons of fresh yeast is one generous teaspoon of active dry. Also, dissolve the dry yeast in the water/oil liquid (at 115 degrees F) just prior to mixing, rather than putting it in with the dry ingredients as specified for the fresh yeast. If there's a fault to the book, it's that English doesn't help you much with substitutions like this that vary from his ideal.

    The pizza toppings are imaginative and yummy, and can inspire you to create your own. English tends to be a bit minimalist, however, so we sometimes increase the cheese and some other topping ingredients.

    I've also made the white-chocolate challah pudding, which lives up to its billing as "sex on a spoon". Be sure you have plenty of people to share it, however, or you'll wind up with a big pan of incredibly delicious but super-rich pudding calling to you from the fridge for days.

    It's a uniquely great cookbook. I look forward to working through the other recipes.

    Todd English provides simple, relatively easy to prepare recipes that will delight your taste buds. The pizza ideas are simple to prepare, and will inspire you to try combinations you didn't think possible. The rissoto recipes can make either a quick family meal or provide a wonderful accompaniment for a more formal meal with friends. There are also some excellent recipes for chicken or other main courses that can be prepared in less than an hour and will absolutely amaze you.

    English is quite creative, and these recipes are mostly quick and easy. A great cook book.

    If you have a thing for lettuce, a craving for greens, a garden begging to be eaten, or just a plain and simple passion for salads, Lettuce in Your Kitchen is the book for you. Coauthors Chris Schlesinger and John "Doc" Willoughby have written what might be the definitive volume on salads. Everything from the history of greens--they appear in Egyptian tomb drawings that are at least 4,500 years old--to a myriad of recipes is included. And these aren't iceberg-lettuce salads smothered in Thousand Island dressing, either. The authors believe in the full-meal deal in which salads can be appetizer, entree, or even dessert.

    How about a Watercress and Grilled Chicken Salad with Mangoes and Grapes livened up with a curry-lime vinaigrette? Chris and Doc are masters of juxtaposition and tend to be more adventurous than classicists like Alice Waters.     I bought this book to replace a copy that mysteriously disappeared (someone obviously liked it too much!). The recipes truly are flavorful and unexpected and have helped me lose weight, end salad-boredom, tempt people who "never" eat salad, and earn a reputation as a super salad chef. Whether you need a refreshing main course for a hot summer day, or just some extra veggies in your diet, this book offers more ideas than you can imagine!

    The authors of Lettuce in Your Kitchen are far better known for their grilling cookbooks than for the vegetable plate. That's a darned shame, because this cookbook is an excellent resource for those of us who want to add something more to the meal than a standard greens-and-vinegarette.

    Let me point out one omission that may make a difference to you: to Schlesinger and Willoughby, a salad encompasses some sort of greens, even if it's only as a garnish. As a result, you won't find a whole chapter of pasta salads or a dozen potato salads. That's fine with me, but you should be clear about what to expect.

    What you SHOULD expect are clearly written recipes for salads that you probably wouldn't have invented by yourself. The book is organized by simple salads; salads for the perfect tomato; vegetable salads; salads with meat and fish; main course salads; salads with exotic flavors; fancy salads; and salads for a crowd. It's prefaced by an extrememly useful section in which the various greens are identified (with line drawings -- not quite as useful as a photo but it works), and categories that help you discover that, should your market be out of spinach, you can use baby chard or baby beet greens instead. The book has only a few photos, but they're enough for inspiration.

    But what about their recipes? I've tried two with excellent success, and I have a list of additional salads to try. My "starter salad" for Thanksgiving was watercress salad with plums and scallions and a hoisin-based dressing. (Most of the dressings are more than you need, and the authors suggest that, say, the hoisin dressing is a good dip for veggies or with roast chicken.) Every plate was cleaned off, even the token non-foodie (he was instructed that he could NOT bring his own Budweiser to the meal). I also truly enjoyed the salad of Boston lettuce, mango, cucumber and avocado, served with a creamy orange-spice dressing. It was no harder to put toghether than the mundane green salad you'd bring to a buffet, and far more tasty!

    Naturally, you can get less exotic (escarole with bacon, eggs, and potatoes) or far more so (arugula with lobster and pancetta with a smooth avocado dressing).

    But they all have one thing in common: they're VERY easy to put together. And, if you buy the ingredients in season and avoid the handful of expensive items (Mesclun with grilled fois gras, pears, and maui onion with port wine dressing?), it'll be a snap to pull together a meaningful meal with very little effort.

    I'm sold on this book. I think you'll like it, too.

    I bought this book in hopes of having a real tool for eating better. So many cookbooks have a few ho-hum salad recipes here and there, and some of the other salad cookbooks I've seen have recipes that are just too elaborate for everyday cooking. This book has a broad range of interesting and tasty salads that are easy to make. You will never get bored, and your friends and guests won't either. The dressing part of each recipe makes a large amount so that you can have extra to use later (I always make half of the dressing recipe, toss the salad with just a few tablespoons, and still have a lot left over). So if you can only muster the energy to throw some lettuce in a bowl some night, you will have great leftover dressing to toss it with. Since I've been using this book, I have stopped buying bottled dressing and have even started growing my own salad greens.

    Who would have thought this small book on greens, salads and dressings would be indespensible? But it is! Do these authors ever go wrong? Every single cookbook of theirs', which I have read, is far and away the best on its respecive subject.

    Whoever thought you could say that about a salad? But they do. They rock! For a niche cookbook, this one has a lot of variety in flavors. Each recipe gives lettuce alternatives, which is helpful if you live in an area that doesn't carry a large selection of lettuces. Some of the combinations are quiet unique, such as one concoction of watermelon, red onion and vinegar - sounds a little kooky, but once you taste it, it all makes perfect sense. This is a great book to try interesting and healthy new salad combinations. I hope you enjoy it.

    I enjoyed this book so much I had to purchase one for a friend! The book is inexpensive and I've had fun trying the various recipes to see which ones I liked the best. I also like the fact that some menus had canned items and some were for fresh items.

    The 180 salsa recipes in this book could be reduced to 12 or so good ones. Many are simply repeats of others in the book with only very slight variations and a different name. I'm glad I got the book, because I will use the 12 good recipes, but don't buy it for 180. You'll be disappointed if you do.

    People have said powerful things come in small packages. Maybe that's why this "hot" book comes as a small thinner book. Salsa Lovers Cookbook comes with less than 130 pages, but is filled with "more than 180 sensational salsa recipes for appetizers, salads, main dishes & desserts!" Almost every page is filled with at least two recipes and I can't think of another salsa recipe that would possibly be missing from this collection.

    This book starts out with an Anatomy of the Chile section with history, cooking ideas, tips and suggestions. The recipes go from an All Canned Salsa to an All Purpose Salsa to recipes like: Cherry Red Salsa; Instant Fire Salsa; New England Salsa; Any Meat Salsa, Avocado Salsa for Fish, Black Bean Salsa; Chili Cheese Salsa; Cucumber & Radish Salsa; Dry Salsa for Seasoning Steaks; Fresh Vegetable Salsa; Holiday Salsa; Madera Salsa; Mango Salsa; Pico de Gallo I through V; Salsa Carne; Salsa por Scallops; Salsa with Bourbon; Sweet Spicy Salsa; Yellow Fruit Salsa; Avocado Salsa for Salads; Salsa for Fruit Salad; Salsa for Watercress Salad; Banana Salsa; Champagne Salsa; Chocolate Salsa I through VI; Coffee Salsa; Orange Peach Salsa; Pineapple Dessert Salsa; Raisin & Rum Salsa; and Wine Salsa for Fruit.

    Almost every recipe has ingredient readily available and can be made in only a few minutes. This is one of the only cookbooks that I can remember seeign that has each section in alphabetical order for very easy reference. Some of the recipes, in my opinion, have stretched the definition of Salsa, and some are a little-off-the-wall, however this is one of those fun books to add to your shelf.

      I bought this book recently because I wanted to eat healthier, and I don't make good salads. This book has easy to follow instructions, and the results are suprisingly good. I ate 3 servings of my first chopped salad. This is a good book to put healthy meals in the works. I rated it 4 stars, instead of 5, due to the time it takes to put togeather all the ingredients. However, the salads/meals rate much higher than any iceberg lettuce and store bought dressings. This book makes it easy to impress friends/dates with a great salad.

      The Everyday cookbook series have helped to make my dinners delicious but none more than Thursday is Pot-Luck. This book is jam packed with tons of creative one pot meal ideas in numerous ethnic backgrounds. The recipies are really wasy to follow and the ingredients needed are so common they can be made with little preparation (those frantic rushes to the supermarket when you don't have a specific ingredient) but the final product is anything but common!

      As I care for my 74 year old diabetic (former restaurant owner)mother full time -- I am always looking for meals that we both will love. This cookbook really helps. Made the Turkey Burgers last Sunday for us and guests and they were a huge hit! It's the fabulous extras like the red onion sauce in this recipe that make this book so terrific.

      Diabetes doesn't mean having to say, "Never." Here is food you might have thought you could never enjoy again, but finally, someone has created a cookbook with recipes everyone can enjoy, including people who have diabetes. We all need to learn to cook and eat more healthy food and this is a great place to start. The recipes I tried were easy and turned out perfectly--I especialy loved the pork loin and the braised chicken with leeks. The desserts look tempting and surprising--can't wait to try the poached pears. The Cookin' Kid
