I'm currently staring at an intensely-delicious-looking picture of the Vegan Blueberry Vice Cream in an article written about this book from a copy of Healthy Times magazine. I had to know more about it.
I came here and found the book and customer reviews. I must say that I'm glad someone took the time to create a frozen dessert that I can eat with my dairy allergies that doesn't taste like chalk after 3 bites (rice cream), or disrupt my thyroid (soy cream). One can only eat so much sorbet trying to achieve dessert satisfaction!
I plan on ordering this book today, as well as laying in a supply of cashews.

This is the best ice cream I have ever had, bar none. The cashew milk makes for such a rich, creamy base that every recipe has been delicious. Plus, the recipes are straightforward enough to encourage a little experimentation. I will never buy Soy Delicious or Ben & Jerry's again!!!

I just received the book and tried the chocolate vice cream recipe and it was amazing. Definitely the best I ever had. The commercial chocolate ice creams in the store are very bland compared to this recipe. It's a great recipe that non-vegans would love. My only issue with the book is that it doesn't provide any nutritional data, so it takes some work to calculate an appropriate serving size. The base of most recipes consists of 1-2 cups of raw cashews, 1 cup of maple syrup and a cup of water. The chocolate was great, but by my calculations it had TWICE AS MANY CALORIES AS BEN AND JERRY'S AND 25% MORE FAT. Maybe that was the reason the nutritional info wasn't included.

As vegan/raw foodists we have given up ice cream. Soy-based products purchased in the store are an acceptable substitute, or at least they were until we bought this book. Have tried the peanut butter - yummy, but clearly the rest will be delicious as well. Never realized what you could make a creamy frozen treat out of until I saw this book. Vegans and non-vegans alike will love these recipes.

The use of raw cashew milk in almost every recipe seems limiting. However, I've subsitiuted with other milks such as soy and almond.

I Remember Cheese Fondly.......2007-10-02
I remember cheese fondly although I don't eat it anymore. Jo Stepaniak's The Ultimate Uncheese Cookbook offers recipes which make a valiant attempt to imitate the texture and flavor of dairy products, but the most successful aspect of the book is that it makes the comfort food quality of cheese available to those who may have never expected to experience it again.
My favorite recipes from the book so far are the Gooey Grilled Cheez, the Durritas seasoning (the taste of Nacho Cheese Dorritos), the Unprocessed Cheez Sauce (I like it on burritos), Spinafels (Spinach Ricotta Balls), the French Onion Soup Gruyere and most recently the Philadelphia Potato Chowder. The book contains a variety of salads, dressings, soups, pasta dishes, deserts, and block uncheeses. Everything I have tried from The Ultimate Uncheese Cookbook has turned out nicely. I strongly recommend this book to vegans (or to anyone else) who would like to experience a unique collection of comfort foods.
A dairy-free miracle.......2007-09-20
Wow, talk about a cheesy resource! With my focus on all things dairy-free, I was amazed that I had not yet picked up a copy of this cookbook. I think that two things held me back: I don't really miss cheese, as I was never a big fan of the stuff; and I couldn't imagine an entire cookbook focused on one type of food.
Well unbeknownst to me, this wasn't just a book about making fake cheddar. Sure, it contains tons of made from scratch cheezes, from slicing Swizz Cheez, to the softer Brie, to a saucy Nacho Cheez. Yet, it goes so many steps further, reminding me just how many foods rely on that creamy and cheesy taste. Blintzes, fondue, pesto, pizza, quiche, alfredo sauce, cheesecakes, French onion soup, lasagna ... you name it and the author Jo Stepaniak has the recipe answer. I was impressed.
Seriously, this is a must have book for any former cheese-loving vegan or dairy-free consumer. Sure, creating an exact duplicate sans dairy can be an uphill battle, and depending on each person's tastes, one recipe or another may not be their perfect fit. But I would be truly shocked if you couldn't find at least a handful of recipes in this cookbook to soothe your inner cheese-craving beast.
I recently trialed the Traditional Macaroni and Cheez, and can't wait to sample some of the calzones (I do miss pizza) and focaccias.
Making the actual "cheeses" does require a few ingredients that may be new-to-you. Luckily, there really are just a handful of these special ingredients required, allowing you to buy a good sized package of each once, and then reap the rewards of various "cheeses" for months. Also, while tofu definitely makes itself known in this cookbook, a surprising number of recipes are soy-free. In a good majority of the recipes, the author uses a variety of nuts, seeds, beans, grains, and seasonings to achieve the right consistency and flavor.

I just purchased this book, and today I made the Gee Wiz. I'm telling you, this stuff is incredible. I've read most of the reviews here and I took the advise offered. I used a bit less lemon juice and a bit less Nutritional yeast. It was a hit with the entire family. DH and I have gone vegan for medical reasons. He really misses his cheese. This stuff hit the spot. He was ready to eat the entire container. I can't wait to try more of the recipes. When I do, I will be back to update my review.
Ok for those who want to know, it does not taste exactly like cheese.
However if I had not been the one to make it and had it on snack table with crackers, I would have been asking for the cheese spread recipe. It is really that good. I will definitely be making more of this and I will be taking it to homes that are not vegan. I can't wait to see their reactions.
A Great Way to Break a Cheese Habit!.......2007-05-13
As a vegetarian who is struggling to break a cheese habit in order to go completely vegan, this book is a God send. The recipes are absolutely delicious, and I've even used my slow cooker with several. Try it; you'll be glad you did!

You'll have to have access to a health foods/specialty store to buy some of the ingredients but if you're on a dairy-free restriction this book can at least help you have some sort of normalcy back to your diet. If you're used to eating gooey dairy goodness this food probably won't live up but if you've been missing your big ol' bowl of mac-n-cheese while living with new restrictions the recipe here will come pretty close. Good food, easy directions and a great resource for hard-to-find alternative foods.

Sound like an oxymoron? Myra Kornfeld argues that choosing to be a vegan does not mean you have to deprive yourself--rather, you can pamper your palate with luscious, healthy food. There are those who advocate salt-free, fat-free, flavor-free food, but Kornfeld sets the record straight right from the beginning. She uses salt for seasoning, and reminds us, thank goodness, that you need fat in a healthy diet. Clear instructions, a chapter on ingredients (including sections on grains, greens, and beans--how to buy them, cook them, and use them), and a short primer on equipment make this a good book for beginners. More accomplished cooks will appreciate Kornfeld's innovation. She isn't afraid to use herbs and spices, and she knows the capabilities of her ingredients. In a simple Rich Stock recipe, for instance, she calls for celery root, and explains in a note that you can substitute celery, but that the root gives a much deeper flavor. Kornfeld's food is voluptuous in presentation, too: Smoky Chestnut and Sweet Potato Soup calls for a dash of rum, and it's served with toasted, chopped hazelnuts and a pinch of freshly grated nutmeg; Hominy, Tomatillo, and Squash Stew is topped with Ginger and Lime Cream made from tofu; and a Fennel, Orange, and Pomegranate Salad is so beautiful and the flavor so complex, you'll swear you're eating four-star cuisine.
The book is a little difficult to navigate, as it's divided into "meals." So if all you're looking for is a side dish, you'll need to set some time aside to peruse the whole book. Every recipe starts with a few words of wisdom, usually information on the ingredients or a description of the final product. The final chapter is on desserts, and here Kornfeld really gets voluptuous. The recipes include Cranberry Orange Tart, Chocolate Pudding Tart, and Lemon Pudding Cake with Blueberry Glaze--there's no depriving anyone of anything here! Vegans will appreciate the creative and inventive approach, but this cookbook is also useful for nonvegans. Everyone knows someone who's trying to avoid meat, dairy, or eggs, and with loads of ideas for light meals and interesting side dishes, we can entertain our friends and eat healthy at the same time. --Leora Y. As other reviewers have said, the recipes are time consuming. I have tried the adzuki bean recipe, and it was much less tasty than I had expected. Other recipes in this book are not even worth trying because the ingredients are either seasonal or just plain unavailable in my rural area. There are better, more down-to-earth vegan cookbooks out there.
My favorite..........2007-03-17
Of my many, many cookbooks, The Voluptuous Vegan, by Myra Kornfeld, is my favorite. In fact, when I was asked to go to Bulgaria in 2004 to help open the first health-food restaurant in that region, The Voluptuous Vegan was one of the few cookbooks to accompany us on that journey. I have made nearly every recipe in this book. I love the innovative flavor and texture combinations. I also greatly appreciate the way Myra Kornfeld lays out menus, recipes, and preparation timelines to help you assemble, in a timely manner, complete meals that will wow both family and guests. As a personal chef and cooking instructor who promotes organic, health-supportive cooking, I have made recipes from this book that even my most vegetable-phobic clients ask for repeatedly, the African groundnut stew topping that list. As for the desserts, people can't seem to get enough of the chocolate pudding tart (which kids clamor for, even after they've watched me make it using tofu as the base!), the chocolate sorbet, and the carrot cake, the secret ingredient for which (oddly enough) is cardamom. Before completing this review, I do want to comment on one of the above reviews which indicates that seitan is a soy product. Seitan is actually a protein source derived from wheat and is sometimes referred to as "wheat meat." In closing, I will simply say that, if I were allowed to keep only one cookbook from my entire library of sources, it would be The Voluptuous Vegan. Thanks, Myra!
Okay, I know it's early but..........2006-11-29
I just purchased this cookbook after mulling over the reviews, and I just tried my first recipe, Warm Chickpea Salad with Artichokes and Sun-dried tomatoes. Mmmmmmm! I thought the minced rosemary used in the dressing might give this salad an overwhelming flavor, but I was pleasantly surprised. It was subtle, and wonderful, and full of flavor! Maybe I shouldn't write a review based upon my first go at it, but I have a gut feeling that I'm going to love this book! The fact that the author is a chef, and reading the other reviews, gives me faith and trust. I am an occasional vegan, and have been wanting to learn how to cook bolder, more flavorful vegan dishes. I have given in to the fact that good cooking requires time and commitment, so the effort that is needed does not turn me off. For me, the taste and the health benefits will make it totally worth the effort. I can't wait to try more recipes!!

I enjoy Myra Kornfeld's recipes from her Vegan column in Vegetarian Times magazine, so I was happy to see she was the author of a cookbook! While I do not use this book every day (my more everyday cookbooks are The Chicago Diner Cookbook and Vegan with a Vengance) I love to leaf through here for ideas when I find myself in a rut. Everything is laid out in meal plans from entree to dessert, and there is a section in the beginning explaining cooking techniques that often get glossed out in other books (where they assume you know it already). This book is also great for special occasions - many nonveg*ns seem to think all we eat is lettuce...or maybe stirfry! You can dazzle them with these recipes. Again, very thought provoking - even if I do not make a recipe verbatim, it definitely gets the creative cooking juices flowing. Both a cookbok and a reference book!
Gourmet Vegan Food to Please Everyone.......2005-10-27
This book is a gem in a world full of bad vegan cookbooks. I am not into health food, I am a vegan for strictly animal rights reasons, but whatever I eat better taste really good (and is typically very healthy by default). Voluptuous Vegan has some truly fantastic recipes. Some of the recipes are rather involved but don't let that intimidate you because it is virtually guaranteed to be worth it. The great thing about the book is you can just look at the recipes and see that they are going to work. Any vegan cook worth their salt ought to have this book in their collection.

recently turning vegan, i decided i would like to have a cookbook of uncheese recipes. though there are some on the market that are more known and reviewed than this one, i decided to try it. so far i have tried two recipes and each were disappointing. maybe i have my expectations set too high? really, for recipes that boast a "velvety" cheese sauce and soy -less "cream" cheese, these are a downer. perhaps if they instead had names like "orangy sauce that is incredibly inventive but doesn't really taste like cheese sauce" or "white spread for toast" i wouldn't have been so disappointed. so, from now on i will try to stick to whole foods (like avocados)to get my fix instead of the recipes in this book.

I bought this book so that I could learn some milk-free recipes, as I have trouble digesting dairy products. I was dismayed to find that this book is hardcore vegan...so not only is there no milk, there's no eggs or anything else from an animal. I mean, if you want to be vegan, fine, but I'm just looking for some milk and butter-free recipes. These recipes called for way too much tofu, though I'll admit the tofu cupcakes were good. But by and large, unless you are really committed to the vegan lifestyle, I'd look elsewhere.

My partner complained of a lack of options when I told him he should stop eating dairy. (He has a dairy sensitivity and was at the time avoiding cow's milk, but still eating goat dairy.) Then I found, among other things, this book at the local natural foods store, and it disproved that theory quickly.
Our household agrees that the cheese sauces work very well. The hard cheeses, I found that I liked, but my sweetie disagreed. The "Melty Pizza Cheeze" is one of his favorites, whereas I don't much enjoy it, probably for the same reason why he likes it ("It's exactly like squeeze cheese! Except all, like, natural and healthy and stuff!")
There hasn't been a single thing we've tried from this book that *one* of us hasn't liked, and the most valuable thing in it is the substitution information, which allows us to make familiar recipes with different components -- such as the sweetened condensed soymilk recorded here, which made a fabulous key lime pie. (We couldn't even taste the difference.) It's allowed my partner to continue eating variations on "normal food" that he otherwise would have missed, and which the rest of the family enjoys as much in their altered forms as we do the standard versions. High praise.
Furthermore, although this is not an issue for us, I'm pleased by the sensitivity of the book to people with soy allergies; many of the recipes have variations made with non-soy products, which I'm sure must come as a great relief to those who can't have either milk or soy.
Great Vegan Nutrtional Info and Recipes.......2002-12-24
I really enjoyed the nutrition section at the beginning of this book. I've been a vegan for a long time, so I've got to be impressed when a cookbook teaches me some new things about vegan nutrition.
The recipes are great as well - as is expected for Joanne Stepaniak's work. My small complaint is that some of the recipes are identical to those in the Uncheese Cookbook. Yeah, that Gazebo cheesecake is excellent enough to deserve getting printed again, but I was really hoping for some new cheesecake recipes! Quite a few of the recipes are new, so it is still worth picking up this one as well, especially if you've got picky non-vegans to feed.
This book is a "must have" for lactose intolerant & vegan.......2002-01-21
Whether you are lactose intolerant, have a dairy allergy or are vegetarian or vegan, you will find lots of interesting nutritional information and recipes in Dairy-Free & Delicious. The first five chapters look at "Lactose Intolerance", "Milk Allergy", "Building Strong, Milk-Free Bodies", "Superb Substitutes" and "Dairy-Free Dining." Information is provided that will help you learn if you have an intolerance to lactose or are allergic to milk. Considerable information is also provided on such topics as calcium, calcium supplements, vitamin D, milk substitutes, dining out and travel tips, to name a few.
While reading the section on vitamin D, I was hit once again with the realization that being truly vegan can be very difficult - and not because it is hard to eliminate meat, dairy and other animal products from our diet. That was easy. Learning to understand labels can be much more difficult - especially when important information is missing. For example, under the section "Does the vitamin D added to foods come from animals" I learned that vitamin D2 comes from plants while D3 comes from animals.
"There are two forms of dietary vitamin D: D2 or ergocalciferol, which is of plant origin, and D3 or cholecalciferol, which comes mainly from sheep's wool and hides, fish liver, and eels. Unfortunately, most of the vitamin D added to foods is vitamin D3. The main exception is nondairy milk - many of these products contain vitamin D2." (page 40)
Armed with this information I went to the kitchen to see what is in our multi vitamins. Arrghh! Of the three brands of children's vitamins, two listed vitamin D as D3 while the other just listed it as vitamin D and didn't specify whether it was D3 or D2. The bottle of adult multi vitamins contained vitamin D3 as well. A quick check of some of our soy and rice milks listed vitamin D3 or just vitamin D. We will have to be more vigilant in ensuring that the products we eat and drink are totally vegan.
The second part of the book is entitled "Dairy-Free & Delicious Recipes" and contains a good selection of vegan recipes for spreads, uncheeses, milk, sauces, breakfast, salads and dressings, soups, main dishes and desserts. Each recipe contains: yield, calories, protein, fat, carbohydrates, calcium and sodium.
If you are a vegetarian or vegan Dairy-Free & Delicious is a good book to have. If you are lactose intolerant or have milk allergies then this book is a "must have."

I would like to know who eats like this every day and who has the ingrediants in their pantries for these kind of eccentric/lavish meals.
I'm really sorry I wasted my money. My husband and I eat meals like this at 5 star restaurants, but don't cook like this daily. We had a good laugh over the title of this cookbook!

This is as far from everyday as you could possibly get. Recipes are complex and use gourmet ingredients, not everyday fare. Families watch out, this is not the book for you. A total waste of money for my picky eating child who can't have dairy. P-U - rename this to the GOURMET DAIRY FREE COOKBOOK and it's fine but with this title it's a huge miscue.

I ordered this book for my son who is one year old and has severe allergies to dairy, eggs and nuts. I thought this would be a wonderful cookbook to make him recipes with...Boy was I wrong! Most of the recipes are listed several times within the book, making the description of 450 recipes a joke! Not to mention the ingredients she lists are so far out of reach for any normal Joe living in the city or remote country area...they just aren't available in my state(trust me, I have exhausted my resources trying!) And when I was actually able to find the ingredients to MAKE the recipe...it turned out less than bland, it was gruel! I figured if I didn't even want to eat it based on the appearance alone, my son wasn't going to have anything to do with it...so I tasted it and realized the taste was just as bad if not worse. Definitely not the book for someone who is just starting on a vegetarian or restricted-diet journey. My husband recommended throwing it in the trash, but I am not about to throw away something I paid almost $20 for!!!

Meridith McCarty has written a marvelous cookbook that satisfies various niches: it is a macrobiotic cookbook, but would also suit vegetarians who are not finding the peaceful energy that comes from balancing foods properly & cooking them according to methods used for thousands of years by our ancestors. How can you bake bread without yeast (which most of us are allergic to)? How do you cook esoteric grains such as quinoa, buckwheat & amaranth? How do you incorporate sea vegetables into your diet without scaring your family? Oh, and if you enjoy "reading" cookbooks as if they were novels, you'll learn how our ancestors (recipes are from throughout the world) made homey, hearty, & ultimately nourishing meals & desserts from simple ingredients & utensils. A must for anyone trying to "get back to nature" or needing a bit of inspiration beyond the typical macrobiotic diet.

I bought this book hoping to find new ideas on dairy-free cooking. While the recipes are dairy free about 95% of them call for tofu. I've read a lot on nutrition and am also concerned about going over board on soy consumption, especially for women. This book would be great for a vegan but if you're just looking for dairy-free then I would recommend 'Totally Dairy-Free Cooking' by Louis Lanza.

This book is written from the point of view that after some people eliminate all meat from their diets, they might choose to eliminate dairy also. Since it is written from this strict vegetarian viewpoint, all of the recipes are fine for people who have dairy allergies as well. Many of the recipes include soy cheese products - if you are milk protein allergic you can eat some of these products, but not all of them, so be sure to read the ingredient lists carefully. Some soy cheeses are made with casein or sodium caseinate, which are milk derivatives. This book assumes that you already know what you are allergic to, if anything, and that you know how to avoid it. Other than the soy cheeses, all other dairy possibilites are eliminated and milk substitutes such as soy, rice and almond milk are used in their place. This book is full of wonderful recipes that make the most of non-animal proteins such as tofu, seitan, and tempeh. Although I'm not a vegetarian, I was excited to see so many great-sounding recipes that tempted me even though I've never eaten seitan and rarely liked tempeh. It includes delicious rich soup recipes and some noodle and pasta dishes containing a white sauce made with almond or soy milk, something I wasn't sure was possible until this book. It contains many spicy, creative dishes as well, something not always common to dairy-free or vegetarian cookbooks.

This was the first dairy-free cookbook I bought when I found out I was allergic to milk proteins. So far, every recipe (over 20) that I've made from this cookbook has been a poor comparison to its dairy equivalent. My own dairy-free creations were better and indistinguishable from their dairy equivalent.
A great selection of easy to make, non-dairy recipes........1998-10-28
It's hard to find to a good non-dairy cookbook. I'm not a vegitarian, I just feel a lot better, and look a lot thinner, when I'm off the dairy. The recipies in this book are all vegan (no animal products of any kind). I haven't tried all of the recipies, but the ones I have, have been tasty, easy to prepare, and for the most part the indgredents are easy to find. Especially yummy is the Baked Spinach with Rasins. The book even includes a desert section, I personally tend to avoid these, not only for caloric reasons, but also because many of them call for margarine (made many from hydrogenated oils), and my nutritionist has convinced me that hydrogenated oils are on the same health level as crack. I would highly recomend this book, good for beginners thru experts. I find myself "spicing up" some of the recipes, but the the basic recipes are great.

this is an excellent cookbook, everything i'd hoped for when i spotted it on amazon. i'm a vegan woman with low bone density so high-calcium vegan recipes are important for me. this cookbook is packed with high calcium recipes for main dishes, soups, sides, beverages, dips, and desserts. it also provides tips on adding calcium to everyday meals and solid, well-supported information on calcium and health. each recipe includes nutrition data so you can tell exactly how much calcium and other nutrients it contains.
i really wasn't expecting such a comprehensive resource on adding calcium to a vegan diet, or so many yummy recipes. to be honest, i thought this would be a slim cookbook with some tofu and kale recipes with no nutrition data. but i was wrong. this book is great.

I received this book as a gift and have been very impressed. This book has been a useful resource in adding more calcium to my diet with its helpful hints and calcium tables. The Carrot Broccoli Cilantro Salad is one of my favorite recipes ever. The Chunky Corn Chowder is also great.
I already loved the calcium-rich ingredients that this book relies on (dark leafy greens, tofu, almonds - to name a few) but the recipes are creative enough that they can hopefully win over those who do not.
Many of the recipes take quite a bit of time to prepare. That is the primary reason that I do not use this cookbook more often. However, if you plan ahead you can prepare some of the ingredients while others are cooking to save time.
Delicious recipes every time!.......2002-05-31
I originally purchased this cookbook for a science fair report my daughter was doing which focused on the detrimental effects of dairy on the human body. We began making some of the recipes and were hooked! Our family rates new meals and each recipe we have tried (over a dozen thus far) has received high marks from all family members. I appreciate the fact that the tastes of the various meals varies considerably, but the recipes use many of the same produce items, which allows me to stretch my grocery budget. While the meals are tasty, they are time-consuming to prepare, but definitely well worth the effort. The recipes are easy to follow, with each page offering interesting calcium tidbits and meal enhancing ideas. I was disappointed that the dessert section recipes fairly consistently call for granulated sugar. The desserts look wonderful, but I'll have to experiment to substitute for the granulated sugar. The calcium table in the back of the book is a tremendous resource for finding high calcium foods; I've learned much! I'm planning to spend some time on line tonight, looking for more cookbooks by these authors!
CalciYum! A Must for Every Kitchen.......1999-08-11
CalciYum! has been a blessing in my kitchen. Not only are the recipes delicious and the instructions easy to follow, but I also know that my daily calcium needs are being met. The book has a wonderful resource table that lists the amount of calcium in each of the ingredients. This way, I can even boost the calcium in some of my own recipes. With a nutritional analysis for every recipe, an ingredient cooking guide, and tasty recipes, I recommend this book wholeheartedly to anyone.

I first noticed this book when one of the authors was on a cooking show. As a vegan, I was pleased to see that it offered recipes containing high levels of calcium WITHOUT dairy products. I find that many recipes in vegetarian cookbooks call for "weird" ingredients, but CalciYum offers recipes that even meat-eaters love! And the ingredients are easy to find! I made the Quiche and Peanut Butter Marbled Cheesecake recipes - and both were delicious! This book is really helpful because it also gives interesting facts about calcium, not to mention tables showing the calcium content for various vegetables, beans and soymilks. If you're a vegetarian or are lactose-intolerant, you will love this book and are sure to use it often!
