Book Description
Can you really lose twenty pounds in a month? Will you really keep it off this time? With The Rice Diet Solution, you will! The Rice Diet Program has been helping dieters successfully lose weight since 1939. Now in book form, this world-renowned weight-loss method can help you change the way you eat forever.
The Rice Diet Program in Durham, North Carolina, was one of the first medical facilities in America to use diet as the primary way to treat disease. On this high-complex-carb, low-fat, and low-sodium whole-foods diet, "Ricers" lose weight faster, more safely, and more effectively than people on any other diet. Men lose on average twenty-eight to thirty pounds and women on average nineteen to twenty pounds per month! The Rice Diet also detoxes your body, ridding it of excess water weight and toxins from processed foods and the environment. The program's results have been documented by extensive studies and confirmed by thousands of people who report amazing weight loss, as well as immediate improve-ment in such conditions as heart disease, diabetes, and hypertension. After all the other diets out there have failed them, people find that the Rice Diet is the one that finally works -- for good.
Here's how it works: The Rice Diet strictly limits salt and sodium-rich ingredients. Salt, like refined sugar, is an appetite stimulant, so when you reduce salt intake, you lose water weight and are less inclined to overeat. The Rice Diet also limits saturated fats and instead relies on carbohydrates (fruits, vegetables, grains, and beans) as the main source of nutrition. The fiber cleanses your system and satisfies you so you feel full quickly. The Rice Diet makes it easy to limit calories; when you're eating foods that truly satisfy your hunger, it's a challenge to eat 1,500 calories per day!
To make it easy to follow the program, The Rice Diet Solution includes hundreds of tasty, filling, easy-to-prepare recipes -- some from the Rice House kitchen, others inspired by major chefs and adapted to Rice Diet standards.
The Rice Diet is not just an eating plan. It's a physical, emotional, and spiritual program that will change the way you live, giving you new vitality, energy, and longevity. Ricers report that the Rice Diet not only helps them solve weight problems they've struggled with their whole lives but also teaches them a whole new way of healthier, more mindful living.
Whether you want to lose twenty pounds or two hundred, the Rice Diet can help you do it -- finally and forever.

"It's not what's in the rice, it's what's not in the rice".......2007-08-26
Maddening.
Take some great weight loss ideas, framed with good science. Add a dash of pop "detox" tripe. Go into a long lecture about gummy bears. Then toss in some intriguing but complicated recipes. You end up with The Rice Diet Solution: The World-Famous Low-Sodium, Good-Carb, Detox Diet for Quick and Lasting Weight Loss, by Kitty and Robert Rosati, a registered dietitian and a physician, respectively.
This is a low-sodium, low-fat diet plan, that includes less red meat, more fruits and vegetables, more complex carbs, exercise, maintenance follow-ups, and stress reducing exercises. The first week results in low calorie consumption, less than 1500 calories a day. Between exercise and this 1500 cal/day diet, you WILL lose weight, guaranteed.
Founder Walter Kemper found "...it was almost impossible for [his patients] not to lose weight following the diet [of rice and fruit]" (p. 9). BTW, this is the reason it is called the "Rice Diet" as opposed to the Duke Diet, the Kemper Diet, or the Rosati Diet. He also said, "It's not what's in the rice, it's what's not in the rice."
So how does the Rice Diet work? There are three steps:
1. Diet in the following manner:
a. 1 week of grains, fruits, and veggies. This is the detox period, with 1000-1200 calories/day.
b. keep the same diet, but add some non-fat dairy, and you get animal protein once a week.
c. Maintenance while you add more foods.
2. Be a mindful eater. Pay attention to what you put in your mouth, and how you cook.
3. Find supportive people or groups, and surround yourself with them.
I'm irritated by the discussion of "detoxing." They note, "The overall goal of Phase One is to cleanse and detox your body's system of excess water weight... excess sodium, [and] allergic-like symptoms from a range of potential offenders from our food supply (e.g., pesticides, fertilizers, antibiotic and growth hormone does animal products, and others" (p. 31). In addition, "How does the Rice Diet detox the body?... This is probably an impossible aspect to actually quantify or prove but many signs of detoxification occur" (p. 58). Let me repeat that, "This is probably an impossible aspect to actually quantify or prove..." Then why is this coming from a physician and a RD?
Still, except for this "pop-nutrition", everything makes sense. Eat less meat, more fruits and veggies, more whole grains, less sugar, low-fat, high fiber, and exercise.
The book has more. It includes recipes and product suggestions. Some of these product suggestions seem way too specific: Yogurt? "Stonyfield Farm is best" (p. 49). For bread, try "Galliee Splendor Bible Bread" (p. 44).
I did try a recipe last night. The Bouillabaisse recipe on page 250 caught my attention. I couldn't get my hands on any fresh fennel, and I thought 1/2 to 1 teaspoon of saffron was a bit much (have you seen the price of this spice?). I used fresh bay leaves instead of dried, I chopped the garlic cloves (the recipe didn't specify), and given that I didn't have 2 1/2 cups of "hot fish stock" on hand, I used an 8 oz bottle of clam juice and another 12 oz of water (this also dilutes the salt in the clam juice). I mixed and matched my seafood with what was available... a pound of size 31-40 shrimp, a pound of Alaska salmon, a half pound of tilapia, a can of packed crab (no salt), and 8 oz of fresh mushrooms.
It was delicious. I served it on hot rice, in honor of the Rice Diet. MIne served 6, not 10.
Most of the recipes seemed fairly complicated. They definitely are not fast food. They are also a bit pricey, not an impossible situation, but one to be aware of.
But the Bouillabaisse was so delicious!
So the Rice Diet didn't seem to have any fatal flaws. It had a few pop-nutrition issues, and I really didn't like the gummy bear story. You will lose weight if you eat 1500 calories a week. You have to find a way to maintain your healthy weight when you readjust your calories to 1800-2000 calories. You should always exercise.
Be well.
Rice Diet Solution_ The Solution.......2007-01-13
I have not finished reading the book from cover to cover, but I have been following the program and have lost about twenty pounds. The recipes are excellent. I have recommended the publication to my friends. I do believe with this book I can finally lose the weight I have been trying to lose for many years. Also it has helped me keep my blood sugars under control. The price was good too.
Losing weight is the smaller benefit.......2006-12-26
My wife and I stumbled upon this book last May and made a commitment to give it a try for one week. We were both overweight to the tune of about 40 pounds each. At first, the diet seemed a challenge because it was so different from our eating habits, but as the first few days went by we both noticed how much happier we were with everything in our life. Much to our great surprise these feelings continued AND we continued to lose weight. Having lost the weight we both marvel at how easy it seemed to be, after many attempts to lose weight via other diets and methods.
I agree with one reviewer that the book is not cross referenced very well and that it is a cumbersome read, but the benefits we got far, far outweighed such a trivial matter.
It is a lifestyle change that works very well for us, having lost most of the weight we wanted to, and are happier as an unexpected benefit. Give it a try for a week and see if you feel better. Perhaps you will experience it the way we have, and your life will be changed forever.
Spectacular Spectacular.......2006-12-23
It's the most accurate description in my vernacular. This book is an extraordinary work. Combining dual strategies of both portion control and low energy density eating, this text provides superior support for sustained weight loss as is evident by their high success rate (63 percent keep weight off for 1 year or more, 43 percent for 5 years or more). Low sodium intake is an integral part of the diet which includes fruits, vegetables, grains, legumes and low fat dairy. There are 4 parts, the diet, mindful eating, daily rest and social support. I can't speak highly enough about the Rice Diet Solution.
Wouldn't recommend it........2006-12-20
I was not impressed with this book. I guess if you get to the point where you no longer want to taste seasonings in your food, this would be great. In addition, I would be too afraid to lose weight on this diet only to go back to eating real food and gain it all back again. I've decided to just cut back and get in some exercise, and IT'S WORKING!

Best cookbook!!!.......2007-09-07
I have over 300 cookbooks! This is by far #1! Recipes are EASY and YUMMY -don't take a lot of ingredients you DON'T have - no weird stuff!!! Have given it for gifts many times. Everyone loves it!!!
Nasty.......2007-09-07
Why in the world would you cook canned vegetables for eight hours? (Why would you cook with canned vegetables at all?) Yuck!
I Love This CookBook.......2007-07-12
I am always eager to try new cookbooks, particularly ones that have simple and easy to follow recipes. This cookbook fits the bill perfectly. The recipes are collected from cooks all over and are for use with a crockpot/slow cooker. I have tried about a dozen different recipes so far and have only found one that I didn't care for.
As a rule, there are usually 2 or 3 variations for any given type of recipe, so if one doesn't have exactly the ingredients that would be hit with your palate then there are others with slight changes that may be more appealing.
The best feature for me is that each recipe has the nuitritional information, which allows for easy counting of calories, etc. when you are on a weight loss program.
I have both the "Fix It and Forget It Lightly" and the original "Fix It and Forget It" books and wouldn't give them up for anything. They are definitely worth the investment for any serious cook.
Same old recipes.......2007-05-12
I expected more original recipes. These are recipes I could have gotten from any cookbook.
Did they even test these recipes first?.......2007-04-16
I have a family of five with busy schedules of sports, scouts, church activities, etc., etc. I was excited to get this cookbook so we'd stop eating on the go so much. Sound familiar?
I started trying a new recipe week after week. Every recipe was awful! Most of the recipes were bland or mushy. Which reminds me...
Beware of any of the recipes that call for rice. It will be overcooked. I guess I should have known that, but yuck! Just in case you're like me and didn't know: Rice turns to mush in a crockpot!
I hate to bad mouth this book so bad, but I wasted money buying the book and money buying the food for the recipes that I just ended up throwing out....several times. I tried mostly shrimp or chicken recipes.
Maybe I chose the wrong recipes? But after a couple of months, you would think I'd hit a winner.

Great healthy food ideas.......2007-02-06
I have made several of the receipes from this cookbook. All came out great. Instructions are easy to follow and the ingredients are healthy. I checked it out of the library before I bought it and now feel it was well worth the investment.
One of my favorite cookbooks!.......2006-09-03
I've been a fan of Eating Well magazine for years, so it's no surprise to me that they would produce such an exciting, delicious and usable cookbook. Every recipe is based on real food, not the Frankenfoods that many dieters are used to. The recipes do take some time to prepare, but the outcome is well worth it.
The recipes are perfect for most diet plans, as well as anyone not on a diet that just wants to eat better. South Beachers can use this book, so I'm not sure why the previous reviewer gave it a poor review, especially since she hadn't even browsed the book. Some of the recipes do use white sugar, but there are plenty of recipes in this cookbook to qualify for the South Beach and Sonoma Diets. Weight Watchers are in luck because every recipe includes calories, fat, and fiber counts, so they can easily calculate the points.
This is a cookbook that I would recommend to anyone, not just dieters. Every recipe focuses on flavor and high quality ingredients, and just happen to be reduced calorie. My favorite recipe would be the Mediterranean Burgers with Olive Ketchup. Had it not been for this recipe, I would have never tried millet, a very nutritious whole grain.
I refer to Eating Well magazines and cookbooks at least once a week, usually more often. I've never been disappointed in one of their recipes. I highly recommend this cookbook :)
Great resource.......2006-04-19
If you care about the nutritional value of your meals, but don't want to sacrifice flavor this book is a gem. So far I have made several different recipes and I have been pleased with the results. I recommend adding extra herbs and spices for those of you who are "flavor-junkies" like me.
The baked goods are not super sweet, but at least they are good and you can eat them relatively guilt-free. Buy the book, experiment a little, and feel good about what you're eating!
An excellent guide for those who really want to change their eating habits!.......2006-03-09
This book is exactly what is needed for people who are committed to changing their eating habits. The contents are well organized, the logistics are clear, the recipes provide pertinent nutritional information, are easy to follow and give excellent results. As a physician that I am I will most certainly recommend it to patients and friends. Congratulations on the team work!
Great Book.......2006-02-25
Everything that I've tried so far has been very tasty. The title says it all, good fats, carbs and great flavors.
Amazon.com
One bad carbohydrate can't spoil the whole batch, but studies show that too many of the "wrong kinds" can lead to a slew of nasty health conditions, including obesity, insulin resistance, diabetes, and cardiovascular disease. Sandra Woodruff, author of several bestsellers (including Secrets of Fat-Free Cooking and Secrets of Cooking for a Long Life) goes far beyond the realm of breads and pastas to offer a comprehensive look at nutrition, followed by a trove of carbo-smart recipes. Healthy eating, Woodruff asserts, requires keen attention to the glycemic index (GI), "a ranking of foods based on their potential to raise blood sugar levels." By choosing foods that rank low on the GI, and balancing higher GI foods with protein, she says, individuals will achieve better overall health. While the first section reads a bit like a college text (heavy with charts, grams, and serving sizes, plus all the numbers associated with the glycemic index), Woodruff gracefully applies this knowledge to real-life scenarios. Her meal-planning and dining-out tips accommodate a wide variety of eating habits and cuisines, with ample hints for hearty eaters, snackers, sweet-tooth sufferers, and those who enjoy international fare. More than 200 recipes include options for vegetarians, meat-and-potato types, adventurous chefs, and keep-it-simple cooks, without calling attention to any such stereotype. Two minor beefs: teaspoon and tablespoon appear in their unabbreviated forms, potentially making for easy errors; also, a fancy typeface makes reading the ingredients somewhat tricky. --Liane Thomas
Book Description
A complete guide and cookbook to selecting and using the best carbohydrates to lose weight, maintain blood sugar levels, and improve overall health.
Not all carbs are created equal. In fact, the latest dietary research shows that different carbohydrates have varying effects on the body, depending on the rate at which they raise blood sugar levels-also known as a food's glycemic index (GI). Choosing a balance of foods that are low on the GI will speed weight loss and control diabetes, insulin resistance, and cardiovascular disease.
In The Good Carb Cookbook, Sandra Woodruff demystifies the carbohydrate confusion by explaining the real differences among carbohydrates (baked potatoes are high on the index, while sweet potatoes are low), and shares her secrets for eating low on the index. The book includes an invaluable table with hundreds of common foods and their glycemic index rating; more than two hundred recipes to get people cooking and eating low on the index; and tips to modify high-glycemic family favorites with low-glycemic ingredients, lose weight, maintain blood sugar, and achieve optimal health.
Customer Reviews:
Ummmm no.......2007-10-09
Carbs are carbs. If you want to live your life eating like this, great for you. I'd rather die a few days earlier and enjoy myself.
Best book on the Glycemic Index I've read!!.......2007-09-12
My husband has a bad back and can't exercise, so the only way to control his weight gain over the years has to be through his diet. This poses problems with him being a meat and potato man who doesn't like fish, rice, or several vegetables. Several of the other books I've read or purchased seem to be full of fish and chicken recipes (anyone can lose weight if that's all they eat). I needed a way of changing the way we think about food and the way we eat, a lifestyle change that is manageable. The radical diets are limiting and most people gain the weight back once you stop because you can't follow them forever. The glycemic index is a lifestyle change that anyone can stick with. The other books also use alot of items you have to get from a gourmet shop, health food stores, or contain exotic items that are rather pricey and most of us would not eat. The Good Carb Cookbook contains recipes that most of us would eat on a daily basis anyway (who needs to purchase expensive meals through one of those dieting companies when you can make them yourself). 2/3 of her book explains what the glycemic index is, how it works, and what things effect the glycemic index of an item/meal. She talks about different kinds of oils, flours, grains, and explains alot of dietary information in terms that anyone can understand. She also explains better choices to lower the GI of a meal and things to add to lower the GI of a meal (such as addition of acid like lemon juice or vinegar) or items that have a fermenting process such as sour dough or yogurt or buttermilk. How about using thick rolled oats in a meatloaf instead of corn flakes or crackers?
I can't sing more praises or state more facts than anyone else who has read this book and took the time to comment on it. This is a must read item for anyone who is serious about improving their health through proper diet
Worth having; but poor quality production.......2007-04-19
I have to agree with the other reviewers - the information in this book is good and the recipes excellent; but it is printed on extremely poor quality paper. I purchased my book new and it had torn pages already before I touched it. I can tape it; but I'd rather pay a little more for a book and get one that will hold up.
The Good Carb Cookbook.......2007-01-13
The best cookbook I have ever owned. The receipts are easy and simple to follow with everyday items.
Awesome Book.......2007-01-06
This book was the most informative book I have ever read about eating right and staying healthy. It gives great cooking ideas and you can really incorporate this diet into you normal daily routine. Awesome book!!! I highly recommend it.

LOW-FAT GOOD FOOD.......2007-02-08
Love the book- bought 8 more similar titles. Replaced all the cholesterol-laden, fat-dripping, high calorie cookbooks I used for years. Great CookBook. Easy - Tasty - Healthy, oh my! GOOD RECIPES.
Pleased.......2006-08-08
This book has such a nice variety of lowfat recipes... with soups, salads, sauces, side dishes and an emphasis on main course recipes. Good flavor and lowered calories... Worthwhile.
excellent low fat cookbook.......2003-07-15
I bought this cookbook a number of years ago, and I can honestly say that it changed the way I think about cooking. For example: before this cookbook, my primary seasonings were salt, butter, and minced onion; thanks to this cookbook, I've reduced my salt usage by at least a factor of 3, and I've learned how to get more "bang for the buck" on the salt I do use with other herbs and spices. I was greatly reassured by the writers' assurance that they understand the principle that if it doesn't taste good, you won't eat it - the recipes reflect this understanding, as the need to reduce fat is balanced with the need for appropriate taste and texture in the final product. Recipes such as Hungarian Cabbage and Royal Indian Salmon have become staples in our household. I highly recommend this book.
Great tasting, healthy recipes which are easy to prepare........1997-04-03
Cooking is my hobby and I have had this book for over a year now and have used it many times. The recipes are very tasty, I've used many of them over and over. The low fat chocolate cheesecake is wonderful, as is the potato-cheese soup. In addition, the book starts off with a chapter on nutrition and a chapter on kitchen utensils and spices - I think both chapters would be very helpful to the novice and the experienced cook (consider myself experienced). I am now ordering this book for a friend of mine, in the past have given it to my mother, brother and mother-in- law. If I could have only one low-fat cookbook, this one would be it. I strongly recommend it to anyone who is interested in really yummy low-fat cooking
Book Description
End food boredom and diet burnout with more than 400 sophisticated, low-carbohydrate dinners that are bursting with flavor--and on the table in under 30 minutes!
Hundreds of thousands have embraced the low-carbohydrate lifestyle finding that a diet based on lean protein, fruits, and vegetables and less dependent on simple carbohydrates has helped them look and feel better. But a monotonous menu of steak and salad or expensive, additive-laden prepared foods has been the undoing of many a successful diet regimen.
The solution? Linda West Eckhardt and Katherine West DeFoyd have devised more than 100 protein-rich, low-carbohydrate dinners that will satisfy even the most demanding diners. Drawing on their experiences as award-winning cookbook authors, Eckhardt and DeFoyd have developed a tempting range of high-protein meals that are quick enough to make on a weeknight but elegant enough to share with guests -- and so delicious they'll never know they've been shortchanged on carbohyd rates, fat, and calories.
Each entree in The High-Protein Cookbook
* Provides at least 30 grams of protein, yet is light on fat and calories.
* Is styled for two people but can easily be doubled or tripled
* Uses short lists of fresh, healthful ingredients
* Is based on simple cooking techniques requiring no special equipment
* Avoids "artificial" products and flavorings
* Contains reasonable amounts of high-quality protein balanced by ample servings of vegetables and fruits
With chapters devoted to side dishes and salads, sauces and condiments, and even sinfully satisfying desserts that won't break the carbohydrate bank, The High-Protein Cookbook is the perfect companion to many of today's most popular dietary regimens and an enticing argument for cutting back on excess carbohydrates.

Returned it the next day!.......2007-06-15
I almost never return anything to Amazon. But this cookbook went back the day after I received it.
After having weight loss surgery I need to focus on a high protein diet. Though I am fairly creative in the kitchen I thought that it would be nice to not have to figure out calories, protein counts, etc., and also to get some variety into my diet.
This wasn't the right cookbook for that. Though the recipes ARE high protein they are not low calorie or low fat. Though the subtitle reads '500 calories or less' many of the recipes are approaching the 500 calorie mark, which is more than I want to "spend" on one meal (and this is just the main dish, not anything else).
Many of the recipes could have had their calories reduced and their nutrition improved by substitutions: milk instead of cream,low-calorie spread instead of butter, Splenda instead of sugar, for example. (Yes, I could do that on my own, but then I defeat the purpose of already having the nutrition information available.)
Though I believe the recipes are probably very tasty, this wasn't the cookbook for me.
The High-Protein Cookbook.......2007-06-11
I enjoyed the book and it was in good condition. Thank you very much the book is very helpful and the recipes are easy and delicious.
Better Title would be: The Gastric Bypass Patient's Bible.......2006-01-26
This is THE greatest cookbook for Weight Loss Surgery patients!! I have recommended this to all my support group members online AND in my local support groups and, EVERYONE who tries these recipes LOVE them. None have found 1 recipe that we do not ADORE. They are tasty and quick to fix...and, we LOVE that the complete nutritional information is posted for each recipe. WE especially love that, unlike most other "Low Carb" titles that only count "net carbs" or "digestible carbs"...this cookbook talks about CARBS!!! In the Gastric Bypass World...a carb is but a carb...doesn't matter if they're net or digestible!!
Favorite everyday cookbook!.......2006-01-16
I have used this cookbook for over two years. I find myself using it continuously. What impresses me the most is the complexity of texture and flavor. It is hard for me to eat a meal without starches. When I make recipes from this book I don't miss the simple carbs. Not only do I feel satisfied but I feel I have had an INTERESTING meal.
The Best.......2005-12-30
This is the best high protein, low carb cookbook on the market and believe me,I know. I own many. I have tried 15 of the recipes and my husband and I love every one of them. I can now eat better at home than at any restaurant. You will not feel deprived eating from the recipes in this book. The recipes are easy to follow and take very little time to make. Fabulous!

Janet and Greta Podleski, also known as The Looneyspoons Sisters, are the high-energy authors of the low-fat cookbook Looneyspoons and its follow-up, Crazy Plates. But to call these sisters cookbook authors may be a misnomer: they're more like a wacky comedy team touring Hoboken doing the low-fat-zealot routine for admiring audiences.
No, Crazy Plates is not just about low-fat recipes. There's much, much more here, including fat facts (a pound of body fat--representative of 3,500 calories--if shaped into a ball, would be the size of a softball and equal four sticks of butter), "Trivial Tidbits" (baking soda used to be added to the water for boiling vegetables until it was discovered that it destroyed the veggies' vitamin C), "You Do the Math" (substituting Canadian bacon for the regular high-fat stuff once a week for a year will cut your fat intake by 1,196 grams), and a lot of corny humor ("Did you hear what happened to the peanut when he walked through the park? He was a salted"). Then there are the recipes--accompanied, of course, by cartoons--like Salmon Davis Jr., broiled salmon steaks in a spicy tomato sauce; Mercedes Buns, cinnamon rolls with less than three grams of fat per serving; My Yammi Spice, oven-baked fries with cumin, paprika, and oregano; and Berry Maniloaf, a lemon and raspberry bread loaf with 161 calories per slice.
The recipes are well laid out, not time-consuming, aimed at the home cook with a family to feed, and will please the palate of those wanting gourmet fare without the fat. But how do the Podleski sisters accomplish this rare feat? Spices are an essential ingredient of many dishes: Name That Tuna Salad, for example, gets its character from basil, mint, garlic, and Dijon mustard--with no help from that scary sidekick, mayo! This is a book for anyone who wants to cut back on fat without losing flavor, and for those that like a little slapstick with their flapjacks (Peter Pancakes, with bananas and strawberry sauce). --Stefanie Durbin

Crazy Plates.......2007-01-28
I loved this cookbook so much that I bought Looney Spoons also! I haven't tried even one recipe that I don't like! And I love the witty remarks - they almost make me feel like cooking isn't such a drudgery after all. I even bought both books as a Christmas present for my daughter who is is newly married and just beginning to cook. She and her husband love the recipes, and he is VERY picky. My only negative comment is that Looney Spoons seems to only be available "used". When I received my copy, I didn't particularly like getting a cookbook (which was supposed to be in very good condition!) with someone else's cooking smears all over it! Yuck!
Some good recipes, but terminal case of "the cutes".......2006-06-04
As with their previous book, I suggest you borrow this book from the library before buying it. You will either like their style of writing or you won't.
This one is laid out in the same busy/distracting style, with again, lots of "cute" names for recipes. I found it annoying to read, but your children might think it lots of fun.
And, transfer the recipes you like onto recipe cards rather than trying to work with the book.
CHICKEN FAJITA SALAD - BUY THE BOOK JUST FOR THIS!.......2006-06-01
I just received CRAZY PLATES and made the chicken fajita salad for Memorial Day. While putting this salad together I was beginning to have my doubts. But fear not, this is a fantastic tasting salad and I definately plan on making it again.
I am so encouranged by this recipe and this books great reviews that I have also purchased Looneyspoons and have pre-ordered Eat Shrink and be Merry.
I am a former Weight Watcher and just recently quit NutriSystem (I hit a plateau and was tired of their food). I have gone back to using the Weight Watcher's plan and will incorporate the appetizing recipes from these books to keep me on track.
great food with good size portions.......2006-03-07
I'm on weight watchers and I like the weight watcher's take out tonight book but I feel the portions are just a touch small, this book however is great. The taste is good and you will actually get full plus another thing I like about the book its that it not a bunch of non fat ingredients like non fat cheese or sour cream etc... I also like that the entire book uses the same spices so you do not have to run out and buy a bunch of different spices. I've only had to purchase coriander. Plus it gives you a whole bunch of little tips and inspirations on every page. Out of the 9 low fat or weight watchers cookbooks that I own this one is by far the best.
I have never written a review, but..........2005-12-14
this book is so easy to use and the recipes are so delicious that I am compelled to include my feedback. As someone who is not a superstar in the kitchen, when I use these recipes, I feel that I make a unique and healthy meal for my family that is always well-received. What strikes me the most about this book is that a majority of the main dish recipes include all the food groups. I have found that most of the time, the kids do not even know that they are eating vegetables. By the way, I think "Crazy Plates" is MUCH better than "Looney Spoons."

Healthy Living Simplified.......2000-10-03
I have two other of Pamela Smith's books: "Eat Well Live Well" and "Food for Life" both of which are helpful for learning the whys of eating correctly but; "Pamela Smith's The Good Life: A Healthy Cookbook" is by far the best book for putting all of those good intentions into practise.
Although the other books both have some recipes it was still up to the individual to take the time to make sure all the protein and carbs where balanced while figuring out your calories, fat, ect. This book does that for you -- all you have to do is pick the meal you like and it is already balanced; you just pick your portion size. All the recipes for that meal are togethor making menu planning and grocery shopping a brease. Each section (sections are by meal) have a very large variety to choose from making it feel less like a "diet" and more like a lifestyle -- with this book I do not have to worry about cooking diet meals for myself and regular food for my family as the recipies are for real food that everybody can and will eat.
I highly recommend this book -- especially for those who have read Pamela's books but never gave it a try; because they got over whelmed trying to figure out what to do in the store, in the kitchen, or at the table.

Book Description
If you are among the 1 in 250 american adults intolerant of gluten or allergic to wheat, you know how frustrating it can be to crave a buttery scone or a slice of warm pie. And if you have kids who are gluten-sensitive, you know how much they miss being able to bite into a chewy chocolate chip cookie when they come home from school and how much they hate having to say no to a slice of a friend's birthday cake.
Now, with Gluten-Free Baking by Cordon Bleu-trained chef Rebecca Reilly, you don't have to sit by while family and friends indulge in desserts and other confections. More than 125 recipes for sweet and savory goods, including crispy cookies, meltingly tender muffins, elegant quiches, and stunning layer cakes, prove that eating can be a pleasure, no matter what your dietary issues are.
Baking without wheat is notoriously tricky, but using Reilly's detailed step-by-step recipes, anyone will be able to turn out tempting treats like moist Pumpkin Bread and tender Sour Cream Coffee Cake. Crisp Ginger Molasses Cookies, Lemon Squares, and Pound Cake are kid-and family-pleasing favorites that will no longer be off-limits.
In addition, you'll find tips on how to stock a gluten-free kitchen, advice on techniques, sources for ingredients, and a list of resources and information on celiac disease and gluten sensitivity.
Gorgeous color photographs show you how appealing gluten-free desserts can be. With Gluten-Free Baking, you'll never miss out on the opportunity to feast on sinfully rich desserts again!

Recipes even gluten-eaters love!.......2007-08-09
When I first stopped eating gluten, I gave up baking from scratch. I knew there were ways to make substitutions in recipes, but my few attempts came out very poorly. I've always been a good baker, so it was heart-breaking to turn out dry, crumbly, barely-edible versions of my previous specialties.
For a couple of years, I've been baking from mixes, which is fine, but doesn't give me the same satisfaction as baking from scratch. So, this summer, I decided to try again, and finally opened this cookbook with the intent of baking from it, and not only drooling over the gorgeous pages of full-color photos.
I've made the sour-cream coffeecake and the blueberry scones (a suggested variation on the raisin-cream scones), and served them to my parents and sister, all of whom can eat gluten and are gentle-but-candid when they don't think a recipe has come out well. They've loved them both!
And me? I can't wait to try the next one!
nice.......2006-11-12
I have enjoyed this product, it has been a great help in making gluten-free foods for my loved one.
Gluten-Free Baking: More Than 125 Recipes for Delectable Sweet and Savory Baked Goods.......2006-11-10
Very complete. Includes many recipes I haven't seen before and a lot of recipes I've been missing since going gluten-free.
Sweet tooth?.......2006-09-24
This book is full of information, great pictures and recipes for some baked goods no one else has attempted.
However, I have found a couple recipes that are not good at all (the scone pizza crust was awful and did not work as she printed it (I do believe there may have been an omission of xanthan gum in the recipe).
The raspberry muffins are great, but I modified the recipe substantially to add extra nutrition and did not use sweetened coconut. Same goes for the apple muffins- yum.
I have made many of the recipes including the creme puffs/eclairs which turned out fabulous. My whole family ate all of them in one sitting... some of us hadn't had a creme puff in years. The blueberry scones are also quite tasty ( I cut out some of the sugar) and look and taste much like a "real" scone. The pudding is delicious (again I cut out some of the sugar and used vanilla bean instead of the extract). Her pie crust turns out well too. It is a pity there are no bread recipes. It would be nice to see what she would come up with.
This is a wonderful addition to your library, even though it has a couple kinks in it. Definitely recommended.
Absolutely a God-send.......2006-02-09
I love this book. It gave me such hope when I was first diagnosed four years ago. I held it to my heart and rejoiced. Up to that point I thought I was doomed to a pretty boring culinary life. This book really helped me to learn how to make wonderful gluten free desserts for my family. I am celiac, and I also have a celiac son and daughter who LOVE anything I make from this book - as do any non-celaic family and friends.
Some people remark that the items taste "too sweet" - really they are made to resemble traditional recipes when you need them They don't shriek "health food"! I love health food - but where does a celiac go when you sometimes want something absolutely delicious - for a treat or a special event? This book opens up the possibilities. Rebecca still looks healthy and trim - and she is a mother of two kids - so she must have found a balance somewhere. Sometimes when things are DELICIOUS you don't need or want to overeat them. Also most of her recipes use brown rice flour in her blends - so that is pretty healthy. In other words - in traditonal recipes you could never get this good flavor if you used whole wheat flour - but she gets a refined taste while using a healthy dose of brown rice flour.
I learned the deeper secrets of good gluten free bakig from this book. I now experiment - but i also use her recipes 'straight up'. I also sometimes use stevia whne I want to cut back on sugar in recipes. The trick is to only replace some of the sweetener with stevia - even up to 75%. Then use "normal" sweetener for the rest, and you won't get the bitter after taste of stevia.
Finally - it gave me heart that her introduction was not some long lament on "what celiac can do to you" but rather it was a lovely chapter on her love of cooking and its place in a joyful home.
Thank you Rebecca Reilly...

This book didn't have very good recipes. Nothing looked appealing. Returned it and still looking for a good, light, easy recipe book
Everyday Meals for Whom?.......2006-11-10
Perhaps, I was thinking wrongly, but when I think of everyday meals, I don't think of the recipes that are included in this book. I was looking forward to recipes that helped me fix many of things I already fix in a healthier way. Instead, I consider most of the recipes in this book to be fancy (things I might use for special occasions). Though I'm sure the recipes are wonderful (I haven't tried any yet), this is just not what I was expecting from the title.
Great Cook Book!.......2005-12-05
I own it - I love it - I use it! Tasty recipes!
Solid Everyday Cookbook.......2004-09-09
Good Housekeeping has another winner with "Light & Healthy Cookbook: 375 Delectable Recipes for Everyday Meals." Recipes are presented in 10 different categories: 1) starters & appetizers, 2) soups, 3) pasta, 4) main dishes, 5) salads, 6) sandwiches & pizzas, 7) sauces & condiments, 8) bread, 9) desserts, and 10) beverages. The emphasis is generally on low-fat recipes with nourishing ingredients. Not all the recipes are extremely low-calorie; however, full nutritional information is included (calories, fat, calories from fat, carbohydrates, and sodium), allowing the reader to make informed choices.
The majority of recipes are for straight-ahead, no frills American food - the kind of fare you could easily make on a busy Tuesday night. About half the dishes are presented in full-color pictures. Further adding to the practicality of the cookbook is the relatively small number of ingredients required for most selections. As is the practice with Good Housekeeping, the recipes have been tested and re-tested to ensure reliability and ease of preparation. I've made a number of recipes from this cookbook, and I've been pleased every time. I particularly enjoyed the "Rigatoni with Beef-Fennel Sauce."
In addition to the recipes, a variety of helpful special sections are scattered throughout the book, such as "12 low-fat veggie toppings." Also, handy suggestions for accompaniments are made for many of the recipes, which could be used to develop full meals. As a result, readers could use this practical cookbook to design healthy eating patterns and an improved lifestyle. Highly recommended for readers who enjoy no-fuss cookbooks.
