My husband is diabetic and I have been trying hard to find recipes that are good and quick and easy. I FINALLY found a GREAT cookbook that does that! (leave it to Betty Crocker!) I grew up with the same Betty Crocker cookbook that was passed down from my grandmother to my mother and so on... and now Betty has done it again! These recipes are wonderful, and easy to use! I just wish there were more Diabetic cookbooks by Betty Crocker! This is a GREAT book to have!

The Betty Crocker Diabetes Cookbook is just as fantastic as the regular Betty Crocker Cookbook. The pictures are mouth-watering, the recipes are easy to follow, and they taste wonderful! My husband, who is diabetic, found it hard to believe they were from a diabetes cookbook. If you are diabetic and buy just one cookbook, buy this one!! If you don't have diabetes but are trying to eat healthy, this is the book for you. I recommend it whole heartedly!

Nothing at all wrong with the finished food. But the book is only good if you are rich and have plenty of time to shop. The women who presented the meals obviously fit into both categories. If they were just regular people (like the name, Betty Crocker, is supposed to represent) they would not have said that these are quick and easy to prepare.

I was quite surprised when I bought this book how much information is given for each dish. Nutrient content as well as calories per serving. One of the best things about this book is the diversity it offers. So many different ethnic based foods. I definitely recommend this book for those who are health consious and also wanting to try great food every night.

I got this book because I loved - EatingWell Serves Two: 150 Healthy in a Hurry Suppers so much. This book is close to as good, but the portions didn't work as well for me.
Most seem to serve 3 to 5 people depending on your hunger level. Make sure you have a good side dish however and it is the perfect book for finding something great and healthy to cook up for company.
Very easy to follow and the dishes are simple without to many odd (read hard to find) ingredients.

This book disappointed me. I've used Eating Well recipes in the past and have always been very pleased. The recipes in this book, however, are very pedestrian and geared to a novice cook. Quick cooking -- the kind that can be completed in 45 minutes -- can still be interesting and inventive. These recipes were just practical. Still, it's a well done book with nice photographs, and the health information is useful. I wish there were a real dessert section, though -- because desserts *can* be made in 45 minutes or less!

This is exactly what I expected and then some. I love the way Curtis organized this cookbook into Seasons. It helps to take the guess work out of what I should/shouldn't cook. I love the way the book also introduces the degrees of ease for each recipe. I just read through each one and I'm confident that I can make even the most difficult.

I watch "The Take Home Chef" and love the recipes from the show and now I have something different to pair up with the seasons. Great job Curtis and I couldn't be happier with what you created for us. Thank you! :)

The photography and layout of this book are just stunning. I'm a big fan of Curtis Stone, and this book follows true to his cooking style. I would say, however, that most of the recipes should probably be saved for weekend cooking, since many are involved and require slightly unusual ingredients. Most of the recipes are quite 'do-able', but a few are a little 'out there'.

If you have never watched "Take Home Chef", you don't know what you are missing. Curtis is quite charming and very talented. I have tried several recipes from this book, getting raves for all. I loved the format - each section being based on certain ingredients. They are all easy to find and absolutely scrumptious!

I bought this book hoping that its recipes would be like the ones Curtis prepares on Take Home Chef TV series. But a quick glance at the book told me that wasn't the case. Unusual ingredients and a few difficult or time-consuming preparations. As I looked over the recipes more closely, there wasn't a single one I thought I'd actually make. I love the quick but elegant recipes from the show, but this seems more like restaurant recipes. I'm with the other reviewer who said they'd rather donwload the easier recipes from the show's website. Think I'll be taking this one to the used bookstore soon.

I wanted this cookbook because I absolutely love to watch The Take Home Chef on TLC. However Cooking with Curtis is filled with easy recipies as well as more lavish and difficult recipies. The dishes are scrumptious but many recipies include hard to find or expensive ingredients. I prefer to print his easier recipies off of the TLC website.

I bought the Cookbook after a couple of months of already doing the Rice Diet. There are not a lot of recipes in it that I use (I'm a "fussy eater") but it gives me great ideas for making my own creations. I lost 42 lbs in less than 4 months on the Rice Diet, and I'm still going. If you're looking to lose weight, or just want to eat healthier, and you like an array of foods, this will be a fantastic book for you!

Well, I would recommend this cookbook for anyone on the Rice Diet, as it DOES give you more ideas and options for the diet menus, but there are some drawbacks. First, of 336 pages, only about 187 pages are recipes. The rest is a repeat of the diet information you have in the Rice Diet Solution, so you don't really need both books. If you are choosing just one, I guess I would go with the cookbook, as Solution has only 100 pages of recipes, but the recipes do not seem to be duplicated in both, so for variety you may want both. As far as an aesthetically pleasing cookbook, this one gets low marks. While the few photographs they have are lovely, they are grouped together in the middle of the book instead of with the recipes they depict, so they don't really help in imagining what the dishes look like as you browse the recipes for planning.
A majority of the recipes in RDC are VERY basic and simple, like Elvis Almond Butter and Banana Sandwiches, or Quick and Crunchy Veggie Spread, so this would be good for someone looking for a variety of easy dishes to get them through the diet. The book includes three weeks of sample menus which takes a lot of the planning burden off the dieter.
The recipes are divided up by the categories in which they fall, like Starches, Protein,and Fruits, within the categories of Breakfast, Lunch etc., making it easy to use them to plan your own menus.
As far as the dishes themselves, while there is a large variety from which to choose, very few of them jump off the page and scream "Oh, try this one!" There are a LOT of side dish recipes, which should really help with the vegetable blahs in mid diet. There are a number of starch entrees for the regular days, but in my opinion, the more appealing recipes fall in the protein allowed portions, which is a shame because my imagination needs help in the beans and grains a lot more.
I really like the Dressings and Toppings section, as they seem to be easy additions to plain salads and vegetables. I am all in favor of new flavor!
I am not particularly impressed by the desserts, but then, I'd rather just eat the fruit. Others will most assuredly feel differently, and they can experiment with the 14 dessert recipes and enjoy them.
Be forewarned that some of the recipes require specialty items like Angostura Worcestershire Sauce, or smoked paprika, so read carefully before you start a dish. Most can be made with general pantry items, but you don't want to be mid-recipe and need something you can only get by mail order!
The recipes have fairly clear directions, although some refer you to another recipe for one of the ingredients. Some recipes should be attempted only by an intermediate chef, but MANY are suitable for novices in the kitchen. On the whole, I think the Cookbook is a good adddition to a Ricer's bookshelf.

I am so glad I bought this book. I have cooked many of the recipes already. I really appreciate having the information on what unusual ingredients are and where to purchase them--or how to substitute with other, more common items. I have learned though, that it doesn't take very much curry paste to make a dish good and spicy! From experience I've learned that I prefer to only use about half of what the recipe calls for--and it is still plenty spicy! I would recommend this cookbook to anyone who would like to get started with some Thai cooking! Yum!

Wow..I am super impressed with this book. To be honest, I am not a very good cook but with this book, everything I have cooked has turned out really well. It is a pretty cool feeling when you cook something and you suprise yourself.

The dishes don't require a bunch of ingredients, either. I would recomend going to an asian store or ordering online(there are resources in the book)the staples and then just go to the regular grocerys store and get your prawns, chicken etc

And if you have never had Thai food, which I didn't until I moved to Seattle, it is some of the tastiest cuisine in the world

I've only made about 10% of the recipes in this book, but every one of them has been quick and easy. And even better, have tasted great. There are some personal notes with most of the recipes, the instructions as clear and concise, and the pictures are very nice as well.

We love this book. The pictures are tantalizing. The recipes are easy to follow. Several alternatives are offered to deal with hard-to-get ingredients.

We've made four recipes out of this book. Every one turned out great and flavorful. Our favorite so far (made it twice) is the "Hidden Curry Chicken". This takes 10-15 minutes of prep time, then you throw it all in the rice cooker until it beeps. So easy, and so tasty!!!

The book is true to its title, and we look forward to trying all 70.

I am a big fan of Dr. Ornish and his vegetarian approach to treating and preventing heart disease. When I am trying a new recipe I surround it with simple additions so I can concentrate on the new fare, especially if it includes alot of ingredients. Most of the meal plans in this book are complicated, requiring alot of ingredients for each new item on the menu for that meal. I could not successfully use this book as written, except to try one item at a time.

I've been in tune with Dr. Ornish since about 1997. I had 3 bypasses at that time. Using his simple techniques of eating well (and a lot), moderate exercise and relaxation techniques, I lost 120lbs. in 6 months and kept it off! This man is world renowned in his field and has yet to have any peers. That's right. This is the man that made Dr. Atkins look foolish in a debate on PBS! Dr. Ornish, thank you!

I have bought a LOT of cookbooks over time and this is by far my favorite. The recipes are easy to follow, the ingredients can be found at any grocery store, the flavors are amazing, and although it is a vegetarian cookbook the recipes easily convert to meat entrees for your meat-loving guests. I have tried about 5 or 6 of the recipes (some twice!) and my husband and I have loved every one of them. I am thoroughly looking forward to trying the rest.

I ordered this book because many of my vegetarian cookbooks were mostly appetizer or "light lunch" based and this one seemed to contain more "hearty" meals. I was right, it's wonderful! The recipes (though I haven't tried all that many yet) are varied and provide an actual meal as opposed to a "snack". My only complaint is that there aren't photos for every recipe (something I generally appreciate in a cookbook) but there are still several photos and descriptions of each recipe at the top of the page.

I got this book from our local library so that I could find some recipes to cook for my in-laws who are, obviously, vegetarians. I tried several of the recipes and although we didn't love all the recipes they were all very easy to execute and the instructions are amazingly precise. An excellent cookbook even for those who aren't vegetarians.

Not the healthiest recipes but perhaps it's a beginning if you want to change your lifestyle and your families as well. I'm sure they are tasty recipes. These are also easy to fix. Once your family is used to these, introduce healthy recipes from other cookbooks.

I love Betty Crocker but I know there are better and healthier recipes out there.

For me, this is a perfect cookbook. I don't have a lot of room in my kitchen. I want meals I can cook quickly. The recipes is food that you pretty much throw together in a hurry. Even the more intricate recipes are easy. These are the kind of meals that women cooked in the 50s, '60s and '70s before the Food Network got middle America women (and yes men too) wanting to be gourmet chefs. If I had the time and especially the room, it would be fun to try more elaborate dishes. But for people who want something more than frozen meals, this is a great cookbook.

Bought this book because of it's good reviews and high star rating. The layout and instructions of this book are easy to follow and pleasant on the eyes (vibrant colors and good quality pages). However none of that matters if the instructions are all slightly off (recipes that called for medium-high heat for 20 minutes was in actually 1 hour on high heat while covered in order for the meat to be cooked enough to eat. Resulted in good enough looking food but tasted off and not at all "authentic" vietnamese. I've grown up on Vietnamese food and TRUST ME you do not want to use the foods made from this cookbook to represent what Vietnamese food should taste like. My mom laughed and suggested I throw out the cookbook and finally accept her traditional method of Vietnamese cooking (a dash of this and a glob of that measurements) instead. I wonder if I can still return this book since it will definately be unused and collecting dust on my shelf!

Though I grew up in the states, my family is of Vietnamese descent and I travelled (and ate) my way through Vietnam, especially Hanoi. This book was my first attempt at making Vietnamese food at home and boy am I impressed at how AUTHENTIC it is to what I ate in Vietnam and in local Vietnamese restaurants. I'll think twice about eating out now that I know how easy it is to make at home.

Let me first say that the bar was set very high: McDermott's Quick and Easy Thai is a masterpiece.

These recipes are also delicious, and the ones I've tried have been easy. However, they're not nearly as quick and easy as the ones in the Thai book.

What makes them not so quick? In a word, ingredients. Most recipe has lots of them, so there's a lot of measuring/chopping going on before you cook.

Also, if you're a European American like me, you don't have these ingredients lying around, so a trip to an Asian market is a necessity, at least to stock up in the beginning.

But don't let this deter you! Make fish sauce and lemon grass part of your standard staples, and McDermott does have an excellent section on ingredients, how to find them, and which are most important.

The recipes also have notes on what to do if you can't find something: suggestions for substitutions or just leaving things out (though again, not as many as the Thai book.) These recipes are delicious and have complex flavors, so even if you leave something out it'll still be good.

So to sum up, this is a great cookbook, but if you want to enter the world of SE Asian cooking, go with McDermott's Quick and Easy Thai first.

I have been looking for a good vietnamese cookbook for awhile. I checked this out at the library and fell in love with it so much I bought it to add to my collection. The fish in caramel sauce is marvelous. There is a recipe for meatballs that is great too. I'm still working my way through the book.

I love Vietnamese cuisine, and this book allows me to easily incorporate it into my everyday diet. The ingredients are easy to find in chain grocery stores and I can use ingredients I buy in multiple recipes, making the book economical. I recommend preparing your own chicken stock (have it on hand in freezer). It improves the taste of the recipes. I grow my own Vietnamese herbs in the summer, and the book will give me lots of opportunity to use them on the fly. I have also lost a little weight cooking from this book because the dishes are flavorful (be sure to use the Everyday Dipping Sauce) and healthy, and replaced microwaved and canned meals. Many books may be more in-depth, and not every dish is absolutely fantastic, but if you need something for the busy weekdays, this is a good choice.

This book is Vollstedt's effort to bring back the tradition of lighter suppers in the evening following the heavier dinner earlier in the day. This is how my mother-in-law cooks during holidays and I like this approach because you don't have a heavy feeling late in the day.

The recipes are easy to understand and follow and not intimidating at all, she took the term easy seriously when putting this book together. Easy does not mean boring or monotonous her recipes cover a wide variety of foods including soups, salads, sandwiches meat, poultry, eggs seafood and fish, pasta, vegetables, pizza stir-fries, grilling and desserts. Two categories salads, and pasta grains and legumes have both a chapter for main dishes and one for side dishes.

Although the focus is easy recipes there is a wide variety to choose from and it would be hard to pick up this cookbook and walk away without some ideas for a good and tasty supper.

This is an excellent book full of simple yet delicious recipes. My mom has other cookbooks by the author and really enjoyed them. Then she stumbled across this one and after I flipped through it, I picked up one for myself. There recipes are very basic and easy to follow and call for normal ingredients. Nothing exotic or specialized. Even my meat and potatoes husband enjoys what I have cooked out of this book.
