Delicious food and easy to prepare- all of the recipes we have tried from this book were winners. I have lots of vegetarian cookbooks, but this one has plenty of recipes and combinations that are missing in the others. There are also wine and side dish serving suggestions. However, I just can't stand the deckeled edges of the book. Sure- it gives a quaint, rustic appeal to the book, but it makes flipping through the pages impossible. The lack of photos and the layout of the pages takes away from an otherwise great cookbook. If it were redesigned, I'd buy another copy in a heartbeat.
Great French Fare.......2002-06-11
This cookbook offers a great selection of dishes that taste like authentic French fare. The author provides short vignettes with each recipe, sort of travelogue pieces that set the stage for the dish. There are charming illustrations peppered throughout the book. The writing is straight-forward and the author's zest is apparent. She is more liberal with the fats than I would be, but this is easily adjusted. She also admits to a fondness for lots of garlic-- here too the recipes can use one clove instead of her preferred five cloves, or the garlic can be roasted to provide a mellow rather than biting flavor.
There are a variety of satisfying dishes that are quite true to their origins. The author provides some filling entrees, such as Puree Of Beans And Potatoes Over Roasted Red Peppers; Stuffed Savoy Cabbage; Pasta With Pistou And Goat Cheese; and Potato Cheese Cakes. She also presents a number of stews and souffles. Among the soups are great recipes for Fennel, Zucchini And Leek; Asparagus And Tomato; Celery And Celeriac; and Carrot And Tomato With Cumin. The salad section does not rely on greens: recommended are the Fennel And Red Pepper; the White Beans With Black Olive Dressing; and the Belgian Endives Baked With Roquefort. There are also good cheese and dessert sections in this wonderful cookbook.

I am buying a second copy for myself as I have no idea where the first one is. I loved the recipes. Loving all things french, these recipes make me think I am right there in France. I have a lot of cookbooks and this is still one I want on my shelf.
Authentic, creative vegetarian solutions to French cooking.......1999-11-11
Having grown up in France, I have yearned for authentic vegetarian recipes. This brings France home. The recipes are easy, full of flavor, worth sharing with non vegetarians proudly. Even my kids ate the recipes. Some are higher in fat than I like, but I found them easy to adapt successfully (and I would not consider myself a cook). Worth every penny and a fun read.

Everything I've tried in this book has been delicious. The ingredients are easy to find and the instructions are simple to follow. You have to try the Garlic Soup!

I just got this book in and it is fantastic. All of it sounds tempting and delicious! I have finished reading it cover to cover and passed it along to my Mother, who also suffers from Celiac, and she also likes this book. Lots of new and different ideas from the ordinary GF cookbook.

This cookbook is by and far my favorite vegetarian book. My husband is a vegetarian but he hates beans. Finding a vegetarian cookbook whose recipes aren't nearly completely beans can be a challenge.
The emphasis on fresh foods, foods in season, and hearty recipes makes this cookbook an excellent investment. Just reading it makes your mouth water! If I had to have one vegetarian cookbook in my collection, this would be it, hands down.

I cherish all of the books written by this author--there is only one that I do not have. He writes clearly and the recipes are easy to assemble and to follow. Because the ingredients used are fresh, the end result is delicious and hearty. All I can say is that the monks in this monastery eat VERY WELL!!!! They have a very talented Chef who obviously loves all aspects of his work and his vocation.

Those of us who love to cook sometimes love to just curl up with a cookbook on a quiet night and READ. this book is wonderful for these times... it is infused with a sense of calm, joy, peace, a love of nature and simple pleasures. I love how the recipes are arranged according to season, so that the ingredients and richness of the meals are in sync with changing weather and ingredients throughout the year. and reading the section about fresh herbs made me run out to the local garden center to buy basil. best of all, there's not a bad recipe in the bunch. unlike many vegetarian cooks who seem to want to smother everyhthign with cumin and miso, Brother Victor is a master of simplicity. the recipes have one or two perfectly chosen herbs to bring out natural flavors, subtly and iwth restraint. i highly recommend this book!

Brennan chooses simple, hearty traditional recipes from the French countryside. I think I've made every dish in the book and all are superb. I can't recommend this book highly enough. I'm surprised it is almost out of print in hardcover.

First of all, every recipe I have tried is absolutely delicious. Doesn't give expected amount of time to prepare, so just read the recipes through before you begin. You will not regret buying this book. The author gives wonderful explanations and suggestions for how to use vinegarettes, sauces, and what to look for in a good olive oil. I can't say enough good things about this book. The author lives part time in France so it's not just someone interpreting French food. Has become my most used cookbook. My husband loves everything I've made too!
Mmmmmmm. Dairy!.......2001-10-27
I have recently started to try my hand at vegetarian french cuisine. So far, I have made the Gnocchi w/ gorgonzola sauce, the Wild Mushroom Ragout and the teleme croque (a french toast grilled cheese). All were really tasty and very hard to make poorly. Things to be aware of:
1) Author's descriptions of the dishes are silly
2) Does not teach you about the cuisine (for example, what is a Ragout?)
Overall, I am really happy with it.

I am a vegetarian who travels quite a bit. I adore France, so it was with great pleasure that I purchased this book. I was not to be disappointed. Some people seem to be intimidated by the idea of French cuisine, but all of the recipes that I have made from this book were clear and concise. There was no room for error. The results were always above what I expected. The photography made me feel as if I were there. All and all a great book. If you are a vegetarian like me, who feels that most vegetarian cookbooks tend to be "hippie" and you would love to entertain guests (especially non-vegetarian guests) with an elegant meal, this is the book for you!

I was lucky enough to work half a block from the restaurant "Now and Zen" in San Francisco. It became my regular lunch destination. I loved all of the dishes including the deserts that I tried. In fact, the strawberry shortcake was the best I'd ever had. I have not yet received the cookbook but am so excited to know I will be able to make these delicious dishes in my own home and I know what they should taste like. Once the restaurant closed I knew I had to get the cookbook.
Not Your Mother's Lentil Loaf!.......2000-01-08
I'm a longtime vegan who loves good food. In my efforts to spare animals from suffering, I don't want to make myself a victim at the dinner table. This book helps enormously. The savory dishes can't be beaten, particularly for special holiday fare. I make the dairy-free "cheese" ball for New Year's parties every year. I highly recommend "Now and Zen" for elegant, taste-satisfying appetizers, main dishes, soups, etc. I consider the dessert section to be weak relative to the rest of the book. I may be vegan, but when I want a sugar fix, only the best will do. Whole wheat flour and rice syrup just don't cut it. Don't let these comments discourage you because the rest of the book is truly gourmet.
Vegan with Flavor.......2000-01-04
Miyoko Nishimoto studied french cuisine before turning vegan and has managed to maintain the satisfying flavors of "dirty" cooking with her creative and sometimes mysterious recipes. Some of the unorthodox flavor combinations seem downright whacky but the result is always a pleasant surprise. Many of the dishes in this magnificent cookbook are as pleasing to the eye as they are to the palate and make quite an impression at dinner parties. I have served her Savory Tempeh and Vegetable Stew to die-hard meat eaters who ended up practically licking the bowl. A must for vegans and vegetarians but this book could also be inspiring to anyone who appreciates innovative cuisine.

This is a great cookbook for anyone who is interested in exploring vegan cuisine. The recipes and techniques are truly inventive and can be adapted to recipes from other sources. I think this cookbook should be on the shelf of every person who takes the art of cooking seriously!

Unbelievably Delicious, Unbelievably Easy.......2006-01-04
As a vegetarian for almost 30 years, this was the cookbook I had always been waiting for. For inexplicable reasons, France appears to be anti-vegetarian. Though the food seems so easily adaptable to vegetarians, instead of leaving the meat out of the amazing and wonderful dishes, usually the top French restaurants in the US and restaurants in France would serve a vegetarian nothing but a plate of grilled vegetables, albiet exquisitely arranged. (Though I noticed that as side dishes or additional courses, meat eaters would often get some delectable vegetarian dishes.) Finally, there is a great cookbook that tells you how to make these dishes and how to make them vegetarian. What's even more amazing is how easy these recipes are. So many books will include in their titles words such as "quick", "in less than 30 minutes", "five ingredients only" but the recipes are really not that simple, easy or quick. But this book actually is simple and easy, though it doesn't bill itself as such. (Soups are so delicious and easy that it can be part of everyday meals with very little fuss or preparation.) I've made most of the recipes and everyone was absolutely delicious. The ingredients are simple and easily substitutable. Most importantly, as you use the book a little, you develop an understanding for how the different types of dishes are made and become independent of the book - so you can create your own quiches, crepes, flans, tians, and gratins. The French really are amazing cooks and they do it with simple but good ingredients and this book makes that possible for vegetarians. The recipes are great for non-vegetarians as well. My carnivirous father-in-law was unbelievably impressed.
My favorite cookbook.......2004-05-31
French Vegetarian Cooking has become my favorite cookbook. It almost converted me to being a vegetarian. The recipes are simple, with sublime combinations of readily available ingredients. The recipes are wonderful for whipping up a quick afterwork meal or vegetable dish that tastes like good French restaraunt food. If you're tired of eating the same old-same old, buy this book. You'll be thrilled with the results of throwing together a few classic ingredients that produce a fabulous tasting and refreshing change from your regular fare.
It will impress your family too. If you're going to feed them green beans you might as well pour on a little combination of lemon, garlic, olive oil and basil to make a superb side dish. (Great for taking to parties too). As long as you're making baked potatoes, it takes no time to throw together a cream, mushroom and herb concoction to stuff them with. So much better than boring old spuds. And even the kids will be tempted by the lovely creamy, cheesy mornay sauce you can pour over the brussel sprouts. Really! My 8 year old loves that dish.
So if you want to impress friends and family using simple, fast recipes that produce surprisingly scrumptious results, get this cookbook. You will find yourself using it often and loving it.

Paola Gavin has done down-to-earth cooks a huge favor by proving that the words "French" and "vegetarian" can co-exist in peace and simplicity. Refreshingly short ingredient lists grace the pages, presented in an austere format which belies the tempting and tasty dishes that will result.

What a beautiful delightful book. A host of great recipes for anyone who enjoys vegtables and fruits. There are numerous vegetable stew and vegetable soup recipes that can easily be adjusted for whatever produce you have. Fantastic hot and cold soups and several healthy gazpacho like dishes that will make your mouth water. The full color photos are so colorful; the food so fresh looking that they seem to leap from the pages. Everything looks so delicious. Even those who are not vegetarians will like this book because it makes you want to eat more vegtables. A wide range of veggies are featured cooked numerous ways or not at all. Colorful salads and fruits.
This book is not just about light dishes either. There are some very rich cheese recipes including an very easy to follow souffle recipe. Try the three cheese pie or the brie fritters. The deserts are equally wonderful with an emphasis on fresh fruits. Everything you could ask for is here on how to use your garden to make wonderful delicious meals.
The only draw back is that no vegetable broth recipe is provided even though it is used in many of these recipes. Vegetable broth isn't complicated but it would be nice to get a good recipe for it.
