Book Description

Restaurants are one of the most frequently started small businesses, yet have one of the highest failure rates. Survivors need a powerful strategic advantage: a sound business plan and feasibility study prior to opening. A new study from The Ohio State University has found the restaurant industry failure rate between 1996 and 1999 to be between 57-61 percent over three years. Don't be a statistic on the wrong side, plan now for success with this new book & CDRom package.

A business plan precisely defines your business, identifies your goals, and serves as your firm's resume. The basic components include a current and pro forma balance sheet, an income statement, and a cash flow analysis. It helps you allocate resources properly, handle unforeseen complications, and make good business decisions. Because it provides specific and organized information about your company and how you will repay borrowed money, a good business plan is a crucial part of any loan application. Additionally, it informs personnel, suppliers, and others about your operations and goals. Despite the critical importance of a business plan, many entrepreneurs drag their feet when it comes to preparing a written document. They argue that their marketplace changes too fast for a business plan to be useful or that they just don't have enough time. But just as a builder won't begin construction without a blueprint, eager business owners shouldn't rush into new ventures without a business plan.

The Cd Rom will cover the following subjects: Elements of a Business Plan, Cover sheet ,Statement of purpose, The Business, Description of The Restaurant, Marketing, Competition, Operating procedures, Personnel, Business insurance, Financial Data, Loan applications, Capital equipment and supply list, Balance sheet, Breakeven analysis, Pro-forma income projections (profit & loss statements), Three-year summary, Detail by month, first year, Detail by quarters, second and third years, Assumptions upon which projections were based, Pro-forma cash flow, Supporting Documents, For franchised businesses, a copy of franchise contract and all, supporting documents provided by the franchisor, Copy of proposed lease or purchase agreement for building space, Copy of licenses and other legal documents, Copy of resumes of all principals, Copies of letters of intent from suppliers, etc.

A new study from The Ohio State University has found the restaurant industry failure rate between 1996 and 1999 to be between 57-61 percent over three years. Don't be a statistic on the wrong side, plan now for success with this new book and CD-Rom package.

5 out of 5 stars Opening a Restaurant or Other Food Business Starter Kit: How to Prepare a Restaurant Business Plan & Feasibility Study by Sharon.......2006-12-29

Sharon Fullen provides thought-provoking as well as practical steps to prepare for entrepreneurship by making the Readers aware that opening a restaurant is more than an idea but requires planning.

Not only are you moved to do more than come up with a wish list but one must take the time to write their vision, study the market, and come to terms if their business idea will be a profit maker or a profit shaker.

Such helpful information can propel the business in positive directions and bring about a boost in the economy by following the guidelines and suggestions within this book.

The added benefit of having a CD to provide hands-on experience of completing a business plan is another way the author shows her expertise in bringing the tools in the book to actual life for the Readers. The old saying that " experience is the best teacher" or "practice makes perfect" seems to have been a consideration of the author. This in my opinion sets this author apart from others.

5 out of 5 stars Great book for starting restaurant business.......2006-12-23

Before reading this book I have never thought that opening a small restaurant might be so involved process. But I guess it is better to learn it before you invest your money. I am glad I read this book it opened my eyes and allowed to look behind my dream of being a restaurant owner. I would not say this book discouraged me - not at all. I will be able to make more educated decisions instead of emotional ones.

Recommend it to everyone who thinks of opening a restaurant business.

5 out of 5 stars Holding Success in Your Hand!.......2006-05-24

While this resource guide by Sharon Fullen may not deal with the most glamorous aspect of opening a new restaurant or other food business, it certainly discusses the most import: the business plan. The entire book and accompanying CD-ROM handles basic business preparation with aplomb. Starting with What is a Business Plan? and ending with an entire chapter devoted to an example of a sample business plan, Fullen leaves no stone unturned. She highlights business plan writing strategies, pinpoints problem areas that are often stumbling blocks to success, intersperses invaluable information on writing a feasibility analysis and deftly assists the reader with ideas on how to implement and understand successful marketing strategies. One section that should not be skipped discusses Getting Your Plan Published, offering tips on standing above the competition when presenting your business plan. The CD-ROM is an extra bonus that affords you the luxury of having printable examples and a portable way to use and share your new-found information. Customer Reviews:

4 out of 5 stars Very useful material.......2007-09-15

Extremely useful set of forms and ideas for use in the restaurant industry. It is skewed towards full service restaurants; but still has lots of useful stuff to apply to QSR. Do not expect to find a treatise on training, though. The CD ROM helps to take advantage of the material because it has the full text on pdf format and several of the sections in MS-Word format.

5 out of 5 stars Easily tailored forms and a must for any food service operation.......2007-03-16

Douglas Robert Brown's excellent reference tool is worth every penny and should be in every food service operator's reference library. I have recommended his book for my tea students for the last five years and am pleased to endorse the revised media. From the small tearoom owner to the chain restaurant, Mr. Brown's resource is a valuable tool. Carnelian Rose Tea - Tea Business School - Jennifer Petersen

1 out of 5 stars Better books Available.......2007-10-10

I was disappointed in this book. It uses very few ingredients, and just offers a number of variations on those ingredients. Also there is no explanation of why each ingredient has been chosen, which makes it difficult to substitute when necessary. I have a number of other pet-food books, and most of them are more useful.

5 out of 5 stars Pet's health already improved!.......2007-09-10

After following the easy recipes in Dr. Strombeck's book for a month our 4 year old Cocker Spaniel's health has improved significantly! She has the energy of a puppy, her eyes are bright, she sleeps less, and she has fewer bathroom needs. Dr. Strombeck has written an easy to read book and includes his research and rationale for the ideas he proposes. He also includes recipes for pet health problems. The recipes take only a few minutes to prepare and the ingredients are easy to find. NOW Foods, Bone Meal Powder - 16 oz. Using beef or chicken broth to cook the rice or carbs in adds a lot of flavor. Our dog loves the food (even the tofu!) and cleans her bowl every meal. And I feel confident that she's getting all of the nutrition she needs. I highly recommend this book.

4 out of 5 stars A HUGE difference within 1 week!.......2007-08-14

I was preparing a stew for my dogs in lieu of wet food, but still serving them commercial, organic kibble, which they would barely eat. I asked my vet about feeding them 100% home cooked meals and he recommended this book. It is an expensive book and I sort of felt like I need a refresher course in biology, chemistry and math, BUT after reading it a couple times in a quiet, distraction free room, and making notes as I read, I got it. The only complaint I had is the dog weights go in 10lb. increments and a 20lb dog does not get twice what a 10lb dog does, so figuring out a portion for my 12lb dog was kind of an educated guess, BUT I am amazed to report an HUGE difference in their coats in just one week. My 12lb. Boston Terrier has soft hair like when she was a puppy again and our 60lb. lab mix has shown a great improvement with her allergies. It is a little bit of work, but it is easy to cook for a week at a time and just add the oils & supplements daily. If you love your pet, can afford a slight increase in your weekly trip to the market and have the time to prepare the food, DON'T HESITATE.

4 out of 5 stars Healthy Dose of Preventative Care.......2007-07-30

Lots of great recipes for cats and dogs, including special recipes for disease or allergies. Some ingredients are difficult to find, so search around. The book is written for a vet or someone in the industry, so it's not a simple petfood cookbook for your everyday animal lover. But it is pretty simple, really, just a collection of recipes.

If I were to remake this book, I'd:
- Organize the pages so there is only one recipe per page and no recipes were cut in half by a page change.
- Suggest where to find certain ingredients
- Give storage and serving information in the recipe, not the front of the book.

5 out of 5 stars Probably the best guide available.......2007-05-31

Probably the best guide available for those who prefer to avoid commercial processed pet foods. Extremely detailed.

"HOW TO OPEN A FINANCIALLY SUCCESSFUL RETAIL & GOURMET FOODS SHOP" by Sharon L. Fullen and Douglas R. Brown.

Starting your own business can be extremely scary, it doesn't matter what type of business it is. If you are interested in starting a specialty foods shop it can be even scarier because of the lack of competent information available. "How to Open a Financially Successful Specialty retail & gourmet foods shop" is one of the most comprehensive books of its kind in the market place.

The authors are great at introducing the reader to all aspects of starting their own shop. The book is written in an easy to understand conversational tone. With sections specifically on goal setting this book is geared toward the new entrepreneur that does not have past business start up experience.

Read this book before going even considering opening a specialty retail or gourmet foods shop. Many aspects of operating a specialty business can be overlooking in the heat of your ambitions. This book will guide you in identifying all the major areas of concern before you put up all your money and invest months of your time.

The book also comes with a CD that contains pre-written documents that will be very useful in starting and operating your business. This book is highly recommended to anyone who wants to know more about the gourmet foods industry and of course to people interested in starting their own specialty foods shop.

5 out of 5 stars Great Book!.......2006-04-19

The book begins with an overview of what a gourmet shop consists of and how much energy is needed in order to successfully run one. This book gives a complete picture of everything that is needed to run a successful gourmet store. It is comprehensive enough for someone who has never opened a business before to easily start a shop.

It goes into great details of the initial costs and strategies that will be needed at start up. There is even a special section on franchising and writing a business plan. Other areas include taxes, laws, licenses, and insurances that will be needed. There are also skillfully crafted chapters which focus two main areas employee relations and customers including marketing and public relations.

There are chapters that center on the equipment that may be needed and the types of product that can be used in the store. A CD-ROM completes the book, with many forms that can help anyone who goes into business. There are even sections that deal with cash flow and financial management as well as purchasing.

This book offers a comprehensive overview on many of how to start a Specialty Retail business and with the step by step process, anyone can be successful.

5 out of 5 stars Good Read.......2006-04-13

"How to Open a Financially Successful Specialty Retail and Gourmet Foods Shop" is a great read for anyone looking to own their own specialty or niche store. From selling only jam to selling complex kitchen gadgets, this book is great for anyone looking to delve into any niche market.

The authors take readers through a number of get ready steps. They include, among other things, picking location, deciding what merchandise to carry, identifying the target audience, writing a business plan, filing the loan application, and getting the necessities (such as company name, licenses, insurance, etc.).

I love that the book details every thing I would need to know about opening a specialty business. It even discusses decorating tips, hiring a staff, marketing the business, and creating a press kit. Because the book covers so much, it tends to cover only the basics of all the topics. It does not go really in-depth on most items, so if you are looking for some exact how-to guide, this book probably is not for you.

The book also comes with a handy cd-rom that provides sample business plans and other worksheets that I found very helpful. You can easily take the business plan and modify it to suit your start-up business. In addition, there are a number of great resources listed within the pages of the book that any new business owner would find beneficial.

5 out of 5 stars User-Friendly, Quality Advice.......2006-04-11

Perhaps the best piece of information in this handy guide by Sharon Fullen and Douglas Brown is
found on the first couple of pages: make sure your heart is in before you take the leap. They offer nuggets of advice to test your mettle; such as coming up with a short "elevator pitch" to capture the essence of your dream and how valuable careful research becomes if you want to discover your true "niche" market. Information on buying a franchise or starting from scratch, financial avenues to consider and a good outline for a business plan quickly follows. Other chapters present the importance of customer service, successful marketing tips and how to deliver a top-notch public relation campaign that attracts repeat business. You will also discover that the basic mechanics of running a business are not ignored; with sections devoted to purchasing, buying appropriate equipment, staffing, finding user-friendly software, monitoring inventory, managing cash flow and creating ambience in the public areas of the shop. The CD-ROM contains much of the same information found in the book, but does included printable business forms for home and office use, a supply list, as well as a more detailed business plan to use as your own template. Overall this book is very user-friendly, offers quality advice and presents up-to-date information. An important resource you will be able to refer to for many years

There is some useful information here, but it is mostly a collection of magazine articles written by various authors. This is not worth the $80 listed retail or even the $50 at amazon. The book not being written by a single author lacks a flow between sections. The sections dealing with financing and startup are nice, but I would like some more in depth information on various types of equipment available. If you can find this book for 20-25 that might be a more worthwhile price.

And as a side note, I think Ray Daniels' books that he authored are great.

3 out of 5 stars The Guide to THINKING About It.......2007-06-21

What worse way to describe a book than, 'It was OK', it's like someone telling you your best atribute is that your 'nice'. But that's just it, for what it was supposed to be 'The Brewers Association's Guide to Starting Your Own Brewery' (think about it, that's a lot of weight in that title) it was only OK. There was some nice insight from brewing professionals whose opinions I already respect, there was some rough ideas of what to expect, and some sections with great detail about things I couldn't care less about at this point - the point of 'I'm still reading books to plan a brewery'.

I would have really have liked to have seen more real money and real equipment talked about. Basically they broke it down like this: it is hard and expensive, but if you can pull it off it is sooo worth it. That's not enough for me. Oh, I will mention there was a very detailed business plan which could be a great reference to the right person, but it reads like a business plan, go figure. Real snoozer of a way to end the book.

One last thing, this is an $80 book that as an AHA member I was able to buy for $50 from the Brewers Association so I at least felt like I got a deal, but to now see Amazon with it for sale for $50 kind of burns me up. This isn't an $80 book (think college text book) nor really a $50 book (think high school text book or instruction manual), it's more of a decent $25 book (think normal informative/opinionated book). So, all in all I am not saying don't get this book, but I would only get this book if you are seriously contemplating opening your own brewery and only as one more reference, not the be-all-to-end-all.

1 out of 5 stars Not Recommended.......2007-03-31

I had high hopes for this book, but ultimately am left greatly disappointed.

First, I agree with the previous reviewer - this book has more typos and grammatical errors than any book I've ever read! It's really unacceptable in any book, but certainly when the book retails for $80.

Second, this isn't a step-by-step guide to starting a brewing business. It's a hodgepodge of articles from old issues of The New Brewer magazine combined with random interviews and new writings from various "brewing professionals". Their seems to be no real "road map" or grand plan to the way the info is presented. I was extremely disappointed in the amount of information provided on professional brewing equipment. In contrast, an entire chapter was devoted to the selection of flooring material for the brewhouse floor. Admittedly this is an important decision, but the ratio to other information is odd at best.

I've met Ray Daniels at an AHA rally and he seems like a great guy who is passionate about beer and brewing. Unfortunately, this is a poor effort by Ray and I am guessing he's quite embarrassed whenever anyone mentions it.

5 out of 5 stars Worth the Money.......2007-03-24

One of the more expensive books I've bought recently...but an enjoyable, inspiring, and informative read. Obviously doesn't contain all the details (cost of individual brewhouse components for example) but does a great job identifying and describing the business on the system level. Also introduced me to some required areas of expertise I had not previously considered (e.g. wastewater treatment).

3 out of 5 stars Poorly Edited, OK Content.......2007-03-23

Ok, so for someone who went to school for art, hasn't taken an English class in 7 years, this book has more grammatical and editing errors than I have EVER seen in a published book.

The transcribed interviews are missing punctuation needed to make it read properly. In-text notes to the designers are still present. There are typos and misspellings, as though the chapters from various brewery owners were simply copy/pasted from their e-mails to the final publication.

And I've hardly started the book! I'm on page 23....

What gets me most is that this is the second/revised version of this book. Seriously people. Next time ABA, let me copy-edit it in exchange for beer. You know I'll do it.

If the book improves dramatically by the end, I'll revise my review.

4 out of 5 stars Raw Food Diet.......2007-09-19

This book is designed for folks who are interested in feeding their dogs a natural diet. It seems to be a precusor to the Barf Diet Books. It is technical in it's approach but describes a recommended diet which takes about two sentences. For anyone who feeds this type of diet to their dogs this book gives an excellent rationale for doing so. Although currently there is a "feud" going on between the author and those involved in BARF diets. In my opinion they are basically the same and only differ at the fringes.

4 out of 5 stars Very interesting.......2007-08-29

Very interesting, however I do feed raw but I don't agree with feeding grains as Lonsdale does. But between him and Billinghurst if everyone would read their books they would never feed kibble again..

3 out of 5 stars Too much about Tom Lonsdale.......2007-02-12

This book is really a lot more about the author than about raw feeding. It seems to centralize on the problems he faced getting his views accepted (raw feeding dogs) If you really want a basic book that is easier to understand and gets right to the point, then purchase his other book - Work Wonders. Has basically the same info, but without all the personal details.

1 out of 5 stars The matyrdom of Tom Londsdale.......2006-08-29

I bought a few books on raw feeding and holistic diets and I have to say this is the worst. It's not even about raw meaty bones. This book is more about how the author feels martyred by both the Australian Vet Association and the pet food industry. I guess this might make an interesting story if thats the kind of thing you want to read about. I just found it a tiresome tirade.

Work Wonders, by the same author, is much more informative about raw feeding and can be downloaded for free at [...].

3 out of 5 stars Good ideas, but boring........2005-12-26

I love the idea of a raw diet for dogs and I agree with his views on commercial petfood.
I just got really sick of reading about dental issues. It seems like 80% of this book is about dental hygeine.
The book should be named "Raw Meaty Bones promote Dental Hygeine", not "Health".

I also feel he should've given more in-depth information on what to feed/ how to feed.
He is also a proponent of feeding wings and backs alone- that is just TOO MUCH BONE.

If you look at a whole prey animal, the percentage of bone in it will be 8%-12%. Chicken wings/ backs alone are 50% bone. They are not a biologically appropriate way of feeding!
He does deserve credit for stating that whole prey is best, though.

Lonsdale has great ideas, but he should've published a separate book about canine dental health, or not gone off about it so much, and his specific diet recommendations are lacking/ somewhat misleading.

Thirty years after Frances Lappe's Diet for a Small Planet changed eating habits around the world, she and her daughter Anna bring us a new round of iconoclastic recommendations that break overwhelming issues down to a simple matter of personal choice. Hope's Edge presents many of the same issues of the original title, but it also provides a wealth of new discoveries and possibilities in this era of genetically engineered foods, worldwide famine, and growing rates of obesity-related health issues.

Beyond discussing a wide range of reasons to become a vegetarian (and that means no fish or chicken either, folks), the authors introduce you to a number of individual reasons for hope--Bob, the Wisconsin cheese maker; Jean-Yves, the farmer from Brittany who created the Sustainable Agriculture Network; and Muhammad Yunas, who has changed the lives of countless living in poverty with his remarkable microcredit programs. Along with these stories and the theories they're based on, you'll also find luscious recipes calling for grains, fruits, vegetables, and a handful of dairy products that will delight your taste buds and your conscience.

The Lappes firmly believe that the choices of low-level consumers have the potential to make positive changes, both in the world economy and in our physical health. By eating a vegetarian diet, shopping with care, and cooking with love, we might all brighten our future tremendously. --Jill Lightner

Book Description

Hope's Edge follows the author of the classic Diet for a Small Planet and her daughter as they travel the world, discovering practical visionaries who are making a difference in world hunger, sometimes one village at a time.

Thirty years ago, Frances Moore Lappé started a revolution in the way Americans think about food and hunger. Now Frances and her daughter, Anna, pick up where Diet for a Small Planet left off. Together they set out on an around-the-world journey to explore the greatest challenges we face in the new millennium. Traveling to Asia, Africa, Latin America, and Europe, they discovered answers to one of the most urgent issues of our time: whether we can transcend the rampant consumerism and capitalism to find the paths that each of us can follow to heal our lives as well as the planet.

Featuring nearly seventy recipes from celebrated vegetarian culinary pioneers-including Alice Waters, Mollie Katzen, Laurel Robertson, Nora Pouillon, and Anna Thomas-Hope's Edge highlights true trailblazers engaged in social, environmental, and economic transformations.

5 out of 5 stars 2006 Nobel Peace Prize winner featured in the book.......2006-10-13

This is a very interesting book. It features in one part a detailed description of 2006 Nobel Peace Prize winner Muhammad Yunus and his Grameen Bank, who used microloans to help Bangladeshis, especially women, get out of poverty and earn for themselves. By issuing very small loans, the people of Bangladesh are able to build their businesses or working conditions and change their lives. I recommend this book.

5 out of 5 stars Hope Gained From Insight and Diligence.......2006-08-16

Thirty years after the publication of the highly acclaimed "Diet For A Small Planet", Frances and her daughter Anna Lappe have come out with a potent sequel and a beautiful statement of hope for a more equitable world through the world-wide spread of organic and sustainable agriculture techniques and locally controlled "fair" market modalities now challenging the status quo of chemical fed, toxic pesticide/GMO laden crops, and the lopsided "free" market capitalist WTO agenda that has been reaping havoc on the environment and small farmers everywhere.

The Lappes traveled to 5 continents while researching this book and their travels are both fascinating and uplifting as they report on people all over the world demonstrating that going organic and controlling their own markets are reaping major benefits in healthy, abundant food production while cleaning up the environment.

The Lappes do not reject world trade or capitalism, rather, they demonstrate how unregulated "free" markets monopolized by huge international corporations have been inadvertently causing food scarcity, bankrupting and polluting people all over the world, yet with an injection of regulation in the form ethics, strict fair trade measures, etc., they believe capitalism can "evolve" to a more sustainable, equitable, and healthy method of food distribution- a similar optimistic view shared by Lovins and Hawken in their book, "Natural Capitalism".

The inefficiencies of nutrient and food distribution is brought home in quantifying the huge amount of crops, water, and land required to feed cattle. The amount of energy necessary to produce an ounce of meat could feed hundreds of people on a much healthier vegetarian diet, hence, the myth of food scarcity and the need to grow more food to feed the world.

Every chapter finishes with a recipe and there are many more at the end of the book along with several pages of resources and contact information on a host of organizations advocating social responsibility.

5 out of 5 stars Be gentle on the earth.......2006-02-22

Good copy. Excellent vegetarian recipes. Explains why we need to eat lower on the food chain. If we do, we can feed the world's hungry people.

5 out of 5 stars Goes into my life's top 5.......2004-11-21

I won't say much here, because the other reviewers have described the book well. All I will say is that this is one of the very best books I have ever read. Not only does Lappe have an incredible way with words, but she summarizes her profound insights in such a way that really organizes one's thoughts for genuine reflection. Add to that a well-documented and researched approach, as well as fascinating stories of different communities around the world which they themselves visited.

5 out of 5 stars Honest Hope.......2004-05-25

Hope's Edge is a Must Read for Everyone! The book puts it all together in an easy-to-understand, personal and honest fashion: the connection between consumerism, 'brainwashing', oppression, global economy, poverty, exploitation etc. etc. The concepts presented in this book are sophisticated and have depth. I liked the personal tone of the book, the story telling. The book is very honest, the stories told utterly inspiring. Frances and Anna never 'whitewash' the porlbmes the projects they are describing are facing. This truth-telling makes the stories even more impressive, more credible. The very existence of these projects defy the global systems as we know them. The way they do 'business' defies the global system of exploitation and competition. This book makes us take an honest look at ourselves, our values, the daily choices we make, what we consume, how we live. This is not just 'about food' or poverty or world hunger, this is truly food for thought and inspiration of how to create a better world."

3 out of 5 stars Good over all.......2003-03-08

The frist chapters are good backround infromation. The recipes are done in metric, and are well written as to the steps to make the products. With some knowlage of baking you can do these here in America. Some of the recipes are for very ruial areas of the world, ie: use cow-dung for the fire to bake one of the breads. Over all good info for setting up a bakery.

    4 out of 5 stars A recommended reference........2001-06-24

I was looking for references to start my own bakery and this was one of the books that came up in my search. For someone like me who never went to a culinary school where food management is taught extensively, I thought that Mr Bathie answered some of my very basic questions of lay out and process management. It's a highly instructive book for someone, like me, who has no professional background in baking. The writing is clear and concise and layman languange is used extensively through out the book. As Mr Bathie was a consultant for most of Asia and African countries, he laid to rest some of my uncertainty of the operations of a bakery. The book includes some basic layout configurations of certain types of bakery and also explains briefly uses of machineries for semi or fully automated bakeries. I find the book very enlightening and I recommend it for those who has no background in baking for profit as a point of reference.

When I first started out, I did not know how much to serve and how to break down my expenses. After reading this book, that information was no longer a mystery. It is precisely what the beginner needs and what the experienced can use for reference. Not only does it contain information on what to charge and spend, it sets up scenarios that illustrate what the author is referring to. There are recipes that are fresh and practical and interesting.
