What a wonderful cookbook!.......2006-07-05
This instantly became my favorite cookbook and I use it so much that it doesn't spend much time on the shelf. This cookbook transcends the "collection of recipes" style of most cookbooks; its style is more "how to improve your cooking skills."
Even so, some of my very favorite recipes are in this book. All the recipes adaptable and are presented in a way to make your own adaptations easier. For example, I love the braised rice recipe and found it easy to adapt the recipe for brown rice by a few minor adjustments. And this rice is good! Really, every recipe that I have tried is good.
In addition to producing wonderful tasting food, these recipes aren't the type that take hours of elaborate preparation. You can use this book to prepare full, decent meals after work in a reasonable amount of time.
This book is suitable for nearly all levels of cooking skills. It assumes some familiarity with basic cooking techniques, so a first-time cook might need a little help.

I have an enormous cookbook collection, but I still buy more... The title of this book says it all - Essential Techniques and Recipes from a Lifetime of Cooking. It's slim but every page has valuable wisdom from Julia Child - you can almost hear her as you read each page. I have already purchased three additional copies of this cookbook as gifts for my two daughters and my mother. It is totally appropriate for the beginning cook as well as the most experienced.

You don't need another cookbook. It covers the basics of almost anything you are likely to do in the kitchen that involves a basic technique. From leek and potato soup to roasting a turkey, it has instructions that will help you get good results if you pay attention, and I have cooked almost everything in the book.

Expensive, but worth every penny.......2007-01-12
Three years ago, we did a major redesign/renovation of our kitchen, right back to the studs, including moving appliances and cabinets and changing the flow -- almost exclusively based on the information and advice in this book. Having lived with the results for awhile now, there's not a thing I would change or do differently. Whether doing the work and making the selections yourself or working with a kitchen designer, you will find this resource invaluable. Anyone can walk into a kitchen design center and pick out pretty cabinets and appliances; this book will force you to think about the layout of your kitchen so all the elements work together without interfering with each other.
I also disagree with the reviewer below who found the pictures outdated. This is not a place to get inspiration for colors or cabinet styles. This is a resource that will help you figure out whether you actually have enough space for that kitchen island you've always wanted, or making sure you will be able to reach your main storage cabinet when the dishwasher door is open, or where the electrical outlets should go.
Expensive book, but I think it saved us from making more costly mistakes.

An excellent reference for designing from scratch or for remodelling your kitchen. This book is written for the interior designer, not really for the do-it-yourself-er. It goes into extensive detail about everything you can imagine will be in a kitchen, how to lay it out, how to select everything in it, how everything operates, pros and cons of different materials and designs (and that's everything even down to how electricity works, what the characteristics of different woods are, and so much more). I'm building my retirement home and am working with a skilled architect. Even so, I found this book extremely useful and I especially liked the sections on ergonomics, pathway clearances, how to design your counterspace and cabinets so they don't conflict with each other. If you read this book, you're not going to make a costly mistake in designing your kitchen - it's got it all, and it even emphasizes what not to do. Need to consider elderly or handicapped? They cover that also. For those who can't find this book or who prefer not such a large tome, the Home Depot Kitchen Design and Planning 1-2-3 (ISBN: 0696217449) has an excellent summary of the more applicable portions of this book. The reviewer before my review who complained about the photos - well, appliances are going to be outdated even in just a few years. If you're looking to recreate a kitchen via a photo, stick with kitchen oriented magazines. The basics of layout are going to be the same, and the way this book is written and the diagrams (most are diagrams, not photos) are still applicable, since it addresses our current lifestyles where the kitchen is the hub of our homes, and it helps you understand the different layouts and how they can be modified and how they can work for you.
Out of date, elementary information.......2005-04-10
Poor quality photography make this book completely out of date with today's kitchen design trends. Yes there is some basic, stress basic, information about how to draft, and the elementary concept of the kitchen work triangle, but no new ideas here. It is disappointing that the NKBA would put their name on such a book. It is not the definitive guide on kitchen design and not worth the large price.

A gorgeous book with great information.......2006-03-20
As a complete sushi-making newbie, I was hoping to find a book that would walk me through, step-by-step, the process of making sushi, preferably with lots of illustrations to help me along. This book is that, and then some: with gorgeous, colorful photography, this cookbook is practically a coffee-table book as well. It may not make you an instant expert (it's harder than it looks!), but it will definitely inspire you to get in your kitchen and give it a try! The book was a bit thinner than I expected (yes, I know, I should have read the specs) and the hand roll technique could have been explained a little better, but it is fairly complete, covering fish preparation, basic rice and variations, rolls, "getting creative", soups, and garnishes, as well as serving and presentation tips - everything you need to create a delicious sushi meal at home. Over all, an excellent buy.

This was a good cookbook that covered the basics of making sushi. Things like equipment & utensils to use, ingredients explanations, how to fillet fish, cleaning squid, etc. There were a few creative ideas but for a creative sushi display but not for unique sushi rolls. Buying this book used and adding to your collection would be worth spending the money.

I've been looking for this book for ages although I didn't know it until I found it! It tells you all the basic information about nearly every possible ingredient and some basic prep info on most--how to truss poultry, scale fish, serve duck, cut and steam fruits and veggies, etc.. Also included is info about herbs and spices, different salad greens, oils, vinegars. So complete! It makes cooking seem very simple and has enabled me to experiment with confidence. And it's *beautifully* presented in full color--someone else said it could be a coffee table book and that person is absolutely right. My friends have been known to start paging through it if I leave it out. The only thing that might improve it is if there were a few actual recipes to try out--those who are looking for recipes will be disappointed as what Kitchen Essentials offers are more guidelines than recipes. I'm hoping that Le Cordon Bleu has or will put out a regular cookbook that will complement this wonderful book.

Patricia J Crane, has created the best guide on how to achieve any goal using affirmations that I have ever seen.
Patricia has a rare and unique talent of taking abstract ideas and bringing them down to earth so that anyone can use them to get what they want. She illustrates her techniques in clear terms...leaving you with no room for doubt.
As you already know, and most probably heard at some point in your life, that what we feed our minds becomes our reality. We can convince ourselves practically anything with enough verbal repletion of affirmations.
However how many of us actually act upon this? How many of us use this awesome power? And even when we do use this powerful technique, are we using it correctly?
For example if you want to quit your job because you can't stand it anymore, you should not say "I want to quit my job", because that is focusing on the negative. Rather you should state. "I look forward to successfully securing myself a position at another firm, in a job that I love!"

I really enjoyed this book and my only complaint is that it is too short. The author provides several affirmations and a framework for developing your own personal affirmations based upon what you want to accomplish. I finished the book 2 weeks ago and haven't had any earth shattering experiences, but I have felt a higher sense of well-being. Although the book can be finished quickly, it's format is such that you can pick it up later and find something useful. I wrote some of the affirmations on 3x5 cards that I use as bookmarks, just to remind me to stay positive.

I do not follow an organic diet regularly, but the recipes in this book are so delicious! I have been renting it from the library for the last 3 months and have finally decided I HAVE to buy it! It is really worth the money! This book is very well laid out and has simple, delicious, healthy recipes.
Fresh Easy and Delicious.......2002-04-14
Because we raised free range hens for the eggs and have a large vegetable garden and savor the fresh fruit we have available I wanted the book in my home library. It is shy 300 pages and what I like about the book is the well laid out format. Like Why Organic? And Your Organic Pantry? And then the stages of spring, summer, fall and winter sections which get the reader back to the idea of eating according to the seasons.
I like what the author says in the Why Organic section of how food used to be grown organically and then things after world war 2 changed and quantity over quality became the key. Even though I note we as a country throw away more food than we grow or take to market. Many health problems came about when we went from natural to artificial means of growing food.
I was happy to see that the author discusses organically grown meats as well. And eggs as well as dairy items. Buying locally caught fish is her suggestion for fish and its a wise suggestion. And she even discusses the pros of wild game. Some people think that ranch raised pheasant is wild pheasant when in fact it is not.
The recipes are so vast and varied and its nice to see them listed according to the season. Like the sugar snap peas and potato cakes on page 22. The Orange steamed chicken and asparagus on page 31 is delicious and easy. The summer fruit pizza on page 136 is great for the hot days we have. And because we cook outside so much we love recipes like the Rosemary Grilled Figs on page 144 which is served with Warm Brie and kumquats.
The photography is great and like the best cookbooks the author lists calories, protein, carbs, fat, cholesterol, fiber and sodium.

I have to have good picutures to go with a great recipe to really enjoy it. This book has them.
The writting is a lot of fun, and the recipes are easy to understand and follow. They also taste great!
I have already made 4 dishes, and they all came out well.
I am glad that organic food has become so easy to get your hands on. It is so important to undersatnd what you are eating in this day and age.

I am a wannabe chef and this book expanded my list of thing I can make for guests. I recommend this book to everyone who likes to cook. The front of the book explains all of the ingredients and techniques, and the back of the book puts it all together. The food is wonderful. I had a blast looking in the asian markets for the ingredients.

Good for only a few recipes and ideas.............2001-11-22
I'm a bit disappointed with this book, there's little substance here that justifies the price...or even half the price. Despite there being 126 pages, there aren't all that many recipes, and then certainly not that many that I'd consider accessible from an ingredient, time or interest standpoint. Half of the pages are full page color photos of prepared dishes - beautifully done, but overkill. You'll need a well stocked Asian grocery store near your house to experiment with many of these recipes - I happen to live 2 miles from one, and they don't stock many of the ingredients called for in this book. A very annoying text format was selected for every recipe - right justification. This is simply too inefficient for quick reference while cooking or when making out your grocery list.
In this book there were many recipes that require prepping or cooking a portion of the meal in a fry pan first, or cooking noodles in yet another pot. This is unfortunate as complex meals can be prepared with "just" the steamer, and useful steamer tips weren't mentioned here - one example: cook the noodles in the water in the bottom of the wok, it saves using another pan and saves fuel. Perhaps the recipes were a bit too creative for their own good, and I could have benefited more from the author applying some of their creative efforts towards the actual preparation.
It doesn't appear the book was intended to be an everyday book for generating steamed meals. I really wanted something that would provide weekday steamed meal options - these recipes are simply too involved for most week days. Where the book does lend itself as a resource is for entertaining - that's the only time it'll come off the shelf in my house....but only if I remember to check if I need to special order any ingredients in advance.
Actually, 2.5 stars for this book, there are better steaming cookbooks out there, aren't there? This one's okay for entertaining, but I'm going to keep looking. Steaming is a blast, enjoy.

This book has a lot of great suggestions for those dealing with arthritis. It provides techniques for cooking with less pain and effort and has recipes, too! I found it very helpful as a person who works with helping older adults cook and care for themselves. I highly recommend it for anyone with arthritis.

I got this book, and I liked it very much. I am 14 and have JRA, OA, and Fibro. This book was very helpful, and the recipes were good. I would recommend it. I've read many books, and this is one of the better ones. I enjoyed the food much!!
I have mixed feelings about this book........1998-09-29
I perused this book carefully because I want information on diet and FMS. There are good definitions of FMS, but the info and recipes seem to be geared toward reducing the "inflamation" of arthritis. As I understand it, FMS is not a condition of inflamation. Thus, my confusion. For forms of inflamatory arthritis conditions it looks excellent. I'd like to note that I have seen other books that tag FMS on to Arthritis in their titles or covers and don't seem to have much specific to FMS. A selling technique, I suppose. This book is attractive and seems very good for arthritis, but not specific for FMS.
