5 out of 5 stars I love this book..........2007-10-10

This is a wonderful cupcake book. I am so pleased with it. The cupcakes are delicious. The recipes are easy to follow and the directions are precise.

5 out of 5 stars If I could give it ten stars, I would........2007-10-08

The book sold me on the photos alone, but the recipes do not disappoint. Never has vegan baking been so invisibly delicious, so perfectly dressed up as the richest, most indulgent lacto-ovo baking, totally indetectable to those not in the know. I've made the vanilla (vegan cream cheese frosting), chocolate (peanut buttercream), pineapple (pineapple topping), tiramisu (holy crap), pistachio rosewater (with rosewater buttercream), and dulce sin leche cupcakes (with a squirt of my own coconut caramel in the middle, lemony buttercream, toasted coconut, and caramel doodads on top). Every single cupcake has been moaning-aloud-in-obscene-pleasure delicious. The rise is perfect, the crumb is tender and soft without a trace of the gumminess associated with vegan baking, and the frostings are pure sin (or heaven, whatever). I've had to hide this book from myself to stay focused on school and stop making cupcakes already.

5 out of 5 stars Vegan Cupcakes Take Over the World! They really do!.......2007-10-07

AWESOME book!
The recipes were very easy and I loved that for the few rare ingredients that were needed, easy to find alternatives were suggested. As for the taste? Several of these recipes beat normal cupcakes hands down anyday! If you're vegan, (even if you're not!) and are looking for some sweet treats, this is one sweet book you have to buy.
Very satisfied! Thank you!

5 out of 5 stars I COULD EAT THIS BOOK!.......2007-10-05

Buy this book now! DO NOT HESITATE! It is perfect! I even have a cupcake tattoo of one of the cupcakes! The coconut lime! It's to die for! The chocolate stout cupcakes amazed everyone, and they are perfect if you are in a pinch and don't have time to make frosting! My kids flipped over the cookies & cream cupcakes! I am anxious to try the pumpkin choc. chip for fall. The green tea cupcake would be so perfect for a bridal, or baby shower, they're so elegant. The next one I will try is the Brooklyn vs. Boston cream pie, they have a creamy custard filling! If you LOVE cupcakes YOU WILL LOVE THIS COOKBOOK!!!! It doens't matter if you are vegan or not, that would be a ridiculous reason to shun this book. People CANNOT TELL THE DIFFERENCE!!!! Plus, they are about a million percent HEALTHIER!

4 out of 5 stars Yum.......2007-10-05

This book is fabulous! So far I've only made the basic chocolate cupcakes with the chocolate ganache frosting, but they were awesome. I am looking forward to making all of these cupcakes.

Book Description

It's love at first bite! Until now, vegans and lactose-intolerants have missed out on perfect rich, creamy ice cream, and have been left with bland, too-healthy-tasting alternatives. Who knew it was possible to create a satisfying ice cream-like dessert without the milk and cream? Jeff Rogers and his vice cream to the rescue! VICE CREAM offers more than 70 scrumptious recipes for all the vegans out there who've been missing scoop after scoop of mouthwatering ice cream. For the first time, you can make truly creamy and delectable ice creams using purely vegan ingredients—the milks come from nuts, the sweeteners are maple syrup and dates, and the flavors are just amazing. Recipes include favorites like chocolate, vanilla, chocolate chip, mocha, and peanut butter, as well as fresh fruit flavors like blueberry, raspberry, lemon, and strawberry, and many more. After your first spoonful, you'll be astonished at just how tasty and rich this healthy alternative to the heaviness of "real" ice cream can be. With vice cream in the freezer, you'll never yearn for milk-based ice cream again.

5 out of 5 stars Not a review, but a comment.......2007-07-12

I'm currently staring at an intensely-delicious-looking picture of the Vegan Blueberry Vice Cream in an article written about this book from a copy of Healthy Times magazine. I had to know more about it.

I came here and found the book and customer reviews. I must say that I'm glad someone took the time to create a frozen dessert that I can eat with my dairy allergies that doesn't taste like chalk after 3 bites (rice cream), or disrupt my thyroid (soy cream). One can only eat so much sorbet trying to achieve dessert satisfaction!

I plan on ordering this book today, as well as laying in a supply of cashews.

5 out of 5 stars Ooooh my...........2007-05-30

This is the best ice cream I have ever had, bar none. The cashew milk makes for such a rich, creamy base that every recipe has been delicious. Plus, the recipes are straightforward enough to encourage a little experimentation. I will never buy Soy Delicious or Ben & Jerry's again!!!

4 out of 5 stars No nutritional info?.......2007-04-13

I just received the book and tried the chocolate vice cream recipe and it was amazing. Definitely the best I ever had. The commercial chocolate ice creams in the store are very bland compared to this recipe. It's a great recipe that non-vegans would love. My only issue with the book is that it doesn't provide any nutritional data, so it takes some work to calculate an appropriate serving size. The base of most recipes consists of 1-2 cups of raw cashews, 1 cup of maple syrup and a cup of water. The chocolate was great, but by my calculations it had TWICE AS MANY CALORIES AS BEN AND JERRY'S AND 25% MORE FAT. Maybe that was the reason the nutritional info wasn't included.

5 out of 5 stars Delicious! Easy! Healthy!.......2007-02-16

As vegan/raw foodists we have given up ice cream. Soy-based products purchased in the store are an acceptable substitute, or at least they were until we bought this book. Have tried the peanut butter - yummy, but clearly the rest will be delicious as well. Never realized what you could make a creamy frozen treat out of until I saw this book. Vegans and non-vegans alike will love these recipes.

3 out of 5 stars Good for ideas..........2007-02-14

The use of raw cashew milk in almost every recipe seems limiting. However, I've subsitiuted with other milks such as soy and almond.

Customer Reviews:

5 out of 5 stars I use this cookbook at least once a week.......2007-08-17

I bought this cookbook 8 months ago so I could make a cake for my daughter's 2nd birthday that she could eat--she has been off dairy and wheat since her first birthday. From chocolate cupcakes to zucchini bread, every recipe is delicious and "real" enough to serve to friends and family. Our favorites are the blueberry muffins, zucchini bread, coffee cake and the almond butter and chocolate chip cookies that are AMAZING! My daughter loves every recipe we have tried, and I feel great knowing that she is eating such healthy food. So far everything freezes really well, too.

I love the fact that this is wheat free, not gluten free. If you don't have to worry about avoiding gluten...you have a lot more tasty options. And this cookbook has plenty of examples. The authors also do not use white sugar and you don't miss it at all. They do a great job with easy recipes for moist, yummy baked goods. I no longer eat white sugar, wheat or dairy so we are relying on this cookbook even more now.

The cornbread recipe has a typo that I noticed way too late--tablespoons instead of teaspoons for baking soda and baking powder.

4 out of 5 stars YUMMY!.......2007-08-09

This book has some of the most amazing vegan cookie recipes i've ever tried. Although i am not a vegan, i am unable to eat dairy or eggs. All of the cookies i've made with these recipes have been delicious and actually taste like they're made with butter. The cakes, breads and muffins are moist, and healthful without tasting like sawdust! For anyone on a restricted diet, i would definitely recommend this book! Most of the ingredients are easy to find, especially if you have access to a health food store. The recipes are simple, consistent, and satisfying.

5 out of 5 stars A needed book.......2007-05-26

This book is just what I needed. I can't eat wheat right now because it bothers my nursing son. Finding wheat free, vegan recipes for sweets that taste good was proving to be a daunting task. I was really missing dessert until I found this book. True, it's not gluten-free, but I didn't get the impression it would be. I was able to look through the book a bit on amazon and knew what was used in the recipes.(Thanks amazon) There are people who can't have wheat but have no problems with other gluten containing grains and for them, this book is great. The cookie recipes are amazing. The recipes that call for more barley flour like cakes, muffins and quick breads are a bit health-foody. But we like that. My four year old devours the rapberry muffins like they are going out of style. The gingerbread cookies have also become a favorite around here. I really love having recipes for treats that I can feel good about giving to my kids. It doesn't hurt that us grownups love them too. Thanks Ellen Abraham, for filling the void.

5 out of 5 stars Perfect to read, enjoy, understand, laugh!.......2007-04-06

This little book is packed with inspiring ideas, taking "eating healthy" totally into consideration. These two girls who wrote the book are inspirational to me, an omnivore, to eat more healthy and still enjoy these better choices in desserts. It is a perfectly presented manual and guide to vegan eating and the recipes are truly works of art and a labor of love.

5 out of 5 stars simply delicious.......2007-02-18

I just baked the banana bread with gluten-free flour.... it is great. I think if gluten-allergic people substitute gluten-free flour for the barley flour, they will be just fine. I'm going to try substituting the gluten-free flour for the oatmeal, too, and see how it works. Or maybe use some ground nuts? These authors know what they're doing, the recipes are really wonderful.

Vegan recipes in this vegan cookbook may be useful for weight loss as the book is co authored with a top nutritionist who helped design them for optimum health.

5 out of 5 stars I have tried the recipes..........2006-06-24

and they turn out great! This cookbook has what I consider to be easy recipes, average time spent making them, and the taste is worth it all. My favorites so far are the cream-cheese stuffed peppers, wild rice & lentil balls with tomato sauce, and millet burgers. A variety of grains, nuts, vegetables, and seeds are used. The pictures are nice, too, if you want to make what looks good and can't tell by the text.

1 out of 5 stars not for me.......2005-09-08

I ordered this book because I wanted to incorporate more vegan meals into my family's diet - however there were a lot of ingredients that I am not familiar with and the recipes looked like they would be time consuming. We have 4 children ages 8 and under and I don't have the time to shop for "special" ingredients or a lot of time to spend preparing meals that our children may not eat. I'm sure if you are totally vegan these recipes may be very tasty, and easier to prepare since you may have the ingredients as staples in your household already. This book was not a proper fit for our busy lifestyle with kids.

5 out of 5 stars Beautiful Cookbook!!.......2007-10-08

I just received my copy of The Joy of Vegan Baking, and it's a wonderful cookbook! Lovely color pictures, awesome recipes, and lots of helpful information. I made the Mexican Wedding Cookies first, and they were totally delish. Just like I remembered from my pre-vegan days. They were easy to make and they melt in your mouth! Can't wait to bake some more goodies! Now we can eat our sweets and feel good that no animals have been harmed in the making of these baked goods! Thanks, Colleen, we needed this cookbook!

5 out of 5 stars Love it!.......2007-10-07

Not only are the recipes fantastic, but the introduction is highly insightful and very compelling. It reminds you why you're vegan and gives you further justification (as if you needed it). Colleen Patrick-Goudreau is a brilliant woman; I would want anything written by her in my collection!

5 out of 5 stars EVERYTHING YOU WANTED TO KNOW ABOUT VEGAN COOKING, BUT WERE AFRAID TO ASK.......2007-10-06

As yet another chronic purchaser of vegan cookbooks, I can tell you that - of all the strengths in this book - the best thing is that it doubles an an encyclopedia and a dictionary to just about All Things Vegan. The extra time, effort and space the author gives to providing the reader with these extensive vegan resources, multiple appendices, glossary of terms, etc. means I don't have to put the book down to find another source ... it's all there and provided in an incredibly user-friendly format.

Colleen Patrick-Goudreau educates not only on vegan baking, but WHY people should choose to bake in this way. Being a successful vegan baker has been made as easy as following a simple recipe. And trust me, I have children who don't think twice about telling me when something from my kitchen doesn't taste good. I'm BLOWING THEIR MINDS right now.

I had a mean family member once tell me, "You can cook, but you just can't bake." ... hahahaha - look at me now, Aunt Marny!

5 out of 5 stars WOW!.......2007-10-05

Got it, love it, you've got to get this! If you want to add nutrition to your baked goods or if you support living compassionately towards animals, this cookbook provides easy to make recipes that will blow you away! Colleen includes traditional goodies- pumpkin pie, chocolate chip cookies, etc. as well as some not so traditional recipes that definitely make this cookbook stand out from the rest. The raspberry jam oatmeal bars are a favorite!

5 out of 5 stars More than just how to cook without eggs and butter.......2007-10-02

This book is perfect for people who have either just transitioned to veganism or would like to in that it is chock full of recipes that result in food that doesn't taste radically different from what the average meat-eater is accustomed to. The photos are gorgeous, the writing is great and no matter how much you think you know about baking, I promise you'll learn something.

This is not a "health food" book, although the recipes are cholesterol-free, lactose-free and healthier than the average non-vegan recipes. Instead, it's a book that helps you understand how easy it is to bake without eggs and dairy.

My favorite part of the book is the section on milk, butter and egg substitutes, some of which do indeed make the recipes healthier (e.g., using ground flax seed and water rather than egg replacer, using almond milk rather than soy milk for those of us trying to minimize our intake of soy, or using date sugar rather than white sugar). There are loads of tips and "Food Lore," which are interesting trivia tidbits that provide a historical context for the food. Perhaps most helpful, however, are the "Troubleshooting" pages that list the most common problems and their likely origins. Finally, the Appendices will save you a lot of time because the author has already organized your pantry and utensils for you and tells you exactly what you will need (/need to buy), and she includes a glossary, lists of what to substitute if you don't have the pan that's called for, and most fascinating to me, a section on the difference between baking soda and baking powder (I always wondered about that).

I've made the corn bread, the pancakes, a couple of smoothies, almond milk and the chocolate mousse because I had the ingredients lying around, and I look forward to trying my hand at chocolate chip scones this week. Then off to the serious holiday stuff so I can bring something yummy to every party I attend--so that I have something to eat (and share) at every party I attend.

This cookbook uses measurements in weight (so grams instead of cups), which probably makes for more consistent baking but was hard for me to adjust to. I had to buy a scale to follow the recipes. Also, since this cookbook is from outside the US, I didn't understand what some of the basic ingredients were or how to get them. I had to google to figure out where I could get them. Some very nice recipes but I've only made one or two from this book because I am not confident about following the recipes.

3 out of 5 stars Would be even better with some explanation and translation.......2002-11-23

A positive aspect of this book is that the recipes are clearly written and fairly simple, in that not too many ingredients are used. One feature that I find particularly helpful is the explanation of how to store vegan baked goods, and for how long. It is surprising that the author has managed to fit such a wide selection of recipes in such a concise book.

I see the following disadvantages in this book:

There is no explanation of the general principles of vegan baking--that is, how and why key ingredients are used and how different consistencies are achieved. Surely I'm not the only person wondering how egg-free batter is to hold together. From the recipes that I've read so far in a variety of sources, I get the impression that eggs are simply not necessary--you just balance the other ingredients appropriately, or sometimes a particularly sticky kind of flour helps. This is just a vague idea, though, so I would have been very thankful if the author had explained these general principles in some detail.

There is no glossary, either. (What is demerara sugar? Date syrup?)

Also, it would be important to clarify the measuring system used. Amounts for dry ingredients are given in ounces and grams. The book seems to be directed to British readers, but I'm still not sure which kind of ounce is meant.

I was disappointed to find that most of the recipes call for margarine. Maybe while I wasn't looking a new type of margarine free of hydrogenated fat was introduced on the market, but I'd still rather not put that dubious processed product back into my life.

I expect this book will be a helpful resource--not by itself, but used in conjunction with other reference materials.
