I had the great priviledge, some years ago, of sitting next to Dr. Rubatzky and Dr. C.M. Rick on a flight from Sacramento to North Carolina to attend an ASHS meeting. I was very fortunate to have both as guest lecturers in my undergraduate classes and to have Dr. Rubatzky sign and dedicate my copy of this book; the culmination of two very distinguished careers. It covers the physiology, production and handling of scores of vegetables. It is the first book I reach for when I want to acquaint myself with a new crop.
The most comprehensive text available on the subject.......1999-09-15
Amazing is the only way to describe the wide range of vegetables covered in this book. It is an excellent reference and well worth the price. I have not seen any other book that covers the botany, physiology and production of so many vegetables so well. Dr. Rubatzky has just recently retired from UC Davis to spend more time with his family. We will all miss his presence on campus; hopefully, he will continue to find the time to write.

Be an Expert Farmer with one book.......2007-06-09
Some years ago I used this book to build a very large farming company. I had no experience and little money but in 5 years I was farming 6000 acres of row crop. This book is fantastic. Eventually I had lots of AG engineers on staff, but this was the book that taught me how to monitor them. I recommend it to anyone, from a gardener to a an agribusinessman. It is wonderful and the current edition is great.
Knott's handbook review.......2005-10-19
Very comprehensive but somewhat esoteric. This handbook is not for casual reading, but yields results for specific research. The more the book is consulted, one has a better understanding of how the information is presented. The handbook contains a wealth of material.
Knott's Handbook for Vegetable Growers, 4th Edition.......2005-08-11
I give it five stars. This book, which contains a variety of information from a wide number of sources, is not a "how-to" book. Its information is mostly in table form, so the book's main use is as a reference. Some chapters, such as the one on water and irrigation, contain information I've never seen anywhere else, except in technical publications. The chapter contains line illustrations and descriptions that are accessible to the layman. The chapter on vegetable pests also contains (black and white) line illustrations of the insects. Rather than try to list all the information this book contains, I list the table of contents:

First published in 1956, this handbook is an indispensable, up-to-date companion both in the field and in the marketplace. Topics include the vegetable industry, greenhouse vegetable production, soils and fertilizers, water, pests, weed control, harvesting, storage, and seed production. Packed with quick-access graphs, tables, charts, and line drawings, the 4th edition offers new information on drip irrigation, seed germination, plant tissue and sap testing, windbreaks, and weed management. It also gives advice on allowable pesticide and herbicide use and on the latest worker protection standards. The appendix contains sources of vegetable information, providers of vegetable seeds, periodicals for vegetable growers, and U.S. units of measurement and the metric conversion factors. A change from the spiral-bound 3rd edition is a sturdy, flexible cover to help hold pages flat.
Fantastic reference work to answer disease&insect problems.......1999-08-24
I use this book as my first reference work to answer disease and insect problems in vegetables for the public. The layout is extremely easy to use. Each section is very clear and concise. This work is also used for establishing small plot research design that is comprable to the large scale production fields. All the information one needs is in this handbook for vegtable trials and for large scale production. There is very little else on the market that is as comprehensive as this publication and as accurate regarding information provided.

Like the other two reviewers, I bought this cookbook when it first came out and used it til it completely fell apart. And I had the good fortune to live in Santa Barbara, close enough to Ojai to have eaten at Hooker's Ranch House restaurant. I wowed friends and family again and again with dishes that became my favorite classics like Snow White Soup, Mushroom Cutlets and Eggplant Cairo. They are so good, being vegetarian isn't the point of serving them. Here I am today with a beautiful fresh head of cauliflower and the fond memory of Snow White Soup but no recipe. I am SO GLAD I can get another copy...even though this cauliflower won't last til I get the book.

The first Vegetarian Gourmet Cookery, which came out in 1970, has been my constant companion n the kitchen for 30 years. In spite of stains, tatters, rips, a split spine, many missing pages and even mildew, I wouldn't give the book up for anything. I'm delighted there's a new version!

This cookbook features absolutely outstanding receipes from one of the best restaurants in Southern California (the Ranch House). The receipe for Vegetable curry (Navratan Korma) is better than that in most mainstream Indian cookbooks and, by itself, is worth buying the book for! I have used this for many years and always get compliments on the results.

VERY THOROUGH.......2007-02-09
This is a fantastic book for the established, commercial organic farmer. It however, may confuse or scare the first time explorer. I myself am looking to begin an organic farm, here in Missouri, and would highly reccomend a thorough, but more intimately-set book by Eliot Coleman. "the new organic grower" .
Organic Vegetable Production is a greatly valuable book once established, or furthur informed on the subject...
I highly reccomend it... In a few years it could be worth it's weight in gold!!! Happy readings...

Book Description
The edible alliums are some of the most ancient cultivated crops and include onions, leeks, shallots garlic and chives. They are grown in most regions of the world, from the subarctic to the humid tropics, although bulb onions are best adapted to production in subtropical and temperate areas. This book introduces the scientific principles that underlie production practices. It begins by discussing the classification, origins, distribution and economic importance of the major food alliums, before considering their structure, genetics and breeding. Chapters then follow on the physiology of crop growth, development and yield, on crop production and on flowering and shoots, and a chapter is devoted to the storage and dormancy of both types. Pests, diseases and weeds are then discussed, before a final chapter on the biochemistry and food science of alliums. The book is written at a level suitable for students of horticulture, crop science and food science, as well as for growers and crop consultants interested in the scientific principles that form the basis of their practice. It also provides a valuable example of how the different disciplines within plant sciences interrelate when applied to particular crops.

This is one of the best general references regarding onions and other alliums. It should be on your bookshelf right between the Compendium of Onion and Garlic Diseases by Schwartz and Mohan and Allium Crop Science: Recent Advances by Rabinowitch and Currah.
