I was under the impression that this book would focus on the author's triumphs over adversity (i.e. dyslexia, racism, etc.). Although the book did touch on the aforementioned themes to a certain degree, I felt that its central focus was steeped in some of the most prosaic, banal details of Villasenor's childhood. The author's writing has a way of making the most tragic experiences of Villasenor's life seem incidental. The majority of children have stories about growing up but I am not sure that they are all noteworthy enough to be chronicled in a memoir. Likewise, I think that Villasenora could have broadened his work's appeal if he would have omitted several lackluster childhood experiences. I started the book with an open mind and with each page I hoped that it would get better. Regrettably, the book did not meet my expectations.

I've read "Rain of Gold"(which I also recommend) and found "Burro Genius" to be just as wonderful. I recommend this book to everyone. Especially anyone of Mexican/American descent. If you've never read a book of Victor's, now's the time!

Excellency is the only word that describes this amazing tale! It is not Victor's fantasy but Victor's life in light of his dreams and struggles to be who he is. The Villaseñor's story is still the story of many inmmigrants, from many countries and many races. It is a redemptive experience that helps us to to keep on with life, no matter how hard it might be or turn. In a world where everything is "made" and taken for granted, Victor's creativity and desire to suceed over its limitations, emerges as a clear example for those who want to give up. It is simply remarkable! It is possible!

Victor's storytelling magic lies in his very natural ability to make you feel as if you are 'right there' as an observor or silent participant in the experiences and adventures he is describing. His stories are treasures because they take his Latino readers back to their own lives in this country AND they offer non-Latino readers a golden opportunity to experience life as seen through the eyes of an immigrant. This particular book, BURRO GENIUS, is just such a story. The key to understanding and feeling what Victor writes about is to try and 'check your cultural baggage at the door' and experience the stories with a clean canvas.

I ordered this book thinking that it was written in English as are many of Villasenor's books. I received this book and realized that it was totally in Spanish. There was no indication from your review that it was in Spanish, therefore it was a total surprise. When I returned the book, I asked, in writing, for the English version, but did not receive anything more than a refund.

I LOVE this cookbook! My mother purchased the first edition of this book, many, many years ago (1960's???), and has been using it ever since -- both for entertaining large groups and for special family occasions (the Lasagna, stuffed mushrooms, and Beef Burgundy are always impressive, and are just some of our favorites...) The recipes are easy (never compromising the "elegance") and full of flavor to impress anyone. I've recently moved out of state, and borrowing Mom's book is no longer an option... At age 46, I'm purchasing the new edition, and starting a "new" tradition of "Elegant" entertaining, with my own family and special guests.

Cookbook authors Marion Burros and Lois Levine, who co-authored the original Elegant But Easy cookbook in 1960, team up once again, adapting some of their most popular recipes from the past to today's changing tastes. Fifty recipes from the earlier edition are included here, though all these recipes have been purged of MSG, canned soups, and most convenience foods. Butter, cream, eggs, and cheese are used in reduced quantities, and wherever the authors have been able to substitute low fat for high fat, they do so. This cookbook, however, is not about low-calorie or low-fat cooking. The goal is "pure, simple, fresh-tasting" food, and that sometimes means lots of eggs and fat-based dairy products.

Two of the most appealing sections are Appetizers and Hors d'oeuvres, but these are also sections where those on low-fat diets need to pay attention. Sour cream, Roquefort and cream cheeses, and phyllo dough (brushed with 1 - 3 sticks of melted butter) are heavily featured in the appetizers. In the Hors D'Oeuvres section, however, Hummus, Black Bean Dip, Pickled Shrimp, and Caponata (served on bruschetta) offer great low-fat alternatives to cheese and cream-based spreads.

Imaginative chicken recipes--Chicken Gloriosa (with pineapple, cranberries, and tangerines), Grilled Chicken with Black Bean and Mango Salsa, and Curried Chicken and Apples are delicious and relatively low-fat, with turkey or chicken sausage replacing pork sausage in several recipes. Meat recipes, once the biggest section of Elegant But Easy, have been reduced to fifteen recipes, with a delectable Lasagna calling for turkey sausage, lowfat ricotta, a sauce of red wine and tomatoes, and baked eggplant. Desserts range from simple fruit desserts to a Triple Chocolate Mocha Madness Cake, a complex recipe which takes four full pages of instructions. And for those who loved the Plum Torte in the earlier book, it's here, along with a lower fat alternative, just as good.

The authors always tell how far in advance each recipe can be prepared, how long it can be refrigerated, and whether it can be frozen and for how long. An extensive list of mail order addresses for some of the less common ingredients is included at the beginning, and "Ten Menus with [Step-by-Step] Countdown Game Plans" are included at the end. In short, this cookbook tries to be as "elegant but easy" as the 1960 edition, and it succeeds--as long as you recognize that "lower fat" is not the same as "low-fat." Mary Whipple

5 out of 5 stars Because of this book, i was a star host again last night!.......2005-05-29

Last night sit down dinner party for 13 people was so stress free and everyone loved the food. I have just started to enjoy entertaining because of this book.

This book gives me a lot of confidence to entertain because
1) The food recipes are delicious - guaranteed to impress
2) It's easy to make.
3) I don't get stressed on the day of the party because the book gives me the indication on what do 1 day, 2 days, 3 days in advance. What I do on the day is the final step whether to put the food in the oven, heat in the microwave, mix/add the last ingredients.

My all times favorites are Lasange (with eggplants), Chicken Gloriosa, Grilled Salmon, Tabouleh Salad and Brie& Pesto.

My only reservation is that for someone who lives overseas, some ingredients are hard to find. I also think that there are a few too many phylos recipes in the book hor.

I still give it 5 star because of the value it has given me. Everybody who thinks that they're afraid to entertain should definitely buy this book and start entertaining next week!

I wouldn't have bothered writing a review but after I saw the one that said the person had bought the first book, written years ago and didn't like it, I had to respond. Why is there a review of a book that is different from the one that is now available? That's dirty pool.
I have both the original book and the current book and they are entirely different.
The idea of cooking ahead and refrigerating or freezing is excellent. But more important, the food is delicious.
If you were being fair you would remove that Nov, 2003 review. Sounds like someone who has his or her nose out of joint

I've found the recipes here generally simple and easy to make ahead. Mrs. Burros is very clear in her instructions (although I had some problems with a chocolate roll)and the taste combinations are very good. As this book is an update of her original there are a number of amusing asides on changes in food ingredients and cooking styles between the two editions. Not quite a "must-have" but useful.

    5 out of 5 stars Excellent Recipes for Non-Foodies.......2005-04-21

    `Cooking for Comfort' is by New York Times food columnist Marian Burros, who is part of a pretty distinguished heritage beginning with Craig Claiborne and Pierre Franey, continuing with Mimi Sheraton and Ruth Reichl and visiting columnist extraordinary R. W. Appel. With Ms. Burros, the likes of Mark Bittman and Amanda Hesser, all writers of notable columns and cookbooks hold the current standard high.

    There may be a sense in which the limelight for culinary journalism has passed from the New York Times' printed word to the hotter TV Food Network with its stable of star hosts. In most direct competition to Ms. Burros would probably be `Gourmet's' Sara Moulton, Ina Garten, or the spectacularly prolific Rachael Ray. What is unfortunate is that a cursory look at this book's title gives the impression that it is addressing the same interests as Ms. Ray's '30 Minute Meal' rubric. The fact that Rachael actually wrote a book entitled `Comfort Food' strengthens this association. This is not, however, the case. Ms. Burros has created a very special type of cooking perfectly evident when one pays close attention to the title. Her point is not to give us a book of recipes for comfort food, but a book of recipes that are comforting to make.

    It is not too hard to appreciate that a dish that appeals to none of your family will not be too comforting to make. Therefore, almost all of the classic `comfort foods' will also be comfortable to make. That is, a dishes popularity will contribute to the comfort one experiences in the act of making it. A second characteristic of foods which are comforting to make are those which require a fair amount of effort, producing a dish in which one can take great pride in having successfully made this food. It follows from this that these recipes are NOT about quick cooking. A third characteristic I gather from Ms. Burros' selection of recipes is that the dishes are either familiar to American amateur cooks (blueberry pancakes, meat loaf, mashed potatoes, spaghetti with marinara sauce) OR the dishes are interesting selections from world cuisines (Spanish tortilla, Onion soup, Greek Salad, polenta).

    In fact, as I look through the list of recipes, I get a strong sense of similarity between this book and two recent `Most Famous Recipe' books, `the greatest dishes!, around the world in 80 recipes' by Anya von Bremzen and `The Cook's Canon, 101 Classic Recipes Everyone Should Know' by Raymond Sokolov. Oddly, I think that while these two books are great for foodies, Ms. Burros' book is specifically written for non-foodies. In this regard, she does share some common ground with the prolific Ms. Ray. Another way in which they differ, however, is that Ms. Burros' directions are much more meticulous, with lots of helpful hints on technique, serving, and wine accompaniments.

    I think Ms. Burros' biggest problem, aside from the perceived or actual competition from both Food Network luminaries and New York Times colleagues is that her subject is so ordinary. Why in the world do I want to pay even $20 for a book of 100 recipes, 70% of which can be found among the 4500 recipes in the `Joy of Cooking' or the 2500 recipes in `James Beard's American Cookery'. Any American who cooks probably owns one or the other of these two volumes. In the end, it is probably her one big idea that makes the book interesting. The book is important because it can inspire one to get more enjoyment from your cooking and it gives recipes to help you do that.

    Overall, I thing the selection of recipes is excellent, making this a great book for those who endorse that other great non-foodie doctrine of the importance of finding `a few good recipes' and learning them well and doing them well. One problem I believe most amateur food enthusiasts may experience is that they may not appreciate the pleasure in repeating a recipe and doing it well because you have done it before and have gotten all the kinks out of your technique. They are much more interested in tracking down and trying a new Thai recipe using lemon grass or galangal rather than making that same old James Beard London Broil recipe again, regardless of how good it tastes or how easy it is to make.

    Ms. Burros' recipe for chili, for example, may not be quite as elaborate as a prize winning recipe reported by Robb Walsh, it is, I believe, a much tastier chili than the Pierre Franey recipe I did for many years before the foodie bug got me and I saw other approaches which used cubed rather than ground meat. Just one example of how well thought out is Ms. Burros' presentation of these recipes can be found in her suggestion to adjust the seasoning of the chili after it has been retrieved from the deep freeze. Another insider's tip is to check the heat in the Jalapenos to see if more or less are needed to suit your taste.

    If I were to offer any ideas for Ms. Burros' next book, I would suggest she leave out the food processor and any other high end equipment from her recipe procedures. As I believe her primary audience is the occasional cook, I suspect people in this group may not have $300 food processors. And, if they do have them, they probably don't use them often enough to get the best use out of them. At the very least, I would offer an alternative to the food processor method.

    I would also leave off or improve the list of sources in the back of the book. I have to love a list that cites Lou DiPalo and his Manhatten Little Italy store, but DiPalo's is best known for its fresh mozzarella and ricotta, for which Ms. Burros gives a different source. You can get good Parmigiano-Reggiano in any megamart.

    Strongly recommended for non-foodie weekend cooks.

    Cooking for Comfort by Marian Burros is one of the most well thought out, incredibly written cookbooks I have ever read, cooked from or salivated over! Typically the word "Comfort Food" strikes up the notion of large amounts of fat, not in this cookbook. While you can find hints of luxurious fattening recipes scattered throughout her cookbook-- it is for all the right reasons. These recipes conjure up memories of grandma, mom, or maybe your Uncle Bill who would lovingly create homey comfort foods for you as a child. Her trip down memory lane about particular recipes reminded me of my favorites as well. As a native Tennessean I always thought that pimiento cheese spread was a distant cousin of cheese whiz not something you could make in your own kitchen!     These are great traditional recipes that people always yearn for and like. Start at the front with Blueberry Panckakes all the way to the back with Stirred Rice Pudding, and you will find just exceptionally great comfort food without strain of shopping for weird stuff in the supermarket aisles or techniques beyond your patience, skills and equipment.

    This has all that covered in addition to clear instructions, aids and source helps if needed.

    The selection is sure to deliver many of your favorites and then some from a wide selection of ethnic groupings, course offerings, and tastes. There are some Tex-Mex, Italian, Hungarian, etc.

    Personally, those for "Cocktail Sauce for Shrimp; Maryland Crab Cakes; Lobster Roll; Jim Brady's Prize-Winning Goat Gap Chili; Chicken Potpie with Phyllo Crust; Lemon Meringue Pie; Caramel Apple Tart and Pineapple Upside Down Cake" got my comfort attention and appetite to come um up.

    Although we have yet to prepare any of the recipes, it was a joy just leafing through the book and seeing the recipes included. It is not a large book and is the first cookbook I read cover to cover as soon as it arrived. Memories of my mother's cooking flashed through my mind. It even includes a recipe for the first thing I remember cooking: Oatmeal cookies (although I did not include raisins). I heard the author on the Diane Rehm show and had to buy this book. It had at least a dozen recipes of dishes I had forgotten about, but tasted wonderful. I have learned that the best recipes are the simple ones. There is nothing fancy about these recipes.

    Burros offers good, low-fat meals designed to be on the table in 20 to 30 minutes. Organized traditionally by main-dish ingredient (vegetarian, chicken, etc.) each two-page spread includes a full meal, main and side dish, with "game plan" directions and nutritional information. Burros stresses a "strategic approach" to cooking to maximize kitchen efficiency and her directions are simple and easy to follow.

    The dishes are simple and delicious and varied - curried potatoes, tomatoes and peas; yellow fruited rice with fish, Chinese chicken and rotini, turkey apple patties.

    Perfect for the harried cook, sick of eating the same things all the time.

    Of all of my "healthy cooking" cookbooks, this is the one I'd save from fire! The food is truly delicious, and they are easy to prepare. I generally find I increase the sauce quantities, but there is not an appreciable increase in calories. My husband and I have each lost over 20 pounds this year, slowly and easily, with great enjoyment. I got online to order this book as a present for a friend who survived a heart attack, and am sorry to find it not available! Does anyone have a copy to spare? Probably not now, with this glowing review!

    I really knew almost nothing about Cleveland Amory when I read this. Not only was it fascinating to learn about this very interesting man's life, but the information about the unthinkable cruelty to animals was breathtakingly sad. Thank goodness for people like Mr. Amory who force change. The book was an inspiration. It was well-written, engaging and took the reader through Mr. Amory's life with stories and memories. Highly recommended!

    I highly recommend this book to everyone, whether they are diehard animal lovers or not. I doubt many people have been privy to all the information on animal testing and hunting much less the behind the scenes struggle against ignorance and "big money" in order to change our laws to help protect all animals. The writing is clever, witty and beautiful to read. Marshall does an excellent job chronicling the inception of The Fund for Animals, and its impact on organized animal activism. Her characterizations of these animals provides insight into how Amory and his Army of the Kind view the wonderful creatures they risk everything to save. This book embodies what Cleveland Amory was all about by keeping its focus on the animals and shows why we must remain vigilant in the "war" to combat animal cruelty. Marshall's love for animals is obvious and her book serves as a reminder that improving the animal condition also improves the human condition.

    When MAKING BURROS FLY, (the gift of a thoughtful young friend) arrived I stopped everything and read it through from start to finish. Isn't it wonderful to know about someone like Cleveland Amory who felt so passionately and was willing to put his life and resources on the line to correct obvious wrongs? I must say cruelty to animals - organised cruelty - was never something in the forefront of my mind. For instance, I would never have dreamed of deliberately starving dogs to see how long they could last without food or water. That sounds just plain SICK and not scientific. So - I read about things I'd never known about and I read with sorrow and despair. However, the book left me with a feeling of hope and upliift and optimism for the future. The author did an amazing job of collecting, collating and relating her material. There was so much information in the book, but she did not write dry statistics, she built suspense throughout and painted a realistic and attractive picture of her subject. Some of her descriptive writing was poetic and beautiful. This is a book all animal lovers should read. Others should read it, too - it might make animal lovers out of them!

    I bought it and have made some of the recipes. I'll end up making them all but so far I know this much...
    - The rice recipe, which I followed very closely, was not very good. Did they really want the onions to go into a puree?
    - The chicken recipe has as a key ingredient a can of Las Palmas brand Chile Coloarado. Does your grocer carry it? You might want to check. I have checked several stores and they don't, including two mexican groceries. I did a quick online search and so far haven't found it there either. If your grocery doesn't stock it, you are going to have have to make up something else here or skip this recipe.
    - Which would be too bad because of the extremely limited number of recipies in this book...a couple for salsa, one for rice, one for beans, one for chicken (which may be useless), one for beef, one for lamb, and a few misc. strays, for guac etc. Almost no variations one any of them. I didn't know when I ordered it just how tiny the book is.
    - I don't think it's written or edited by anyone who has a lot of cooking experience. I have found a couple of the directions fuzzy. And the recipes for burritos either don't state how many servings they make, or are made for different numbers of servings (steak 3 servings, chicken 4). If the individual recipes (rice, beans, meat) aren't coordinated according to number of servings, I have to ask myself if these guys have been using their own recipes, or just who edited this book?
    - Overall, sorry to be harsh but this isn't really a cookbook, it's a tiny little book with the theme "Aren't burritos cool!" Which they are. However, a cool book about burritos would focus more on how to make great burritos, rather than on jokey stuff about taqueria decorations and signage. The other reviews don't ring true to me, having used the book. Skip this one. The Bayless books have a lot of good rice, bean, meat, and salsa recipes that are great for making burritos, and I'm finding them quite useful (clear recipes, and tasty).

    Fourteen years after his trek around the coast of Baja California, Mackintosh, now a San Diego family man, is again drawn from the common world to a most uncommon journey. This time trekking southward in mountainous inland Baja with a pack burro. [I have had the great pleasure of meeting Graham Mackintosh and talking with him about his earlier book and about this one. For what it's worth, I found him to be the same gentle pilgrim that we meet in his writings.] "There was something very compelling and liberating about surrendering... From now on there would be no Mitsubishi, no Microsoft, no modem, no modern world, and maybe no home or wife -- just [the burro] and me, my goal, my God, and the good, simple people of Baja California," muses Mackintosh in a moment of introspective single-mindedness. Something that I enjoy about his observations, thoughts, and interests, if how often they closely resemble my own; one example being his delight in the company of a certain species of bird which I also particularly enjoy -- and which never fails to exhibit and inspire a certain indescribable joy -- the black phoebe.
    As in his earlier book, Into A Desert Place, frequently recurring samplings of the history of Baja (and Alta) California, including the accomplishments and abuses of the Spanish missionaries, are well related and seamlessly augment the story. Mackintosh labels himself 'a poor Christian and a worse Catholic' and, for this reader, many of the books finer moments center in the author's spiritual questionings, insights, struggles, perhaps heresies, visionary experiences, and graceful redemptions. "Behind the cool, hard, smooth rock, I sensed that there was another reality close at hand. That's how far I had come! I had seen the solid, indubitable forms of the great mountains and valleys dissolve into extraordinary visions; and at times I had almost felt myself dissolving into the world... Graham Mackintosh has written of his walk with his burro Mision through the mountains and deserts of the Baja California peninsula so vividly and poetically that it comes alive in our minds. His relationship with his sometimes-exasperating animal companion is funny and touching. Reading JOURNEY WITH A BAJA BURRO will teach you a lot about this relatively unknown Mexican peninsula which extends a thousand miles below the border of California, and you'll have a lot of fun on the journey.

    I had wondered for years whether Graham MacKintosh would write another Baja book. His Into a Desert Place sets a high standard as a down to earth everyman-on-a-journey walking exploration of the fascinating and yet physically challenging Baja peninsula.

    This book resumes our acquaintance with Mr. Mackintosh in a much different place in life than Into a Desert Place. Rather than being a Brit teacher wholly inexperienced in Baja ways, he starts the book as a married San Diego "old Baja hand", veteran of many trips and no longer an initiate pilgrim to the ways of the desert peninsula. If the dialogue portions of the books are any guide, I'd guess his Spanish improved a good bit with time. His narrative style remains folksy, simple, intelligent and unadorned.

    In Journey with a Baja Burro, Mr. Mackintosh takes a burro on a trek from Tecate, Mexico down to Loreto. His travel itinerary takes him past the many missions along the way, and he gives us interesting bursts of history about each.

    One might imagine that such a work would merely mirror Into a Desert Place, but the intrigue here is that the author is a changed man, and his Baja has also irrevocably changed. We still see the down to earth narrative, the simple punning, and the flights into spiritual self-exploration that make the first work so down to earth and yet such a flight of fancy. But here we have a bit of the drama of day to day living that the itinerant wanderer faces when he is no longer 25, and his family waits, rather impatiently, at home. We all grow a bit older, and the beckoning of the open sky tempers for some of us with time--but perhaps not for Mr. Mackintosh.

    Mr. Mackintosh's gift is that although he understands that some of what he does is quite remarkable, he also understands the personal frailties that he brings to his courageous expeditions. This book is not the work that Into a Desert Place is, because the author, Baja, and perhaps the world itself is no longer quite the same. But this is a charming return to a alternative by-lane away from the great superhighway of suburban life, and I urge you to put on your turn signal for a walk with Mr. Mackintosh's burro at your earliest convenience. You need not read Into a Desert Place to love this one, but if you read this one first, I'm betting you'll go back and pick up the first one next.

    This is one of the best cookbooks I own. Although I've owned it for over 10 years, I still use it constantly. The recipes are tasty and generally quick. I particularly love the emphasis on fresh food. The game plans make it easy to put it together quickly, and several of the meals are elegant enough to serve to company. I cook for several families, and a number of these meal plans are perennial favorites.

    There I was, 30 years old and able to make only one pasta dish and one chicken dish. My friends kindly fed me (well and often) but I could never invite them back. Then I moved to an apartment next to a newly-wed couple and they recommended *20-minute Menus*. "We can't cook either" they said, "but we can follow directions!" Yes indeed. Marian takes you step by step through entire dinners (not just one dish, but 2 or 3 dishes together, the whole meal) telling you when to start heating the broiler, when to blend the ingredients for the sauce, when to start steaming the vegetables... She even breaks down the ingredients into things you should have in your "pantry" (there is a pantry list at the beginning of the book) and things you need to get fresh for this recipe. I actually used that pantry list to stock my kitchen when I bought a second home. Usually the menus take closer to 1/2 hour to prepare (sometimes more) if you include chopping time, but the stress is low and the results are great.

    In every way this book changed my life. I was suddenly able to make GOOD FOOD for my friends. I started having people over for dinner regularly. I soon branched out to... Marian Burros' 30-minute menus (*Eating Well is the Best Revenge*) and other cookbooks. But when I want a meal that is complex and tasty in the eating, yet swift and simple in the making, I come back to 20-minute menus. I've probably made 60% of the different menus and only once have I not liked the results (there was also one bad recipe in *Eating Well*). I have 2 kids now and this is the cookbook I use for regular nightly dinners. We all love it!!

    I tried two menus. Of the three recipes comprising these menus, one was inedible (I threw it away after one bite), one was barely okay (I ate it but threw away the leftovers), and one was just okay (I ate it, but I won't make it again). Also, the recipes are badly written--sometimes ingredients in the ingredient list are left out of the instructions. This is the worst cookbook I've ever used.

    Before we bought this book, I knew five recipies. When it was my turn to cook dinner, my wife got to choose between pancakes, tacos, spaghetti, hot dogs, and a lousy stirfry. This was a source of no small amount of tension in our household, as she wanted a little more variety and taste in our diet, and I was uninterested in spending more time on cooking, and unsure of myself when it came to learning new recipies.

    This cookbook was a compromise for us -- a way to hopefully add more variety while not scaring me off, and not taking forever to cook. It worked brilliantly. We have discovered 25-30 recipies in it that we absolutely love, and that I find easy to cook. The shopping lists and the instructions are easy to follow and make the cooking pretty painless. My one caveat is that I am a slooooow chef, so most of these take me 30-45 minutes to cook, but that may just be me.

    I LOVE this book! This is the first cookbook I've seen that goes through the whole meal from main dish to side dish to dessert and even gives you the game plan on what to do first so all is ready at the SAME TIME! Imagine that? Coupled with the book Quick Meals for Healthy Kids and Busy Parents, it's all you need to feed your family healthy and even more important TASTY homecooked meals everyday! I definately recommend this one! Great as a gift for anyone with kids or who just don't like hanging out in the kitchen cooking all day!
