I have made several of the receipes from this cookbook. All came out great. Instructions are easy to follow and the ingredients are healthy. I checked it out of the library before I bought it and now feel it was well worth the investment.

I've been a fan of Eating Well magazine for years, so it's no surprise to me that they would produce such an exciting, delicious and usable cookbook. Every recipe is based on real food, not the Frankenfoods that many dieters are used to. The recipes do take some time to prepare, but the outcome is well worth it.

The recipes are perfect for most diet plans, as well as anyone not on a diet that just wants to eat better. South Beachers can use this book, so I'm not sure why the previous reviewer gave it a poor review, especially since she hadn't even browsed the book. Some of the recipes do use white sugar, but there are plenty of recipes in this cookbook to qualify for the South Beach and Sonoma Diets. Weight Watchers are in luck because every recipe includes calories, fat, and fiber counts, so they can easily calculate the points.

This is a cookbook that I would recommend to anyone, not just dieters. Every recipe focuses on flavor and high quality ingredients, and just happen to be reduced calorie. My favorite recipe would be the Mediterranean Burgers with Olive Ketchup. Had it not been for this recipe, I would have never tried millet, a very nutritious whole grain.

I refer to Eating Well magazines and cookbooks at least once a week, usually more often. I've never been disappointed in one of their recipes. I highly recommend this cookbook :)

If you care about the nutritional value of your meals, but don't want to sacrifice flavor this book is a gem. So far I have made several different recipes and I have been pleased with the results. I recommend adding extra herbs and spices for those of you who are "flavor-junkies" like me.
The baked goods are not super sweet, but at least they are good and you can eat them relatively guilt-free. Buy the book, experiment a little, and feel good about what you're eating!

The contents are well organized, the logistics are clear, the recipes provide pertinent nutritional information, are easy to follow and give excellent results. My husband has a bad back and can't exercise, so the only way to control his weight gain over the years has to be through his diet. This poses problems with him being a meat and potato man who doesn't like fish, rice, or several vegetables. Several of the other books I've read or purchased seem to be full of fish and chicken recipes (anyone can lose weight if that's all they eat). I needed a way of changing the way we think about food and the way we eat, a lifestyle change that is manageable. The radical diets are limiting and most people gain the weight back once you stop because you can't follow them forever. The glycemic index is a lifestyle change that anyone can stick with. The other books also use alot of items you have to get from a gourmet shop, health food stores, or contain exotic items that are rather pricey and most of us would not eat. The Good Carb Cookbook contains recipes that most of us would eat on a daily basis anyway (who needs to purchase expensive meals through one of those dieting companies when you can make them yourself). 2/3 of her book explains what the glycemic index is, how it works, and what things effect the glycemic index of an item/meal. She talks about different kinds of oils, flours, grains, and explains alot of dietary information in terms that anyone can understand. She also explains better choices to lower the GI of a meal and things to add to lower the GI of a meal (such as addition of acid like lemon juice or vinegar) or items that have a fermenting process such as sour dough or yogurt or buttermilk. How about using thick rolled oats in a meatloaf instead of corn flakes or crackers?

I can't sing more praises or state more facts than anyone else who has read this book and took the time to comment on it. This is a must read item for anyone who is serious about improving their health through proper diet

I have to agree with the other reviewers - the information in this book is good and the recipes excellent; but it is printed on extremely poor quality paper. I purchased my book new and it had torn pages already before I touched it. I can tape it; but I'd rather pay a little more for a book and get one that will hold up.

I bought this cookbook a number of years ago, and I can honestly say that it changed the way I think about cooking. For example: before this cookbook, my primary seasonings were salt, butter, and minced onion; thanks to this cookbook, I've reduced my salt usage by at least a factor of 3, and I've learned how to get more "bang for the buck" on the salt I do use with other herbs and spices. I was greatly reassured by the writers' assurance that they understand the principle that if it doesn't taste good, you won't eat it - the recipes reflect this understanding, as the need to reduce fat is balanced with the need for appropriate taste and texture in the final product. Recipes such as Hungarian Cabbage and Royal Indian Salmon have become staples in our household. I highly recommend this book.

Cooking is my hobby and I have had this book for over a year now and have used it many times. The recipes are very tasty, I've used many of them over and over. The low fat chocolate cheesecake is wonderful, as is the potato-cheese soup. In addition, the book starts off with a chapter on nutrition and a chapter on kitchen utensils and spices - I think both chapters would be very helpful to the novice and the experienced cook (consider myself experienced). I am now ordering this book for a friend of mine, in the past have given it to my mother, brother and mother-in- law. If I could have only one low-fat cookbook, this one would be it. I strongly recommend it to anyone who is interested in really yummy low-fat cooking

I almost never return anything to Amazon. But this cookbook went back the day after I received it.

After having weight loss surgery I need to focus on a high protein diet. Though I am fairly creative in the kitchen I thought that it would be nice to not have to figure out calories, protein counts, etc., and also to get some variety into my diet.

This wasn't the right cookbook for that. Though the recipes ARE high protein they are not low calorie or low fat. Though the subtitle reads '500 calories or less' many of the recipes are approaching the 500 calorie mark, which is more than I want to "spend" on one meal (and this is just the main dish, not anything else).

Many of the recipes could have had their calories reduced and their nutrition improved by substitutions: milk instead of cream,low-calorie spread instead of butter, Splenda instead of sugar, for example. (Yes, I could do that on my own, but then I defeat the purpose of already having the nutrition information available.)

Though I believe the recipes are probably very tasty, this wasn't the cookbook for me.

This is THE greatest cookbook for Weight Loss Surgery patients!! I have recommended this to all my support group members online AND in my local support groups and, EVERYONE who tries these recipes LOVE them. None have found 1 recipe that we do not ADORE. They are tasty and quick to fix...and, we LOVE that the complete nutritional information is posted for each recipe. WE especially love that, unlike most other "Low Carb" titles that only count "net carbs" or "digestible carbs"...this cookbook talks about CARBS!!! In the Gastric Bypass World...a carb is but a carb...doesn't matter if they're net or digestible!!

I have used this cookbook for over two years. I find myself using it continuously. What impresses me the most is the complexity of texture and flavor. It is hard for me to eat a meal without starches. When I make recipes from this book I don't miss the simple carbs. Not only do I feel satisfied but I feel I have had an INTERESTING meal.

This is the best high protein, low carb cookbook on the market and believe me,I know. I own many. I have tried 15 of the recipes and my husband and I love every one of them. I can now eat better at home than at any restaurant. You will not feel deprived eating from the recipes in this book. The recipes are easy to follow and take very little time to make. Fabulous!

I have two other of Pamela Smith's books: "Eat Well Live Well" and "Food for Life" both of which are helpful for learning the whys of eating correctly but; "Pamela Smith's The Good Life: A Healthy Cookbook" is by far the best book for putting all of those good intentions into practise.

Although the other books both have some recipes it was still up to the individual to take the time to make sure all the protein and carbs where balanced while figuring out your calories, fat, ect. This book does that for you -- all you have to do is pick the meal you like and it is already balanced; you just pick your portion size. All the recipes for that meal are togethor making menu planning and grocery shopping a brease. Each section (sections are by meal) have a very large variety to choose from making it feel less like a "diet" and more like a lifestyle -- with this book I do not have to worry about cooking diet meals for myself and regular food for my family as the recipies are for real food that everybody can and will eat.

I highly recommend this book -- especially for those who have read Pamela's books but never gave it a try; because they got over whelmed trying to figure out what to do in the store, in the kitchen, or at the table.

Perhaps, I was thinking wrongly, but when I think of everyday meals, I don't think of the recipes that are included in this book. I was looking forward to recipes that helped me fix many of things I already fix in a healthier way. Instead, I consider most of the recipes in this book to be fancy (things I might use for special occasions). Though I'm sure the recipes are wonderful (I haven't tried any yet), this is just not what I was expecting from the title.

Good Housekeeping has another winner with "Light & Healthy Cookbook: 375 Delectable Recipes for Everyday Meals." Recipes are presented in 10 different categories: 1) starters & appetizers, 2) soups, 3) pasta, 4) main dishes, 5) salads, 6) sandwiches & pizzas, 7) sauces & condiments, 8) bread, 9) desserts, and 10) beverages. The emphasis is generally on low-fat recipes with nourishing ingredients. Not all the recipes are extremely low-calorie; however, full nutritional information is included (calories, fat, calories from fat, carbohydrates, and sodium), allowing the reader to make informed choices.

The majority of recipes are for straight-ahead, no frills American food - the kind of fare you could easily make on a busy Tuesday night. About half the dishes are presented in full-color pictures. Further adding to the practicality of the cookbook is the relatively small number of ingredients required for most selections. As is the practice with Good Housekeeping, the recipes have been tested and re-tested to ensure reliability and ease of preparation. I've made a number of recipes from this cookbook, and I've been pleased every time. I particularly enjoyed the "Rigatoni with Beef-Fennel Sauce."

In addition to the recipes, a variety of helpful special sections are scattered throughout the book, such as "12 low-fat veggie toppings." Also, handy suggestions for accompaniments are made for many of the recipes, which could be used to develop full meals. As a result, readers could use this practical cookbook to design healthy eating patterns and an improved lifestyle. Highly recommended for readers who enjoy no-fuss cookbooks.

As an an avid devotee of food information I wasn't sure when I received this book as a gift. But it came from a respected source, so I sat down to read in earnest. I read it with Udo's book on fats and oils next to me and checked all her claims. Wow! I threw away my canola oil and bought some coconut oil. I bought some bacon for my husband who couldn't believe it this morning when I served it to him. For a couple of years I have been narrowing down my "food wisdom" to two words, "Pure Food". She verified my thinking. I've long vanquished hydrogenated oils from my cupboard but canola was a real surprise. Read it.

Never really ever dieting before in my life and wanting to lose a few pounds after my first baby, I turned to a diet program which relied on eating low carb and low fat without it being explained why these were the things that I was no longer eating except for this is what makes you fat. I constantly felt deprived from foods even if I did not want it and it was because I knew I could not have it and I ended up eating completly non-satisfying, low-fat,processed foods(with a list of ingredients twice as long asthe nutrition facts full of 10 syllable words).

I think everything needs to be read with a weary eye and taken in moderation, and I say this becasue I do not believe now that I know butter is a good fat I will go out and eat it on my steak, but I will use a small amount of butter or olive oil in my cooking instead of cooking spray or Canola oil. I am not going to be a nut on absolutely cutting out everything processed (I am a working mom of a toddler on a budget), but I will significantly cut down on processed, pre-packaged, and low-fat foods and just focus on eating more 'whole' foods and incorperating healthier and more organic foods into my family's diet. I feel this book educates one about fats in general and about our low-fat obssesed dieting in this nation that is not working; the book makes you think, but I don't feel it is a guide, it is too opinionated.

For years I have been trying to learn about nutrition. I've always thought that there was more to it than just eating "low-fat." A nutritionist at my college's health center simply handed me a copy of the old food pyramid. I was frusterated that I'd never learn the real details for myself. But I finally FOUND IT! THANK YOU Fran McCullough for knowing that not all of us are just mindless cattle!! Thank you for realizing that some of us are interested in more than just being told to "eat your veggies" or given a bunch of low-fat recipes! After reading this book, I feel EMPOWERED to make healthy food decisions for myself, with or without a recipe! I UNDERSTAND now what I should be putting into my body, specifically. There aren't a LOT of recipes in this book, but there are just enough to get me started. Now I have the knowledge to create my own recipes as well as the ability to decide whether the recipes in other cookbooks are really good for me or not!! There are a lot of diet cookbooks out there that have recipes that aren't really good for you, but just prey on people who want to lose weight and just want to be told what to do. Now I won't be duped ever again. This book is a MUST for every human being on earth. It's not just about being thin...it's about being HEALTHY!

2 out of 5 stars Not up to the quality of McCullough's previous works.......2003-04-25

_The Low-Carb Cookbook_ and _Living Low Carb_ are two of the most consulted works on my cookbook shelf, but _The Good Fat Cookbook_ is comparatively thin in content, and conspicuously packed with plugs for specialty health food supplements. (Yes, you could pay $70 a gallon for "virgin" coconut oil - or maybe pick it up from a warehouse club, Asian market or restaurant supply house?) The book also strays considerably from Low Carb dietary principles - which may cause some confusion for some LC'ers who have come to equate the author's nutritional works with a Low Carb philosophy. From a strictly subjective viewpoint, it's disheartening to see the author "move on" or tweak her nutritional philosophy in this direction - hight carb plus high fat reads an awful lot like "have your cake and eat it, too." Gone or nearly gone from the author's latest here is beef, pork, and an elegant array of menus with an emphasis on a variety of popular flavors - "in" are canned, salted and smoked fishes galore (despite the mercury-in-fish issue, Omega-3 rich seafood dominates the non-vegan entrees), breakfasts that would use up a month of atkins allowances and, I'd argue, a fair number of dishes that just seem like quirky, minimalist experiments in fusion cusine. Watermelon sandwitches with goat cheese? Brocolli in Peanut Butter (sans Asian spices, even)?

Also, the Usenet acronym "post proof or retract" (PPOR) was my gut response to some of the authors' health claims, especially those about irradiation. McCullough claims that since embarking on a massive national food irradiation program, that 10% of its population (yes, 10%!) now dies of liver cancer. These kind of claims demand painstaking citation, especially in the context of a book that prominently advocates a plethora of commercial health food products. (I'm just as skeptical of big health food/Peta/vegan/whatever claims as big agricorp claims, and you should be, too!)

The ever shortening half-life of dietary fads and taboos make for strange bedfellows - pp 155-156 warns ominously of the potential ill effects of most soy products, and yet this book is forwraded by the same Dr. Barry Sears who made a big hit with his book _The Soy Zone_ not two years ago.

In short this book veers into faddishness and product touting to a degree that just wasn't the case with the author's previous works, which I believe *remain* some of the very best nutrition-minded cookbooks out there, for those who have "failed on low fat".

As much diet discussion guide as cookbook, McCullough's ("The Low-Carb Cookbook") newest presents the latest scientific thinking on fats - processed hydrogenated, versus natural animal and vegetable, saturated and unsaturated, trans fats and butter and lard and vegetable oils. And not only does she make it comprehensible, she's even witty. She talks about why Americans are fatter than ever, why it's good for us to eat things we like (as long as they're not "reduced-fat anything," frozen dinners and processed foods). There's advice on supplements, discussions of pollution contaminants, like mercury in fish, reviews of ingredients from canned fish to dairy products and oils from avocado to safflower.

Recipes - the second part of the book - offer 100 dishes, breakfast through dessert, from Coconut Waffles to Moroccan Red Pepper Soup, Smoked Trout Salad with Grapefruit and Avocado, Smoothies, Tuna Burgers and Buffalo Chili. A clear, concise, accessible and in-depth introduction to low-carb, good-fat nutrition thinking.

In the spring of 1999, following a series of programs devoted to losing weight, Good Morning America ran a Cut the Calories Cook-off. Over 1,100 viewers of this popular TV show submitted recipes for either an entree or a dessert. The resulting cookbook features 120 recipes, including a few contributed by chefs Emeril Lagasse and Sara Moulton. Dishes include the 50 semifinalist recipes, plus others considered delicious by judges Lagasse, Moulton, Wolfgang Puck, and Michael Lomonaco of Windows on the World in New York City.

The grand-prize winners? Oven Fried Chicken with Andouille Sausage and Caramel Cheesecake with Praline Sauce. The chicken's crunch comes from crispy rice cereal and this all-American dish is seasoned with Parmesan cheese and cumin. The conquering cheesecake, a snap to make, is accompanied by a creamy sauce studded with pecans. The recipes, overall, reflect America's broadening taste for spicy foods and national acceptance of ethnic ingredients, with dishes calling for chili peppers--chipotles, anchos, green, even red jalapeños--and Chinese hoisin sauce, Italian balsamic vinegar, and Cajun Andouille sausage.

Cheesecake is truly a favorite American dessert, with six recipes for it in this book. A cook from Oregon even managed to slim down one with a chocolate crust, chocolate filling, and hazelnut topping. Fruit desserts are well represented, too. An OK cookbook. There are others I liked much better. All the Weight Watcher cookbooks for example. Most likely I will only cook only a few of the recipes in this cookbook.

I'm a huge cooking fan. I'm a huge food fan. And I'm a huge Sara Moulton fan.

So I almost fell over when I saw that not only was Ms. Moulton editing a cookbook, but she was going to be at a booksigning in my town. But I digress.

There I got to try a few of the cookies that were in the book, which was nice. As soon as I got home, I made the lemon meringue cookies, which I still make @ least weekly - they're incredibly easy, really really good, and low cal. Does it get any better?

Also, I enjoyed reading this cookbook. It was interesting to read about the people who submitted their recipes, as well as the stories behind them. All in all, a very good find.

So another year another time at attempting to eat right. I saw Good Morning America when Sara was tempting Charlie and Diane with the different dishes. So I thought I would give the book a shot. It is the absolute best cookbook I have. My kids and my husband love the food that I have made so far. I am dropping the pounds and we are all eating healthier. Most important rule of this cookbook was that the food had to taste good. Try the grand prize winner Chicken and Andouille Sausage it is the best.

Sara Molton is a cook for everyone. She breaks it all down, and makes it so easy for an average person to get into the kitchen and create. She's wonderfully talented and such a great people person. Her receipes are fun, healthy and really easy to follow. And, she knows that average people want to make healthy receipes that are tasty too. She's a great resource and her TV shows on the FOODNetwork, are top notch. I recommend this book for everyone that loves to cook, and for those just starting out.
