Book Description

The Wheat–Free Cook is the definitive cookbook on living and eating well without wheat. Veteran food writer Jacqueline Mallorca outlines the differences between wheat allergies and celiac disease, provides lists of resources and a guide to gluten–free grains, and offers tip on how and where to shop for gluten–free ingredients. On top of that, Jacqueline offers recipes for quick, modern gluten–free meals that are sure to appeal to the health–conscious cook, whether gluten–sensitive or not––after all, it's just as easy to thicken a comforting stew with rice four or cornstarch as it is with all–purpose flour, and sautéed chicken breasts taste much better when coated with a mixture of ground hazelnuts and Parmesan than stale breadcrumbs. All the formerly off limits favorites are here, from breakfast treats such as pancakes and muffins, to comforting pasta dishes like macaroni and cheese, and decadent desserts including cookies, cakes, tarts, and pies. With The Wheat–Free Cook, Jacqueline Mallorca proves that there is a world beyond wheat.

Excellent Cookbook - high quality food. Have tried a handful of the recipes and all are excellent.

5 out of 5 stars Inclusive Dishes.......2007-04-25

For people who have wheat allergies and other food related conditions, e.g. lactose intolerance, check out this book. Diet does not mean deprivation; rather it means accomodating different needs in re food.

This book has a good selection of wonderful recipes that are not just merely palatable. It brings gluten free into the sun of mainstream meals and out of the dark ages when gluten free meant drab and bland foods from specialty shops. You can cook wonderful dishes and nobody will be any the wiser that you are making inclusive meals that are gluten free. (Of course, if you wanted to, you might clue them in).

I highly recommend this treasure for all cooks regardless of food needs.

One of my closest friends is a hardcore "foodie" but has a horrible wheat allergy. She must take antihistamines in order to indulge in her favorite foods, which is fine for the rare oppurtunity when we dined at Perse but not something you want to take everyday. So, when I found The Wheat-Free Cook, I took it upon myself to prepare a meal for her from scratch. Now first off, I don't like to bake but I knew bread was going to be a big deal for her. I made the recipe on page 133 (quick flatbread) and found it not only easy but extremely delicious! Luckily, I doubled the recipe as the rest of the diners devoured it along with the delectable short ribs on page119. This book offers classic cooking (a la Julia) and brings "gluten-free" out of the dark ages (nasty health food store selections, ugh). It's easy enough to use for the novice cook and innovative enough to inspire the toughest "foodies." I recommend it for ALL cooks-wheat free or not!

4 out of 5 stars What's to eat? The Milk-Free, Egg-Free, Nut-Free Food Allergy Cookbook.......2007-09-11

My grand daughter is allergic to all dairy products and tree nuts. I did not know what to fix her for meals or desserts. This book really tells me all kinds of food available for anyone who are allergic to above mentioned. It is not difficult to prepare all recipes on this book . I am glad I found this cook book. Thanks to the author.

4 out of 5 stars Very good cookbook for those with food allergies.......2007-05-15

This book has a ton of recipes. I've only tried a few, but they were each very good. My 2 year old son is allergic to eggs, milk and peanuts so this seemed like the perfect cookbook for us. The only problem is that he's at a very picky age right now, so most of these recipes he won't have anything to do with at this time. Some desserts and cookies are all I've made so far that he'll eat. I think as the years go by we'll get a lot more use out of this book.

5 out of 5 stars Wonderful Book!.......2007-05-13

This cookbook is absolutely fantastic! It's so nice to have a cookbook that suits my daughter's dietary restrictions exactly, without having to substitute this or that. So far, I've tried only a handful of recipes, mostly cakes and cookies, but all were easy to make and delicious! Highly recommended!

4 out of 5 stars Helpful for an Allergic Family.......2007-05-10

This cookbook has been helpful when looking for ideas to serve my family and guests.

5 out of 5 stars BEST ALLERGY COOKBOOK!.......2007-04-12

This cookbook has made such a difference in my life! I am an allergy mom that was in desperate need to feed my son who has severe egg and peanut allergies. It is so nice to have such a variety of foods, dinner, breakfast, snack, desserts, etc that my sons can enjoy that are completely safe. And totally yummy! This Cookbook is the best out there!

Book Description

The connection between inflammation and heart disease, arthritis, and other chronic ailments has become increasingly clear. Many food allergies and poor dietary choices over stimulate the immune system and cause inflammatory responses that erode the body’s wellness and pave the path for ill health. Based on her naturopathic practice, Jessica Black has devised a complete program for how to eat and cook to minimize and even prevent inflammation and its consequences. The first part of the book explains the benefits of the anti-inflammatory diet with an accessible discussion of the science behind it. The second half contains 108 recipes. The author offers many substitution suggestions and includes a healthy ingredient tip with each recipe. Most of the dishes can be prepared quickly and easily by even novice cooks. A week of sample menus for summer months and another for winter are included, as well as a substitutions chart, allowing readers to modify their favorite recipes to increase their healing potential.

Customer Reviews:

5 out of 5 stars An excellent, health-promoting guide .......2007-08-04

Naturopathic physician Jessica K. Black presents The Anti-Inflammation Diet and Recipe Book, a guide offering 125 recipes, lists of foods to eat and foods to avoid, and a full week of sample menus for summer and winter months. Written especially for individuals attempting to follow an anti-inflammatory diet who have trouble finding recipes to use, The Anti-Inflammation Diet and Recipe Book offers entrees, breakfasts, salads, soups, and desserts that exclude common allergens and inflammation-aggravators such as fried foods, foods with hydrogenated oils, peanuts and peanut products, alcohol, juice, caffeinated teas and sodas, potatoes, tomatoes, wheat products, corn, sugar, pork, citrus fruits and more. Chapters also recommend foods that should be prominently featured in an anti-inflammation diet, such as pineapple (due to its content of bromelain), most fruits and vegetables, garlic, ginger, tumeric, flaxseed oil, and others. An excellent, health-promoting guide especially recommended for anyone coping with arthritis or other inflammatory illnesses.

5 out of 5 stars Buy this book!.......2007-05-30

One of the most difficult challenges I have faced when suggesting to my patients on dietary modifications is offering patients alternatives to their inflammatory menus. Not only has Dr. Black provided easy to prepare and tasty recipes, but the ingredients serve their purpose: they favor pathways that decrease inflammation. Hence patients with intensely inflammatory conditions, such as rhumatoid arthritis, have been able to experience relief, thanks to this cookbook. It offers recipes that appeal to kids and provides ample educational material for patients to resource. It is the ideal cookbook for all.

5 out of 5 stars A Wonderful Resource .......2007-05-19

This book has been a powerful resource in my practice for many years dating back to its original self-published version. I have found that foremost in the process of restoring a persons health is inflammatory reduction. It is this inflammation which often initiates and propogates a disease process that eventually creates pathology. Dr. Black's book is an essential tool for implementing my recommended dietary changes on a practical level. It is full of helpful educational material and ripe with a multitude of savory and delicious recipes. This book will give you all the necessary information to begin a positive lifestyle change which you can then apply to your own cullinary creations. For those people looking to restore health naturally, Dr. Black's book will not disappoint.

5 out of 5 stars My patients LOVE this Book!.......2007-05-18

One of the most difficult aspects of nutritional counseling is helping people make dietary changes. This book makes these transitions much easier by providing reasons for reducing inflammation in the body, nutritional facts about common foods which may cause inflammation --and best of all--tasty recipes and helpful hints.

My patients LOVE this book and it has become an important part of the dietary portion of my "Simple Steps to Wellness" programs.

Dr. Karen Benton, Naturopathic Physician

5 out of 5 stars Great Resource!!.......2007-05-18

I have been using the dietary recommendations outlined in Dr. Black's book for a number of years with my patients. It is so helpful to have a comprehensive cookbook that explains why people should eat this way and how they should do it! It really has made dietary changes less overwhelming for people that may have been intimidated to make big shifts in the way that they eat. I would highly recommend this book to anyone who is interested in addressing their health concerns from a foundational level.

5 out of 5 stars Skeptical at First.......2007-06-02

My son was diagnosed last year through his elementary school with ADHD and they pushed medication however I was not about to go that route until I had dissolved every other possible alternative. I purchased the Feingold Diet cookbook and surprisingly the recipies are delicious! I was skeptical at first because my son is 6 years old and I was afraid he would put up an argument to eat these foods but to my surprise we all have liked the recipes we have tried. We have only been on the diet for about 4 weeks in which we have seen some changes in behavior (I think the first couple weeks he was rebelling about having to be on a "special diet" plus when he visits his dad everyother weekend, he has gotten food not approved on the diet which sets us back a couple days). Also to our surprise, my husband has experienced positive changes in his energy level and overall general health. You are what you eat!

5 out of 5 stars Lifesaver Book.......2005-09-08

In the late '70s, an earlier version of this book changed my two-year old daughters life forever. I believe that then the title phrase was "hypoactive" instead of "hyperactive". I had an adorable, sweet, little girl that would suddenly go into uncontrollable rages. A neighbor happened to be watching the Phil Donahue show and told me about the cookbook that was discussed on the show that day. I bought it on Tuesday and by Saturday I had a new child. I explained to her that certain things were poison to her and that sugar would make her have what we called a "sugar fit". She, at age 2 1/2, became a helper in the process and would refuse any candy, etc. that was offered to her. She's now age 30, and still is careful about intake, staying aware of how foods affect her. She has never, ever had another "sugar fit". I'm looking for the book again for my son's little boy - age 2 1/2 - who has the same symptoms.

5 out of 5 stars The Feingold Cookbook for Hyperactive Children.......2000-11-11

I have followed this cookbooks recommendations since 1983. My son is ADHD and my husband always said if you can't read it don't eat it. It definitely made a differnce in my sons actions and he is now graduating from college and we all still eat much healthier than we would have. The recipes in this cookbook are delicious and I would like to give atleast two of these for Christmas presents and I need one l for myself since whoever borrowed it never returned it to me. They must of liked it too.

5 out of 5 stars This is a life changing book!.......2000-02-09

For parents of children who have been labled ODD, ADHD and other hyperactive and behaivor disorders, this book could change your lives. Dr. Fiendgold has come under critism for his ideas concerning the effect of cemicals in food and their effect on an individuals' nervious systems. When I decided to try Dr. Fiengold's diet I was desperite to help my ODD son and wanted to help him without putting him on drugs. Our whole family tried the diet for six weeks and the results were amazing! Our son is now 20 and a straight A student at the Univerisity of Wisconsin on a music scholarship! He still has to follow Dr. Feingold's guidelines for his diet, but he is a very delightful and productive young man today and has never been on drugs to control his behavior! Thank you DR. Fiengold! We love you!

5 out of 5 stars Whole Food Allergy Cookbook.......2007-10-05

I wish I had discovered this book long ago. I am allergic to peanuts, eggs and corn. Corn is the hardest as it is in everything as citric acid, dextrose, iodized salt, xanthium gum, etc. I only buy ingredients and this book works for me. I'm giving away all the other allergy cookbooks I've bought over the years.

1 out of 5 stars Not so helpful..........2007-09-24

I was dissapointed as the baking recipies all need egg replacer. Otherwise the recipies are the same as what I have in an everyday cookbook.

The brand's being mentioned also aren't readily available in Australia so it is a bit hit and miss with the quantities of replacements.

5 out of 5 stars Meals for food allergic kids that even adults will want to eat!!.......2007-09-19

We've made several completely delicious foods from this cookbook - Cauliflower Soup, Orange Zucchini Bread, Banana Bread, Applesauce Oat Raisin Muffins, Shepherd's Pie, Pork Medallions with Raisin Sauce, Granola Bars, and so on. I made notes in the margins of some of the recipes to adjust them for my children's specific tastes (basically, more sweetener in the baked goods), but these are recipes that I enjoy making and that make me feel better about my daughter's food allergies, i.e., "She's not going to be deprived of delicious meals when she is an adult! Look at all this amazing stuff she can eat!"

So thank you, Cybele, for sharing your cooking expertise with the world of food allergic people.

5 out of 5 stars A cookbook I am actually using!.......2007-08-13

While I have been smitten by many cookbooks, each one giving me that initial pang of excitement as I scan the wonderful dishes that could be, there have only been a few that have gone from first viewing to the kitchen within 24 hours. In fact, it had been a long while since I had even tried a new cookbook recipe. Yet, The Whole Foods Allergy Cookbook was in my kitchen, already getting into the line of fire (I'm not the tidiest cook) by the day after it arrived. As it happened, there were recipes so simple, so undaunting that I had everything on hand and ready to go.

I loved the casual tone of this cookbook, and the unpretentious way Cybele Pascal approached recipes that I may have previously found intimidating. She brings a gourmet touch to the world of food allergies that I had yet to see. However, her recipes are surprisingly easy to master, and some are merely great ideas. I was immediately inspired by her Chocolate Covered Raisins recipe, so incredibly simple to make, yet something I had never thought to try at home. My husband adored the Saffron Rice, which offered a delicate touch to our rather meat-heavy dinner.

As the week progressed, I stepped it up a notch, trialing Raf's Cuban Rice and Beans, the Penne with Cauliflower and Olives, the Falafels (which my husband loved!) and even the Creamy Avocado Chicken Salad (I ran out of lettuce and bread, serving mine over quinoa). With so many "doable" recipes that sound good from the get-go, I have no doubt that this cookbook will continue to see some mileage.

Every recipe in the Whole Foods Allergy Cookbook is free of the top eight allergens, including eggs, milk, wheat (some recipes do contain gluten in the form of spelt, barley, etc.), tree nuts, and peanuts. There is no need to search through to figure out which recipes work and which don't as with some supposed allergy cookbooks. In fact, Cybele even provides "reverse conversions," telling you how to add back an allergen should it not be a problem for you. The focus is on real food, using whole foods whenever possible, or calling for only "lightly-processed" foods, if you will. To make it a one-stop shop, the cookbook covers recipes for every meal, snacks, and desserts.

If there were any comment I could make for improvement, it would be to add more specifics and tips. While her recipes are quite friendly to even novice cooks, I did find myself asking questions at a few points. When making the black beans, do I drain the cans or just dump them in? Could I use dried? How much would ½ head of cauliflower be? At my local grocer the conventional head was about half the size of the organic. Also, it is a pet peeve of mine when food processors are called for with no alternative method. One of the recipes I attempted in the blender with absolutely no success, returning to a hand method. This would have been nice to know in advance before I dirtied an appliance. In the end though, I did end up with some pretty tasty dishes!

There are many cookbooks I have liked, some I have loved, okay even a few that I have hated, but Cybele Pascal actually got me back in the kitchen. Now that is a testimony in itself.

5 out of 5 stars So, so helpful for gluten free, dairy free cooking.......2007-08-08

I recently used the "elimination diet" for my family eliminating all of the more common allergens from our diet and trialing them back in to determine food intolerances for each member. This cookbook was critically important in my ability to cook for my family. My kids actually ate the desserts, I was able to substitute a gluten free cake for so many preschool functions - and I discovered the existence of "egg replacer"! The recipes are tasty and I will continue to use this book even though the diet is over and we could add a lot of food back in to our daily routine.

5 out of 5 stars Allergy Self-Help Cookbook.......2007-06-06

I truly thought my doctor was nuts when she asked me to try eating the "elimination/allergy diet"...no wheat, dairy, egg, corn or sugar. This cookbook saved me totally. Good recipes and a great springboard for developing the lifestyle to feel better. It is also called an "anti-inflammatory diet", and has helped my fibromyalgia significantly. Money very well spent. Highly recommended for those trying to change eating habits, feel better or lose weight.

1 out of 5 stars Misleading Name for your book.......2007-05-13

I was VERY disappointed when I received your book, the title indicates that the recipes are wheat-free....etc. In actuality some of the recipes are wheat free, some are milk-free, some are egg free, some are corn-free, etc. I was (past-tense) excited when I saw your book, as my daughter and I have to avoid these ingredients plus many more and I was tired of "making up" recipes on my own, I thought finally someone has done the footwork for me, however I was sadly mistaken, I have to modify theses recipes as much as my own, so I'll continue on my own.

5 out of 5 stars Great for multiple food allergies.......2007-02-19

I am allergic to 11 different foods. This is the best book I have found so far to deal with MULTIPLE food allergies. This is not a book for the person with one or two allergies. This is the book for those of us who have to read every label every time. This book is worth the investment for those of us who really have a very difficult time eating at any restaurant and really need to cook at home. The recipies are diverse and include possible subsitutions and are tasty too!

5 out of 5 stars Very helpful.......2007-01-10

This book has alot of helpful information as a beginner with the food allergen subject.

3 out of 5 stars Best for food 'sensitivities' and rotation diets.......2007-01-02

This is a good cookbook, with many excellent ideas and some very interesting information. Unfortunately, Marjorie's desire to help every special dieter creates a book without a specific focus. She attempts to cover all types of food allergies (milk, egg, soy), intolerances (gluten, milk), sensitivities (including a rotary diet plan with food families chart and alternatives for things as obscure as black pepper), and even addresses issues on environmental allergens and toxins. No easy feat I must admit.

If your primary concern is food `sensitivities', this cookbook appears to be an excellent resource for rotary / rotation diets. I would recommend it for this. Yet, the subtitle declares `free of ALL common food allergens.' This is a big promise, and regrettably not one that it kept. Here are the author's claims:

Gluten-Free - There are many gluten-free recipes (breads, cookies, etc.) included and even a great section that explains all of the different flours and how they can be used. However, several of the recipes call for spelt, kamut, or oat products, which all contain gluten.
Wheat-Free - I did not view any recipes that contained wheat specifically, but I believe spelt and kamut are in the wheat family and a problem for many who have an allergy to wheat.
Yeast-Free - Of course, the quick breads, cookies, and other common dishes are yeast-free, but the few `yeast' bread recipes that are included did call for yeast.
Milk-Free - Many of the recipes call for goat milk, goat cheese, sheep milk, soy cheese (not specifying that most soy cheeses contain milk protein), and/or feta cheese (from a cow). The author fails to point out that most people who have a cow's milk allergy will also have a problem with goat milk, and some may even be more allergic.
Sugar-Free - This book is not suitable for someone who has sugar-free needs. Agave nectar, maple syrup, date sugar, and honey are required in many of the recipes. She does include a nice section explaining these natural sweeteners.
Soy-Free - I spotted soymilk, tofu, miso, and tamari sauce throughout this book.
Egg-Free - The quick breads are made with a natural alternative, and the author offers many great suggestions for replacing eggs in recipes. Nonetheless, a few egg-filled recipes did sneak in, including Macaroons and Eggs Florentine!
Corn-Free - I didn't spot any corn in this cookbook, though I am not certain how common of an allergen this is.

Other Diet Comments:
Vegan - One reviewer said this book is great for vegans, but I highly disagree. I don't think any vegan would want a cookbook loaded with recipes for turkey, chicken, pork, fish, venison, lamb, and even rabbit, simply because it has some good vegan recipes in it. Most cookbooks do.
Nuts - Marjorie does not claim that this book is nut-free, but she does state `free of all common allergens.' Tree nuts are one of the top 8 food allergens, but this book is loaded with nut-filled recipes. It did appear to be peanut-free though.
Fish & Shellfish - This is also a top 8 offender. As it is easy to prepare bread, dessert, rice, and other dishes without these ingredients, the book is mostly fish free, but there are specific fish recipes.

For those who have multiple allergies (such as the dreaded milk, egg, nut combo), picking and choosing recipes from this cookbook, could be a chore. I have had this cookbook for a couple of years now, but have only trialed a few of the recipes (with decent results). I would like to sample more, but I have found it too time-consuming to locate recipes that are suitable to my diet, that sound good at the moment, and that I have the ingredients on hand for.

The Allergy Self-Help Cookbook offers many great concepts and what sound to be some delicious recipes. If the author could either break this rather large collection (yes, I think there are 350!) into smaller focused cookbooks, create an index for the book that tells which recipes are specifically gluten-free, soy-free, milk-free, etc., or simply include allergy information after the title for each recipe (so that you didn't need to scan all of the ingredients), it would be a huge improvement.

5 out of 5 stars First two recipes I made were outstanding....planning on making them all!.......2007-10-07

So far, I've baked the blueberry muffins and the lemon poppy seed loaf. Both were totally INDISTINGUISHABLE from baked goods that contain wheat. They were wonderful. I'll be trying every recipe in this book in the coming months!

4 months ago, my wife found out she is gluten-intolerant. This was quite a dilemma as I'm the cook in the famly and wanted her to be able to eat baked goods. So, I purchased this book to see if I could find something baked that would satsify her. Admittedly, I'm a bit of a food snob...and so, I had few expectations. After all, how could you make a pie, muffins, bread, scones, cookies, brownies, or banana bread without flour?

Well the book showed me that those intolerant to gluten can eat gluten-free products that are amazing. No more supermarket loafs of gluten free bread that are heavy as bricks. No more gluten-free cakes that feel like they have sand mixed in. This book won't let you down (FYI...in recipes calling for brown rice flour, I substituted very finely ground white rice flour that I buy from an Asian grocery store.)

5 out of 5 stars Buy this book !!!!! You will love it........2007-10-03

This is by far the most wonderful gluten free cookbook that I own. I have never owned another cookbook (gluten containing or gluten free) that consistently produces such fantastic results. I think one of the reasons why the recipes work so well is that the author gives very specific instructions which results in perfect tasting baked goods. Annalise Roberts is truly a genius. Her flour combinations are the very best I've ever used- no graininess whatsoever. Plus, the texture of her baked goods is wonderful as well- nothing falls apart. We've tried many recipes, and everything we've tried has been truly scrumptuous. So much so, that we often get requests from friends (who eat gluten) for our recipes which makes me laugh. Thanks to the author for sharing her wonderful recipes.

5 out of 5 stars Buy this Book.......2007-09-19

The recipes I have used from this book produce tender, delicious baked goods without a hint of grainy, ricey texture found in even the best store-bought gluten-free products. Absolutely delicious and first rate ideas--my family has raved over everything I've produced from these recipes. If you've been suffering with crumby bread (pun intended), get this book.

4 out of 5 stars Gluten-free, but NOT Sugar-free !!!.......2007-09-01

First of all I have to say that the cheesecake crust is perfect - her baking flour combinations are the best I've encountered. But these recipes are SO sugar-laden and SO rich, that if I didn't further modify them they wouldn't work for my family. All of the white sugar in the cheesecake, for example, can be substituted with less than half the amount of agave or honey. And I also cut the full fat creamcheese called for by using lite instead, combined with tofu - and it STILL tasted incredible. I can't wait to try more of these recipes - modifying them as I go, of course.

5 out of 5 stars A Life Saver.......2007-08-25

This cookbook was a life saver for my family. We had to put the whole family on a gluten free diet because our 18 year old son was diagnosed three years ago and since then our daughter. This cookbook of which I have personally bought 6 copies and given out to friends as gifts. This is the easiest and the tastiest recipes I have found. My family loves everything I have made and have learned to cook gluten free for themselves by using this cookbook. I have personally talked with Annalise Roberts on the phone and she is a wonderful help. Thank you, Annalise!

4 out of 5 stars Decent........2007-07-19

I like this cookbook. It is not quite as restrictive as some other candida diets, so that should be kept in mind for those searching for a way to conquer candida. Also, it is a cookbook, not a health book, so it does not go into great depth about candida, though it does offer some useful information. I would not make this my primary reference book on candida. I like the book for its simple, healthy whole foods recipes, though.

2 out of 5 stars Not So Accurate.......2007-01-05

This book really didn't help me much. The foods that are on the "allow" list are in actuality NOT allowed and can really set a candida patient back on their quest for health. I would not recommend to someone that is truly fighting this disease.

3 out of 5 stars Candidiasis ad infinitum.......2006-08-12

Of the large numbers of books on this subject, this one offered little new information. I did see a few recipes that appealed, but could have easily skipped this one.

5 out of 5 stars Candidia Albican Yeast-Free Cookbook, The: How Good Nutrition Can Help Fight the Epidemic of Yeast-Related Diseases.......2005-08-24

This book has helped answer many of my questions regarding Candida and has explained what I can expect as I go through the healing process. It is very informative in relation to diet and has good recipes to make the plain food we have to eat a little more exciting.

4 out of 5 stars Easy Candida Recipes.......2001-03-07

I thought this book was very helpful. What I liked most was the "rainbow meal plan" which listed the vegetables and meat combinations you could have on this diet at every meal. Because there are so many vegetables/meat combinations to choose from you shouldn't get bored. The plan also recommends steaming for all your food so it's easy to prepare - all you need is water, a pot and a steamer. The downside is you do have to chop a lot of veggies - however, it's worth it! I also had a hard time with another recipe which called for "Homemade Potassium Baking Powder" pg.83. In the recipe the book says to use potassium bicarbonate which can be ordered from a pharmacy. However, when I went to pick up my bicarbonate it had a skull and cross bone on the bottle and was rated somewhat toxic. When I talked to the pharmacist he said I needed to know what percentage of the potassium bicarbonate was called for because potassium bicarbonate is a strong base. Anyway I had no way to get that information so I skipped that recipe. So obviously the book should be more detailed about things like that. Yet even with this snaffoo I thought the book was helpful and still use most recipes.

Book Description

Delicious recipes for the gluten-intolerant.

Gluten is primarily found in wheat, rye, barley and oats. A recent study suggests that one in 250 Americans cannot tolerate gluten. Many suffer from Celiac disease, a digestive disorder that damages the small intestine and interferes with the absorption of nutrients from food. Many others also suffer from food allergies that trigger a wheat or gluten sensitivity. Quite often, the only treatment is a gluten-free diet.

The Best Gluten-Free Family Cookbook features sensational recipes for baked goods, desserts, and main meals -- foods that are typically avoided in gluten-free diets. Here is a sampling of the appetizing recipes:

Accompanying each recipe is a wealth of tips and techniques for novice and experienced cooks alike.

3 out of 5 stars very nice book.......2007-01-10

I briefly looked through this book and then I returned it. The recipes look great. However, I live in a very rural area and have trouble getting all the different flours needed for the recipes.

5 out of 5 stars The Best Gluten-Free Family Cookbook.......2007-01-06

If you are gluten intolerant or wheat sensitive, this is a "must-have" cookbook. I have tried quite a few of the recipes. In almost all cases, the results were a superior, tasty product. In fact, my family, which is not gluten intolerant, prefers the muffin and waffle recipes over traditional wheat products. As a final bonus, the authors have incorporated higher fibre and nutrient dense grains to guard against nutrional deficiencies.

5 out of 5 stars The best for machine bread!.......2006-10-14

I love this book! I needed a bread book. When I decided to omit wheat and gluten, I ordered several cookbooks. My main problem was baking a loaf of bread. I got the packaged mixes, but the taste was all wrong. I tried several recipes on line, but they were written for hand kneading and I have a bread machine lifestyle.
This book lists two recipes for each bread, one for hand kneading and one for bread machine baking! At last! I also liked the clear large print. Nix the "Gluten Free Gourmet Bakes Bread" by Bette Hagman. I listed it to resell on Amazon. The layout and small print makes recipes hard to read and execute, albeit the recipes are good in themselves. "Wheat Free Gluten Free Reduced Calorie Cookbook"'s bread recipes are scattered throughout the book, not chaptered, which was annoying.I liked the soda bread recipes but kept it only because of its easy make, low fat, international gourmet general recipes, not the breads. I also liked a pastry/bread/cake book "Gluten Free Baking Classics" by Annalise Roberts, the recipes were elegant but easy with baking tips (which flour brands are more highly sifted to give a lighter cake). I have been adapting recipes, and use freshly ground flax seed meal for bran and egg whites instead of whole eggs for lower cholesterol breads. Instead of premixing flour blends in cannisters as is suggested, I individually measure one batch plastic bags, so all I have to do is add the wet ingredients and yeast.
Overall, the two books, "Gluten-FreeBaking Classics" by Roberts and "The Best Gluten Free Family Cookbook" by Washburn & Butt are the only ones I need.

5 out of 5 stars Its title says it all - "The Best".......2006-04-03

I can't believe no one has written a review for this excellent cookbook yet. I just finished making the Banana-Pineapple Muffin recipe this morning and couldn't wait to taste them hot out of the oven. I have made several recipes from the authors' previous cookbook ("125 Best Gluten-Free Recipes"), so I know how good the recipes can be. But I was still surprised at how "normal" the muffins looked and tasted. The texture looks like they could have been made with regular flour instead brown rice flour, sorghum, and flaxmeal! I've been baking gluten-free breads and muffins for a year since being diagnosed with Celiac Disease and I have had the most success when using the Washburn & Butt cookbooks. I especially like their bread machine recipes--always tastey. My favorite so far is "Henk's Flax Bread" which tasted like whole wheat bread. I can't recommend this book enough for beginners. And besides the bread recipes, there are loads of recipes for all kinds of meals you can make for the entire family.

5 out of 5 stars Wonderful gluten free cooking.......2007-01-06

We love Bette Hagman's cookbooks. My mom bought her first one years ago, and it made a huge difference in the quality of her recipes. When I want a new cookbook for gluten free foods, I look for Bette's offerings first.

5 out of 5 stars the bible on GF cooking.......2006-07-12

This is the bible when it comes to baking gluten-free. Long ago, before the Internet was publicly available, people had to find information anyway they could on living GF and coeliac disease. When this book was first published in the early to mid-1990s, I thought I had died and gone to heaven. Before this book, I had a few recipes from the Celiac Society of America (CSA) and the Gluten-Intolerance Group (GIG), and a couple of really bad cookbooks from the UK (which usually relied on GF flour (wheat flour with the gluten washed) that wasn't readily available in the US and didn't bake all that well. The recipes in all of Bette Hagman's books are great -- staples that you longed for. Lentil chocolate cake -- even the non-coeliacs will want some!

5 out of 5 stars The original and still the most comprehensive.......2006-07-10

I have celiac disease, which is essentially an allergy to wheat protein, and I've been GF for 5 years now. (Why does that sound like I'm at an AA meeting?) Bette Hagman's books are the first couple of books that I got, and they're pretty good. *GFG-Revised* is a really great book with a lot of the staples that you need in there. The initial couple of chapters about what you can and can't eat are worth the price of the book (sure, you can't have wheat, rye, or barley, but how about quinoa, teff, spelt, or millet?) (Answers: yes, yes, no, yes.) but the recipes are what you should buy it for. The "Revised" edition has been updated with the new "four bean flour" blend.

My favorites:

Corn muffins - p86 - uses a polenta technique to be utterly different than cornbread
Pumpkin bread - p76 - fabulous.
Sandwich bread - p55 - the closest thing to, well, you know.
Muffins - p77 - done in less than an hour and tasty-tasty-tasty.

I was disappointed in this book. I guess I expected more than meatloaf, cheese balls, tuna casserole and beef stroganoff...

There are a few gems, but overall, not what I would consider "gourmet". Ninety percent of these recipes I never would have eaten before being diagnosed and I'm certainly not going to eat them now...
