Product Description

People travel from far and wide to taste the fresh and delicious seafood served at Uncle Bubba s Oyster House in Savannah, but now you can stay home and let chef and owner Earl Bubba Hiers treat you to his famous Southern hospitality. His first-ever cookbook tells you how to prepare both the dishes that made his restaurant famous and the home cooking that he and his older sister, Food Network star Paula Deen, grew up eating in their Granny Paul s kitchen.
Learn how to make the finger-lickin , Dixieland favorites like Low Country Boil, Lip-Smackin -Good Chicken Casserole, Salmon and Grits, and Oyster Stew. Right off the restaurant s menu are dishes like BBQ Shrimp, Gumbo, and Shrimp and Grits. And because good cooking seems to run in Bubba s family, recipes like Raised Biscuits, Kathy s Dig Deep Salad, and Cheesy Squash Casserole come straight from the recipe boxes in the authentic Southern kitchens of Bubba s grannies, aunts, and friends.
Desserts are Bubba s favorite, and there s no shortage. Try Aunt Glennis s version of the classic Dixie staple, Red Velvet Cake, or the Lemon Cheese Cake, which true Southerners know is not a cheesecake at all. There s also Chocolate Almond Pie, Butterscotch Pound Cake, Bourbon Chocolate Pecan Pie, and three recipes for truly scrumptious desserts that are Paula s gift to her baby brother. Plus, along with the recipes, you ll get family stories and photographs that bring Bubba and Paula s Georgia childhood to life.
Like his restaurant, Bubba s recipes are casual perfect for summer cookouts and picnics where paper napkins and plastic forks are just fine, and the card playing and story swapping begins when the Chargrilled Oysters are put on the table and doesn t end until long after the last bite of Georgia Peach Cake is cleaned from the plate. Soon, just like Bubba, you ll be spending long afternoons around the grill, bragging on your barbecue and waiting for the Beer Rolls to come out of the oven.

EARL BUBBA HIERS is the chef and co-owner of Uncle Bubba s Oyster House in Savannah, Georgia. Before joining his sister, Paula Deen, in the restaurant business, he operated a highly successful landscaping and grounds-keeping company in his hometown, Albany, Georgia. In 1999, Bubba got his start when he moved to Savannah to help Paula and her sons, Jamie and Bobby, renovate a historic downtown building as a new home for their popular restaurant, The Lady & Sons. Bubba lives with his family in Savannah.

POLLY POWERS STRAMM is a native of Savannah, Georgia. Her articles have appeared in magazines and regional newspapers and her weekly column, Polly s People, runs in the Morning News. She lives with her family in Savannah.

5 out of 5 stars Bubba's The Best!.......2007-06-13

I've been to Uncle Bubba's Restaurant in Savannah several times...I dare say our family likes to food better there then The Lady and Son's! I see a Food Network show in his future. If they were smart they would make a show with Bubba and Paula's husband Michael, because those two together are a hoot! The cookbook is great with lots of wonderful seafood recipe and side dishes...try the cornbread muffins they are out of this world.

5 out of 5 stars Delicious family recipes and beautiful photos!.......2006-09-27

I love the Taste of Home cookbooks and magazines! Grandma's Favorites is filled with wonderful recipes. They are "real" recipes....ones that are not hard to make and can be made often. The recipes were submitted by real people who tell about their recipe. They don't have exotic ingredients that are hard to find. Some people will not agree that these are truly "Grandma's" recipes depending on one's idea of the definition; but this book includes 350 great classic family recipes you will want to try and that your family will love! They are easy to read and call for common ingredients and many of the recipes have photos. It is a wonderful addition to any cook's collection!

2 out of 5 stars Whose Grandma cooks like this?.......2006-09-19

I guess I expected more of a "comfort food" book and this is not it. There are a few recipes that would make me think of Grandma's cooking but most are a hodgepodge of standard recipes that probably only bring raves from fellow family members. I was looking forward to getting cozy and having a good read (I read cookbooks for entertainment as much as I cook from them) and I was let down. Do yourself a favor and spend the money and your time gathering your own family recipes and skip this book. Normally I love Taste of Home but this was a let down.

1 out of 5 stars Not that funny..........2007-08-15

Oh it had it's moments, but some references were over the top for me. I didn't save it for a white elephant. I put it in the trash. Highly over rated but to each his/her own.

1 out of 5 stars This book is disappointing!.......2007-05-02

The trailer trash thing is overdone. I was turned off by the on and on ramblings and making fun of trailer park residents. I can listen to jokes of any kind but I found this very distasteful. This is 2007 not 1950. I collect cookbooks and thought this might have some fresh ideas and purchased it based on the good reviews. Everyone can choose their own style of humor, I just happen to see this book as turning into a white elephant or into the recycle bin. I felt the recipes were unremarkable and shallow, just as the author's commentary. There are so many great cookbooks at Amazon,I would look a little farther next time.

WHO KNEW THAT SPAM TASTES BETTER THAN FRESH HAM FROM THE BUTCHER. I HAVE NOT HAD THE OPPORTUNITY TO TRY THE GOVERNMENT CHESSE BUT I THINK I HAVE MY HUSBAND TALKED INTO RESIGNING FOR A WHILE SO THAT WE CAN GET ASSISTANCE AND GO GET IN THE LINE TO GET SOME.......
WHERE ELSE IN THE WORLD WOULD YOU BE ABLE TO LEARN THE FINE RULES OF WHO BOWLS FIRST IN WHAT LANE IF IT WEREN'T FOR MISS RUBY ANN????
I WOULD HIGHLY RECOMMEND ANYTHING THIS GREAT LADY PENS INTO A BOOK AND I WOULD LOVE FOR HER TO COME AND STAY WITH MY HUSBAND AND ME HERE IN UTAH . I JUST KNOW THAT BY BEING AROUND HER I COULD GAIN SO MUCH FROM HER STAR QUALITIES. (DARN I WISH WE LIVED IN A TRAILER INSTEAD OF A HOUSE. MAYBE I WOULD HAVE A BETTER CHANCE.)

DIDN'T WANT THEM TO KNOW I HAD READ AND REREAD THEM. SO JUST ALWAYS GET ONE FOR YOURSELF SO YOUR GIFTS LOOK NEW. MAYBE THAT SHOULD BE A CHAPTER IN YOUR NEXT BOOK ON GOOD LIVING. OR MAYBE I JUST NEED TO LEARN TO READ WITH OUT EVIDENCE.

5 out of 5 stars A Great Cook Book for the working girl.......2007-01-10

This is a wonderful cookbook for a working person. I found I had almost all of the items already in my kitchen and the receipts are so easy and quick to put together.

5 out of 5 stars Good book, Great food!.......2007-01-09

I really like the recipes, and the food is very tasty. My family loves anything I make out of this.

5 out of 5 stars GREAT PRICE.......2007-01-09

I LOVE THESE COOKBOOKS AND THIS IS A GREAT PRICE. I PAID MORE FOR MY OWN THESE WERE ACTUALLY GIFTS. I HATE THAT I BOUGHT MINE AT FULL PRICE.

3 out of 5 stars Good for Inexperienced Cooks.......2006-06-28

After seeing the rave reviews, I was excited to try this new book. Unfortunately, upon receiving it, I was disappointed. I'm an experienced cook who likes a wide variety of foods; this book offers easy recipes, but the variety is limited. At one point, I felt like I had read 10 ways to recreate instant rice!

This book would be excellent for new cooks who are unsure of how to combine foods or don't want to take the time to experiment. The recipes are quite easy, healthy and include ingredients almost everyone will have.

This book is NOT useful for those of us who know our way around a kitchen, though, or who understand common sense ways to cut down on fatty foods.

4 out of 5 stars Good, easy cooking.......2006-02-05

I own two cookbooks in the "Busy People" series, and both of them are well-thumbed and often-used. I'm a bachelor with limited cooking skills (and with even less patience when it comes to kitchen chores), but this book offers simple, easy recipes that can be quickly prepared with very few ingredients. The directions are concise, and each recipe is printed on a separate page with a graphic that clearly gives preparation and cooking time. Nutritional information for each dish is also listed. The recipes are generally low in fat, but they don't have the long-as-your-arm list of exotic ingredients and spices that I find in many low-fat cookbooks.

Of course some of the recipes are better than others, but almost everything I've tried has been very good. There's nothing fancy here: if you want to impress someone with a virtuoso kitchen performance, there may be better collections. For plain ol' weeknight cooking that's healthy, fast, and inexpensive, this book is a worthy standby.

The Grit, located in the quintessential boho town of Athens, Georgia, is known far and wide as the touring musicians' restaurant of choice. This classic cookbook features 150 of The Grit's most requested recipes, including 20 new recipes to celebrate the 20th anniversary of this famous establishment. True to its Southern roots, this hip vegetarian eatery combines soul-food sensibility with meatless cuisine, and while there are plenty of Italian, Indian, Mexican, and Middle Eastern favorites to satisfy the well-traveled vegetarian, the heart of this cuisine maintains the down-home, soul-food feeling of simple foods and classic combinations that are guaranteed to please.

5 out of 5 stars This cookbook is one of the best!.......2007-04-15

The publishers ought to be giving me a commission as I have turned so many people on to this cookbook! Seriously, it has fantastic recipes, including the best pancakes I have ever made....the nutritional yeast gravy and the golden bowl are to die for...the stews with Guinness beer rock....the cilantro and pesto quesadillas are always a hit....yum......

When will it come? I would love to have this book & I ordered it so long ago from Amazon (maybe May?). I still have yet to receive it as I keep getting emails saying it will be 4 more weeks or 1 more month and will I accept the delay. I am not sure if Amazon ever plans to get this book. I was warned by my husband that they do this in order to get your business & not order from others. I keep accepting the delay, hoping it will cause them to get the book and meanwhile I'm seeking it out on other sites.

5 out of 5 stars Relax, you can't go wrong.......2006-04-11

I have owned this book for around 3 years now, and this is by far my most used cookbook. I think one of the most difficult things to perfect as a vegan is baking; cakes never come out like "the real deal", and always hit your stomach like a heavy brick. I was so excited when I was able to replicated the three-tiered, moist, fluffy cakes I had been able to enjoy all through my undergrad in Athens. I often refer back to the book to think of ways to alter my own recipes.

This is a must have book for any vegetarian or vegan for the simple fact that these recipes are used daily in a hugely popular restaurant, and thus have been tested an incredible number of times. If you have guests coming over, regardless of diet, you are guaranteed to create a satisfying meal everyone will enjoy.

Customer Reviews:

5 out of 5 stars Vegan Vittles -- Wonderful Cookbook.......2007-10-10

I've been a Vegetarian for a while and a Vegan since July 2007. This cookbook has so many wonderful recipes. The recipes are not 'weird' like some other cookbooks, which is what I like. The stories of the saved animals are very touching.

5 out of 5 stars The Vegan Answer to Home-Style Cooking.......2007-09-20

Honestly, I wasn't expecting much from Vegan Vittles. As a dairy-free consumer who is just dabbling in the vegan lifestyle, I was certain that the Uncheese Cookbook would be my favorite from among her collection. To my great surprise, Vegan Vittles has emerged as one of my favorite cookbooks. There are several things that don't quite flow with me in this book, much more so than most other cookbooks I have read. Yet, the overall usefulness far outweighs any disconnect that I feel towards it.

While I have already tested a few of the recipes (Ultimate Chocolate Chip Cookies, Macaroni and Cheez, Carrot Butter) I can't even begin to tell you the recipes I am eager to trial. Just a few on my list include: Muffins that Taste Like Donuts, No-knead Whole Wheat Herb Bread, Hot & Sour Pad Thai (no fish sauce?), Cheez Please Soup, Chickpea Oat Burgers, Spicy Peanut Sauce, Aunt Bunny's Carrot Cake, etc., etc., etc.

The recipes are all so simple, using easy to find whole foods (think spices, veggies, fruits, and whole grains, not white flour and sugar). The most exotic ingredients that I spotted were quinoa and miso, both of which can now be found at Trader Joe's and in most major grocers. I think the fact that I could make so many of the recipes without having to make a special trip to the grocery store, was a real draw.

As for the disconnects - Certain portions of the intro get a bit wordy, and I found my eyes wandering off on many occasions. While full of useful information that I couldn't get enough of (do you know how hard it is to find a list of GMO foods to avoid? And what about that wonderful explanation of egg alternatives?), many sections tended to drag on with less pertinent details. Also, I was perplexed by the veganization of quotes throughout the book. Finally, the recipes weren't always spot-on. I found the author's taste buds to be more sensitive than mine, as I require a bit more flavor injected into my meals. Also, I often had to adjust the moisture content.

So if the recipes didn't always work perfectly, why did I like it so much? Simply put, Vegan Vittles really is a fantastic primer for all of those basic comfort food recipes that I often miss. As someone who is typically less than experimental in the kitchen, I have had a lot of fun "tinkering" with the recipes. The very idea that I can successfully customize almost every recipe, has made this a cookbook that I actually use (of which, there are few). Trust me, I am not a fabulous cook, but all of Jo's recipes are so simple that they remove any fears I have in the kitchen.

To note, Jo tends to reuse some of her recipes across cookbooks. While each one contains a ton of unique recipes, there are always a few crossover recipes, another pet peeve of mine. Yet, I found that Vegan Vittles contained the perfect collection of her recipes; a nicely sized section on cheese alternatives, and a good array of baked goods, full meals, snacks, and desserts. If I could only pick one Jo Stepaniak cookbook, this would be the one. Though we have our differences, Vegan Vittles will stay front and center in my cookbook collection!

5 out of 5 stars My New Favorite.......2007-08-23

I have almost every vegan cookbook on the market, but after having purchased this book, most of the others now sit on the shelf collecting dust!
I have yet to be disappointed by a single recipe in this book!

5 out of 5 stars the best all around vegan cookbook.......2007-07-10

I have many vegan cookbooks, and this is the one that has the most "usable" and "user friendly" recipes of all. The only recipe I have tried and did not like was the "buttermilk" biscuits. The Southern Fried Tofu is yummy. I highly recommend this book.

5 out of 5 stars Better with Age.......2007-05-26

Vegan Vittles is the first cookbook---a completely random selection---I purchased when I decided to go vegan. Turned out to be a perfect choice: the recipes are both delicious and familiar, and best of all, most are fast and easy too; the perfect choice for someone who likes great food but doesn't really like to cook.

I have purchased countless vegan cookbooks over the past eight years, and several of them are excellent. However, Vegan Vittles, over and over again, is the one I come back to, especially during the holidays; Vegan Vittles is full of crowd-pleasing recipes that satisfy and wow the omnivorous crowd. But a majority of these recipes are for every day food: hearty breakfasts, delicious sandwiches (Jo includes a section, even, on how to make your own mock meats---a money-saving adventure, to be sure), entrees, desserts. And the "uncheese" section is not to be missed. If you are one of those vegans who has yet to get over dairy cheese, you will be pleasantly surprised by the taste and texture of these homemade cheese dishes. Truly, they are excellent.

Vegan Vittles Part II is an excellent second edition, with all of the familiar favorites and plenty of new recipes that will quickly become favorites. Jo Stepaniak really gets it when it comes to the perfectly composed recipe; my complaint with many other cookbooks is that I find I make lots of alterations. With Vegan Vittles, one can mindlessly follow the recipe. The results are always stellar.

In his jacket photo, ace grill chef Chris Schlesinger has the look of Howdy Doody with a stomach full of barbecue. It's a speechless kind of look. Schlesinger, however, is not a speechless kind of guy. Starting with the motto, "Brown food tastes better," Schlesinger and his writing partner, John Willoughby, show the reader exactly why that is. The ride lasts nearly 400 pages.

It's hard to imagine a pre-Thrill of the Grill time in American culinary life, so mighty has the impact been. It's a book with a built-in virus of insidious and infecting qualities that will have even the least interested among us out at the grill, getting the fire glass-melting hot, trying a few ideas like Grilled Shrimp with Pineapple-Ancho Chile Salsa, or Grilled Chicken Rubbed with Ethiopian Berbere (hot, hot, hot), or Grilled Swordfish Steaks with Yucatan Orange-Herb Paste, or maybe Beef Heart Grilled and Marinated in the Peruvian Way (or maybe not).

Actually, that right there--beef heart--is rather telling. Who else in their right minds would include grilled beef heart in their cookbook? These guys, Schlesinger in the lead, breaking trail, will go anywhere, do anything, and bring it all home to grill and eat.

The sheer love of food pours off these pages--the way it tastes and feels, the way super spices fire up your nervous system, the way the juices run down your forearm and off your elbow--and that's the way it should be. Relaxed. Determined. Thrilled. And with Thrill of the Grill tucked under one arm, you are sure to have the time of your life every time you fire up your grill and start cooking.

Plan on buying a couple of copies. This is one of those cookbooks that will get so grease- and sauce-splattered it will become unreadable. --Schuyler Ingle
