This is a wonderful cookbook filled with sweet treats for vegans and easy to follow recipe instructions. The only gripe that I have with this book is that most of the recipes use maple syrup in large quantities which is not economical for most of us.

I absolutely love this book. Everything in it comes out perfectly. The cranberry apple pie is simply the best pie I've ever had. The chocolate cake recipe is excellent as well.

For my son's 7th birthday he wanted chocolate cupcakes in school. As a mom who makes a living helping parents raise health children, I grabbed "More Great Good Dairy-Free Desserts Naturally" and made the Chocolate Cake...to live for. Only twist was I bought dinosaur molds and made very cool 3-d dinosaur "cupcakes." You should have seen the faces on the kids in his class when we handed these out -- and then lots of mmmm's and smiles after the first bite! I usually bring in frozen bananas for a healthy, dairy free birthday treat, and although those usually go over great, I know my son was so happy to have a cake option this year.
I have to say this book has turned me back into a cool mom in the eyes of my kids. They can't believe when I ask them if they want to bake something with chocolate as one of the ingredients (I'm usually the fruit smoothie, sorbet, fruit salad dessert maker-- all favorites in our home, but even I enjoy indulging in chocolate!).
Whether your family needs to eat dairy free, or you just prefer it as I do, this book is a must buy!

Anyone who thinks southerners eat this stuff is another one. They eat fast food, macaroniandcheese and other prepared stuff. Also and extrawise, I gather from some of the reviewers that this food, contrarytofactwise if they DID eat it, is better than Yankee food. No. Food has gotten better in this country, to be positive for once. Except DownSouth.
DownSouth, you eat in ethnic restaurants. Just like in England.

I have bought a ton of cookbooks and this one has got to be my favorite. When you want comfort food, this is the book. I have now made a lot of the recipies and they are all perfect. Their smothered hamburger steak with gravy and onions is our favorite at the moment. It is better than any restaurant I have been to. The stove top cooked pot roast melts in your mouth. The banana pudding was the favorite of a family reunion. I now have to make it and take it to every occasion. It makes a huge pan though so beware. You also no longer have to 'guess' on the amount of flour to use to make gravy. I grew up making buttermilk biscuits and cream gravy. This book has it it all. The pancakes are better than IHOP. I am also buying this book for friends and newlyweds. Oh, just one more thing. This is not a low fat, low calorie book. But who cares? When you want comfort food, you want the good stuff!

Learn How to Bake a Cake.......2004-10-18
There are an awful lot baking cook books available these days, but few are worth anything. This book is one of the few truly helpful books that actually shows you how to properly bake a cake. Many baking books feature a famous chef on the cover, along with casual recipe instructions and the admonition that this really is easy to do; usually, this is a lie. This book fills in all the details, and is really the only cake cook book you will need.
Please note that this is not a "throw it together and bake" kind of cookbook; for these, I suggest books like The Fannie Farmer Baking Book, or Pillsbury's Best of the Bake-Off. The chapters are arranged like a textbook. The author expects you to systematically bake your way through each chapter in order, gaining skill and experience with each chapter. You are not suppose to skip around at random, picking out a few appealing recipes. The first chapter has pound cakes, the easiest; last chapter has European tortes and gateaux, the most difficult.
It has chapters on ingredients, equipment, techniques, pound cakes, butter cakes, coffee / streusel cakes, cakes with fruit, sponge cakes, roulades, chiffon, angel food, american, cheesecakes, tortes and gateaux, filling, frosting, glazes, sauces and toppings, and decorations.
The quality of the cakes are very high. When I need a high caliber Sacher Torte in a professional setting, the recipe comes from this book. It has a rare and complete recipe for Genoise. It is also one of the few books that insists on clarified butter for the Genoise (the only other one I can think of is Beranbaum's Cake Bible). The only real complaint I have is the suggestion to bang Genoise batter in the cake pan on the counter just before baking (never do this; better a couple of small holes in the finished cake than a deflated cake). Her recipe for chiffon cakes produces more loft than conventional procedures. I also wish the author would use the classic European names for the recipe titles; it would make looking up certain patissiere classics easier. The last section tells you how to match frostings and fillings to the cake, some valuable and hard to find recipes for glazes, and a definitive recipe for creme anglaise. There is also information on substituting different baking pans, and a sufficient amount of information about cake decorating for the home baker.
The most vexing feature of this book is the format of the first part, which has critical information on tools, pantry, and techniques. This is a most important collection of information that is essential for baking, but is usually left out of most baking books. The bad part is that these three chapters do not have a listing of the subjects; if you need to find something, say how to fold an egg foam batter, you will have to leaf through the entire chapter to find it. All other chapters have a complete listing of recipes in the Table of Contents.
One can disagree with the author on a few points: unbleached flour does not have a higher protein content than all-purpose (this is brand dependent), the silly notion of melting chocolate in a 225 degree oven, and not supplying the flour measurements in weight as well as volume (she describes sift, spoon, and sweep, which is about 3 1/2 oz when I tried it). I also dislike her idea to dump out excess flour when flouring a cake into the sink; since flour tends to clog drains, I do it over a garbage can. The section on suggested equipment is comprehensive: 30 different cake pans are listed, about a dozen categorized as essential, and 50 different tools, about half categorized as essential. The pantry chapter has a good dissertation on the important ingredients and what to do with them. The chapter on techniques gives complete instructions for all of the important baking tasks, such as how to handle butter and fats, beating eggs, folding batters, lining baking pans, bain-marie, telling when cakes are done baking (it differs greatly depending on cake type), de-panning cakes, storage, and a fascinating section on freezing. The metric conversion table for liquids in the Appendix is wrong.
An Outstanding Book.......2004-08-05
If you only buy one book on cakes, make it this one. Read the author's invaluable instructions on technique, ingredients, equipment etc. before you begin baking. No matter what level of baker you are you will learn something new. One caveat: while this is not a "fussy" book, it certainly is not for "cake doctors"--be methodical and follow the recipes to a "T"--you will be thrilled with the results!

This is a great cookbook for anyone who likes to make cakes from scratch. The coconut cake recipe is absolutely delicious! This is the only cookbook I use when I want to make a cake. Her directions are easy to follow and even a novice like me gets great results!

Good cake book for a low price.......2007-01-11
Although this cake book does not have photographs of all the cakes and usually I abstain from cookbooks that do not have photographs of all of their recipes, I was surprised to find that this is a very good book despite that. I even made a cake the banana nut cake but instead of banana I used pineapple. It was very nice but as the other reviewer said it needed some more sugar.
Tons of great recipes.......2006-09-08
My favorite recipe in this book is the Carrot Pineapple Cake. What I also like is that the recipes respond well to tweeking, therefore you can make a recipe your own. The cakes have that homemade taste to them. There is also some useful info in the front about the different ingredients, which is a must for any serious baker. There are directions for decorating cakes and recipes for sauces, frosting and glazes in the back. Every recipe end with instructions on how to store the finished cake, and contains variations of the original recipe. I am a recent graduate of a professional baking and pastry program, and I can tell you that I use this book for cakes more so than my textbook. I took away one star for the lack of photos. There are some in the middle of the book as well as some illustrations in the decorating section, but I usually like more photos in my books. But don't let that stop you from buying this book. This is my bible for cakes.
NOTE: Taste the batter before you bake, I find that I have to add a little sugar to the recipes.

The Recipies are Failures.......2007-05-12
I moved from sea level to over 7000 ft. I was a very talented baker. But none of my sea level recipes work at the new altitude. I was hoping this book would help me find a way to adjust my recipes. It does not . The 4 recipes I did try from this book tasted like dirt. I did follow the recipe fully and had high hopes. I moved from the USA to the mountains of Mexico. Not only does it take longer to cook any thing at a higher altitude, flavor is lost at a higher altitude and needs adjustment. This book does not explain that.
I can not tell anyone to purchase this cook book and expect to be able to bake successfully at high altitudes.
Don't bother........2007-04-08
Me and my wife moved to Colorado from sea level, and were big bakers using Betty Crocker baking books. We have tried many of the recipes in this book and have yet to come across one that tastes even halfway decent. We live at 9100 feet, and there are many recipes in the book that don't require any further adjustments for higher altitudes (so they say), and we've tried a few of the cake and cookie recipes, but none of them worked, the cakes flopped,and the cookies always flattened out completely. It was hit or miss with this book, and that's aside from the awful taste of the recipes. They claim that all the recipes will work to 6500 ft elevation, and higher altitudes require further changes, but even making the changes they have in the book under the recipe's, a lot of the recipes failed.
Save your money and get any baking book and make adjustments for high altitude, using any of the adjustments you can readily find on-line for your altitude.
We were very disappointed in this cookbook.

Some recipes are just awful tasting and some recipes are just amazing. All the recipes by Melissa Craven are so good. There is a recipe of Chococlate Chocolate Chip Cookies that is always a hit at the parties and people beg me to make them all the time.
Finally a normal looking cookie!.......2006-01-15
I live in the S.CA mountains at 6000 ft, and since moving here I have been at a loss in terms of turning out a decent oatmeal cookie. I have made several attempts, with different recipes, but to no avail. The end result was, sadly, always the same: a flat disc.
I had almost given up on my cookie baking when I found this book. I just finished baking up the oatmeal cookie recipe, and they turned out perfectly...just like what I remember from my old days in Orange County. There didn't seem to be enough of the ingredients including sugar and flour when I was making the recipe, but what do I know, the recipe turned out a beautifully plump batch of cookies. I am going to try a cake next and report back. What a thrill to successfully bake again...

I did find this book helpful for bread baking tips, but as far as teaching a thing or two about how to adjust recipes for high altitude, I haven't really found what I need. It talks about some differences in baking at high altitude and sea level, but doesn't show you how to adjust other recipes to make up for the differences. Maybe I just can't find it? I also made cupcakes from this book and cupcakes from a non-high-altitude cookbook and the ones from this book were dense, hard and icky. I live at over 5,000 feet and thought these recipes would work better here than average recipes.

Miniature houses have an undeniable appeal, especially when they're made out of food. But the architectural achievements in this guide are so charming and sometimes so elaborate that it's hard to imagine actually eating them; they're meant to be admired, not devoured. From rustic to royal, humble to ornate, this eclectic assortment ranges from cooking-school complex to child-simple. Some were even designed by kids and could certainly be constructed by them. (Just be sure to buy extra trimmings, since the budding architects are bound to do some nibbling!)
The authors lay solid groundwork in the introductory section, explaining the key points of gingerbread building, pattern making, and utilizing various types of trimmings, and offer basic recipes for gingerbread dough, royal icing, marzipan, pastillage, and fondant. Then it's on to the structures themselves, contributed by more than four dozen designers. Houses, cabins, inns, chapels, castles, lighthouses, even whole little villages drip with snowy icing, as candies, cookies, and other goodies mimic stone, brick, shingle, stucco, logs, and landscaping. This is not a step-by-step guide but rather a gallery of wonderful ideas, with photos of each creation and some very general suggestions about making them. The photography is not high quality but is adequate enough to show detail, and templates are included for many of the structures. One designer even found an ingenious solution to the edibility dilemma, turning the flat roof of her elaborate Victorian concoction into a serving surface for Christmas cookies. --Amy Handy

This book has pictures of some really cool ideas, and pictures of some less-cool ideas. It also has several basic recipes and some general building information, but it isn't very detailed. Most frustrating are the pictures of houses that have only one or two pictures and little or no information about some of the most interesting design details!
If I hadn't purchased this book from an independent bookseller, I'd probably return it. It is useful to a beginner like me, but only marginally.

If you are seeking the inside secrets to gingerbread artistry, don't expect much from this book. This book doesn't even begin to cover the many gingerbread/food techniques currently available -- and that home builders can use -- which mimic real-life or fantasy -- building structures and contents. I thought that many of the instructions shown were too simple and general -- the reader deserved to read more details, more inside information on how to work with food items to create effects -- especially since the author is a pastry chef! The book's description also promises photos of the Grove Park Inn's gingerbread competition entries. But if you expect to see the competition's top of the line entries featuring incredible details, don't. I looked forward to receiving this book. I'm sorry I bought it.

I always loved making gingerbread houses, but I wasn't all that good at it, and someone else always assembled the house. This book inspired me to try building my first house on my own. I can't wait to try out all the decorating ideas. I think this book is really good for beginners, like myself. I love how it gives you instructions, tips, and pictures to help you make your own. If you have any interest in gigerbread houses whatsoever, I strongly advise you to read it. The pictures are beautiful, the instructions are clear, and it will have you hooked on gingerbread houses.

The dark blue one with a red feather was perched on her head when, as a young woman, she watched a parade welcoming home black veterans of World War I. These reminiscences paint an interesting portrait of regional African-American history, but the highlight of the book is the girls' favorite story, which features themselves and the day the wind blew Aunt Flossie's best Sunday hat into the river. Based on Howard's memories of her own feisty, 98-year-old aunt, this is a lyrical, entertaining story that rings with authenticity. warm and endearing.......2001-05-27
I am a mother of an 2yr old boy and a 4yr old girl. They both love this story. The audio tape is done very well and it really captures the sounds and emotions of each event Aunt Flossie's recalls. My children have there own tapeplayer and they play it over and over. My husband and I like the music in the story so we don't mind the children's constant replay.
I highly recommend this book to any one who enjoys an great story from a special aunt. I strongly recommend the book and tape for littles ones who love repettion and parents who don't.
First Rate Illustrations But Tedious Story.......2000-09-18
Probably appropriate for 5-8 yrs. This story is very slow going for 4 year olds, and younger. They'll grow quickly bored, even though the illustrations are very good.
The story centers around two young girls, Sarah and Susan who go to visit their Great-great-aunt Flossie. Aunt Flossie has a large collection of hats and has a mildly amusing, but forgetable story that goes with each hat. She retells a couple of stories to the girls, and they all go out for crab cakes.
There are so many other childrens books that your children will enjoy more, that make this one worth skipping.
Developing a hatbox project.......1999-12-10
I first bought this book as a requirement for an elementary education course. When it was time for me to develop a back pack project (take home activity projects) for my students...this one was soooo easy to use. I made mine a "hatbox project." Since the girls in the story, Sarah and Susan, visit Aunt Flossie and listen to her tell the history of her hats, I had my students take home a hatbox full of art supplies and a hat. Each student had to decorate a hat that represented themselves. Then, they had to write the history of their hats and share it with their classmates. It was a great success!

My daughter, Ashleigh had Mrs. Howards daughter, Laura for first grade. I really liked her and so did Ashleigh. They read this book in school and its all Ashleigh would talk about.

I liked this book because it was a real life story. When we go to my grandmother's house she always cooks a special macaroni for us just like the grandmother in this book cooks crabcakes. My grandmother lives in Butterfield, North Carolina. I love my grandmother a lot. I believe people who love their families will like this book alot.

One of the best cake cookbooks ever!.......2007-09-10
I just started making cakes about a year ago, and as a newbie, I was searching for a recipe for strawberry cake from scratch. This was the only book I found that had one. The cake came out looking and tasting great--it looked just like the picture, and I am looking forward to making more cakes from this book for the holidays. The pictures are beautiful (a picture of each cake is shown), and the recipes are easy to follow.
