I remember cheese fondly although I don't eat it anymore. Jo Stepaniak's The Ultimate Uncheese Cookbook offers recipes which make a valiant attempt to imitate the texture and flavor of dairy products, but the most successful aspect of the book is that it makes the comfort food quality of cheese available to those who may have never expected to experience it again.
My favorite recipes from the book so far are the Gooey Grilled Cheez, the Durritas seasoning (the taste of Nacho Cheese Dorritos), the Unprocessed Cheez Sauce (I like it on burritos), Spinafels (Spinach Ricotta Balls), the French Onion Soup Gruyere and most recently the Philadelphia Potato Chowder. The book contains a variety of salads, dressings, soups, pasta dishes, deserts, and block uncheeses. Everything I have tried from The Ultimate Uncheese Cookbook has turned out nicely. I strongly recommend this book to vegans (or to anyone else) who would like to experience a unique collection of comfort foods.
A dairy-free miracle.......2007-09-20
Wow, talk about a cheesy resource! With my focus on all things dairy-free, I was amazed that I had not yet picked up a copy of this cookbook. I think that two things held me back: I don't really miss cheese, as I was never a big fan of the stuff; and I couldn't imagine an entire cookbook focused on one type of food.
Well unbeknownst to me, this wasn't just a book about making fake cheddar. Sure, it contains tons of made from scratch cheezes, from slicing Swizz Cheez, to the softer Brie, to a saucy Nacho Cheez. Yet, it goes so many steps further, reminding me just how many foods rely on that creamy and cheesy taste. Blintzes, fondue, pesto, pizza, quiche, alfredo sauce, cheesecakes, French onion soup, lasagna ... you name it and the author Jo Stepaniak has the recipe answer. I was impressed.
Seriously, this is a must have book for any former cheese-loving vegan or dairy-free consumer. Sure, creating an exact duplicate sans dairy can be an uphill battle, and depending on each person's tastes, one recipe or another may not be their perfect fit. But I would be truly shocked if you couldn't find at least a handful of recipes in this cookbook to soothe your inner cheese-craving beast.
I recently trialed the Traditional Macaroni and Cheez, and can't wait to sample some of the calzones (I do miss pizza) and focaccias.
Making the actual "cheeses" does require a few ingredients that may be new-to-you. Luckily, there really are just a handful of these special ingredients required, allowing you to buy a good sized package of each once, and then reap the rewards of various "cheeses" for months. Also, while tofu definitely makes itself known in this cookbook, a surprising number of recipes are soy-free. In a good majority of the recipes, the author uses a variety of nuts, seeds, beans, grains, and seasonings to achieve the right consistency and flavor.

I just purchased this book, and today I made the Gee Wiz. I'm telling you, this stuff is incredible. I've read most of the reviews here and I took the advise offered. I used a bit less lemon juice and a bit less Nutritional yeast. It was a hit with the entire family. DH and I have gone vegan for medical reasons. He really misses his cheese. This stuff hit the spot. He was ready to eat the entire container. I can't wait to try more of the recipes. When I do, I will be back to update my review.
Ok for those who want to know, it does not taste exactly like cheese.
However if I had not been the one to make it and had it on snack table with crackers, I would have been asking for the cheese spread recipe. It is really that good. I will definitely be making more of this and I will be taking it to homes that are not vegan. I can't wait to see their reactions.

As a vegetarian who is struggling to break a cheese habit in order to go completely vegan, this book is a God send. The recipes are absolutely delicious, and I've even used my slow cooker with several. Try it; you'll be glad you did!
Great source of decent recipes.......2007-05-07
You'll have to have access to a health foods/specialty store to buy some of the ingredients but if you're on a dairy-free restriction this book can at least help you have some sort of normalcy back to your diet. If you're used to eating gooey dairy goodness this food probably won't live up but if you've been missing your big ol' bowl of mac-n-cheese while living with new restrictions the recipe here will come pretty close. Good food, easy directions and a great resource for hard-to-find alternative foods.

I did enjoy this book and have made some items out of it. My only issue is that it does call for ingredients I had never heard of and had a hard time finding them in the store. I did ask for help, but of course no one in the store knew what I was talking about. Other than that, the food is VERY good in this book, they are easy to make, and are good for you!

I bought this cook book when I decided to become vegetarian although I don't eat much dairy I love the recipes in this cookbook . this cookbook also has suggestions on sample menues foe vegetarian and vegan adults, teenagers and children. so far all the recipes I have tried have tasted great . my favorite recipe is 3 bean chili served with a spicy tortilla crisps.
Innovative and tasty, but a few flaws.......2007-05-25
After 20 years of ovo-vegetarian living, I embraced this book. It offers a lot of delicious and new (to me) vegetarian recipes, and also presents helpful information about low GI eating and sound nutritional habits. Overall, the selections I've prepared have been consistently good and not too fussy. A favorite is the buckwheat pancakes with tofu, basil, and sun-dried tomato.
The book's shortcomings are that (1) it's not especially friendly if you're cooking for one, as many of the recipes don't keep well, and (2) some of the nutritional information provided is a little unbelievable (i.e., black bean soup on p. 94 has 624 calories per serving???).

The book was pretty informative and there were lots of recipes. However, most of the ingredients are items no one really has in their kitchen - and wouldn't even be able to find very easily. The pictures made the food look really tasty, but not very many simple, "every-day" kind of dishes. I wasn't very impressed with this book; but I was looking for something a little more "down-to-earth". This just wasn't it.

Too many ingredients.......2007-09-06
I just received this cookbook today, and was dismayed that so many recipes had a big list of ingredients. How is a lot of ingredients considered "cheap eats"? The pear smoothie was good, and it had very useful information throughout the book regarding vegan ingredients, but I would not recommend this book for anyone who is on a low-income!!!

I purchased this book based on all the positive reviews on Amazon, thinking it would help my family go vegan on a budget. I was extremely disappointed.
It has a 14 page introduction which includes basic information on veganism, vegan foods, and some vegan meat alternatives; this is the most helpful part of the book, but it's information which a person considering veganism has probably already learned from a few quick Google searches.
Some of the recipes simply didn't need to be included - for instance, a recipe for balsamic-olive oil dressing and a "recipe" for how to cook rice.
Many of the recipes call for ingredients which I think most of us on a tight budget really can't afford. Maple syrup - a common ingredient in many of her recipes - is too expensive to put several tablespoons in a meal. Cemini mushrooms? No way. In general, I found that to feed my family of three most of her meals would cost me over $10.
Finally, a number of the recipes are simply not that good. Her Student's Go Vegetarian Cookbook seems to be a little worse in this regard (the beer stew in that book is absolutely detestable). While the meals we tried in this book didn't leave us scrabling to find something else to make for dinner, we were universally unimpressed with all of them and never felt inclined to eat any of them a second time.
I'd save your money and check out one of the many websites which have vegetarian recipes, where you can read reviews of them. Unfortunately, I learned the hard way, and with the money I spent on Carole Raymond's two "Student's" books I could almost have afforded two more of her "budget-conscious" meals.
really cool.......2007-06-22
This is a really cool cookbook, I'm amazed how much I use it. The recipes are easy and a lot of them are quick for those of you, like me, who think it's ridiculous taking 45 minutes to make something when it only takes 10 minutes to eat it--that doesn't seem like a good ratio. I have a lot of vegan cookbooks, and this is definitely the most student-friendly.

This cookbook is exactly what I have been looking for! Creative, healthy, and delicious recipes abound in this book. It's vegan without being pretentious, without tons of sugar and processed flour in the recipes, and includes a ton of magnificient vegetables (something that is often missing, strangely, in alot of vegan cookbooks). The first recipe I made, a warm spinach/apple salad, was so unlike anything I had ever eaten and yet possibly the most delicious thing I've cooked in years. I was hooked. I'm recommending this to all my friends, and I'll be serving dishes from it many times over. The word "student" in the title is misleading. This cookbook is for everyone interested in delicious, healthy, awesome recipes.

The Candle Cafe book is just what I needed. I am trying to pass the Veg Soc Diploma, and need to construct a dinner party menu for 4 people. I want to make a vegan meal, and the recipes in this book look fairly easy to make, colourful, and there are lots of tips. The one thing which would have really helped me, would have been some menue suggestions. However I am looking forward to trying out all the dishes. Thanks,

After reading many of these reviews, I realized that I wasn't crazy! While the taste of the recipes I've made so far have been sublime (the tofu satay and the roasted veggie panini on ciabatta were heaven!), I agree that some of the recipes make an awful lot of sauce, or the ingredients amounts are incorrect.
For example, someone mentioned the Aztec Salad. Yes, it took almost two hours to put together, but the tempeh and roasted tomato dressing flavors were worth it. However, the marinade looked like way too much liquid (and like other reviewers, I couldn't afford to waste too much agave nectar!), so I just cut it in half. The quinoa part of the salad did make too much, so I wonder if I had halved the quinoa, it would have been a better balance (couldn't really taste the corn or beans or peppers). I also found the Chana Masala to smell amazing, but a little dry. The herb farm dip called for a whole onion, which was waaaay too much (my eyes watered when I opened the food processor's lid!).
However, if you are experienced in the kitchen, you can recognize these issues, and counterbalance them by tweaking the recipes. It is a shame that there was not better editing, but the book really isn't that expensive (on Amazon ;)
Overall, I have had good success with these recipes, and the flavors are truly amazing. Fresh and interesting, the recipes are far from dull! I can't wait to make the tempeh burgers with mango ketchup and grilled pineapple this weekend! I have just learned not to try these recipes out on anyone other than family before a test run. I heard about this cookbook after visiting the real Candle Cafe in NYC, which is definitely not a hit or miss! Buy this cookbook for its creative, amazing flavors, but be prepared to alter some recipes.

A seriously flawed cookbook.......2007-01-04
Did the reviewers who gave this cookbook 5 stars even try making any of the recipes?! There is no way "Candle Cafe" merits a flawless rating! Many other reviewers have pinpointed this book's numerous shortcomings: inaccurate measurements, hard-to-find ingredients, faulty directions. I totally agree and would further emphasize that THIS IS NOT A LOW MAINTENANCE COOKBOOK. "Ingredients found in any grocery store"? How many run-of-the-mill grocery stores carry agave nectar or umeboshi paste? "Quick and easy recipes" for "busy mothers on the go"?! Candle Cafe's recipe for seitan steaks requires cooks to soak wheat dough in the fridge overnight, wash and rinse said dough multiple times over the course of 2 days, boil it in broth for 2 hours, and then marinade the steaks for 2+ hours. Honestly, the average main course in this book takes at least an hour to prepare (this is coming from someone who's tried her hand at at least half of these recipes).
The one recipe worth having in this book is seitan piccata; and I would recommend checking out this cookbook from a local library to copy it for free. If you're looking for a practical but delicious vegetarian cookbook, try one by Deborah Madison ("Vegetarian Cooking for Everyone" or "Vegetarian Suppers.") For great vegan recipes (including a really fast homemade seitan recipe) look for "Vegan with a Vengance" by Isa Moskowitz. "Candle Cafe" totally isn't worth the money. Anyone who tells you otherwise is either a friend of the author or someone who hasn't tried making any of these recipes.
NYC Gouret Vegan without the schlep into NYC.......2006-12-16
I can't say enough. The book is terrific and easy to follow. As would be expected, some of the more complicated menu items have more complicated recipes (duh). With a reasonable amount of effort, the ordinary home cook can enjoy these vegan gourmet delites without the schlep into NYC.
The only recipe to completely stump me is the homemade seitan...hope to get that one figured out soon.

This is a great book for those who want a quick,healthy meal that looks good and taste YUMM too. Bought this book for my daughter who has been doing the "raw lifestyle" for 2 years now. She loves all the easy to make recipes. Angela Elliott(the Author) makes the process so easy that even a person who can't find herself around the kitchen (like my daughter) could even create a great looking meal. Gourmet without the works. What a concept.

I think the title of this book is quite misleading. I'm giving it two stars because I think the author is representing it as something it's not: "gourmet food".
While the recipes are not complicated, most of them are far TOO simple. Over and over, I kept asking myself, "for THIS I need a recipe book??" For example, "Cucumber Pizza", which sounds intriguing, is nothing more than chopped olives on slices of cucumber. "Scrambled Eggs", which sounds like something you wouldn't find in any ordinary raw food recipe book is -- are you ready for this? -- 3 ripe avocados mashed in a bowl, add salt and pepper! The "salad" recipes are the most basic of salads ... if you can chop some vegetables and lettuce into a bowl, add some lemon juice, olive oil and your favorite seasonings, you already know how to make most of the salads in this book.
There are several different nut milk recipes, each with a fancy, delicious-sounding name, but they're all the exact same recipe ... only the kind of nut you use is different.
Many of the recipes call for the pulp left over from making nut milk, and some of the soup recipes require nut milk. So unless you've taken the time to make nut milk, and have saved a supply of the pulp, you're out of luck.
One problem I have with many raw food recipe books is the inordinate amount of nuts, seeds and avocados called for. One recipe in this book calls for 5 avocados to make a dish that serves 3 people (just about all the recipes in the book make 3 servings). A taco recipe calls for 2 cups of soaked sunflower seeds in the pate', plus an avocado in the filling, and another cup of sunflower seeds to make the "sour cream" topping ... serves 3. I don't like gorging on fats, even if they are the healthy kind.
Some recipes call for coconuts, which is a no-go for me, because I don't want to have to deal with cracking coconuts and scraping out the flesh, etc. One recipe (that makes 3 servings) calls for 3 young coconuts.
I'm a big proponent of raw foods, and have a large collection of raw food recipe books. For "quick and simple" recipes, I especially like Raw Food Made Easy for 1 or 2 People, by Jennifer Cornbleet. Raw Foods for Busy People by Jordan Maerin is another favorite. But I cannot recommend Alive in 5, for all the reasons mentioned above. Perhaps if it were titled more honestly, something like "Dishes You Really Don't Need a Recipe Book For", I wouldn't have been so disappointed with it. I'm not saying there aren't some tasty combinations of foods in this book, but many of them are just TOO simple. To call it "Gourmet Meals" is misleading.

This dessert book is, first of all, absolutely gorgeous!! the photographs are beautiful and the food styling is excellent - absolutely world class in every way!!
I, like some of the others reviewers, haven't actually made anything from the book yet but, i have had the desserts at m cafe and they are to die for!!! i love love love the strawberry shortcake and the cupcakes.
unfortunately, i live less than 2 blocks away from m cafe so it is way too convenient for me to have a dessert every day!!! not to mention that another veg place, busaba, has just recently opened across the street and they have to die for coconut sorbet. way too many dessert options in walking distance - but at least they are healthy desserts.
i met eric and his wife at a book signing recently at erewhon and was equally impressed with the man behind the talent. they were such nice people and told me that they self-published the cookbook themselves - simply unbelievably!! this cookbook is world-class in every way - presentation, writing clarity, and just sheer beauty.

This cookbook has the most beautiful pictures of vegan macrobiotic desserts. Pictures are on almost every page. I recently tried the Strawberry Mousse Pie. It was delicious and elegant.
I am not a macrobiotic cook but I am a vegan. I owned many vegan cookbooks but this particular one is dedicated to desserts. The style of the desserts in this book is European or French Japanese style so the desserts are not too sweet. I used to go to French Japanese bakeries in Little Tokyo, Los Angeles and love their desserts and pastries. After being a vegan, I was deprived of this kind of desserts. Not anymore! Thanks to Chef Eric Lechasseur. If you are looking for a very sweet fudgy brownie recipe, this cookbook is not for you. But if you looking for a healthy, elegant, but delicious European style desserts, this is the perfect cookbook!
There is NO REFINED SUGAR, DAIRY, and EGGS in the recipes. I would like to try more recipes like Tiramisu, Blueberry Pinenut Pie, Upside-down Berry Pie, Chocolate Raspberry Charlotte, and Adzuki Roll. Hhmmm....they all looks so good.
I have been to M Cafe De Chaya once and fell in love with their desserts. Eric Lechausser is the pastry chef of this restaurant and that's how I got his cookbook. He is brilliant! As the previous reviewer said, I live 1 hour away from M Cafe but it was worth it to fight the crazy traffic in Melrose Ave and 101 Fwy. to dine and eat desserts at M Cafe.

I am so excited!!! Even though I haven't tried any of the recipes yet (my book is in the mail) I have tasted his extraordinary pastries, personally, at "M" cafe de chaya on Melrose in West Hollywood.
I live two hours away and travel there specifically to eat his fabulous creations. They are all healthy for you and well worth the trip into that ungodly traffic. The lemon and chocolate tarts at "M" are to die for.
I have seen the book. The layout/design are five star beautiful. It contains full color pictures for every recipe. Yum ... I can't imagine the recipes being anything less than perfect.

Vegan diets can get boring if people are not aware of the many, many foods that are available to a vegan. This book solves that problem neatly. I've been surprised by how easy it is to obtain, use, and store many new-to-me ingredients.
The recipes in here are fairly complex if you're comparing it to something like Betty Crocker. I usually save them for weekends when I have a little more time to spend in the kitchen. However, there are a few simple gems that I make very frequently (tofu tacos is my favorite). The reason I LOVE this book though is that I can rely on the recipes tasting so fantastic and being so interesting that even my non-vegan friends ask for the recipes when they've tasted my cooking.
For someone who is unfamiliar with basic cooking techniques, this book might be a little overwhelming to use. However, it has an exhaustive list of kitchen supplies that are needed, an index of ingredients, and a thorough discussion on keeping a well-stocked kitchen, using ingredients and cooking techniques. It's all there, but it will be a steep learning curve for someone who is just starting out in the kitchen.

I am just getting started on this one. Everything sounds great (this is one book that can get away with no pictures)! Anxious to try the Grilled Pizza. I am evolving from a Vegetarian to a Vegan diet so first most important is getting comfortable with new cheeses, egg and butter replacements etc. I have created Vegan diced boiled eggs with tofu, seasonings and a little mustard...works great for Potato Salad!

I've found the recipes in this book to be, on average, very good to excellent. Many recipes are made entirely from vegetables you can get at the local farmers market. Dependance on soy and soy derivatives is (refreshingly) minimized. This book focuses more on wonderful and delicious recipes made from vegetable instead of trying to imitate or substitute for the usual meat and cheese dishes. No need to special order ingredients from Venezuela or the Ivory Coast either. I found this book approachable, practical, and with recipes that can fit into any meal, vegan or not. I highly recommend this book for anyone interested in cooking with vegetables.

I didn't buy this book, because I clicked on the "See Inside" link above and read some of the recipes. When the bread recipe contains yeast in the ingredients list, and the recipe doesn't even mention yeast or when to add it, you know nobody proofread this. Plus, who needs pizza dough for 30 pizzas. It was the author's job to figure out the correct recipe for one or 2 pizzas, and pretest it.

I love this cookbook. It's my favorite vegan cookbook in my collection. The food is simple and uses a lot of readily-available ingridients. That and everything I've made from the cookbook is amazing. My favorite thing so far is biscuits and easy gravy from the Hot Damn and Hell Yeah! side of the book. But then, I'm a sucker for carbohydrate-loaded lumps of awesome smothered with salty, fattening goodness.
This is DEFINATELY worth the price. I'd reccomend it to all of my vegan comrades, new and old alike. Besides, what's not to love about southern-style vegan food?

I have purchased three copies of this cookbook in less than six months! I bought myself one, and I liked it so much, I wanted to share. The most recent gift I made of it was to my brother. He isn't vegan 100% of the time - but is so 6 months out of the year for religious fasting. Well, we're in Texas, and were raised on Tex-Mex and Down Home cooking! This book was perfect! He was SO thrilled to have it! He's already thinking of friends of his he'd like to buy a copy for:)

This book is set up to be used - nicely laid out with recipes on one page only so you don't have to flip pages while you are cooking. I haven't tried all the recipes yet but the ones I have tried have been great. I especially liked the 30-Minute Vegetarian Chili and loved the Red Lentil Dal. I'm looking forward to trying the Beer Bread along with some of the soup recipes. The fact that the recipes in this book contain extra fiber is definitely a plus but I bought it because they taste so good!

Bryanna Clark Grogan's challenge is to make us believe that "fiber" and "gourmet" can be used in the same sentence. With all of the attention focused on protein, fats, and carbohydrates today, fiber has been virtually ignored (except for Weight Watcher's, which made the connection between fiberous foods and weight loss many years ago). Simply put, when the outside layer of seeds, fruits, legumes, etc., is stripped away in a refining process, dietary fiber is also discarded. Grogran explains that dietary fiber is responsible for balancing alkalinity and acidity, and for detoxifying chemicals in the gastrointestinal system that can cause diseases such as cancer. Without fiber in our diet, cancer-producing toxins are produced in the gut by bacteria that flourish in a fiber-deficient system. When this occurs, Grogan points out that constipation may be a precursor to such life-threatening diseases as diverticulitis, large bowel cancer, colon cancer, breast cancer, gallstones, hiatus hernia, varicose veins, obesity, diabetes, and hemorrhoids, many of which do not occur in those consuming a high fiber diet. A chart of "Fiber Superstars" lists 50 foods containing at least 4.5 grams of fiber per serving (a cup of kidney beans contains a whopping 19.4 grams of fiber!). This informative chart is now on my fridge. Another chart lists the fiber and calorie content of over 100 name-brand foods. Sample menus, with suggestions for increasing fiber, are listed for meals and snacks. Over 150 pages are devoted to recipes for breakfast, breads, appetizer/snacks, salads/dressings/sauces, soups, beans, vegetables, grains, and desserts. With a flair for international cuisine, Grogan circles the globe with her inventive Yemiser Wat (Ethiopian Spicy Lentils), Eggless Crepes, Pizza Dough with flax seeds, Pasta Alla Primavera, Vegetarian Feijoada (Brazilian Black Beans), Chiles Rellenos Casserole, Red Lentil Dal, French Strawberry Pie, and Italian-Style Apple Tart, to name but a few of the mouth-watering, high-fiber, vegan dishes. I highly recommend this book to anyone who doubts that the words "fiber" and "gourmet" can indeed be used in the same sentence.
Gourmet fiber treats ..........2002-11-17
The benefits of fiber can hardly be argued - and Bryanna's new cookbook tells you how to incorporate fiber in your diet AND make it taste delicious too. In this book she focuses more on vegetables, beans and grains, to a larger extend than in her previous books which focused more on tofu, seitan, and other (low-fiber) meat subs - Bryanna gets inspired from cuisines from all over the world. The Italian dishes - taken from her fabulous "Nonna's Italian Kitchen" - are outstanding (such as her Pasta alla Primavera), even a humble-looking recipe like Irish mashed potatoes with kale is a gourmet meal. There are Chinese-style, Latin-American, Indian, and Middle-East-style dishes, ranging from soups (The Lentin Soup is so good!), salads and dinner entrees, even several cake recipes! This may not be as ground-breaking an effort as her truly outstanding vegan masterpieces "Nonna's Italian Kitchen" and "Authentic Chinese Cuisine" - but less can do! This is a completely respectable vegan cookbook that you will definitely enjoy for everyday use. Me, I'm already starting to look forward to Bryanna's next book ...
